First, what is a sparkling wine?A sparkling wine is one with carbonation. So we can start with how the carbonation gets into the wine. First, there is the Traditional Method where the carbonation is produced through a secondary fermentation of the wine in the bottle. This is how Champagnes are made, as well as many other sparkling wines from around the world. It is often a more expensive wine due to the labor involved in production. Sparkling wines can also be produced using the tank method or (Charmat Method). Prosecco is made by the tank method which involves a second fermentation that takes place in a large tank. Then the wine is bottled under pressure to maintain the pressure.If you like a dry wine, look for a Brut or Extra Brut. If you prefer a sweeter wine, look for a Dry, Sec, or Doux.Tonight, we will try two sparkling wines including: Sterling Vintner's Collection California Brut. We purchased this wine from Costco for $12.89. The Wine Enthusiast rated it an 88, and noted a touch of sweetness with notes of cherry and jasmine blossom, nectarine, apricot, and cut grass. Cooper's Hawk Sparkling Lux. We purchased this wine from Cooper's Hawk for $34.99. The wine is produced in the Traditional Method and is made from grapes grown in the Bordeaux region of France. It is made from 70% Semiillon and 30% Cabernet Franc. Aromas of green apple, lemon, yellow pear, and toast. Called a Cremant de Bordeaux.Next week we will have our year in review show. Prosecco is not only Italy's most popular sparkler, but recently it has surpassed Champagne to become the world's best-selling sparkling wine. In this show we go over the details of the Prosecco region, the winemaking techniques, and I share the most important thing about the wine and how to get the best: the DOCGs that make way better wine than the cheap and cheerful stuff at the supermarket. By the end of the show you'll understand why Prosecco shouldn't be compared to Champagne (spoiler alert – it's not made the same and that's on purpose!) and how to get better versions of what you may already be sipping! Photo Valdobiaddene, Unsplash Here are the show notes: Location: The Prosecco DOC is in North East Italy between the Dolomite Mountains and the Adriatic Sea. It spans four provinces of the regions of Friuli Venezia Giulia (Gorizia, Pordenone, Trieste and Udine) and 5 provinces of the region of Veneto (Belluno, Padua, Treviso, Venice, Vicenza). Treviso and Trieste can add the special titles of Prosecco DOC Treviso and Prosecco DOC Trieste given their historic importance. Given the vast area the DOC covers (23,000 ha/56,000 acres) and the diversity of soil – from poor hilltops to fertile, loamy valleys and plains – it is difficult to name a single style of Prosecco. Climates also range –from cooler sites with mountain or marine breezes, to very warm flat areas that produce masses of grapes for industrial wine. Source: Prosecco DOC Grape: The Glera grape is the main grape in Prosecco (although it used to be called the Prosecco grape!). It is grape prone to high yields, which must be controlled to get high quality wine. When it is grown on good sites, it has moderately high acidity, a lighter body, and relatively low alcohol levels (the wines are usually not more than 12% alcohol by volume). Flavors range but typically Glera exhibits melon, peach, pear, and white flower notes. Prosecco can also have up to 15% Verdiso, Bianchetta Trevigiana, Perera, Glera lunga, Chardonnay, Pinot Bianco, Pinot Grigio, and Pinot Nero grapes in the blend. Source: Prosecco DOC Prosecco is NOT Champagne and it shouldn't be compared to it (or any of the other wines made in that method). The key difference in the flavor of Prosecco, apart from the Glera grape, is in the winemaking techniques (again, different from Champagne!!). In this process, you harvest the grape and make wine through a primary fermentation. But whereas in the traditional method of sparkling wine, where secondary fermentation takes place in individual bottles, Prosecco's secondary fermentation takes place in autoclaves, large steel tanks kept under pressure. The process takes as little as a month (versus the required 9 months for most sparkling wine in made in the traditional method), and the wines do not rest sur lie for a long period of time, so the fruitiness of the Glera grape is maintained, rather than replaced with the yeasty, bready character from the yeast. Further, the pressure within the bottle is