Waterford Distillery founder Mark Reynier isn't giving up on his dream, even though the distillery went into receivership last week. As he tells us on this week's WhiskyCast In-Depth, he's putting together an investor group to bid on Waterford's assets when they go up for auction in January. We'll talk with Reynier about Waterford's failure and where things went wrong on this week's WhiskyCast In-Depth. In the news, Brown-Forman is taking pre-emptive steps to guard against the impact of potential trade tariffs, while Chivas Brothers has filed for planning permission to build a distillery on Islay. Mark, founder of the ground-breaking terroir-driven Waterford Whisky in Ireland and Renegade Rum in Grenada, is going through the grinder of both being in receivership*, and made time for a chat with me. Mark is very open on the 'pod about the factors that led to the current situation, and there are some real nuggets in here, such as Waterford being French powerhouse distributor La Maison du Whisky's 5th best-selling whisky, why Waterford never did private casks, why you need to go deep, not wide (especially in the USA) and why whisky before the OPEC crisis of 1973 was better. We're all hoping Mark - who is assembling an investment syndicate to bid for the assets - can regain control of the companies when the assets are auctioned in January, as I don't think anyone can realise the promise of Waterford and Renegade that isn't named Mark Reynier. *Ireland, where Waterford Whisky is based, doesn't have similar options to the USA's Chapter 11 "protection from creditors"-type of insolvency laws. Mark is one of the most interesting people you could meet in the liquor business; drawing on his and his father's experiences importing and selling fine wines in his native England, he applied the logic of terroir to spirits, starting back in 2000 when he led a consortium of investors who bought the mothballed Bruichladdich distillery.Mark and the team he assembled built Bruichladdich back into one of the most respected single malt distilleries in the world. After Remy acquired the distillery and its brands (including Botanist gin) in 2012, Mark started looking around for his next project, which became starting the hyper-transparent Waterford Whisky distillery in 2016 because "the south west of Ireland produces the best barley in the world". Never a man to sit still, he founded Renegade Rum in Grenada in 2020, re-starting sugarcane production on the island and building a state-of-the-art distillery. In this first instalment of a double-header we talk to Mark Reynier, former major stakeholder of Bruichladdich Distillery and now owner of Waterford Distillery in Ireland and the new Renegade Rum Distillery in Grenada. Mark has had quite a journey through various facets of the drinks industry. It would seem that at times he has been in the right place at the right time, but in reality he is one of those rare people who seem to be able to spot opportunities where many others see potential disaster. His revival of Bruichladdich Distillery is probably somewhat taken for granted these days but at the time it was a gamble, one that fortunately paid off. The sale of his stake in the company helped fund the Waterford Distillery which has been shaking things up in Ireland, and more recently the Renegade Rum in Grenada. Mark likes to court controversy, disrupter is a word often used in the tech industry but in the spirits industry there a few who have managed to change so much in such a short space of time. He's been a target for many who are keen to rubbish some of his ideas like 'Terroir' in whiskey. I was also a skeptic on this subject matter, after listening to Mark I am now more convinced but still want to see the proof in the taste of the finished product! This is the second chapter of our double-header podcast with Mark Reynier from Waterford Distillery in Ireland and Renegade Rum Distillery in Grenada. Leading Irish visual artist, Leah Hewson, has released her latest work, but you won't find it in a gallery or exhibition. Partnering with Waterford Distillery, Hewson has created Binary Assimilation – an original artwork for the bottle label of the distillery's flagship single malt whisky coming this autumn: The Cuvéee. Hewson's aim was to celebrate the 'many layers and complexities within Waterford's distillation process and the immense sensory experience of consumption'. Waterford's unique methodology is terroir-driven. The concept, which is commonly practised by the world's greatest winemakers, is based on the principle that factors such as weather, soil, and microclimate influence the flavours found in barley and the whisky made from it. To make its multiple award-winning Single Farm Origin whiskies, Waterford Distillery maintains the integrity of each crop of barley by harvesting, storing, malting and distilling it separately. Each Single Farm Origin has been produced separately using barley grown only on individual terroirs throughout the South of Ireland. This individuality can be celebrated in its own right, but the ultimate aim is to layer these component spirits together – in precisely the same manner as a Grand Vin in Burgundy, or Grand Cuvée in Champagne – for ultimate complexity. The whole, greater than simply the sum of its parts. This means – for the first time in whisky production anywhere – Waterford Distillery is assembling 23 different Single Farm Origin component single malts to create the definitive Waterford Whisky: The Cuvéee. It is a lodestar for the brand and a milestone bottling. Leah Hewson's original artwork reflects the intricate nature of such a milestone product. Two computer-generated images that are depicted in paint have been divided into strips and overlaid with opaque and transparent red and green stripes, and a neon squiggle in to create 'ambiguity and illusion'. Leah Hewson said: ”Binary Assimilation celebrates the many layers and complexities of Waterford's approach to whisky production. The brand's scientific and methodical approach reflects my own and this provided an inspiration to sync art, flavour and character into something visually striking. Terroir - a word and approach more associated with wine making than whisky making has had its critics and detractors since the first day Mark Reynier announced he was building a distillery on its very premise. In this episode of Terroir-Driven: The Waterford Whisky podcast, we hear from whisky industry experts and enthusiasts who paint a picture of a whisky industry that has followed a certain approach to whisky making for many years and how Waterford Distillery’s pursuit of a barley and a flavour-forward process has been met with raised eyebrows and criticism from whisky producers and consumers alike. Waterford Whisky has been years in the making. Before the establishment of the distillery and before terroir-driven spirit flowed from the stills on the banks of the River Suir, founder Mark Reynier spent a career in the wine and Scotch whisky world. Inspired by a different approach to the growing of vines and barley, Mark applied the insights gleaned in the years prior to his arrival in Waterford to the planning of a very different type of whisky distillery. Another comparison episode, but I am a wee bit more prepared for this one. The Octomore Masterclass 8.2 (167ppm @ 58.4) vs. the Octomore 10.1 (107ppm @ 59.8). The brain child of Jim McEwan and Mark Reynier, Octomore rounded out the triple threat from Bruichladdich. Bruichladdich, Port Charlotte and Octomore would give the distillery a wide reach in single malt expressions. Octomore being the HEAVILY peated offerings, would ignite a cult following of legendary status. Don't let the PPM's scare you. I was afraid and now I believe. The 8.2 is a fruity dessert of complex flavors with a delightful twist of smoke within, likely a result of the wine casks used in the maturation. The 10.1 is a delightful blend of bourbon notes and classic Bruichladdich, sweet vanilla caramel with a smokey oak giving way to a delectable dark chocolate, toffee salty seaweed. Both bottles are high proof, yet easy to drink. I am now a believer.

