Jason Redmon, proprietor of the iconic Hub City Diner at 1412 S. College Road in Lafayette, joins Discover Lafayette to celebrate Hub City Diner's longevity and popularity, as well as his support of Lafayette Travel and Eat Lafayette, a yearlong celebration of Lafayette's locally owned restaurants. Hub City Diner's ambiance is akin to the famous tv show, "Cheers," where everyone knows your name. It is a real '"Hub" of activity in Lafayette, where locals meet, greet, and share their lives while enjoying their favorite comfort foods. The diner was established originally as Stansbury's Café in 1965, in the early days of the Oil Center, the commercial neighborhood that surrounds Hub City Diner. Thereafter, Lafayette restaurateur Charlie Goodson, Chef Pat Mould and advertising executive and local foodie George Graham, opened Hub City Diner in the space. Their intial concept was a 1950s diner, but with more of a Louisiana twist. Jimmy Guidry, who has years of food and bar experience throughout Lafayette, purchased the restaurant in 1998. Jason is 46 years old and has worked at Hub City Diner for more than half of his life. This is only the 4th job he has held in his life. A Bunkie native, his first job was working for his uncle on his sweet potato farm in Evergreen where he "caught the skips," making sure that the sweet potato roots were properly placed in the ground. Jason recalls his uncle saying to him, "You hot boy? You got to get hot with it!!" Jason still thinks about the lessons he learned from his uncle about having true grit and has maintained that strong work ethic to this day. "You've got to have grit and push through to get to the other side." Jason worked at McDonald's and Subway in Bunkie before he moved to Lafayette in the late 1998 to study Hospitality Managment at USL. His boss at Bunkie's Subway, Al Mahfouz, encouraged him to call upon the Hub City Diner manager at the time, Danny Fontenot, who hired Jason to serve as host and waiter. Jason first met Jimmy Guidry a few months after he started working at Hub City Diner, and the two became fast friends and colleagues. "People think that Jimmy Guidry and I are father and son. We have a synergistic relationship. We're not related by blood, but I guess we are now related through all of our time together. He's been a tremendous mentor and I'm very fortunate to have him in my life. I've been blessed with two dads. Jimmy told me, "If there is anything you've learned from me, I hope it is to be generous," Jason Redmon shared. And Jason did learn from Jimmy, still putting community first when he is asked to support local causes. He asks before he gives, "Will this help our community?" On January 1, 2022, Jason Redmon, Hub City Diner's longtime manager, took over ownership from Jimmy Guidry. The ambiance in the diner remains the same, with vinyl booths and chairs, checkered floors, nostalgic photos on the wall, and even a ceramic Pelican that's dressed like Elvis. Hub City Diner offers All-American comfort food, where there is something on the menu for everyone; people of all ages enjoy the diner's fare, from tiny tots enjoying meals offered in paper containers resembling classic cars to adults enjoying Mimosa's for $5 anytime of day. There is truly something for everyone who walks in and is greeted kindly. Meatloaf, salads, and eggs rule the offerings, while there are also specials on weekends which include smoked salmon, avocado toast, and fried green tomato spinach florentine meals. The hamburger steak is the most popular item on the menu. The feeling of community at Hub City Diner is palpable, as its staff cordially welcomes first-time visitors along with long-time regulars who frequent the diner after church in the early morning hours each weekday or who are always seen sitting in their favorite booth each weekend. With a staff that experiences very little turnover,
Lafayette's restaurant scene is famously difficult. There are more restaurants per person in the Hub City than there are in New Orleans, Austin and even New York City. Plus, you're not just competing with the restaurant down the block. This is a place where everyone cooks. People set the standard in their own kitchens. So what do you do if you move to Louisiana from a culinary capital like New York? How do you get ahead? Well, to start, you don't open a Cajun restaurant. Peter Cooke made that decision early on, when he opened Park Bistro, a fine dining concept grounded in Italian cuisine that's tucked into Lafyette's Saint Streets neighborhood. Peter cut his teeth in high end cuisine in New York. At 25, he became the executive chef at Krupa Grocery near Prospect Park in Brooklyn and earned the restaurant a Michelin Star recommendation. He guided the restaurant through the pandemic and