The unexpected evolution of Italian food can serve as a tantalising doorway into some of the greatest moments of Italian history: from medieval monarchs, murdered popes, and the Renaissance, to secret societies, and Mussolini's fascist propaganda. Yet the history of Italian food is also riddled with myths and ambiguities, particularly the rustic, romantic idea of it as deriving in the homes of rural peasants. In truth, though the distinctive culinary identity of different Italian cities endures - rising and falling with the fates of their cosmopolitan foundations - the beloved Italian staples of today bear little resemblance to their historical antecedents. For instance, Venetian food was once renowned for its Middle Eastern spices, and an alarming quantity of eels, sweetbreads and sugar is recorded from a feast in Renaissance Ferrara. When was it, then, that Italian food developed its unique identity and reputation? Can it in any way be traced back to the food of the Roman Empire? Did pasta really originate in China before being brought to Europe by Marco Polo? And, does margarita pizza really originate in the whims of a famous 19th century queen? Ask most people to think of Italy and what's the first image that will come to their mind? For cycling fans it could be the Giro - but, generally, throughout the world, that picture in the mind's eye is as likely to be of food as it is, say, the national flag, the Leaning Tower of Pisa or the Colosseum.  In recent years, it's been noticeable for journalists on the race that the Giro has leaned further into the notion of Italy as a sort promised land of the finest food and wine on the planet – no longer just ‘the hardest race in the most beautiful place', per the sales pitch, but also the one where you'll eat the best meals.  Italian recipes are genuine, humble in origin but luxurious in taste – and also ancient. So at least we're always told. Part 1 - "The Madonna of the Mountain" In Calabria, southern Italy there is a mountain massif called Aspromonte, "harsh mountain". The villages that hug the mountain slopes, places like San Luca, Natile and Platì are the birthplaces of the clans that make up what is collectively known as ‘Ndrangheta – one of the most powerful organized criminal syndicates in the world. From these humble beginnings the clans have spread their tentacles around the globe and become major players in the international illicit drug trade. And one of the ways they did this was by reinvesting money from one illicit act into another - kidnapping. Freemasonry for centuries has been more influential than any other known secret society. Among its prominent members have been five kings of England, fourteen US presidents (including George Washington), and a veritable Who's Who of writers, artists, and politicians. Masons helped with everything from founding the United States to starting the Sicilian mafia, from connecting distant parts of the British Empire to coordinating revolutions, from being the bogeymen for the Catholic Church and fascist dictators alike to performing great works of charity. Welcome to the first stage of Our Giro, a series of podcasts by Richard Moore, Lionel Birnie and Daniel Friebe celebrating the best the Giro d’Italia and Italy have to offer. With the Giro d’Italia postponed because of the coronavirus crisis, The Cycling Podcast is embarking on a virtual grand tour instead. Starting in Budapest and finishing in Milan, our route will more or less follow that of the real 2020 Giro but with a few diversions thrown in along the way. Over the course of three weeks we will tell stories old and new about the Giro. We’ll have interviews and familiar voices and we’ll capture the flavour and sounds of Italy without leaving home. We hope it’ll have all the elements of our usual grand tour coverage, just without the racing. Ioan Grillo is a British investigative journalist and writer based in Mexico City. He has been covering Latin America since 2001 for news media including Time Magazine, CNN, Reuters, The Houston Chronicle, The Associated Press, GlobalPost, France 24, CBC, The Sunday Telegraph, Letras Libres and many others. His work has also appeared in The New York Times, BBC and Guardian. Ioan is also the author of the books Gangster Warlords: Drug Dollars, Killing Fields and the New Politics of Latin America (released 2016) and El Narco: Inside Mexico’s Criminal Insurgency (released 2011). As well as following drug trafficking empires, Ioan also covers the other major issues of Latin America such as natural disasters (including the Haiti earthquake), the battle between left and right (including the Honduras coup), and the vast human wave of emigration to El Norte. He was a consultant for the International Crisis Group for its first two reports on Mexico. He also loves music and covers it whenever he gets a chance. Dan Saladino looks at our long and tangled relationship with spaghetti. Both carbs and meat are under scrutiny and Mintel, which monitors consumer behaviour around the world, says we're eating less pasta. With that in mind Dan explore the past, present and future of a much loved British classic, Spaghetti Bolognese. Food historian Polly Russell uses the British Library's archives to help plot Britain's love affair with pasta, and goes in search of some of the earliest references and recipes for 'spag bol'. The food writer Daniel Young of Young and Foodish takes Dan on a tour of spaghetti history with lunch at The River Café, not the world famous restaurant but a traditional British café of the same name run by an Italian family who arrived in London in the 1950s. Spag Bol has been on their menu for nearly half a century. Meanwhile Dan's dad Liborio, who arrived in the UK in the mid 1960s finds out if his Britalian style spaghetti Bolognese sauce has enough to impress Giorgio Locatelli. The historian, John Dickie, author of Delizia, explains how making a television series for Italian television, Eating History (for SBS Food), led him to the world's first ever pasta factory. Dan also visits Italy's biggest pasta factory, owned by the Barilla family, where miles of the 'Spaghetti No.5' shape flows off the production line. Jacob Kennedy, chef and owner of Bocca di Lupo, together with Daniel Young, help Dan stage a pasta pop-up event at which the authentic