significantly less in Prosecco, making it a much less bubbly wine in most cases (although there are exceptions). The process has several names: the Martinotti Method, the Charmat Method, Cuve Close, Tank Method, or Conegliano-Valdobbiadene Method. It's important to recognize that for grapes like Glera (or Riesling in Germany where this method is also used) preserving aroma while getting a fresh effervescence is the goal – they should not be handled like grapes used for the traditional method – the goal of those wines is different. Hence, we should not be comparing Prosecco to Champagne or other sparkling wines – it's apples and oranges, really. Source: Prosecco DOC There are several types of Prosecco, they vary based on how sparkling they are: Spumante (sparkling), which is the most common and the most bubbly and has a regular sparkling wine cork In 2020, Prosecco DOC Rosé was approved as a new sub-category of Spumante. It must contain at least 85% Glera with 10-15% Pinot Nero. The wine must use the Martinotti/Charmat Method but spend 60 days in autoclave v 30 days for Prosecco DOC. It is vintage dated. Frizzante (semi-sparkling), which has light and less persistent bubbles than Spumante an is more floral than fruity and often bottled with a screw cap. Proseccco Col Fondo, is a frizzante, but more specifically a pétillant naturel(pét-nat). That means a single fermentation takes place in the bottle from which you drink the wine. It is cloudy and full of lees, or dead yeast cells, and often a bit bready from years on the lees. Tranquillo (still), which is very uncommon and is bottled before the secondary fermentation Similar to all sparkling wines, there is a sweetness scale for these wines, which you will see on the label: Brut Nature (0-3 grams per liter of residual sugar) Extra Brut (0-6 g/l of residual sugar) Brut (up to 12 grams per liter of residual sugar) Extra Dry (12–17 g/l of residual sugar) Dry (17–32 g/l of residual sugar) Demi-sec (32-50 g/l of residual sugar) The DOCG The 20% of high quality Prosecco production happens around the smaller, hilly, historic DOCG towns of Conegliano, Valdobbiadene and Asolo. These areas have strong diurnals, poorer soils (meaning, better for the vines), and the wines are a few steps above general Prosecco. They are more complex, the fruit flavors are purer – lemon, peach, pear notes are strong as well as floral notes, flintiness, chalk, and saline aromas and flavors. The wines tend to have lower levels of sugar and are more terroir driven. They are trying to distance themselves from cheaper big-brand Prosecco DOC, some even have elected to remove the world “Prosecco” from their front labels. Here are the Prosecco Superiore DOCG to seek out: Conegliano Valdobbiadene Prosecco Superiore DOCG is a cut above and it's a fairly low risk way to see how better Prosecco tastes. Conegliano Valdobbiadene Prosecco Superiore “Rive” DOCG is from the steep hills and top vineyards of 43 designated sites – these are outstanding terroir driven wines Valdobbiadene Superiore di Cartizze DOCG is the top wine of Prosecco. It consists of 107 ha/264 acres of vineyards on the steepest hillsides of San Pietro di Barbozza, Santo Stefano and Saccol, in Valdobbiadene. The Conte Priuli Prosecco Rosé 2020 is a $6.99 Trader Joe's Sparkling wine, but it is available at other retailers in different parts of the world. It sells at the Marks and Spencer store in London for the equivalent of 16 dollars US and at a similar price in wine shops in Ireland.A wine that is a store brand that sells for a meager price does not mean that it is a cheap wine. Sometimes, well, most of the time, store brands are bargains. The Conte Priuli Prosecco Rosé 2020 is a vintage-dated Bubbly and a Rosé, a recent development for Prosecco.Prosecco was easy to define; it is a Sparkling wine made with Glera grapes grown in the Prosecco region using the Charmat Method. Rosé needs grapes with pink to red skin to get its color, and that usually means red grapes, but some White grapes such as Pinot Grigio can have enough color for Rosé.The worldwide popularity of Rosé caused some changes in with the wine authorities in Prosecco. A Rosé Prosecco is rated DOC and can include 10% to 15% Pinot Nero (Pinot Noir). It can not be non-vintage; it needs to be vintage-dated. It is basically regular DOC Prosecco with Red wine blended in before bottling.The Conte Priuli Prosecco Rosé 2020 is an Extra Dry Bubbly. Remember, with Sparkling wine, some