Key Takeaways: The perfect diet A healthy diet should meet your nutrient needs. There are two major nutrient categories, macronutrients (protein, carbohydrates, and fat) and micronutrients (vitamins, minerals, and phytonutrients). When you break down micronutrients, there are nutrients that we get from animals and nutrients that we get from plant-based foods. Animal nutrients include vitamin B12, iron, zinc, vitamin A, creatine, vitamin D, and high-quality protein. If you're eating an exclusively plant-based diet, that doesn't mean you can't get these nutrients in other ways. But you have to acknowledge that animals are a much better source of these essential vitamins and minerals. On the flip side, vitamin C can almost be exclusively found in plant foods, as well as phytonutrients such as carotenoids, lycopene, betaine, and lutein. The truth about nutrient testing The processing and storage of nutrients vary within the body, thus necessitating a thorough examination of each nutrient separately. Obtaining a bodily fluid or tissue sample such as blood, saliva, or urine is insufficient for determining what nutrients are present. Take calcium, for instance, which is kept within a very narrow range in the blood. Testing calcium levels in the blood may appear favorable, but it may not reflect reality. Therefore, we typically rely on a dietary assessment tool like MyFitnessPal to determine calcium intake. Similarly, iodine can be examined via a twenty-four-hour urine test to assess recent iodine consumption, but it is not indicative of long-term levels. To accurately assess all nutrients, you have to run different tests. Why does today's food have fewer nutrients? Soil quality degradation is a major factor impacting nutrient availability due to the disruption of the soil microbiome, which aids plants in extracting nutrition from the soil. Pesticides, herbicides, and industrial agricultural practices have restricted a plant's ability to obtain nutrients. Chris notes that consuming eight oranges today is equivalent to consuming just one orange for our grandparents in terms of nutritional value. Additionally, the globalization of the food system is also a contributor, as produce is often transported long distances and stored in unfavorable conditions, resulting in significant nutrient loss over time. Unpacking RDAs Recommended Dietary Allowances, or RDAs, are the levels of intake of essential nutrients that meet the known nutrient needs of a healthy person. RDAs were developed during World War II to create nutritious rations for soldiers. They have been updated over time, but the numbers still represent the minimum amount of a nutrient a person needs to avoid a malnutrition-triggered disease. However, RDAs don't take into account several factors that play a huge role in nutrient absorption and status, like gender, age, and health. Another issue with RDAs is that they don't consider bioavailability. When you see the amount of a nutrient listed on a food label, you might assume that you will absorb a hundred percent of that amount, but you would be dramatically wrong. RDAs also don't consider nutrient synergy. There are many cases where the presence of one nutrient helps with the absorption of another one. Magnesium is required for the bio utilization of vitamin D and vice versa. If you are getting enough vitamin D through sun exposure or supplements, but you are magnesium deficient, you will still have low biological activity of vitamin D. Dr. Hedberg: Well, welcome, everyone, to the "Dr. Hedberg Show." This is Dr. Hedberg, and I'm really excited today to have Chris Kresser on the show, been following his work for a long time. And Chris is the CEO of the Kresser Institute, he is a licensed acupuncturist and he's also the co-director of the California Center for Functional Medicine. And chriskresser.com most of you who do any kind of reading on the internet have most assuredly come across Chris's website for some excellent health information there. And he recently published a book called "Unconventional Medicine" as well as "The Paleo Cure" and this was a New York Times best-selling book. And Chris was also named one of the 100 Most Influential people in Health and Fitness by greatist.com. So Chris, welcome to the show.   Dr. Kresser: Thanks, Nick. It's a pleasure to be here. Dr. Hedberg: Great. So why don't we jump in and just talk a little bit about conventional health care because obviously there are some big issues there with conventional medicine. And so what are the areas that you see in conventional medicine that really need to really be changed and really worked on to get people in this country you know, much healthier. Dr. Kresser: Yeah, I think the biggest issue with our current system is that it's not set up to address chronic disease. It was...the conventional medical system really came out of a time and a place where acute challenges were the biggest issues that we face. So if you look at the turn of the 20th century top three causes of death were all acute infectious diseases: typhoid, pneumonia, and tuberculosis. And you know, conventional medicine today is remarkably effective for those kinds of problems. If you...I always say if I get hit by a bus, I definitely wanna be taken to the hospital. You know, we have pretty amazing medical technologies and interventions that allow us to even reattach severed limbs. You know, we're starting to maybe be able to restore sight to the blind. And you know, if I get an infection, I'm grateful that I can, if necessary, take antibiotics that might save my life. So there have been some incredible developments in conventional medicine that have extended our lifespan and, you know, basically eliminated certain causes of death that were the scourge of humanity for many years. Unfortunately, that's not the biggest problem today. Today we are suffering from an epidemic of chronic disease, in fact, seven of 10 deaths are caused by chronic diseases. Things like cardiovascular disease and lung disease and cancer and now Alzheimer's and dementia at a growing rate. And our conventional medical system was really never set out to deal with those conditions because they weren't as big of an issue at the time when the medical system developed. So now we have this huge burden of chronic disease and the conventional health care system really, its main approach is to prescribe medication. And these medications though they might be somewhat helpful in addressing the symptoms of these diseases, they almost never address the underlying causes of chronic disease. And that's why we see the rates of these conditions just continue to rise each year. Dr. Hedberg: Yeah, we had a major overhaul to our health care system, but it was just sort of a different way to pay for the same model. Dr. Kresser: Exactly. So he got some fruit, blended it in his kitchen, and started selling the juice by the cup (poured from a jug) on the beach in Santa Monica. Little did he know that inauspicious start would lead to the formation of two mega juice companies – Naked Juice and Evolution Fresh. His first attempt, a pretty impressive first attempt by the way, was a company called The Naked Juice Company. After growing it to a size that allowed him to serve most of California, he sold it and got out of the juice business entirely. But not for long. Two years later, with a renewed commitment to delivering the highest quality juice possible to consumers, he started Evolution Fresh. He steered this company for 19 years before being acquired by Starbucks in 2011.  