Phaedra Achor Flora Luna Apothecary founder Phaedra Achor is back on Brew Ha Ha with Steve Jaxon and Herlinda Heras today. Phaedra was also on Brew Ha Ha almost exactly two years ago on this episode on Dec. 22, 2022. There is big news in the beer world. Herlinda reports that RateBeer dot com is closing. Our friend and former co-host Joe Tucker sold it to a big brewing company several years ago. Buying a big beer ratings company, only to shut it down, looks like a corporate power play. There may be buyers who wish to purchase its assets. A lot of site users have postings there that date back many years. There are a lot of stakeholders who have questions. Herlinda will try to get Joe Tucker to come on the show soon to tell us more about it. Flora Luna Apothecary is Phaedra's company that produces botanical bitters, syrups and infusions, for creating uniquely flavorful cocktails and other beverages. Phaedra has a lot to say about holiday cocktails. The first one she is making in the studio today, named Festival of Lights, is a celebration of Hanukkah. It is a gin fizz made with olive oil which gives it a unique flavor and texture. Visit Russian River Brewing Co. on 4th St. and at their Windsor location. Click the logo to visit their website for hours, menus and beers on tap. What Bitters Are Bitters are botanical extracts, made from three components, a bark, a root and an aromatic botanical. Then, when you macerate them in an alcohol base, you extract the bitter compounds. Traditionally they were a medicinal, used to soothe the gut. Angostura bitters are the most famous example. Syrups are similar to bitters but they are more an infusion, with the ingredient cooked in the syrup. Phaedra formulates all the recipes and makes everything herself. Her website has all of her products. Her quarterly subscription box contains seasonal concoctions four times a year. The recipes that come with it can be made with or without alcohol. Flora Luna began in 2015 when Phaedra threw a cocktail party and made five different kinds of bitters for the occasion. They were a hit and some guests were really impressed. This encouraged Phaedra, then she realized that there was interest in cocktails and a lack of great bitters on the market. For the rest of the show they continue tasting and discussing some beautiful craft cocktails.

If you or your child has a bad cough, the first thing you'll probably do is reach for a cough syrup. It's easy, it's available over the counter and there's no fuss about taking it. But does it work? Is it at all effective to help your cough go away? Last year, a panel of the US Food and Drug Administration came to the agreement that phenylephrine, a common ingredient used in a number of cough and cold medicines is completely ineffective. Health bodies across the world emphasise that over-the-counter cough and cold medication should not be given to very young children – but this continues to be a common practice in India, despite the fact that research has pointed out that it may not even work for them. Two months ago, the Indian government too issued an order with regard to this – it said that a cold medicine combination that contained two ingredients, chlorpheniramine maleate and phenylephrine, should not be used for children under the age of four and these drugs should be labelled accordingly. So should over-the-counter cough/cold medications be stopped for young children? Are they safe for older children to take? If they are ineffective, why are they being prescribed and sold? California-based Olli Salumeria, known for its high-quality, artisanal salami, recently announced that it's launching the first preservative-free salami in the North American market. In this episode of the Xtalks Food Podcast, Sydney talks about the company's history of tradition, its products and the new preservative-free salami. Nitrates and nitrites serve several purposes in food preservation since they inhibit the growth of harmful bacteria, help to maintain the pink or red color of cured meats and contribute to the distinctive flavor of cured meats. However, there are concerns about the consumption of nitrates and nitrites, since they can form nitrosamines, some of which have been found to be carcinogenic in animal studies. The company's new curing process relies on a simplified salt cure and naturally occurring polyphenolic compounds, which are beneficial antioxidants commonly found in foods like berries, dark chocolate and red wine. The team wonders whether salt should still be considered a preservative but praises the company for catering to consumers looking for clean label ingredients and products.Also in this episode, Sydney talks about a recent phenomenon making waves on social media: water recipes. Water recipes refer to a variety of methods to enhance plain water by adding flavorings, typically sugar-free syrups, powdered flavorings or a combination of the two. The popular trend of sharing these water recipes on social media platforms, particularly TikTok, has been dubbed as #WaterTok. However, what began as a fun, quirky way for individuals to increase their water intake has also given rise to controversy. The line between water and juice seems to be blurring, causing many to question whether these enhanced beverages should still be classified as water. In addition, there is a debate around the excessive use of sweeteners in water recipes, with some nutritionists and dieticians cautioning against the use of artificially colored and flavored syrups. Pandan, also known as screwpine, is a herbaceous tropical plant that grows abundantly in Southeast Asia. It is famous for its