In this episode, I speak with Gary Taubes, Sami Inkinen, and Dr. Greeshma Shetty about an approach to treating Type 2 Diabetes that works. I also discuss how red meat is not to blame, but we should be looking at high sugar and starch diets. After falling off the wagon for a while, he returned to low-carb and began trying intermittent fasting as well. This combination of fasting and dieting helped him to regain the progress he had lost. Since then, he has been experimenting with the carnivore diet as part of his continued effort to discover which nutritional decisions are best for him. “You are never beyond help. You are never beyond hope.” This is the message that Ken wants to communicate. She began by making some simple changes and then transitioned to keto in 2018 by incorporating time restricted eating, intermittent fasting and some longer fasts. Today, she has maintained a 50-56lbs (22-25kg) weight reduction. As co-host of The Fabulously Keto Podcast, she interviews many people in the keto, low carb, real food, carnivore and fasting space from doctors and surgeons to people who have changed their lives. Jackie Fletcher and Louise Reynolds are the hosts of the Fabulously Keto podcast.After starting on her low carb eating journey in May 2017 and then moving to a ketogenic way of eating in January 2018, Jackie  discovered a passion for everything low carb and keto.Jackie tells about her childhood, when she always felt left out and overweight. She tried yo-yo dieting, but she couldn't sustain it. Eventually, in her 40s, she was at her heaviest, she felt like a failure, but she didn't even go to the doctor's because she had no intention of changing what she was eating. Then she listened to the audio version of Gary Taube's book "Why We Get Fat and What To Do About It". And it had a huge impact on her, because that's when she started to understand low carb eating. She changed her diet, adopted keto, then added intermittent fasting. Now she doesn't feel like she's on a diet, even though she's aware that she needs to be mindful of how she relates to her "head hunger", which is really just an emotional want of food, and not real hunger. Her current mantra is "Food does not control me...". Since late 2015, Louise has used low carb ketogenic way of living to address a number of health issues.Louise talks about how she used to live with her emotional eating habits and stress in her life. Her tipping point came when she consulted a colleague who was knowledgeable about eating disorders. She'd tried all kinds of diets, and then decided to have weight loss surgery. After a severe motorcycle accident, her mom - who'd discovered low carb - suggested Louise change what she was eating in order to help with her pain and inflammation. It was the science that made sense to Louise. Today we have journalist Gary Taubes making a repeat appearance on STEM-Talk to discuss his new book, “The Case for Keto: Rethinking Weight Control and the Science and Practice of Low-Carb/High-Fat Eating.” Our interview with Gary in 2016, episode 37, followed the release of his book, “The Case Against Sugar,” which went on to become a New York Times best seller. “The Case for Keto” is Gary's fourth book about diet and chronic disease. Gary made national headlines in 2002 when he wrote an article for the New York Times Magazine challenging the low-fat orthodoxy that had held sway in America since the 1970s. In the article, titled “What if It's All Been a Big Fat Lie,” Gary wrote that perhaps Dr. Robert Atkins with his Atkins Diet was correct in suggesting that it's not fat that makes us fat, but carbohydrates. Our conversation with Gary covered a lot of ground, and we have divided his interview into two parts. Today we talk to Gary about his reasons for writing the new book and how opinions on a low-carb and high-fat diet have changed over the past 20 years. In part two of our interview with Gary, we dig deeper into his efforts to set the record straight about the role of diet and weight control in preventing chronic diseases, as well as the role that diet plays in helping people improve their health spans. Gary turned to journalism back in the 1970s after receiving his master's degree in aeronautical engineering from Stanford University. Today, he continues to practice journalism and is the founder and director of the Nutrition Science Initiative. Show notes: 00:03:43 Dawn welcomes Gary back to STEM-Talk and asks how things went for him as a writer during COVID-19 and the lockdowns. 00:04:24 Dawn gives some background on Gary's new book The Case for Keto, which is his fourth book to follow and expand upon a 2002 article he wrote for the New Times Magazine titled, “What if It's All Been a Big Fat Lie?” She asks Gary if he ever anticipated writing four books about the relationship between diet and chronic disease when the article came out 20 years ago. 00:06:09 Ken mentions that Gary's New York Times Magazine article questioned the effectiveness of low-fat diets, which the government's dietary guidelines had been recommending since the late 1970s. Ken adds that almost overnight Gary become public health enemy number one, and asks Gary if he expected so much pushback as a result of the article. 00:10:53 Dawn describes how the release of Michael Pollan's book The Omnivore's Dilemma, which draws on work by both Gary and Dr. Atkins, seemed to change consumers' eating habits. Dawn then asks Gary if he remembers seeing or being surprised by the disappearance of pasta and bread from restaurants and grocery shelves. 