Sugar Kelp, A Little Peat, And A Vision For The Future I first heard about - well, read about - Isle of Harris Distillery in Dave Broom's A Sense of Place. A small community known for its beauty, its tweed, and its declining population, its would-be savior was not a Scot at all, but an American who had grown fond of the area (owning an island nearby) and wanted to save it.  How though? A distillery - not one that would fall into the cycle of boom and bust that had doomed so many previous ventures seeking to draw people back to the island, but one built for generational growth. It would be of the island - Hearach - and for the Hearach, the islanders.  Its gin shocked the market, being both simple and elegant. Flavored with sugar kelp harvested by hand nearby and in a Stranger & Stranger-designed waveform bottle, it rode the wave of gins right at the crest to such success that the whisky could continue to age. In 2023, The Hearach Single Malt debuted to stunning fanfare. The Tarbert Ten - the original 10 employees - had grown to 50, with more growth ahead and long-term sustainability in mind. Jota Tanaka has worked for Kirin Brewery Company for 34 years, leading its whisky business as master blender since 2017.He's had a really interesting career path through the Kirin business to arrive at his current role, including stints in winemaking, wine marketing and leading product development for Four Roses Distillery in Kentucky.We'll get into some of that in this interview with Jota, who was inducted into the Whisky Magazine Hall of Fame in 2022, one of many career accolades he's received in recent years.Today, Jota is pouring his passion, skills and experience into Kirin's flagship whisky brand Fuji, which is produced at the Fuji-Gotemba distillery at the foot of Mount Fuji.Established in 1973, Fuji-Gotemba is one of very few distilleries producing both malt and grain whisky at the same site, which explains the unusual labelling – Single Blended – on the newest Fuji Whisky expression.This is a special episode of Drinks Adventures, produced in partnership with Fuji Whisky.Coming up, Jota and I explore the many different facets that make Fuji unique, including its unwavering commitment to releasing whisky when all the component parts have reached peak maturity, rather than at a certain age.He shares his experience working at the distillery when Japanese whisky was at its lowest ebb, versus the boom times of today.As Jota explains, it's quite remarkable that Fuji-Gotemba survived the downturn at all, with another distillery, Karuizawa, famously shuttered during this period.Jota has also been actively involved in Japanese whisky industry activities to protect the integrity and reputation of Japanese whisky by assisting in the setting of labelling standards. Earlier this month during DramFest 2020 in Christchurch, New Zealand, WhiskyCast's Mark Gillespie took part in a panel discussion on "the past and future of whisky" with veteran whisky writer Charles Maclean, Michael Fraser Milne of the Whisky Galore shop in Christchurch, and moderator Dave Broom. Their hour-long discussion is a bit too long for one of our regular episodes, but we thought you might enjoy listening to it on its own. The panel covered everything from the collapse of the Scotch Whisky industry in the early 80's to what the future holds given the combination of a growing craft distilling movement, global politics, and climate change. It's 100 years since Rita Cowan fell in love with her family's Japanese lodger, Masataka Taketsuru, when he stayed with her family while studying Organic Chemistry at Glasgow University. They were married in January 1920 and by the end of the year they had spent time at Hazelburn Distillery in Campbeltown before setting sail for Japan, where Rita supported Masataka's dream of creating a little bit of Scotland in Japan. Dan Saladino goes on a journey through the history, culture and flavours of Japanese whisky. Why and how has this nation taken a drink so strongly associated with Scotland and made it their own? In 2001, the drinks world started to pay attention to Japanese whisky after one if its distillers scored top marks in an international whisky completion. In the years that followed, the awards and the global attention for Japanese whiskies continued to grow. Critics have described some Japanese whiskies as the "work of genius" and, just last year, one whisky produced by a small, new-wave distillery in the north of the country was voted the world's "Best Single Cask Whisky". With the help of whisky writer and author of the award-winning 'Way of Whisky: A Journey Round Japanese Whisky', Dave Broom, Dan asks: what lies behind the rise and rise of Japanese whisky and who are the people who helped make all this global recognition possible? The story has its origins in the 1860s when a recently opened up Japan started to forge close trading links with Scotland, paving the way for whisky imports. Once the taste for the spirit developed, distillers and chemists within Japan started to work on ways of producing a home-grown version of the drink. A breakthrough came in 1919 when a young student called Masataka Taketsuru travelled to Scotland, worked inside some renowned distilleries, married a Scottish woman and returned home with the secrets behind Scotch. Another pioneer, Shinjeero Torri, would put that know-how to good use and create the Suntory distilling empire and brands such as Yamasaki and Hakushu. Taketsuru would go on to found another respected and award winning whisky brand, Nikka. After record whisky sales in Japan throughout the 1960s and 1970s, the industry fell into decline for the next quarter of a century, with drinkers switching to other spirits and beer. A range of factors lie behind the recent whisky revival and boom, ranging from Japanese innovations in fermentation, distillation and barrel aging as well as the drink that brought whisky to the attention of a younger generation - the High Ball, a mix of whisky and soda. As Dave Broom also explains, the resurgence has encouraged a new generation of distillers to enter the whisky world, including Chichibu, an operation run mostly by people in their twenties, now winning awards. To explore the unique flavours on offer in Japanese whisky, Dan travels to the Highlander pub in Craigellachie, Scotland, where he meets landlord Tatsuya Minagawa and samples a "next to impossible" to find bottle of whisky. Scotland's Douglas Laing and Co. is celebrating its 70th anniversary in 2018, and for many of those years, the Laing family has taken a light-hearted approach to Scotch Whisky - at least, when it comes to what's on the outside of the bottle. With brands like Big Peat, Scallywag, Timorous Beastie, and the like, Fred Laing has given us many reasons to smile as we pour a dram. Fred has turned over much of the day-to-day operations of the company over to his daughter Cara and son-in-law Chris Leggett, but took the title of Chairman of the Board because "Chief Mischief Maker" wasn't an option. It's the third biggest industry in Scotland, contributing £3.3 billion to the economy per year. But the landscape is changing - both within Scotland and across the UK. Recent years have seen dozens of new distilleries opening in Scotland and also in Wales, Northern Ireland and England. Sheila Dillon celebrates 'Whisky Britannia' to discover who exactly is choosing to start distilling whisky, how you perfect your craft and flavour and become distinctive in such a busy marketplace. The debate over whisky auctions and the provenance of some of the whiskies sold at those auctions continues with the saga of a Bowmore said to have been bottled in 1850. It sold at McTear's in Glasgow last month for more than $50,000, even though historians questioned whether the whisky was as old as advertised. Scotch Whisky Review editor Dave Broom's update of the story appears on the WhiskyCast web site, and we'll hear from Dave on this episode.
