Have you tried to find Le Syndicat bar on Rue Faubourg Saint Denis? They don't make it easy. Our guest today explains what's going on behind all those posters and why it's not to miss on your next trip to Paris. I think we need to toast to the father of Thibault Massina, the Creative Director at the one and only Le Syndicat bar in the 10th arrondissement in the City of Lights. Thanks to his introduction to wine's merits at an early-ish age, Thibault has become the wine connoisseur he is today. He has brought all his know-how to his role at Le Syndicat, changing up what we think of as a wine cocktail. After this episode, you might be rethinking all you know about wine in cocktails and I don't just mean vermouth. Our cocktail of the week is Appolin'Air. For those who might not know, Guillaume Apollinaire was one of the most famous French poets of the early 20th century - if Le Syndicat were around back then I am sure it would have been his local. Our guest today fell into distilling after years of being a self-proclaimed Pinot chaser. What is it exactly that drew her over to the spirit world? What to do when your country bans alcohol sales during the height of covid, and you own a distillery? Create a non-alcoholic spirit, and then find the perfect partner to help you introduce it to the world. Danielle Schoeman used her distilling know-how to produce Mahala Botanical, then she sent it to Paul Scanlon to see what he thought. Hidden away under the Bloomberg Building in the City of London lies the remains of the Roman Temple of Mithras, which you can visit. So what does that have to do with drinking? What is a work of art? That question is so subjective. Yet I truly believe that my two guests have made it possible for us to drink every cocktail we have at the St. Regis Venice in a work of art. My first guest is Facundo Gallegos, the Bar Manager at the St. Regis Venice. The second is Adriano Berengo, the President of Berengo Studio 1989 and Fondazione Berengo. On my way to Venice last year, I happened to ask the Bar Manager of the Berkeley Hotel in London what was the one bar I shouldn't miss. Without taking a breath, he said the St. Regis Venice. What made it so special, I asked, and he said, Facundo Gallegos. Adriano Berengo, on the other hand, was introduced to me by a random encounter in a coffee shop in Cannaregio. I was lucky enough to meet this cultural entrepreneur who established Berengo Studio thirty years ago with the goal of restoring glass to its rightful place in the world of fine art. Just by chance, I discovered they had collaborated on a project for the new Arts Bar at the St. Regis Venice. So, of course, I had to interview both of them. We are super lucky that thanks to the generosity of Facundo we have the singular sensation that is the recipe for the Santa Maria, the St Regis Venice's own take on the Bloody Mary as our cocktail of the week. It's a doozy, but hats off to those who try: INGREDIENTS 125 ml I 4.2 oz Clarified Tomato Juice 45 ml /1.5 oz Horseradish-Infused Absolut Elyx Vodka 25 ml I 0.8 oz Verjus du Perigord 3 drops Homemade Salt Solution 3 drops Homemade Spicy Tincture 100 gr Cayenne Pepper 50 gr Black Pepper Poli Grappa to spray on top METHOD The Clarified Tomato Juice: Blend tomato juice with agar-agar. Let it rest for 1/2 hour and then strain to get the clarified juice The Horseradish-Infused Vodka: Infuse a bottle of vodka with 100 gr of fresh horseradish chunks for 2 hours and strain Salt Solution: Blend 1 teaspoon of sea salt into 100 ml/ 3.3 oz of still natural water Spicy Tincture: Infuse 1 liter/ 33.8 oz of vodka with 100 gr of cayenne pepper and 50 gr of black pepper for 48 hours and strain Add all ingredients to a shaker with ice and throw 4-5 times. It wouldn't be fair to say I have a favorite restaurant in Venice, but my guest today runs the one spot that is nearest to my heart. Now he's not only wowing them with his world-class Venetian cuisine but he's created an amaro that makes the gondoliers sing. Thanks to the efforts of our guest today, you will now. Moving from New York City to Blackpool England is only a small step if your goal is to redefine what an English whiskey can be. Vince Oleson, Distillery Manager of Bankhall Sweet Mash, has taken that step. He is bourbon bent and hell-bound, to co-opt the title of the famous song by Hank Williams, Jr. Although, on their way to having liquid in the barrel for 3 years in oak casks, Bankhall's Sweet Mash was just too good not to share. I wish I had known my guest sooner. Every dinner party he has ends with a round of homemade liqueur. The liquid was so good that he was convinced to bottle it for the whole world to