Before I sat down with Jimmy, I didn’t tell him that I’d be asking him for photos and a bio, or that I’d be posting his story about this podcast on social media. He’s a very private person. He’s never been on social media and has never shared these incredible stories about the two companies he’s championed. Available On: iTunes  | Google Play  | Stitcher  | Spotify How do you describe Ronnie Teasdale? Figuring out how to capture him in conversation and in writing, that’s the problem I ran into after spending a few hours with him recording the podcast. Ronnie grew up in Michigan playing hockey practically every day of his life until he was 23 years old. At the height of his hockey “career,” he was what I’d call an “enforcer” — the guy you’d put in to take out (by brute force) whatever player on the other team was scoring goals or causing problems. Sports, to him, were a zero-sum game. Someone wins, someone loses — and doing anything necessary to win was just part of the game. When he moved west to California, he did so to pursue a more holistic calling. With degrees in psychology and exercise science from Oakland University, Ronnie opened a gym, started studying yoga, and left his hockey and win at all costs mindset behind. Then he discovered CrossFit, the sport of fitness. Since he already knew how to win, this was a way to combine his prior-life mindset with his newfound passion for fitness. He opened a new gym called CrossFit Mean Streets, and became known in the world of CrossFit as a fierce competitor, bad boy, and also a super-fit human.  But there was a side to Ronnie that no one really knew — a side that he talks about a lot in our conversation. His quest has always been to optimize human performance, and he has been able to achieve that since leaving hockey with quite unorthodox methods involving recovery, rejuvenation, and optimization rather than super hard or aggressive training. Ronnie now is finishing up his Kundalini Yoga teacher training, has just changed his name to his new spiritual name, Ravi Chander, and spends much of his time reading, studying, and developing expertise and personal experience in what he calls “humanology.” This is the longest podcast I’ve ever recorded, and it’s a conversation I enjoyed thoroughly. We get into “weird” stuff right out of the gate, though Ronnie is about as un-weird as it gets. It opened my eyes to many new intriguing concepts such as optimizing performance without training, as well sound healing and sunlight. Enjoy! Chris Kresser Shares Importance of Health Coaching During Interview with Jesse Cannone: Using a health coach takes a more proactive, preventative, and affordable approach to improving your health and wellness than learning alone. As Chris Kresser explains during his recent interview with Jesse Cannone, “Information is not enough to change behavior.” Most people know what they should be doing, Chris explains. They know they should get seven to eight hours of sleep per night, eat healthy, remain physically active, quit smoking, etc. Yet the latest CDC statistics show only 6% of U.S. adults engage in all five key healthy habits. The Paleo View (TPV), Episode 271: Chris Kresser Practices Unconventional Medicine News and Views (0:41) Our guest today is Chris Kresser! He's a practicing functional medicine doctor, blogger, author and "voice of reason" we really admire. He was a guest on Episode 86 as well. Chris's new book is about changing how we approach healthcare. It's titled Unconventional Medicine and comes out November 7th Stacy discovered Chris Kresser through Robb Wolf's podcast where he challenged Robb Wolf on Fish Oil. It was refreshing to see two thought leaders debating a topic and one change his mind. Chris's old book was called The Paleo Cure. Chris was interested in how he could change health care practices through his own work in his clinic. Conventional medicine doesn't treat chronic disease very well and it could be disastrous for the economy of the United States. Doctors give the recommendation of "eat better, exercise" but don't really give details, follow up, or help you get there. Chris got very sick from parasite infections in his early 20s and while he recovered from the acute infection easily, the chronic remnants of the disease continued until he figured out how to heal himself. Functional medicine is a systems biology approach to medicine. Chris's analogy: If you have a rock in your shoe, conventional medicine diagnoses you with foot pain and gives you a tylenol. Functional medicine tells you to dump out the rock. People are on all kinds of medicine when better approaches might lead to fewer. Instead of suppressing systems, Functional medicine tackles the causes of disease, especially diet and lifestyle factors. Stacy recently had an experience with a regular doctor that made her wonder if patients are part of the problem: they want a pill to fix it rather than working on their diet and lifestyle. Chris's practice follows up and provides resources to help patients do it. One in Two people has chronic disease and one in four have multiple chronic disease. We have to reverse this! Meanwhile, Sarah is very concerned that she wasn't getting enough interventions with conventional medicine. Chris says doctors are upset with modern medicine as well. They're burned out, don't have enough time, and half want to quit! Doctors are being pushed too hard. They see twice as many patients as they did a few decades ago. Chris envisions a system where someone who comes in with pre-diabetes is assigned a nutritionist and a personal trainer and a gym membership rather than pills and no follow up. He sees this as cost effective: $1 million over the course of a lifetime vs. $10000 Chris sees this as a virtuous cycle rather than a vicious cycle. Things actually get better over time. We spend 3.2 trillion dollars per year on healthcare. That's $10000 per person, or 1/3 of the median income. We need to stop accepting chronic illness as normal. It's not normal, its common. As Angelo Coppola says, "Humans are not broken by default." The health insurance model has only been around for 60 years or so and people paid for their own. This kept costs down. Catastrophic Care gives the example of people giving the options of either taking statins covered by insurance or paying on their own to change diet and lifestyle and exercising.
