De mots en mots, ici, ce sont bien plus que les saveurs du Liban qui s'égrènent au fil d'un alphabet élargi à plusieurs mots d'arabzi, mais les goûts, les souvenirs, les gestes, la tendresse, les sous-entendus culturels, les scènes d'hier résonnant aujourd'hui, les chaises tirées sous la table en bord de mer, les rougets frits tout juste sortis de l'eau, l'accueil et sa profusion, l'achta et ses trois sens (glace, crème, pomme cannelle) et le zaatar dont le sens diffère en fonction des saisons, des histoires intimes et uni libanaises qui illustrent si justement l'attachement d'un peuple à sa terre, à sa cuisine. La cuisine, l'âme et le souffle du Liban À l'aune de ce que traversent les Libanais et le Liban aujourd'hui : dans ce pays marqué par les conflits, où la diaspora est plus nombreuse que la population intérieure, sauvegarder la culture, le patrimoine culinaire libanais, transmis uniquement oralement, parait essentiel. Ses grands-mères, ses tantes lui ont enseigné la cuisine Exilé depuis plus de 30 ans en France, Karim Haïdar a d'abord enseigné le droit avant de devenir cuisinier, grâce à sa tante Mona qui lui a enseigné sa première demi-douzaine de recettes incontournables – dont la Kebbe bien sûr ! Sa mère et ses « têtas » (« les teta sont des grands-mères ») l'ont nourri sans même qu'il se rende même compte de la chance qu'il avait de manger tous les jours des trésors. Ses plats mijotés par sa grand-mère maternelle et sa grand-mère paternelle qui l'ont sensibilisé aux saisons, à la santé dans l'assiette, aimantes « têtas ». « Il faut en avoir une pour comprendre exactement ce que c'est », explique la fille de Karim. Ces histoires, le cuisinier poète et conteur aime depuis toujours les partager en posant un plat fumant d'aubergines sur la table, après vous avoir enjoint à tremper vous aussi votre pain dans l'huile d'olive et le labneh, et à filer en cuisine chercher sa dernière découverte. Co-fondateur du groupe de rap The Shin Sekaï aux côtés de Dadju, Abou Tall opère depuis deux ans un tournant dans sa carrière en mélangeant des sonorités brésiliennes à ses origines sénégalaises. Yasmine Nachabe Taan interviews Beirut-based, French-Lebanese illustrator Aude Abou Nasr. They discuss Aude's educational and professional journey from starting in architecture into illustration and activism. Aude discusses her interest in narratives that address issues of belonging and the strife of migrants (women in particular). She also discusses her passion for projects that address justice and social issues, and her commissions and collaborations with various artists and organizations. Together they unpack her creative process, her creative commitments, and the challenges of making a living as an illustrator.