Tagliatelle al Ragu Bolognese is pitched against a 1960s style Spag Bol. Have British eaters become too sophisticated for the home grown and will they vote for authentic Italian tradition instead? John Dickie is an historian of Italian organized crime who has a fairly unique perspective as he writes in English but is able to read the Italian sources. This allows him to bring new points of view and information to Anglo-American audiences. His new book is Mafia Brotherhoods: The Rise of the Italian Mafias (Septre, 2012). This book builds on his previous work Cosa Nostra: A History of the Sicilian Mafia, by including the other major groups from southern Italy – the ‘Ndrangheta and the Camorra. John points out the surprisingly recent creation of these groups and tracks their rise in their respective localities. The book is both entertaining and very readable. This is not dry history but the stories of real people, both as members of the organized crime groups and, in a much smaller category, those trying to fight the criminality in the region. It is not giving too much away to say that the criminals are winning – especially in the point of history at which this book ends, namely, the arrival of the Allies in World War II. Clearly this is volume one of a larger work and the next volume should be out this year. For those who are interested in the theory of organized crime, I suggest you suspend your assumptions as the data does not match current accepted wisdom. We see ethnocentric groups, hierarchical organizations, and the power of familial relationships. For those who simply enjoy reading about organized crime, you will not be disappointed as this book is full of everything you expect – crime, murder, drama and deceit. Overall it is a book of tragedy – tragedy for a beautiful region of the world overcome by a social disease

This book builds on his previous work Cosa Nostra: A History of the Sicilian Mafia, by including the other major groups from southern Italy – the ‘Ndrangheta and the Camorra. John points out the surprisingly recent creation of these groups and tracks their rise in their respective localities. The book is both entertaining and very readable. This is not dry history but the stories of real people, both as members of the organized crime groups and, in a much smaller category, those trying to fight the criminality in the region. It is not giving too much away to say that the criminals are winning – especially in the point of history at which this book ends, namely, the arrival of the Allies in World War II. Clearly this is volume one of a larger work and the next volume should be out this year. For those who are interested in the theory of organized crime, I suggest you suspend your assumptions as the data does not match current accepted wisdom. We see ethnocentric groups, hierarchical organizations, and the power of familial relationships. For those who simply enjoy reading about organized crime, you will not be disappointed as this book is full of everything you expect – crime, murder, drama and deceit. Panettone and chocolate logs - Sheila Dillon embraces two of the cakes replacing our "traditional" Christmas cakes on our Christmas tables, and ponders what what we mean by traditional when it comes to Christmas cakes. Panettone is a traditional Italian Christmas cake. John Dickie, Professor of Italian Studies at University College London and author of "Delizia! A History of the Italians and their Food" traces the history of this highly industrialised product from its Milanese origins, and the manufacturing of this "tradition". Reporter Dany Mitzman visits the Corsini Biscotti panettone factory in Tuscany where panettone is made in the traditional artisan style, using a mother yeast, slow proving, and cooling tipped upside down to allow the dome shape to set naturally, without additives. Their panettone is sold in through the Sainsbury's Taste the Difference range. But you can make your own - Fred Manson returned from an Andrew Whitley breadmaking course clutching a panettone recipe, and has been making his own ever since. As a teenager Sheila Dillon's Christmas culinary rebellion took the form of baking a bouche de noel, the buttercream sculpted chocolate log believed to originate in France, and still produced by the hundred in smart patisseries today. Yule logs are now a popular range for both patiseries and supermarkets in the UK. This year's BBC Radio 4 Food and Farming Award Food Champion, baker Richard Bertinet, baked Sheila his own take on the classic cake, adorned with gold leaf and powdered cabernet grape, and food historian Ivan Day tells its history in the UK. Sheila Dillon looks behind the scenes of the world's largest and smallest pasta factories. It's a difficult time as wheat prices are high and so competition for grain is fierce. Fires, droughts and speculation in the wheat market together with poor harvests of durum wheat is creating a rise in prices. Pasta producers all over the world compete for the best quality semolina, produced from the milled, high protein and low yielding durum crop.John Dickie, Professor of Italian Studies at University College London, outlines the rise and rise of pasta making in Italy dating back to the Middle Ages. Sicily had a large scale pasta export business dating back at least 1000 years but it wasn't until Italy's economic boom of the 1960's that pasta became a truly national dish.Reporter Dany Mintzman follows five tonnes of spaghetti as it travels along the production line of the world's largest pasta factory, owned by Barilla, a family owned business started in the 1870s.Farmers in the UK used to grow durum wheat when it was an EU subsidised crop. Although it is best suited to hot and dry weather conditions a lot of it was then used by British companies producing dried pasta for the supermarkets. That is no longer the case and the last factory selling mass market pasta stopped production in 2001, unable to compete with the vast scale of the Italian producers.However in Cornwall, one farmer, Charlie Watson-Smyth has spent the last two years trying to grow durum wheat and then turn it into pasta to sell in his farm shop. As reporter Dilly Barlow discovers it's been such a success that he's now supplying The Eden Project and restaurants around Padstow. Produced by Dan Saladino.
