What is Christmas about but eating, drinking and being merry? Rosalind is here in part 1 of our two episode Christmas special to help you do all those things! But of course, Christmas is also about caring and giving so she's also been visiting a charity that is doing just that with the help of the public. First up on this festive episode of Scran Rosalind heads to Bowhouse Market in Fife - if you are looking for a festive shopping destination without any of the guilt of buying from supersize producers then this is the place for you!  Luckily there is one more market happening before Christmas so this is your opportunity to hear from a small selection of the food and drink traders who will be there to help you tick off that Christmas list. First up Rosalind chats to Susie Anderson of East Coast Cured, followed by Stuart of Barnett's Bakery in Anstruher who was joined on his stall by his daughter Jessie, Lucy Patto Davidson from Fodder and Farm and Rosie Jack who manages the market. Every year the team at Scran like to take the time to feature a charity in Scotland who is working with those who won't be able to enjoy the Christmas they might have wished for. This year we went along to the Eva Burrows Life House project in Cambuslang which is run by the Salvation Army. There Rosalind met with Karen Good who runs the service, service users Stephen and Peter and finally staff members Yvonne Mackenzie, Paula Thomson and David Dean. Christmas day platters: The Christmas countdown is on - meaning it's the season of sharing platters and pre-dinner nibbles. Pickled vegetables Cook time: 5 minutes Prep time: 10 minutes Serves: 12 Pickled vegetables can include: Carrots, fennel, baby beetroot, radish, red onions, cucumbers or red cabbage 1 tsp fennel seeds 1 tsp coriander seeds 2 chili 2 bay leaves 1 tsp mustard seeds 300 ml cider vinegar 250 ml water 1/4 cup sugar Sterilized jar and lid Firstly prepare the vegetables for pickling. Clean all the vegetables and cut in 1/2 or 1/4 or finely slice. Try to make all the vegetable pieces roughly the same size. To make your pickle mixture, start by toasting your seeds in a pan until fragrant. Place the rest of the pickling mixture ingredients into a pot, adding seeds once toasted and heat until boiling. Remove the pickling mixture from the heat and carefully pour the hot mixture over the top of the vegetables and seal with a lid. (If pickling cucumbers or finely sliced veg allow mixture to cool first) To sterilize your jars and lids - Start by washing the jars and lids in soapy water and rinse well with hot water. Place the jars onto a tray open side up and then into a cold oven and turn onto 100*c. Once the oven reaches 100*c, leave in the oven for another 5 minutes. Remove jars from the oven to allow to cool slightly before use. For the lids, simply place them into a pot and cover with cold water. Bring the water to the boil and heat the lids for 10 minutes before draining and using. Sticky Onion jam Cook time: 30 minutes Prep time: 5 minutes Serves: 2 cups 3 red onions, finely sliced length ways 3/4 cup balsamic vinegar 4 tbsp brown sugar Pinch of salt Place all ingredients in a heavy-based saucepan. Cook on a medium heat for about 20 minutes or until thick and syrupy. Stirring every couple 5 minutes.' Roasted beetroot hummus Cook time: 45 minutes Prep time: 10 minutes Serves: 6-8 2 cups chickpeas, soaked over night in water 2 whole beetroot 1 tbsp cooking oil 2 tbsp tahini 1 tsp baking powder 1/2 tsp curry powder Sea salt Pre-heat the oven to 180*c Individually wrap the beetroot in tin-foil, drizzle over a little oil and sprinkle over a touch of salt before wrapping. Place into the oven and cook for 30 minutes before testing. Test by inserting a small knife to see if the beetroot is cooked. Once cooked allow to cool before removing skin. While the beetroot is cooking, place the soaked chickpeas into a large pot, cover with cold water and add a touch of salt and the baking powder. Bring to the boil and cook until tender. Once cooked drain. Place the beetroot into a food processor and biltz until smooth. Add the chickpeas and biltz until smooth. Add the tahini, curry powder and seasalt to finish. Joining us for this insightful discussion is Kirstin Bouse, a clinical and forensic psychologist with nearly three decades of experience. She is the owner of Perth Psychology Collective, who offer a wide range of psychological assessment and therapy services to the local community. When her own perimenopause journey began 6-years ago, Kirstin looked to psychology and other health disciplines to make sense of and address what she was experiencing. It was like looking for a needle in a haystack. Upside: Keeps her expectations low. If you give her expensive stuff she'll assume you're thinking of leaving your wife to be with her. Downside: A mistress always has you by the balls, unless you have managed the trick of persuading your wife to the spiritual benefits of polygyny. Go cheap on the gifts and she may show up at your front door at 2 A.M. with a bag of candy. If she is a Christmas Eve one night stand: a six-pack of Michelob Light. If she is three-week-old fresh pussy: Be careful! Many a man has learnt a painful financial lesson when his loins were in charge of his credit card. Best bet: don't buy the potential slut anything. If she is a fling (you've been dating for fewer than three months, and plan to keep it that way): For birthdays, tickets to a show for a band both you and her like. Use her as a pawn to flirt with hipster chicks at the show. For Christmas, a scarf and a bottle of Chivas. Drink until she's hot and/or interesting. If she is in the three to four month limbo between a fling and a girlfriend, and you're not sure if she's the one: For birthdays, tickets to a show for a band she likes. For Christmas, a stuffed animal with a homemade card. If she is your girlfriend, #1 crush: For birthdays or anniversaries, bracelet or necklace if you are a beta. A puppy if you are a greater beta. A hot cocktail dress with accompanying lingerie if you are an alpha. A homemade mix tape if you are a super alpha. For Christmas, ditch the conventional trinkets of romantic servitude in favor of fun and funny. Maxim #140: The more expensive or thoughtful the gift you give a girl, the greater the risk that she will subconsciously begin to think she is too good for you. Corollary: If you are dating out of your league, or you are dating a young hot babe in her prime, you should do the exact opposite of what everyone will tell you to do -- *do not* buy her expensive gifts. If she's your aging wife in a country with divorce laws that favor the husband: Nothing. If she's your aging wife in the USA: Refinance the mortgage to buy her the moon. If she is girl #3 in your harem: Nothing. If you're trying to dump her: A toaster oven. Or kitty litter if you're a cheap bastard.