of the sweetness ratings are backward. Extra Dry means slightly sweet, which is how most Italians prefer their Prosecco. Sparkling wine has enough acidity to balance the most sugary sweetness in the wine. The effect is more fruit-forward than sweet.A regular non-vintage Prosecco is a blend of several recent vintages to ensure a continuation of flavor from year to year. A Prosecco Rosé is Pinot Nero added to Prosecco grown in the same year, so these wines should see more fluctuation from vintage to vintage.The Conte Priuli Prosecco Rosé 2020 is a $6.99 Sparkling wine in America, but a $16 Bubbly elsewhere. It is produced by a large Italian wine company that sells its wines under different labels in different countries worldwide. The alcohol content is a mild 11%.Conte Priuli Prosecco Rosé 2020 Tasting NotesThe color is Barbie Doll pink, with a slew of energetic bubbles. The nose is not unlike the typical Prosecco, a blast of sharp grapefruit and assorted citrus, but the Conte Priuli Prosecco Rosé 2020 also adds black cherry hard candy and faint stone fruit.This is a crisp, clean Sparkling wine, and the addition of Pinot Nero (Pinot Noir) adds rounded flavor and some extra structure. It tastes like a tasty and unexpected mix of lemon and cherry, sort of a cherry lemonade sensation but not sweet. Then there is grapefruit, lime, a salty and nutty flavor, soft spice, and dried strawberry bits.The acidity and the extra sugar balance each other. The acidity adds a brightness and shine to all the flavor.The SummaryThe Conte Priuli Prosecco Rosé 2020 is a tasty Bubbly.I like my Champagne with Pinot Noir added in, and it turns out that I like my Prosecco with a bit of Pinot Nero (Pinot Noir).Do not let the $6.99 price tag put you off. If you think it is too cheap, you can always fly to London and pay $16.
The Bortolomiol Bandarossa Prosecco 2019 is an extra dry, DOCG designated, vintage-dated Prosecco from a family-owns winery with roots dating back to the mid-1800s.The central Prosecco region in Veneto is rated a DOC, but a section in the middle of Prosecco called Valdobbiadene is where the DOCG wines are located.The Italian wine authority ranks the various wine regions and issues designations. There are rules and regulations concerning the grapes' farming and the wine-making for each tag.Many value-priced wines are issued an IGP ranking, which has less strict regulations. Then DOC and at the top is DOCG. The G stands for guaranteed, not that you are assured that you will like the wine, but that the highest standards were met.The Bortolomiol Bandarossa Prosecco 2019 is from vineyards in Valdobbiadene, making it a DOCG wine, but it is traditionally the best Extra Dry Prosecco from each vintage.In the US, most folks like their Sparkling wine to have a Brut sweetness rating. Brut means not sweet. In Italy, Extra Dry is favored, which means the Bubbly is slightly sweet. Prosecco has enough acidity to counterbalance the natural sugar in the wine. The effect is then more fruit-forward than sugary.The Bortolomiol Bandarossa Prosecco 2019 label of wine was the winery owner's private stock. Bandarossa translates to red stripe, and these bottles were the best Prosecco of that year and were given to friends and family.Most Prosecco you see on store shelves are non-vintage. They take Prosecco made in different years and blend them to the House Style. A green deal of effort goes into developing a House Style. They want a Bubbly that you can return to year after year and be assured of the same quality and dinking experience.A vintage Bubbly does not get blended with other vintages. It is meant to showcase the finest attributes of that particular vintage. As the flagship wine of the vintage, this Bubbly gets all the finest winemaking techniques.The Bortolomiol Bandarossa Prosecco 2019 is intended to be the finest Prosecco of the vintage. Bortolomiol also has another high-end specialty vintage-dated Prosecco, but the Bandaroosa highlights the current vintage.Prosecco is Bubbly made with Industrial Age technology, while Champagne is produced with Renaissance area tech. Prosecco uses the Charmat Method, which has 2nd fermentation happening in giant pressurized vats.The pressurized vat forces the CO2 released in fermentation back into the wine, and the result is bubbles. The Bortolomiol Bandarossa Prosecco 2019 is in the tank for 3 months (a long time for Prosecco), then aged in a bottle for two more months. The Story of New