enjoy. Yorkshire is known for its turbulent weather and wildly romantic hills and dales, which influenced not only the Bronte sisters but our guest today. We have Richard Thompson, Co-Founder of Sing Gin, with me today on the program. When his father brought home a still, they were not sure what would come of it. Throwing caution to the wind, he and his family produced an award-winning gin that comes from and is tied to the Yorkshire landscape. He is here to tell us what transpired. London is one of the most popular cities to visit - great restaurants, bars, hotels, but it wasn't always that way. One man's vision changed everything when he opened a hotel that would become one of the most influential in the world. Our guest today introduces us to that man. He downed it pretty quickly and staggered out again, presumably much refreshed. The following evening he returned to the American Bar and asked Coley to knock out “some more of that hanky panky.” So she did. It's remained a popular cocktail ever since! INGREDIENTS 2 cups sugar (256g) 2 cups water (270ml) Sprigs of fresh mint Crushed ice Kentucky Straight Bourbon Whiskey Silver Julep Cups METHOD Make a simple syrup by boiling sugar and water together for five minutes. Cool and place in a covered container with six or eight sprigs of fresh mint, then refrigerate overnight if you have time. Make one Julep at a time by filling a julep cup with crushed ice. Add one tablespoon mint syrup and two ounces of Kentucky Bourbon. Stir rapidly with a spoon to frost the outside of the cup. Garnish with a sprig of fresh mint. After traveling all over Africa for work, he developed a love of Cinchona bark, the main ingredient in tonic water. Returning home, he just couldn’t find the exact product he wanted for his Gin and Tonic, so decided to create his own. Thus The Third Place Cocktail Co was born, but it almost wasn’t. As we move southwest to New Brunswick, we delve into the hidden gem of Atlantic Canada with its beautiful coastline, charming fishing towns, and epic national parks. It’s also home to Canada’s oldest farmer’s market in Saint John, which promises some pretty amazing local beers and spirits. Our guest, Sebastien Roy, is one of those making award-winning beers and spirits. He is owner and president, master-distiller and master-brewer of the first distillery in New Brunswick, the Distillerie Fils Du Roy, and it all began with his first taste of absinthe, well, maybe a bit before that. May I introduce you to my next guest - she has been the host of Lush Life podcast since its launch and is a voice you have grown used to after 176 episodes. She also seems to be speaking about herself in the third person. I think you may have guessed by now... Today, I thought I would turn the microphone around and answer all of those questions that I am always asked - why did you start Lush Life podcast, where this interest in all things cocktails came from, what my favorite cocktail is, etc. I have been reticent to talk about myself in past episodes because I want it to be all about my guests. Still a few fans of the show encouraged me to reveal a bit more about myself and now you have a whole episode about me before you - - careful what you wish for! Our Cocktail of the week is the Gingersnap Punch: INGREDIENTS 1 cup sugar 1/4 cup of grated fresh ginger 2 cinnamon sticks, broken up 3 to 4 whole cloves 1 gallon milk Glug of Ginger Vodka* METHOD Combine the sugar with 1 cup water in a small saucepan, and heat until sugar has dissolved. Add the grated ginger, cinnamon sticks, and cloves and remove from heat. Set aside to steep for 4 hours at room temperature. Add the syrup and the spices to the milk, and refrigerate for 2 to 6 hours to develop flavors. Strain, and serve cold or very gently warmed. (Do not allow the milk to get near a boil.) Serve with a cinnamon stick garnish and nutmeg on top *Ginger Vodka: 1 pound candied ginger to 1 liter vodka 1 week to 2 weeks ahead: Steep the candied ginger in the vodka in a large covered container. Day of the party: Pour the vodka through a fine strainer and discard the candied ginger. Return the vodka to a bottle and put in the freezer. (May also be served over ice cream or anything else.) Usually, at this time of year, I’ve gathered together a list of my favorite Christmas cocktails served in bars throughout London. Hopping from bar to bar to try their cinnamony, gingery, gingerbready concoctions is always my late November treat. Alas, as we are all very well aware, this year is unlike any other, but that hasn’t stopped me. In a cocktail shaker full of ice, add the Gin, the Lillet blanc, the St Germain liqueur, and the cider reduction.