Die Brennerei, die es zu erraten galt war die irische Waterford Distillery. Genau, die neue von Mark Reynier. Die Brennerei verfolgt sehr interessante Ansätze und dementsprechend war das Tasting sehr interessant, wenn auch Tim völlig im Dunklen tappte. Waterford Distillery is a single malt whiskey distillery located in Waterford City, in the South East of Ireland. The distillery was originally rebuilt in 2004 as a Guinness brewery, shut down a decade later and in 2015 transformed into a state-of-the-art single malt whiskey distillery. Here CEO, Mark Reynier provides an update on progress and of his ambition to create the most profound single malt whisky that has ever been seen.

Mark was the founder and CEO of Bruichladdich distillery. If you're into Whisky, you will know about Bruichladdich single malt. Fantastic Whiskys! And they sold the business for £58 million to Remy Cointreau in July 2012. Mark has been in the drinks industry his whole working life. It will be 40 years next year; he will have spent 20 years in Whisky and 20 years in the wine industry. He joined his family's wine shipping firm in 1980, they bottled old wines and distributed them. He went into wholesale restaurant sales before creating his own retail wine business in 1995; after a short stint with a West Country Brewer Eldridge Pope. It was here that he first experienced single malt Whiskys used for blending in bulk the "Brewers Ken" blended whisky. Bruichladdich was the only single malt stocked at one of his shops "La Reserve" in Knightsbridge and the Bruichladdich distillery was purchased in 2000 and developed until 2012 when it was acquired by Remy Cointreau along with a creation of theirs called The Botanist Gin. Since then, Renegade Rum has been created. It's a distillery project, which is due to come online in August 2019 and that's actually on the island of Grenada. Renegade Rum and Waterford Distillery are both going to disrupt the spirits industry! Waterford Distillery was created in Ireland in 2016. And that actually is going to be the first Irish single malt Whisky which will be released in 2020. Mark shares so much value in this episode. I think you're gonna like it! I watched the Bruichladdich distillery go from being defunct; to having this amazing sort of flashy new packaging and and all these amazing kind of press releases and I'm super interested to hear about the Renegade Rum Distillery that you're involved with and the new Waterford Distillery as well. Mark Reynier 3:33 They all flow out of the same the same concept as you said; it was December the 19th 2000 that we brought Bruichladdich. A day I remember extremely well, it was it was a very tight deadline and it was all or nothing and it very nearly didn't happen at all and then to crown it all my son was born the same day so it's a day that's firmly emblazoned on my memory in my mind. But this year 2019. It's a dividing line to me, it's exactly half my career. Half has been in wine and gather half in spirits. So there's quite a pertinent sort of landmark for me. What I've been doing with spirits is applying very much a wine trade philosophy to what I saw a rather stayed industry. Which we say you know, in the wine trade we always call the spirits side the "dark side." It was everything the wine trade isn't. It's a very consolidated extremely rich industry. Whereas the wine trade is a fragmented. A lot of small producers; hands on, a lot of passionate people, completely unsophisticated in comparison to the spirits industry. So when I went from wine to the spirits, I really felt that I was going to the dark side, I was making a deliberate move into something which for much of my life I despised. This is the first of our two episodes from the 14th annual Victoria Whisky Festival in Victoria, British Columbia. One of the highlights of the festival each year is the Canadian Whisky Awards, and Forty Creek returned to the top of the podium this year for the first time in five years with a new 22-year-old Canadian Rye whisky. We'll have the details on that and other award winners in the news, and we'll also look at the debate over the impact of terroir in whisky. Vancouver Island's Shelter Point Distillery won the Award for Innovation for its whisky distilled from 100% unmalted barley whisky grown on the distillery's own farm. That's just one example, and Ireland's Waterford Distillery is taking terroir to the other extreme with barley from more than 40 local farms being malted, distilled, and matured separately to maximize the impact of terroir. Cutty Sark is marking two anniversaries within a week or so: the brand's 90's anniversary on March 23 and the third anniversary of its acquisition by the Edrington Group April 1. It's a legendary brand that lost its way in recent years, but recorded its first annual increase in sales during 2012 after years of declining sales. In the last episode, I mentioned the growing controversy over proposed UK legislation that would set specific labeling standards for Scotch Whisky, including a new name for what have been known as "vatted malts". Trouble is, support for "blended malts" is not unanimous, and critics are speaking out. Mark Reynier of Bruichladdich is one of the most outspoken critics of the legislation and the influence of the Scotch Whisky Association in preparing it. The guys at Bruichladdich have never shied away from a challenge, and their latest goal is to bring whisky distilling back to the nearby town of Port Charlotte on Islay.