Mexico BubblyThe Gruet Blanc de Noirs is a non-vintage blend of 75% Pinot Noir and 25% Chardonnay sourced from vineyards in New Mexico along with grapes from, I believe, California and Washington. The term "Blanc de Noirs" translates to White from Black, yes, I know, White wine grapes are usually green and Red wine grapes are purple or red in most cases, but for some reason the French use terms that are color blind.Gilbert Gruet started farming a vineyard in Champagne in the 1950s and the 1960s founded his Champagne winery near the village of Bethon in Champagne, France. He heard from other French winemakers about a promising, off the beaten path grape growing region in New Mexico. He decided to check it out and in the 1980s started a vineyard and by 1989 was selling New Mexico Bubbly based on the Sparkling wines from Champagne. In 2010, the Gruet Blanc de Noirs was named to Wine Spectators Top 100 Wines list, not bad for a Bubbly selling for less than $15.The Gruet Blanc de Noirs is produced with the Traditional or Champagne Method of production. Here the grapes are fermented the first time, the 1st fermentation is where all the secret House Style techniques take place. After fermentation, the wine is bottled, but before a temporary top is attached a measured amount of yeast and sugar is added to every bottle. The 2nd fermentation then takes place inside the bottle, the yeast and sugar do their job in about 30 days, but the dead yeast and residue stay in the bottle for a minimum of 18 months. During that time the CO2 that was released as a result of the 2nd fermentation incorporates into the body of the wine. After 18 months or so, the dead yeast and gunk are removed from each bottle and the bottle is topped off with a little bit of wine and maybe some sugar to reach the intended sweetness level, such as Brut or Extra Dry. Just like they do it in Champagne only this time it's occurring in New Mexico. The alcohol content is 12%.The Tasting NotesThe color is pale gold with a hint of pink, along with a flurry of pretty little bubbles. The nose is crisp and clean, toasty vanilla, pear, grapefruit, green apple, and black cherry. This is an elegant Bubbly, well-balanced with tantalizing hints of flavor. It tastes of cherry and vanilla, peach and pear, tart grapefruit, and raspberry. The mid-palate shows that salty, nutty thing that 18 months of "on lees" provides, ripe McIntosh apple, and a flash of tangerine. The flavors are all subtle, they float in and out. The acidity is sneaky, it will get you reaching for another sip. The finish is soft and long.The Summary * I have to admit my favorite Bubbly is the Pinot Noir based stuff, Blanc de Noirs, of course, I'm perfectly happy sipping the Chardonnay-based stuff as well. So, I am predispositioned to dig the Gruet Blanc de Noirs. * We last reviewed this Bubbly in 2010 and while the price has risen in the last 9 years my enthusiasm seems to have remained. * This is an excellent Sparkling wine/Bubbly. It is not merely good for the price. * I have sampled the next level up Gruet Bubbly (around $25 to $30) when compared directly with Champagne Bubbly 2 or 3 times the price and in my mind, the Gruet won. * When making your Bubbly purchase for the upcoming holidays let flavor and texture be your guide, not just price tag. Inexpensive Bubbly can give the entry-level Champagne Bubbles a run for their money. For additional information check out the companion podcast below

Marika Rossa (UKR) - NightVision Techno PODCAST 67 Pt. 2 Bio: Marika Rossa is a Ukrainian techno dj , famous for her strong performances at major Ukrainian electronic music festivals, such as Kazantip festival and Global Gathering Ukraine, and countless sets across whole Europe and Mexico. In august 2012 Marika appeared at the Swiss Street Parade official closing event “Electric City”, where she joined an all star lineup that included everyone from Umek to Sven Väth, while warming up for Dj Rush. In March 2010 she joined the “Italo Business” label with the “Loppestein” track, produced together with Dandi & Ugo. It was included into their new album “Fritto Misto”, released at the end of March on “Italo Business” label and followed by such releases as “Sexy Shop”, “E Buradel” and a remix to the “Masai” track by Vuk Smiljanic. Being rated as the #1 female techno dj of Ukraine, now Marika Rossa is becoming one of the most recognizable female djs in Europe, and is making a considerable impact in the process.
