Waterford Distillery founder Mark Reynier isn't giving up on his dream, even though the distillery went into receivership last week. As he tells us on this week's WhiskyCast In-Depth, he's putting together an investor group to bid on Waterford's assets when they go up for auction in January. Actors Ian Somerhalder and Paul Wesley have released their latest edition of Brother's Bond Bourbon, a 7-year-old Bottled in Bond whiskey. It's a release that shows the two are serious about their whiskies, and not just slapping their names on a bottle. We'll talk with Paul and Ian on this week's WhiskyCast In-Depth. It's been a troubling week for the whisky industry with the bankruptcy of Kentucky Owl parent company Stoli Group USA and the collapse of Ireland's Waterford Distillery, and we'll have the details on both, along with President-elect Donald Trump's plan to impose tariffs on imports from Canada and Mexico, which could include Canadian whisky and Tequila.
This week on Organic Matters, we visit the farm of John and Marcella Mallick near Tinahely in Co. Wicklow. They have been organic farming since 2011 and as well as running a suckler and sheep enterprise with Galloway cattle, and Scotch sheep cross with Texels, they also grow organic barley for Waterford Distillery to brew into whiskey. They talk about their experience farming organically over the past 10 years or more from modifying animal housing to organic crop management.

I do a lot of research for each episode of the podcast - I don't want to ask anything that's been asked over and over. Often, that's listening to podcasts, reading interviews, anything that might spark an insightful question or a different angle. But what do you do when a distillery has their own podcast? What do you do when there's so much information out there and yet so much to ask? You start with one interview and go from there. We cover so many topics in this interview that it's hard to imagine another, but there are at least two or three more. A conversation about examining soil and terrain; another about grain varieties; perhaps another about how that incredibly complex cask mix became a background note to the terroir-driven experiments. Waterford is like those casks - incredibly complex yet so simple. A single idea branching into dozens of avenues, or dozens of ideas coalescing into a single thought: what if terroir could be proven? What if farm-to-farm terroir could be proven? Not only qualitatively but scientifically. What could be seen? What could be achieved? I'm rarely so outright flattering of a distillery, but in this case I truly am amazed and inspired by what Waterford is doing. For years, once-widespread barley varieties such as Hunter, Goldthorpe and Old Irish lay dormant, yet preserved, in the Department of Agriculture's Seed Bank outside Dublin. These grains held the flavours and stories of a different time where different approaches to farming, brewing and distilling reigned. If Waterford Distillery was to continue its quest of pursuing whisky flavour and "the old ways" the team knew that what they sought lay in cold storage in the laboratories of the Seed Bank. In this episode we'll share how Waterford Distillery and its growing partners turned 50 grams of heritage barley into 50 barrels of whisky through a 5 year-long passion-fueled process full of challenges and new learnings.
At the turn of the 20th century, farmers in the south of Ireland led the barley breeding movement, creating strong, resilient varieties of barley grown to be malted for use in beer and whisky making. Were these grains more flavourful? Did they exhibit characteristics that we may have interest in today? Most of these historic, heritage varieties have long since died out, but five years ago the team at Waterford Distillery wondered if they might be able to resurrect some of these long-lost grains. They began by exploring the history of Ireland's heritage barley varieties.
My Chat with David Walsh Kemiss from Ballykilcavan farm and brewery. David is a 13th generation owner of Ballykilcavan, which is a working farm and brewey amongst other things. He grows barley for Waterford Distillery and also owns Kylebeg Wood, from where Irish Distillers felled the Irish Oak for their Dair Ghaelach release a couple of years ago. The growing, the farmers, the soil, the barley are all well documented at Waterford Distillery. Once the barley is picked up from the growers it begins the journey that will lead ultimately to the distillery. In the last season of the podcast, we broke down the entire process from growing to bottling and shared in detail the unique process at the distillery whereby each farm's barley is stored, malted, brewed and distilled separately from other farms' harvests. When it comes to biodynamic and organic whisky making, however, there are extra complexities to ensure compliance with the certifying bodies.
In this week's episode we're continuing the exploration of biodynamic farming and growing that we began investigating last week and we're going to get a better understanding of what makes a farm, a grain and a whisky organic. We'll hear from the growers behind the barley that eventually ends up in Waterford Distillery's biodynamic and organic whiskies and we're heading to the central valley of California to hear from a grower who is led by the spiritual approach to biodynamic farming and we'll hear from a best-in-class pioneer of the biodynamic wine world in France.
In this season we're following the flavour, pulling back the covers on Waterford Distillery's unique approach and philosophy when it comes to barley, focusing on the Arcadian series, a collection of whiskies with their roots in how whisky used to be made. Before the mass production demands of today dictated what an entire industry grew, how they grew it and how they malted, fermented, distilled and matured, there were different approaches to whisky making - approaches tied more to nature, to age old practices; approaches dependent on available natural resources rather than artificial substitutes. Did these approaches yield more flavour? The Arcadian Series of whiskies seeks to answer this question and in this episode we're going to begin understanding how the team at Waterford intends to do that.

