Tasting Notes:  Double-aged Dominican rum in both ex-bourbon and ex-sherry casks. Subtle tropical fruit on the nose with passion fruit, guava, and hints of fresh-cut oak. On the palate, lots of barrel spice with with the sherry influence taking over. This rum is owned by the same company that runs The Macallan, so the double aging and use of ex-sherry casks is no surprise. The spirit itself is light but still richly flavored.

Andrea Bignotti, proprietario de Il Cultivar delle Volte - cantina Bignotti in provincia di Brescia, ospite mercoledì 24 maggio nel Buena Onda, in compagnia di Laura Basile e di Giangiacomo Secchi, ha parlato di bollicine: «La bolla si sposa bene con tanti piatti. Negli ultimi anni si sta abbinando con tutto, ma frutta e bollicine è da cultore». Nella sua cantina Bignotti propone anche alcune specialità: «Abbiamo cominciato a sperimentare nel 2005 delle spumantizzazioni su base Chardonnay e Brugal fino al Pinot nero».
