You alluded to the future in your January interview, tell us about "THE LIST"? “The industry continues to gain positive momentum, ending 2024 with a record-breaking 1,112,196 rooms consumed,” said Julie Pingston, Choose Lansing® President and CEO. “The hotel occupancy rate landed at 54.2%, surpassing 2023's occupancy rate, both of which are offset by the addition of 800 hotel rooms to the overall inventory since 2019. Today, we are setting the table with a traditional food of Appalachia, “Apple Butter.” Each year in the fall time of the Mountain South, you can find pockets of people who get together, and cook down bushels of apples, sugar, and sometimes cinnamon into this biscuit-slathering favorite. It is one of those old-fashioned foods that is still a favorite on dinner tables near and far and makes a favorite gift for the holidays. Almost as important as the final product is the sense of community and preservation of culinary traditions that these “Apple Butter makings” preserve. Our featured guest is Derek Blankenship, an Orthopaedic Therapist at an East Tennessee long-term health and health care facility. Derrick and his family keep a family tradition of making apple butter each year at this time of year in Fall Branch, TN. The recipe that they use dates back to 1905. Our local meteorologists tell us this momentary fall-like weather won't last long. We can thank Hurricane Helene for this brief blast of cool weather. Of course, a fantastic amount of rain came with it, but at least we got a glimpse that fall is technically here. Yesterday, I talked about one of my seasonal favorites, apple cider. And that got me thinking about one of my all-time favorite treats, apple butter. This festival includes lots of Bluegrass music, old-fashioned southern food, vendors with honey, and a church group out of Morristown making and selling apple butter. My guests are Jill Hepperley and her Mother Cheryl Free of Townsend, TN - Cheryl is an incredible Southern cook who opens her home every Sunday to the community for a good home-cooked meal. She and Jill reach people in dark places with biscuits and unconditional love. They will be serving up Beans and Hoe-Cakes (Pinto Beans and fried Cornbread) Fried Bologna, and Fried Apple Pies at the Townsend Fall Festival all for the greater good and I can't wait for them to tell you about how they love on people through food. We also visit with apiarists and owners of Smoky Ridge Apiaries, Judy and Coly O'Dell of Maryville TN. They are passionate about helping honey bees, and protecting honey bees, and freely give their time and expertise to help people set up hives and raise bees. They will also be set up at the Townsend Fall festival with their honey, Muddy Pond Sorghum, pollen, skincare, crafts, and more, and most importantly, a happy smile for everyone. The Townsend in the Smokies Fall Festival takes place Sept. 29-30, 2023 from 10-11, both days. The festival provides an atmosphere where family and friends of all ages can partake in time-honored Appalachian traditions at a free community event. The Wellston Ohio Hill Country (OHillCo) Festival will be celebrating a special milestone this week as the festival turns 50 years old. This semi-centennial celebration falls along the lines of another special milestone in the City of Wellston. Wellston is celebrating its sesquicentennial (150 years) this year as the city was founded in 1873. Some special festivities will be happening at the festival to mark both occasions. In this episode, the JR discusses the significance of apple butter in Appalachian culture. Drink Recipe: Drown the Witch 2-3 ounces bourbon 1 teaspoon of Apple Brown Sugar Simple Sugar 1 tablespoon apple butter 3-4 ounces apple cider Optional: a splash of ginger brew, an apple slice, and a cinnamon stick for garnish. Alcohol-Free: Brew a spicy black tea of choice - cool and use 2-3 ounces in place of the bourbon. Follow the rest of the steps. Apple Spiced Brown Sugar Syrup: Add 1/2 cup dark brown sugar, another tablespoon of Apple Butter, and as much as you want of the following: ground ginger, clove, cinnamon, nutmeg, and apple spice. Fill the container with boiling water, stirring until everything is dissolved. Refrigerate in a container with a lid. It will keep for two weeks. It is Apple Festival time again, and the Victory Grange is once more recruiting for volunteers to help with their fundraiser. Each year, the Grange makes apple butter to sell at the festival, with the proceeds going to such community projects like the homeless, the school's weekend food and backpack programs and 4-H projects. Volunteers will be needed on Friday, Sept. 9, Saturday, Sept. 10 and Monday, Sept. 19 at the Grange Hall on Pattonsville Road, then each day during the festival. Today's episode is