Everyone loves a good list, and that's especially true for food people. We love identifying and then arguing over the best … whatever — burgers, beverages or, in the case of this episode, donuts.Our sweet discussion gets a seasonal spin as we focus on apple cider donuts and nine local (and local-ish) places churning out the orchard-friendly bakery item. Up front, it's important to note that we haven't actually been to all of these places. But we're told that the team from Milwaukee Magazine who compiled the list adhered to the strict standards laid down by the nonexistent Donut Review Council of North America. In news we found considerably more sour, the excellent chef-driven restaurant Brandywine announced that it'll close Nov. 7, and it's no surprise that every reservation between now and then got snapped up. This was a real gem in Milwaukee's suburbs — and a real surprise considering chef-owner Andrew Wilson noted that “business has been fantastic.” But, as you'll hear in the full episode, this appears to be a decision motivated by work-life balance and how difficult (impossible?) that is in the demanding restaurant world.We wrap things up with two more stops around Milwaukee. First, it's Bartlett Avenue on the East Side, which said goodbye to upscale dining spot The Original in June. Co-owner Craig Rzepka decided to make a return appearance with a more casual concept called OG Pub & Grille set to open soon. Then it's over to the Deer District, where the Bucks rolled out their new food and drink options for this season.

Transcript [music] Welcome to Food Safety in a Minute from Washington State University Extension. Are you planning to make apple cider this fall? Remember, food safety is key. The juice must be pasteurized. Unpasteurized juice may contain harmful bacteria such as Salmonella or E. coli O157:H7. Apples don't need to be perfect, but always wash them under cool, running water. Trim spoiled or bruised spots, then core and cut into smaller pieces. Equipment—including food processors, utensils, and storage containers—is washed and sanitized. Press apples using a clean muslin sack or cider press. After pressing, pasteurize juice by heating to 160 degrees Fahrenheit, confirmed with a thermometer. Hi Bakers! Grab a mug of tea and a warm, buttery cinnamon-sugar-covered apple cider donut. Take a big bite and savor the sweet apple flavor with a crunchy sugar exterior. If you bake anything this Fall, make these iconic donuts! They'll bring a smile to your face and you'll be glad it's apple season! Concentrated cider in the dough makes these treats smell and taste divine. Don't want to stand over the stove for 30 minutes to cook the cider down? No problem, I have an easy hack you can use instead. This is one of my most loved recipes and I hope you adore it too! Enjoy! ~Carolyn Gluten-Free Apple Cider Donuts Revised for gluten-free from Sally's Baking Addiction makes 12 donuts (unless you overfill them like I usually do!) Dry Ingredients 1¾ cups Cup4Cup Multipurpose gluten-free flour ¼ cup blanched almond flour 1½ teaspoons sweet rice flour ¾ teaspoon baking powder ¼ teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon salt ¼ teaspoon allspice ¼ teaspoon nutmeg Wet Ingredients 3 tablespoons melted butter ½ cup granulated sugar ¼ cup light brown sugar 1 large egg 1 teaspoon vanilla extract ¼ cup 2% milk ¼ cup applesauce, unsweetened ¼ cup apple cider, (reduced amount)****  For rolling Melted butter  Cinnamon Sugar (In a wide shallow cereal bowl combine 1 cup granulated sugar and 1 1/2 teaspoons of cinnamon.) Directions: ****Begin by pouring 1½ cups of apple cider into a medium-sized saucepan. Heat until boiling over medium heat until cider is reduced to ¼ cup. This will take about 30 minutes. If you don't want to reduce the cider, you can use apple juice concentrate instead. Simply thaw it and measure out ¼ cup.  Preheat the oven to 350F degrees. Oil the donut pans, and set aside. In a medium-sized bowl, whisk the dry ingredients together and set aside.  Mix melted butter, granulated sugar, and brown sugar in a large bowl until well combined.  Add egg, vanilla, milk, reduced cider, applesauce, and mix well. Pour the dry ingredients into the wet ingredients and stir until just combined.  Spoon the batter into a piping or large ziplock bag and twist the end shut. Then, cut the tip off the bag so you have a 3/4” inch opening. Pipe the batter into the donut pan so it is about ¾ full. Batter is very thick so this takes some work. Bake the donuts for 10-12 minutes until the donut springs back when touched with your finger. Cool for 5 minutes and transfer to a wire rack. Dip the donuts in melted butter, front and back, and then coat in the cinnamon sugar mixture. Donuts are best eaten the day they are made but will be good in the fridge for another day. Heat briefly in the microwave if desired.

I have to admit, I was a bit confused when I first heard today's topic—grounding. Sure, I walk on grass and dip my toes in lakes, but I didn't quite grasp the full picture.  Luckily, our guest, Dr. Henry Ealy, is here to enlighten us. He's a naturopathic physician with a background in engineering, making him the perfect guide to explore grounding's deeper benefits. Dr. Ealy explains how we spend most of our day insulated from Mother Earth, missing out on the benefits of connecting with nature by walking barefoot or swimming in a lake. Forget about beer, or even water; it was hard apple cider that was THE drink of choice in colonial America. Even kids drank it! And since it's made from apples – the “all-American” fruit – what could be more American than cider?But apples aren't native to America. They're originally from Kazakhstan.In this episode we look at the immigration story of Malus domestica, the domesticated apple, from its roots in the wild forests of Central Asia, to its current status as an American icon.