burned out. Plus, he married a girl from Louisiana. So he and his family relocated to Lafayette in 2022. Within a few months, he opened a restaurant and called it Park Bistro — a nod to his old New York neighborhood. Chances are, if you're making a sandwich in Acadiana, you're using Evangeline Maid bread. It's a childhood staple known for its soft texture and surgary flavor. It's white bread. The processed stuff that's great for a grilled cheese sandwich or a dollop of barbecue sauce. Country bread it is not. For all its French heritage, artisan bread making has not really been a big thing in this neck of Louisiana. But that's changing. One of the bakers behind a movement of craft bakeries is Chris Frazier of Boscoyo Baking Company. Chris got into baking while working in the construction industry in Austin. He and his partner Haley met, and then ran bakeries in Portland, Oregon but moved to Lafayette to be closer to family. They opened Boscoyo in 2023. Boscoyo zigs where white bread zags. They use stone milled whole grain flours and slow fermentation sourdough to make staples like Focaccia, Baguette, Ciabatta and their in-demand pan de campagne — the traditional french country loaf. They also offer pizza nights and cakes to fill out their business line. All of their baked goods are made with the same approach. No white flour and as much local sourcing as possible. Attorney, Junior (Elbert) Smith, generously shares his journey to, and at, the Hoffman Process. In doing so, he gives us a view into how patterns and trauma affect how we see ourselves and how we journey through the world. Content Warning: This episode contains graphic descriptions of trauma. Please use your discretion. Junior shares his life story beginning with his parents' journey to a better life taking them from Mississippi to Compton, California. With great fondness, he shares his memories of those early years growing up in Compton. These times were filled with connectedness, community, and joy. In the '70s, though, things changed in his hometown. There was more discord and violence in his community and he began to take in that trauma. He responded by going more into his schoolwork and joining the ROTC, eventually, years later, graduating from law school. Through the process of sharing his stories, Junior weaves his way to coming to Hoffman. He then takes us to the heart of his time at the Hoffman Process when, in a profound moment, "Spirit was able to enter into him." After doing deep, hard work to release the patterns and trauma, he found joy and radiant light. And, as he says, he felt love, real love, for the first time. Junior articulates this profoundly intimate moment of opening to his Spiritual Self in such a way that you can feel the depth of his transformation. Lafayette is home to two hospital systems and has a deep bench of medical providers. It's the Hub City in a new kind of way. It's Acadiana's medical hub. So it might surprise you to learn that access to health care is still a problem. Every parish in Acadiana, except Lafayette, has a federally designated shortage of healthcare providers. Why? Well, if the answer were easy, it wouldn't be a problem. But suffice it to say the health business is complicated because health is complicated. And we can look at the issue from two ends: providers on the one, and patients on the other. Donna Aucoin is a medical psychologist and owner of Aucoin & Associates, a private therapy practice. Donna began her career in mental health as a social worker. After going back to school to become a psychologist, she worked for the state office of mental health as a regional psychologist, where she did clinical work and developed community programs. She left state employment and moved into private practice, her long-term goal, founding Aucoin & Associates. The practice has grown substantially and now offers a range of mental health services for individual patients, families and groups. In health care, it takes two tango. And the other partner here is the patient. Health education plays a big role in public health outcomes. And Gabriel Morley plays a big role in health education. Gabriel is the CEO of Southwest Area Health Education Center, or SWLAHEC. AHECs are nonprofits set up by Congress in the 1970s to address health care shortages and can be found in every state. Gabriel's office covers the Lafayette and Lake Charles areas and develops programs designed to help people make healthier lifestyle choices. SWLAHEC also helps patients navigate the market for low- and no-cost health insurance and trains providers on community care. Gabriel holds a doctorate in adult education and came to his job at SWLAHEC after a career working in libraries. He grew up in Slidell and holds a doctorate in adult education.