a Family Cookbook episode that I've wanted to make for quite a while. It features two of my favorite foods from the area where I went to college (and where MANY of my ancestors lived for over a century) - Deep Fried Biscuits and Homemade Apple Butter, from Indiana. Each year in the fall time of the Mountain South, you can find pockets of people who get together, and cook down bushels of apples, sugar and sometimes cinnamon into this biscuit slathering favorite. It is one of those old fashioned foods that is still a favorite on dinner tables near and far, and makes a favorite gift for the holidays. Almost as important as the final product is the sense of community and preservation of culinary traditions that these “Apple Butter makings” preserve. Our guest is Derek Blankenship, OT, at an East, Tennessee long term health and heath care facility. He and his family keep a family tradition of making apple butter each year at this time of the year in Fall Branch, TN. The recipe that they use dates back to 1905. Wayne Buchanan's family has been getting together one weekend in the fall for generations to make apple butter in his great-grandmother's kettle, which dates back to the pre-Civil War era. She originally started making the apple butter, but wouldn't let a soul help her work. Somewhere along the line, the whole family started chipping in and for decades, they've collaborated to produce a delicious haul that keeps them eating good through the coming year. Wayne teaches Latin at the high school where I teach and is a brilliant man. He's learned and sophisticated and talking to him, you may not guess that he and his siblings, some of whom are chemical engineers, grew up doing subsistence farming to raise all their own food. Wayne's dad, a professional and engineer himself, believed that the years he spent farming as a youngster were so beneficial to his character, that he wanted to make sure his children had the same opportunity to learn lessons that only hard work can teach. Wayne tells us about apple butter and education - both formal and informal - and gives us a look at his Appalachian family and heritage. I know you're going to enjoy hearing from him. When I was in elementary school we were told the stories of the great American folk heroes that helped explore, settle, and exploit the American frontier. Some of you are old enough to remember the guys I’m talking about- Walt Disney made them famous back in the 1950’s. They actually showed us the cartoons in the classroom. There was Paul Bunyan with his Blue Ox, Babe, who conquered the north woods by chopping down and clearing out millions of acres of pine trees from Maine to Minnesota. And the steel driving man, John Henry, who could drive a rock drill with a sledgehammer faster than a steam powered machine, cutting tunnels through the Appalachian Mountains for the expanding railroads across the country. And Pecos Bill who was raised by coyotes on the high plains of Texas, used a rattlesnake as a lasso, once roped a tornado and rode it into submission, and scared all of the war paint of them Injuns, which made the painted desert. Yeah, kind of gave all of us in elementary school back then a warped sense of history, being that some of our greatest American heroes were completely made up bullshit. But, there was one of Disney’s American Legends that was an actual person; Johnny Appleseed. And according to Disney, he may have been the most IMPORTANT of all American frontiersmen. Armed with only a Bible, a bag of apple seeds, and a tin pot for a hat, Johnny was encouraged by his VERY own guardian angel to go west and plant orchard after orchard of apple trees from Massachusetts to Pennsylvania, over the Appalachian frontier into Ohio, Indiana, and Illinois, so the settlers across this growing land could have tasty apples to make Apple Tarts, Apple Cobbler, Apple Sauce, Apple Butter, Apple Fritters, Apple Cake, and, on and on and on. We were all taught that only because of Johnny Appleseed and his dedication to spreading the apple across our nation, we have that most American of foods, Apple Pie. But, there was one thing that Disney didn’t really explain; John Chapman, (his real name) wasn’t growing apples for Apple Pie. He was growing them for cider. And not the kind of cider that we let the kids drink on Halloween. No, John Chapman was cultivating orchards and nurseries of apples for one purpose; hard cider, Early America’s favorite alcoholic beverage.

Well I can't think of a more fitting topic in October then apple butter. Apple butter graces tables all across America and beyond each year, especially in the cooler months. Rather simple to make, it's ability to be used as an ingredient rather then a stand alone condiment is why I consider it a multi-purpose ingredient.
