Black Caddis began as one of Preston Theony's homebrew recipes, but rather than create a take on an existing style, he started with the flavor he wanted to achieve and built a recipe to realize that. Now, after brewing the beer commercially at Wren House (https://www.wrenhousebrewing.com) for the better part of the past decade, he's still not done experimenting with changes to not just the recipe, but the core of fermentation itself. More recently, the beer has moved from ale fermentation with a Kölsch strain to lager fermentation with a 34-70 strain, in order to amplify the “clean, cutting characteristic” that Theony sought. It's dark beer in the 4% ABV range sold in one of the hottest of the United States, and drinkability is paramount. Similarly, Theony has never stopped tinkering with their hazy IPA recipe, despite core beer Spellbinder's gold medal in the juicy or hazy IPA category at the 2020 GABF. Note that anything he mentions doing or using in this podcast is subject to change, and this is only a snapshot of where they are at this brewing moment. Housing affordability has become such a crisis in Texas, it could be the one development that derails what's known as the Texas Miracle, the economic engine driving the Lone Star State. But sky high demand, property taxes and inflation have combined to drive up the cost of housing to such a level, some experts say Texas no longer has a cost advantage. Put another way, before now, businesses had no problem enticing employees to the Lone Star State because most folks could easily afford a home. Now, though, that same home has become too expensive for many would be workers: homeowners, and renters alike, regardless of income level. And that's made us more like, dare we say, California and New York than many Texans would like to admit. The problem is now such a threat, some of the brightest minds in the state sent a brief to lawmakers for the 88th Texas Legislature identifying ways to address the affordability crisis. Kim Sturdevant from San Francisco's Social Kitchen and Brewery is our guest on Brew Ha Ha with Steve Jaxon and Mark Carpenter. Herlinda Heras is traveling again this week and will call the studio from Poland in a few minutes. She is one of the judges in the Polish National Beer Competition in Poznan. She will also be co-hosting a big beer festival in China later this month. She will call in from Poland in a few minutes. Kim invented the Brut IPA and Black Lager. He’s the owner of Social Kitchen and Brewery in San Francisco.Kim Sturdevant has made a Black Lager beer, which they are tasting. Mark thinks it’s delicious. It’s not heavy at all, a very nice light beer. Mark says he’s innovative and is doing a lot of cool stuff. Kim started brewing at Marin Brewing Company in October 2006. He got a brewing job and rose through some promotions for five and a half years. Then he became brewmaster at Social Kitchen and Brewery. He has free reign over beer operations and his innovative beers are the result of this freedom to experiment. The black lager is based on a traditional German Swartz beer (swartz means black). It’s also brewed with Spelt malt, which is called Dinkel in German, so its name is Dinkelswartz, which is fun to say. The spelt malt lends a nutty flavor. Spelt (also called farro) is an ancient type of wheat. This is 5.6% alcohol. Mark says it’s clean and nice and crisp, a great beer. Next they taste the Brut IPA. Mark thinks this will become a popular style, it’s the first new style in many years. When he started making IPAs it was hard to keep them clear. Now hazy beers are popular. But the Brut IPA is clever and creative. It uses enzymes that were only used in light beer and Mark is impressed by its creative style. This is 7.2% alcohol but doesn’t taste strong. Mark says it has more aroma and less bitterness. At this moment Herlinda Heras calls in from Poland, via Skype (with excellent sound quality!) where it is late at night. She is there to be a judge in the Polish National Beer Competition. There are judges from all over the world. She is one of the only Americans. She judged some “West Coast IPAs” which is what they call our American style beer. She can’t say it was great, as much as she loves them. So they asked her to bring some West Coast IPAs to them next year. They have a climate that is normally too cold to grow hops. She comes back Saturday, then on Sunday she leaves for Shanghai to co-host the China Craft Brewers Association Awards. After the break, they talk about the Brut IPA. Mark thinks a lot of this beer and is honored to hear the story. Kim tells how it all started when a friend brewer tipped him to using enzymes to break down complex sugars and starches. The enzymes in barley malt turn the starches into sugars, which are smaller carbon chains that the yeast can consume. There are enzymes that keep doing that and convert all the starches to sugars especially glucose, which is fully fermentable. He was using it in his triple IPA as a way to make it less sweet. He thought, what if I applied this to a standard strength IPA, so the hops could shine through. Dry and hoppy but balanced. He wanted to make it champagne-like, pale and spritzy and refreshing. Mark says it's really different and that it will become popular. Kim describes the process in detail. The name Brut came from a friend who tasted it who also likes champagne and she suggested the idea. He made the first one about a year ago. There is also a handful of places in San Francisco making Brut IPAs. Mark says Drakes and Henhouse are both doing it. Kim started a batch of Brut IPA at Henhouse a few days ago. This one will be more carbonated and the batch will go into cans. Mark says these inventions often get lost. For example, nobody knows who was the first to make Steam beer. But this is well-documented, that Kim Sturdevant has created Brut IPA. Social Kitchen and Brewery opened in 2010 and he joined them in 2012.

