Den 8 mars 2018 hade Max Burgers ett seminarium i Stockholm. Man presenterade då sina ambitioner kring hållbarhets- och klimatfrågor samt en serie av nya vegetariska burgare. Jag var där och lyssnade samt spelade in seminariet. Det här podavsnittet är producerat i samarbete med Max Burger. Efter det ordinarie seminariet, när åhörarna var ute och testade Max nya gröna burgare, så gjorde jag en intervju med Anna Richert matexpert på Världsnaturfonden och Ingela Stensson, omvärldsanalytiker på United Minds. Vi talade kring kött- och vegomat, trender, traditioner och hur vi får till en hållbar livsmedelskultur. Det blir också inslag från chefskocken Jonas Mårtensson, hållbarhets- och informationschefen Kaj Török och några av panelisterna, bland annat tidigare politikern, numera VD:n Maria Wetterstrand i poddavsnittet. Efter samtalet i konferenslokalen kunde även vi gå ut och prova på de nya burgarna som serverades i korridoren på Garnisonen konferens. Film 3. Max chefskock Jonas Mårtensson och Sverigechefen Christoffer Bergfors fångade mitt i varsin tugga av de nya burgarna. Bakgrund till beräkning av klimatpåverkan Scope 1 är förbränning av fossila bränslen för t.ex. tillverkning i egna lokaler och fabriker eller utsläpp från egna fordon och maskiner. Scope 2 är förbrukning av el, fjärrvärme och fjärrkyla. Scope 3, resten, är utsläpp från varor och tjänster man köper in t.ex. logistik, flygresor, taxi, materialförbrukning, livsmedel. Det här är saker man behöver i sin verksamhet, utsläpp utanför kärnverksamheten som uppkommer till följd av det man håller på med. Det är viktigt att man minskar på sina bidrag till klimatpåverkan så mycket man kan -och därefter kompenserar det som återstår. Och att det är en iterativ process, dvs att man upprepar processen för att bli ännu bättre. Tanken är vara "neutral". Jag sätter det inom citationstecken eftersom inget är neutralt i ett komplext system. Men när det gäller flöden av gaser så håller en modell där man adderar och subtraherar ganska bra. Och det gör också att man skulle kunna gå lite längre. Jag resonerar kring det i podden. Att kompensera med marginal. Jag tror inte samhället kommer att komma till en punkt där vi kan konstatera att någon aktör har "kommit i mål". Hållbarhet är inte heller ett "End Game" som schack eller maraton. Men det är viktigt att aktörerna rör sig i rätt riktning, bort från det ohållbara. Och det är viktigt att vi konsumenter ställer krav och kommer med feedback på vad de gör. Max är ambitiösa i sina ansträngningar att skapa nyttiga och goda livsmedel med liten klimatpåverkan. Men/och de är fortfarande ett bolag med krav på avkastning till ägarna. Det är då intressant att se att de hanterar bägge dessa saker och att de vill leda burgarbranschens hållbarhetsfrågor. De sätter press på övriga aktörer i branschen att agera. /Martin

De två stora trenderna är hållbarhet och hälsa, säger Lennart Wallander på Food & Friends Communications, en PR-byrå som jobbar med mat och dryck. Hur går det till att trendspana? Kommer trenderna från några speciella platser eller länder? Vad är definitionen på en trend? Finns det olika sorters trender, olika starka strömningar? Lennart Wallander skiljer på trend och fluga: En fluga just nu är rainbow bread, regnbågsfärgat bröd. Kul att lägga ut på sociala medier, men knappast nåt som kommer leva vidare. Ingela Stenson är omvärldsanalytiker och strateg på PR- och kommunikationsbyrån United Minds. För att hitta trenderna måste man förstå historien, kartlägga nutiden och sen se samband, möjligheter och hinder i framtiden, säger hon. Vi frågar oss: vad längtar människor efter? Vad saknar de? Trender inte bara något som är intressant för en liten elit eller nördar: Trender angår alla, säger Lennart Wallander. Det är som med mode. Det börjar smalt men sen sprider det sig. Linnea Sjögren och Jonas Pettersson är bibliotekarierna som blev tångexperter. De tror på svensk tång som en mångsidig matingrediens. Och de vill naturligtvis gärna se en tångtrend. I några år har de jobbat för det, men hur har de lyckats? Finns det en tångtrend? Vi har fått ett väldigt stöd från kockar, säger de när Meny besöker dem i deras tångmagasin i Havstenssund i Bohuslän.  De tycker sig se en tångtrend som startade när Tommy Myllymäki använde tång i Bocuse d'Or. Men på t ex mässor är det inte lika lätt att intressera folk. Det man vill är att det ska bli som pasta. Det var trendigt en gång men nu är det nåt som man äter varje dag. Och vad säger trendexperten om tång?