long, slender, spiky, and upright bright green leaves that are similar to the palm tree. In Chinese, it is called "fragrant plant" because of its unique, sweet aroma. Pandan leaves are widely used in Sri Lankan, Thai, and other South Asian recipes to add a unique taste and aroma to savory dishes, flavorful desserts, and drinks. I'd like to share a potential educational resource, "Conversations Behind the Kitchen Door", my new book that features dialogues with accomplished culinary leaders from various backgrounds and cultures. The taste of the Sambal sauce In terms of flavor, sambal is generally quite spicy, thanks to the chili peppers that are used in its production. The heat level can vary depending on the specific type of chili peppers used and the amount of sambal that is added to a dish. In addition to the heat, sambal also has a bold, complex flavor that is a result of the combination of ingredients used in its production. The shallots and garlic provide a mild sweetness and a hint of pungency, while the vinegar and sugar add a touch of acidity and sweetness to balance out the heat of the chili peppers. The shrimp paste, if included, adds an additional layer of savory, umami flavor to the sauce. Overall, sambal is a flavorful and spicy condiment that adds a lot of character to the dishes it is used in. Where does Pandan Leaves come from? Pandan is native to Southeast Asia, including Indonesia, Malaysia, Thailand, and the Philippines. It has been cultivated for centuries in these countries for its culinary and medicinal purposes. Today, pandan is also grown in other tropical regions such as Australia, India, and Africa. How is Pandan Leaves used in cooking and cocktails? Pandan leaves are used to infuse a sweet, nutty, and floral flavor into various dishes and drinks. In Southeast Asia, pandan leaves are commonly used in rice dishes, curries, stews, soups, and desserts such as pandan cake, pandan chiffon, and pandan jelly. The leaves are also used to flavor drinks such as coconut milk, tea, and cocktails. Pandan leaves can be used fresh or dried, and they can also be turned into an extract or paste for more convenient use in cooking. One of the reasons why pandan has become popular in the U.S. is its unique sweet aroma and flavor. Pandan has a nutty, floral, and vanilla-like flavor that adds a distinct taste to many dishes and drinks. It's a popular ingredient in many Sri Lankan, Thai, and other South Asian dishes, and it's commonly used to flavor desserts and beverages such as pandan cake, pandan jelly, and pandan-infused cocktails. The fragrant aroma of pandan is also used in home fragrances, candles, and skincare products. Cooking with Pandan Leaves If you're a home cook looking to experiment with Pandan, there are a few easy ways to incorporate this unique ingredient into your cooking without having to make a Southeast Asian dish or dessert. One simple way to experiment with Pandan is to make a Pandan-infused simple syrup. To make it, bring 4 cups of water to a boil, remove from heat, then add 3 to 4 Pandan leaves. Let it rest, tasting every few minutes to determine your ideal concentration, then strain and chill. You can use this simple syrup to add a unique flavor to cocktails, iced tea, or lemonade. Another way to experiment with Pandan is to make Pandan extract. Cover Pandan juice and keep it in the fridge without moving it for 2 days (48 hours). Then, pour off the lighter-colored top layer,

Mallory has worked the entire chain of positions such as hostess, waitress, bar back, bartender and bar manager. Mallory left the US when she was 22 without a plan and a 1 way ticket to Istanbul. Mallory spent some time working and living in Turkey, Greece and Lebanon before moving to her current home in Dubai. Currently, Mallory is employed as the Brand Ambassador for Giffard Liquers and Syrups and splits her time between Abu Dhabi, Dubai and France. Beverages are continuing to perform successfully as a cannabis product category in both the US and Canada with distinct trends in both countries.Since the launch of Beverages in Canada around January 2020, market share of this category has seen significant growth until reaching a peak of 2.1% of the total Canadian market in December of 2021. With a longer history of Beverages in the US, market share has experienced  slower, more consistent growth in the US over the same time period.The count of Beverage products has grown faster in California than any other US market. By the end of 2021, California had doubled their product offerings to just over 530 distinct cannabis Beverage products.Segment shares are very different between the US and Canada. In the US, the largest Beverage segment is the Drops, Mixes, Elixirs, and Syrups, which made up 27.7% of total Beverage sales from January 2020 - January 2022. In Canada, Carbonated Beverages are the biggest segment, which made up 51.5% of sales during the same period.As the Beverage segment matures in Canada, prices seem to be stabilizing for the products. In January 2020, Canadian Beverage products averaged at $16.21 per product. By January 2021, the AIP for Beverages in Canada dropped 146% to $6.58 per product. We are coming at you with another 2 part episode looking into the story of Timothy Evans, a Welshman who was hanged for the murder of his wife and daughter, Beryl and Geraldine Evans. It seems like a pretty straightforward albeit tragic case however, on the 24th March 1954, the bodies of three women were discovered in an alcove at 10 Rillington Place in London. Soon, the police uncovered the real killer of Beryl and her daughter wasn't Timothy Evans but in fact, John "Reg" Christie.