Though somewhat of a NKOTB (new kid on the block for you non-90’s kids) Tombstone Brewing Company is raising quite a ruckus in the Arizona craft beer scene. From their bang-up Double IPA to the rumors amuck regarding their barrel-aging program owner Matt Brown and brewer Weedy Weidenthal are fetchin' to change the game. In this episode I sit down with Matt and shoot the crap about Tombstone and beer.   My journey to the "Town Too Tough To Die" began just like any Old West adventure begins: wrasslin' the young 'uns into the wagon with enough provisions to make the 2 hour journey to our midway oasis, The Old Pueblo (also known as Tucson).  We left the homestead right on time so I was grinnin' like a weasel in a hen house. But that only lasted a short time. 20 minutes into the journey the smooth air ride suspension of the wagon sailing over the bumpy highway caused my oldest young un' to fill a burlap sack (Whole Foods reusable grocery bag) with her breakfast. This led to detour #1 of the trip (throwing that away at the nearest Quick Trip ASAP ) soon to be followed by detour #2 (stopping at CVS for another "burlap sack" in case it happens again). Back on the road again. All was good again. Until the youngest of the young 'uns decided that a potty break was a non-negotiable 5 minutes from our desert oasis (my wife's grandparents house). Low and behold 2.5 hours later we reached our first destination.  In Old Pueblo I transferred my gear from my wagon to the lifted-suspension wagon of my buddy Max, an ace-high chap, who would be my escort through hostile territory (we passed at least 3 Safeways) along with his gal Kelsey who would take over as our designated wagon master so that Max and I could get all roostered up. And off we went albeit a little behind schedule. But damn it, I was makin' it to Tombstone come hell of high water.  The trip down was estimated to be 75 minutes and it truly did feel like a trip in the Old West including the group of 4 fellas we passed by who I'm pretty sure were smoking 6 cigarettes atween the 4 of em. The hills truly do have eyes.   We finally pulled into town a quarter to high noon but owner Matt Brown was much obliged to sit down, bend an elbow and jaw about his place. The next day was their big grand opening and his day was surely filled with a heap of "how do you do's" and what not but he was steadfast on making the time to talk with me.  I was, and still am, truly grateful that he made the time to still record the show with me despite my delayed arrival. I got to wet my whistle with an array of brews including a few that weren't being served until the next day at the grand opening party. I definitely hit paydirt with the Double IPA and Black Lager but all were fantastic. The Scotch Ale that was aged in Islay barrels was granny-slappin' good in particular.  A huge thanks to Matt for being such a great host and thanks to Weedy for making such amazing beer. Next trip down there I plan on being on a looser time schedule so I'll have all the time in the world to drink all of their beer. I mean it. We can’t get enough of these guys… or their delightful brews. We are joined once again this week at Alley’s Alehouse by Holly Joy Cole of New Holland Brewery and Jeremy Nicely of Evil Czech Brewery and Public House. Returning this week to Co-host is the Grandfather of Indiana beer, Mr. Ron Smith, who gives some insight into Black Lagers, Hops, and Saisons vs. Farmhouse ales. When we start a show, typically everyone at the table is drinking a different beer until we get into the reviews for the evening. Oddly enough, tonight, we looked around and everyone at the table was sipping on a Taxman Bean Counter, which has quickly become a Pig favorite at Alley’s. But as always, we got to dig into other craft beers as well. And tonight was a treat with two great breweries in the house. Jeremy brought us the Plato 14 Black Lager, and if we didn’t already love him enough for introducing us to the Evil Bigsby, he took it up a notch and brought us some delightful and inspiring Barrel Aged Bigsby. Not to be outdone, Holly brought out the big guns with a little New Holland Dragon’s Milk Vanilla Chia, some Cabin Fever Brown Ale for those chilly winter nights, and then took us over the edge with some wonderfully complex New Holland Beer Barrel Bourbon. Another splendid evening with good friends and great beer and whiskey. Cheers!
