I've taken the classic French Dip sandwich and updated it with some venison backstrap. The signs of a well-made French dip are easily distinguishable from the bad ones. The bread-to-meat ratio must be correct. The cheese must be melted, the bun toasted, and the meat a beautiful medium rare. The au jus must be flavorful and complement the meat as well. I believe I hit all those marks here for this sandwich. Hendrick Verspecht Hendrick Verspecht from cuVer Brewing Co. is our guest on Brew Ha Ha with Steve Jaxon and with Peter Lopez sitting in for Herlinda Heras today. Hendrick's first time on Brew Ha Ha was this episode of September 16, 2021, just before cuVer opened. He was also on BHH on May 5, 2022. Now they are preparing to celebrate their second anniversary, on October 7, 2023. They begin by tasting the award-winning cuVer signature Pepperwood Saison Ale. Peter is a busy entrepreneur who runs Juncture Taproom and is a partner in Santa Rosa Pizzeria. Today he has brought some sandwiches from Santa Rosa Pizzeria. They are all named after something iconic in Santa Rosa. This panino is called Taylor Mountain. Another is Pierre's French Dip. cuVer is pronounced “koo-VAy.” Cuver is the root of the past participle cuvée, which means Ferment. When the Cushing family and the Verspecht family formed the partnership, they took the first letters of their two names and made cuVer. Hendrick tells that the French expresson “cuver son vin” literally means to ferment one's wine, but idiomatically it means to sleep off a hangover. The Pepperwood Saison Ale was the first recipe that Hendrick ever made. It is a Belgian farmhouse ale flavored with California Bay Laurel and Meyer lemon peel. Those are ingredients are not available in Belgium so this is a real California Belgian version. cuVer Second Anniversary: October 7 cuVer will be celebrating their second anniversary on October 7, 2023. Peter Lopez' restaurant was one of their first customers. The anniversary celebration will feature a food truck, Lila's Streetside Eats, and will go from 12 noon to 8 pm on October 7. They will also have a darts and cornhole tournament. They have a darts league every Tuesday night. The party will feature a competition where you can play to win cuVer merch. They are located in Windsor at 7704 Bell Road. They are down the street from Barley and Bine. They are closed Monday and Wednesday. The other days, Tuesday and Thursday open from 5-8pm, Friday and Saturday 12 noon to 8pm and Sunday from 1-6pm. The next beer they taste is a Belgian quadruple, which is even stronger then the Belgian Tripel. Hendrick tells the story of how his father wanted Belgian beers after they moved to California, and he started home brewing, for themselves as much as for others. Hendrick also gives credit to Anderson Valley Brewing and North Coast Brewing and Russian River Brewing Co., who also make Belgian styles.

Nearly every major city has a particular sandwich that residents can claim as the original home of that sandwich. These are some the very well-known hand held's like Cheesesteak, French Dip, Cuban, Loose Meat , Smoked Brisket, Chopped Pork, Fish Taco, Po'Boy and on and on. For as long as I can remember as a Chicago native the hot dog, the one that's dragged through the garden and without ketchup BTW, as the Chicago Icon. But recently, the Italian Beef is beginning to take its place as the favorite Chicago sandwich. And it was the “The Bear”, which you heard a small snippet from earlier along with the attention of food writers from around the country that has put the Italian Beef sandwich front and center. We're talking with a man whose family has lived the adventure of Italian Beef for over 40 years. Joe Buonavalanto, leader of the Chicago restaurant chain of about 26 stores scattered around the Chicago metro has readied his company to grow even larger through franchising. We started the conversation with my personal experiences of Italian beef at a restaurant I visited quite often. That was Mr. Beef which was the shooting location for the series BTW and, as I found out, at onetime was a Buonavalanto family business.

Welcome to November 12, 2022 on the National Day Calendar. Today we celebrate the tale of two kitchens and the kitchen sink of pizzas. Two Los Angeles restaurants take the credit for inventing the French Dip sandwich, Coles and Philippes. Both feature thinly sliced beef on crusty French bread that is slathered with spicy mustard and dipped in au jus sauce. Coles claims that its French Dip appeared in 1908, when chef Jack Garlinghouse softened the bread of his sandwich for a customer with sore gums. Chef Philippe Mathieu claims he accidentally dropped the bread in a pan with meat drippings and the policeman who ordered it said he would take the sandwich anyway. The next day he returned with his friends and the sandwich became a hit. To this day the French Dipped Sandwich is the star of both menus. On National French Dip Day, celebrate with your own mouth watering version of this American classic. Sharks, halibut and yellowtail fish are not like us, but not for the obvious reason. These creatures actually like anchovies. In fact, anchovies are an important part of the diet for most fish. But putting them on a pizza, well, that's a different thing altogether. Anchovies are not eaten fresh. Rather, they are salted in brine before they are consumed, by some people anyway. According to surveys, anchovies are the least popular pizza topping, even more disliked than broccoli or pineapple. These guys have been taking South West London by storm with their no holds barred approach to the ‘French Dip’ - a roast beef baguette served alongside a gluttonous pot of dipping gravy. We donned our finest bibs, stocked up on kitchen roll and headed down to Brixton to see what all the fuss was about. Sandwiches! Broccoli Subs, French Dip, and Salmon Pita From a meat-eater’s french dip to a vegetarian’s dream broccoli sub, the Dinner Sisters find some new sandwiches and a classic for a weeknight dinner or even a party. Let’s go beyond a grilled cheese and find some fun sandwiches for a delicious handheld dinner. The Best Slow Cooker French Dip: Delish The delicious aroma of the roast beef braising might torture you, but the wait will be worth it! A chuck roast cooks in a savory braise for hours to make a tender, melty-cheesy sandwich that works for parties or just a party of one. Tips: You can use a traditional slow cooker or the slow cook feature on the Instant Pot. This could also work in a low- 225 degree- oven. We haven’t tried this using the pressure cooker feature of the Instant Pot but maybe? Make the sandwiches with a bread that can stand up to the dip in au jus. A ciabatta roll or sturdy french bread. Skip baking and broil the cheese instead. You get your sandwich much faster, which is always a good thing. If you are reheating the sandwich, pop the meat in the microwave for 30 seconds before you broil. Herbed Salmon Pita Pockets: Andie Mitchell Canned salmon isn’t everyone’s pantry staple, but maybe it should be if you can make these tasty salmon patties. You stuff the patties in a pita with lettuce, cucumbers and tomatoes and top it off with an herby yogurt sauce. Tips: We thought these patties would be nice outside the sandwich- maybe the yogurt as a dipping sauce? Another idea- make them smaller and serve as an appetizer either on their own or in mini pitas. Check out the salmon- some is canned with skin and bones. Choose a brand or can without those. Garlicky Broccoli Subs: The Kitchn Here’s a sandwich where the sum is better than each of the parts. Roast broccoli and pile it on french bread with peppadew peppers, french fried onions, feta cheese, and a tangy sauce. Serve it warm or wrap well for a tasty, hearty vegetarian option. This sandwich travels well- wrap tightly in cling wrap or wax paper. Keep cool and you’ll have a lovely meal waiting for you. A party menu with these sandwiches and the french dip might just be the best of all worlds. We successfully made this dairy-free by eliminating the feta. Our taste-tester still loved it! You could go all the way vegan by using a vegan mayo and substituting coconut aminos for the fish sauce. From the Smorgasbord… The James Beard Awards are given every spring.
