Cook 1 minute to coat the vegetables and deepen flavor.Add 4 cups vegetable broth, 2 cans chickpeas, 1½ pounds potatoes and 1 can crushed tomatoes. Season with ¾ teaspoon salt, pepper, and red pepper flakes. Simmer 20–30 minutes, until the potatoes are tender.Serve with crusty bread or cooked grains. For extra flavor, top each bowl with grated parmesan or crumbled feta before serving.Chickpea Brownies2 cans (15 oz each) chickpeas, drained & rinsed1½ cups peanut butter (or other nut/seed butter)⅔ cup pure maple syrup6 tbsp unsweetened cocoa powder4 tsp vanilla extract½ tsp baking powder + 1 tspbaking soda6 tbsp milk of choice1 cup chocolate chips (plus extra for topping)InstructionsPreheat oven to 350°F (175°C). Line 8×8 or 9×9 pan with parchment.Blend chickpeas, peanut butter, maple syrup, milk, and vanilla until silky smooth (2-3 minutes).Add cocoa, baking powder, and baking soda; blend 45-60 seconds.Fold in chocolate chips by hand. Pour into pan, smooth, and top with extra chips.Bake 30-35 minutes; edges set, center slightly soft. It was during the roofing renovations that Jim and his team made a mysterious discovery. After removing a section of tiles and brickwork near one of the chimney stacks, they found a small doorway. What was a doorway doing hidden underneath the bricks and roof tiles? What was it for? Who had put it there? After opening it up, Jim went inside with a torch and found a small staircase which led down into a room. This room was quite large, and in one of the walls, a framework still existed for a door, which told Jim that this could have been some type of attic space. The door had been removed, and bricked up, leaving only the frame behind as the only indication that something had been there. From inside the house, there was no visible evidence to suggest that the room even existed ... so why was it there? This is episode 68 of the Haunted UK Podcast, and it's high time that we visited two very haunted properties ... Alex is committed to making Katie fall for him, not the prince version of him, so he volunteers to assemble a bookshelf even though he has never built anything in his life. She also invites him to gather firewood with her the next day. Love is definitely brewing.Then a bad snowstorm hits, which keeps the inn's cook, Gretchen, from making it in. Katie has to handle the kitchen, but… she's not great. Luckily, Alexander secretly loves to cook. A guy named William shows up, and Alex briefly assumes William and Katie are a thing, but they are very much not, which is a relief.Katie and Alex go down to the basement to look for a box of decorations. He finds some mistletoe, and yes — that's when the smooching happens.The storm makes it impossible for Alex to get to the airport on Christmas Eve. His parents, now very concerned, decide to come find him. Before Alex can confess who he really is, his parents show up and spill the royal beans.Shockingly, Katie handles it pretty well! Everyone ends up spending Christmas Eve together. Katie opens the gift her mom left for her — a key to the inn. It's officially hers.
