Esther Dawson is a Certified Sommelier based in Ontario with over eight years of experience in hospitality. Esther currently works as the Sommelier, Cellar Lead, and F&B Content Creator at Langdon Hall Relais & Châteaux, where she's not only on the floor pairing wines and opening bottles, but also involved in the marketing and media side—crafting content, managing promotions, and helping tell the story of the restaurant's food and beverage program. Esther began her journey in wine while working in hospitality, with formative years spent at The Elora Mill and nearly a decade at Langdon Hall, where she officially became a sommelier in 2023. She holds certifications from both the Court of Master Sommeliers and the Wine & Spirit Education Trust (WSET Level 3), and is currently preparing for her Advanced Sommelier certification. What is their technique for getting their work done while still having the time to spend pursuing hobbies and spending quality time with their friends and family? The truth is that great and lazy CEOs know a secret when it comes to time management. Rather than spending a little time on a lot of things, the best CEOs spend most of their time eliminating the single biggest constraint to the growth of their business. They spend a lot of time diagnosing this constraint before taking action. This process is similar to looking for the kink in a garden hose so you can get the flow going again. These is no use trying to unkink the hose until you find the actual problem. Depending on the nature of the constraint, they engage in fixing the kink in the hose using one of five different roles the Learner Architect Coach Engineer Player These form the archetype for great leadership. These are all high leverage roles that create a permanent improvement in the business. This insight isn't just some theory either; it s derived directly from working with thousands of CEOs running high growth companies. The trick to being great and lazy is to only work at the point of constraint and avoid all work that doesn't increase organizational capacity. Lazy CEOs have a series of well developed tools to properly avoid this non-value work. I choose a lazy person to do a hard job. Because a lazy person will find an easy way to do it. -Bill Gates. Molly Horn is the Cocktail Strategy Manager for Total Wine & More, the country's largest retailer of wine and spirits (Forbes). Molly's responsibilities include tasting, recruiting, branding, and marketing new first-to-market spirits, as well as educating sales floor team members on spirits and mixology. Before the pandemic, spirit sales accounted for ~27% of Total Wine's sales. As a result of the pandemic and a growing national interest in spirits and cocktails, in some stores, spirits now account for as much as 50% according to Molly. The company created her role to help them keep up with demand and enthusiasm.In this conversation, we talk about additive-free certifications in tequila, the NA movement, some of her guilty pleasures, how she thinks about training her staff, and more.To the NA movement, according to Total Wine's internal numbers, ~80% of NA sales are made to people who also drink alcohol, which helps highlight that its growth is being fueled by people who are enjoying NA products at times instead of or in addition to products with alcohol.Do you know someone who might enjoy this? Jay Bordeleau, the owner, creator, and mastermind behind one of the top Jazz venues in San Francisco, Mr. Tipple's, has always loved the arts and is constantly driven by his “it's-so-crazy-it-just-might-work” ambition. He was able to combine this deeply rich cooperative leadership style with a profound passion for hospitality while designing, building, and operating his first restaurant: Maven.  Jay's collaborative work style was formalized while playing drums behind the orchestra as a music performance major at the University of Michigan, Ann Arbor. And his life-long passion for wine also led him to earning his Certified Sommelier and Advanced Wine Specialist title from Wine & Spirit Education Trust (WSET). Mr. Tipple's is a cozy yet elegant jazz club, cocktail bar and restaurant with three distinct - but also overlapping- types of clientele. Some come in for the music, others for the expertly crafted and carefully poured drinks and a third group for the dumplings, bao and clay pot rice. Matteo's father Vito, was from Chiaramonte Gulfi in Sicily and his mom is from Lissone near Monza. Matteo's family from his father's side has been making wine forever, and when he was young he would spend summer vacations and holidays in Sicily together with his grandparents and relatives. Artistic High School and then graduated in Business Communication at the Cattolica di Milano University. He went to work in London, first in wine retail and then as sales representative for a Master of Wine that took him under his wing and taught Matteo everything about wine. Back in Italy in 2009 started working for Gulfi wines to finally become, after a few years, The Business and Communication Director. In 2017 after his father passed away prematurely, Matteo and his two brothers took control of the entire Azienda Gulfi with the strenuous support of the whole Gulfi Team. Raffaele the oldest brother is in charge of the vineyard's management, and Matteo is in charge of the Commercial, Logistics and Marketing portion. Salvo Foti is the Technical Supervisor who has been close to the Catania Family since the beginning. Matteo is passionate of cycling, free-diving, mountains and mushroom picking, but mostly he is passionate of drinking wine and the pursuit for the promotion of Pachino to DOCG. She grew up working in restaurants, but it wasn't until a 6-month trip abroad between undergraduate and graduate school working on a coffee farm led her to fall deeper in love with wine. We talk about how she started to notice the nuances of both coffee and wine, the similarities, and the importance of place. Upon her return to Atlanta, she worked at East Pole Coffee Co. and simultaneously returned to Cooks & Soldiers to continue her wine education. She began hosting wine classes at her home and later started a business designing in-home tastings and wine events for private clients. This episode features Sommelier Dustin French and Bern's Steakhouse. Dustin grew up in upstate New York in a small town called Bolton Landing. At the age of 12, he started washing dishes on weekends at the local diner where his mother worked. He continued working in restaurants during the summer throughout high school and college working almost every position imaginable. After graduating college, he tried to pursue a career in finance while still bartending and waiting tables on the side. After shifting his goals to the hospitality industry, he moved to Tampa, FL in October of 2020 and began his career at Bern's Steakhouse that December. He first started working in the bar department, but he switched over to the wine department when an associate sommelier position opened up. In October of 2021, he completely moved over to the wine department and has been working the floor at Bern's ever since. We talk about what makes this wine program so incredibly unique, and he provides some insights into the beautiful history of this special place, He also speaks to the caliber of the wine collection that he gets to work with on a daily basis and how he is simultaneously pursuing his own wine education. He currently holds the Certified Sommelier designation through the Court of Master Sommeliers and has his eyes set on taking the Advanced exam in 2024. About today's guest Maria: Maria was born in Quito, Ecuador but grew up in Queens, NYC - the most diverse place in the United States! Maria started to fall in love with food & wine while studying abroad in Spain and traveling to numerous cities, including Porto, Portugal, where she visited her first winery. Since that first tasting room, she has eagerly sought out new winemakers from close-to-home regions like Virginia all the way to the Pinot Noir and Sauvignon Blanc hotspots of New Zealand.