00:14:41 Ken notes that in the blurb Michael Pollan wrote for the jacket of Gary's 2007 book, Good Calories, Bad Calories, Michael said the book would change the way people think about eating. While Gary's work did not end up changing national heart, health and diet guidelines, low-carb and ketogenic diets have become quite popular since then. Ken asks Gary what he thinks is driving this interest in keto. 00:19:41 Dawn describes Gary's 2011 best seller Why We Get Fat as a condensed summary of the research contained in Good Calories, Bad Calories combined with new research on hormonal-based weight gain. She mentions Gary's argument that the medical community and the federal government has misinterpreted scientific data on nutrition over the past several decades in developing a U.S. food policy that recommends a low-fat diet. Dawn notes there has recently been a steady accumulation of studies supporting carbohydrate restriction and the safety of saturated fat since Gary's first two books came out. Now 56, Cornell has maintained an 80-pound weight loss for the past two-and-a-half years. Sam Feltham has been in the health and fitness industry for over a decade. Starting out as a party coordinator at a sports centre and working his way up to studying at the European Institute of Fitness and qualifying as a Master Personal Trainer. After 5 years of running a fitness boot camp business Sam decided to move away from that business in order to fully focus on improving public health by setting up and directing the Public Health Collaboration. Sam started as a personal trainer and then set fitness bootcamps called Smash The Fat. Sam used to have his own podcast for Smash The Fat. After reading Why We Get Fat by Gary Taubes he started to recommend low carb, real food diets.In 2015 he felt he was in a philosophical quandary. He felt to continue the business would be an uphill battle against mainstream dietary advice, which Sam felt was bad advice. He felt the only way to tackle the issue was to get to the root cause.He decided not to continue with Smash The Fat and to set up a not for profit charity aimed at lobbying the government that the food guide lines need to be changed and suggesting that they might have got the guidelines wrong in the 80s.Sam proposed this to Dr Aseem Malhotra, Dr Trudi Deakin, Dr David Unwin, Dr Jen Unwin who thought it was a great idea and so the Public Health Collaboration (PHC) was started.Ambassadors ProgrammeThe Ambassadors are local representatives of the PHC, who liaise with healthcare professionals in NHS GP practices. They help set up free support groups and show the results the programme is achieving with patients improving metabolic health and saving money for the NHS.Andy Bishop is a PHC Ambassador who joined a patient participation group, then got the PHC on the agenda for a meeting. Eventually he was able to set up a group. It took 18 months to get the first group up and running but now has 4-5 groups in north Liverpool. We continue our conversation with Gary Taubes, journalist and author of the bestseller Why We Get Fat. In this episode Gary reveals a pet peeve of his: the establishment still considers Ketogenic and Low Carbohydrate/High Fat (LCHF) diets very unhealthy ways to eat, even though the recent resurgence of those diets has generated scores of clinical trials that appear to support the safety and effectiveness of this way of eating. Exasperated, he wrote an article  on the subject, which was published in Canada's, The Globe and Mail. Gary gets emotional when he relates a story a doctor told him about a patient, newly diagnosed with type-2 diabetes, whose health improved dramatically by following a LCHF diet. We discuss President Clinton's success on a vegan diet. Gary has a strong response for those who think that such success stories are just anecdotes, not science. We then consider what to do when your doctor tells you to get off the LCHF diet regardless of your success. Listen NowIn his recent work, The Case Against Sugar, Gary Taubes argues not all calories are alike.  Sugar, or the consumption of sugar, causes elevated levels of insulin, or hyperinsulenema, and high levels of insulin drives fat accumulation.  Rather than obesity causing diabetes, Taubes argues, hyperinsulinemia causes both.   That there's been an 800% increase since 1960 in the consumption of sugar and approximate doubling of diagnosed cases of diabetes since 1990 cannot be a coincidence.  (Per the CDC, over the past 25 years the age-adjusted prevalence of diabetes increased by ≥50% in 42 states and by ≥100% in 18 states.)   Not only does sugar consumption drive the diabetes epidemic, Taubes argues it can also be correlated to hypertension, cancer, stroke and dementia.        During this 35 minute conversation Mr. Taubes discusses the impetus for the book, sugar's relationship to elevated insulin levels and obesity and diabetes, the problem/s with the accepted belief that a "calorie is a calorie," the FDA's determination that sugar is GRAS (Generally Accepted as Safe), the role the Sugar Association has played in encouraging and defending sugar's consumption, the difficulty in scientifically proving sugar consumption is correlated to diabetes, hypertension and cancer among other prevalent serious and fatal illnesses, how much sugar do we consume and how much is too much, or how much sugar can we tolerate safely.    Mr. Gary Taubes is the co-Founder of the Nutrition Science Initiative, and a science and health journalist. He is the author of Why We Get Fat and Good Calories, Bad Calories. But fortunately for all of us, he's dedicated himself to tearing down conventional nutritional theory with his research, books, as well as the co-Founder of the Nutrition Science Initiative (NuSi). My first response to Gary's work in "Good Calories, Bad Calories," was giddy delight. Why? Because I believe that the underlying cause of the obesity epidemic isn't in eating too much and exercising too little. People are fat because they are malnourished and their bodies malfunction. This is a thesis I hadn't seen articulated sufficiently before discovering Gary's work. A few other reasons why Gary's books are must-reads: They're are dripping in solid science. When someone demands, "I want proof that carbs are fattening, restricting calories isn't healthy, whole wheat is dangerous, and eggs won't kill me," throw this book at them. Watch their eyes roll back in their head when the happen upon the formidable references section. Gary provides historical insight into how conventional wisdom about a "healthy diet" was confounded by bad science and commandeered by special interests. Although the books can be heady, they're certainly readable. Generally, slogging through science is tedious, but these books are surprisingly accessible and entertaining. Another very cool side-effect of getting Gary on the show was an unexpected insight. It was difficult to find a time to get us both on the horn because Gary tends to write until 1 pm on most days with limited distractions - no shows / interviews / unnecessary technology, etc. Doesn't that sound nice? Actually reserving time for yourself in the mornings to crank out work? I've started reserving my mornings for work, as well, and it's been amazing. No phone, no e-mail, no Facebook, no junk. Just clear-headed, creative work. Loving it. Alright, onto the show. This one's content-packed, so grab your notebooks and get stoked.