In this first instalment of a double-header we talk to Mark Reynier, former major stakeholder of Bruichladdich Distillery and now owner of Waterford Distillery in Ireland and the new Renegade Rum Distillery in Grenada. Mark has had quite a journey through various facets of the drinks industry. It would seem that at times he has been in the right place at the right time, but in reality he is one of those rare people who seem to be able to spot opportunities where many others see potential disaster. His revival of Bruichladdich Distillery is probably somewhat taken for granted these days but at the time it was a gamble, one that fortunately paid off. The sale of his stake in the company helped fund the Waterford Distillery which has been shaking things up in Ireland, and more recently the Renegade Rum in Grenada. Mark likes to court controversy, disrupter is a word often used in the tech industry but in the spirits industry there a few who have managed to change so much in such a short space of time. He's been a target for many who are keen to rubbish some of his ideas like 'Terroir' in whiskey. I was also a skeptic on this subject matter, after listening to Mark I am now more convinced but still want to see the proof in the taste of the finished product! Grace O'Reilly is an Agronomist for Waterford Whiskey, where she combines passion with agriculture. Grace grew up on a sheep and suckler-to-beef farm in the northeast of Ireland and is from a fifth-generation farming family. Her previous roles include working at Minch Malt, where she gained valuable experience working in different parts of the country. Grace attended University College Dublin, where her desire to work in the production and harvesting industry led her to a major in Agricultural Science in Animal and Crop Production. She believes that you must have passion for what you are doing and to do what you love. In this episode… There are many complex layers around growing barley — cultivation, soil, and climate are all things to consider when crafting a spirit. Biodynamic farming is a relatively new implementation to grow barley. Unfortunately, this means there is little data on how barley environments create and shape taste. Grace O'Reilly is changing that. She is implementing new ways to track data and source it down to the farm where the barley was born. Grace looks at older art forms of distillation, having brought back several antique strains of barley, and merges them with modern, organic ways of farming to produce unique whiskey. Leading Irish visual artist, Leah Hewson, has released her latest work, but you won't find it in a gallery or exhibition. Partnering with Waterford Distillery, Hewson has created Binary Assimilation – an original artwork for the bottle label of the distillery's flagship single malt whisky coming this autumn: The Cuvéee. Hewson's aim was to celebrate the 'many layers and complexities within Waterford's distillation process and the immense sensory experience of consumption'. Waterford's unique methodology is terroir-driven. The concept, which is commonly practised by the world's greatest winemakers, is based on the principle that factors such as weather, soil, and microclimate influence the flavours found in barley and the whisky made from it. To make its multiple award-winning Single Farm Origin whiskies, Waterford Distillery maintains the integrity of each crop of barley by harvesting, storing, malting and distilling it separately. Each Single Farm Origin has been produced separately using barley grown only on individual terroirs throughout the South of Ireland. This individuality can be celebrated in its own right, but the ultimate aim is to layer these component spirits together – in precisely the same manner as a Grand Vin in Burgundy, or Grand Cuvée in Champagne – for ultimate complexity. The whole, greater than simply the sum of its parts. This means – for the first time in whisky production anywhere – Waterford Distillery is assembling 23 different Single Farm Origin component single malts to create the definitive Waterford Whisky: The Cuvéee. It is a lodestar for the brand and a milestone bottling. Leah Hewson's original artwork reflects the intricate nature of such a milestone product. Terroir - a word and approach more associated with wine making than whisky making has had its critics and detractors since the first day Mark Reynier announced he was building a distillery on its very premise. Waterford Distillery Founder Mark Reynier has spent the last 5 years telling everyone who’ll listen (and even those who won’t) that he believes there’s an alternative to how whiskey has been made for generations. He believes there’s a better way and that mass production and a focus on yield has replaced a focus on flavour. He has strong opinions and firmly held beliefs and he’s betting the farm, many farms in fact, on these opinions being true and ultimately that they’ll matter to the whisky drinker who purchases a bottle of Waterford Whisky. Central to his approach is the concept of Terroir - a french term used to describe how a particular place’s climate, soils and terrain affect the taste of a crop and consequently the product it becomes an ingredient of. Is all this talk of Terroir just hype? Is it a marketing stunt? It may be universally accepted in France but can it translate to the world of whisky production? Why are so many people arguing about its very existence? It’s a topic that has divided whiskey makers, drinkers and anyone with even a passing interest in the world of whisky production. My name is Barry Chandler, an Irish whiskey enthusiast and I’ve been fascinated by Waterford Distillery’s approach and beliefs since first visiting the distillery in late 2019. In this podcast series I’m going to dive deep into the world of Terroir and one distillery’s journey to not just make a whisky inspired by it, but to prove, scientifically, and beyond doubt, that it exists. Heute starten wir direkt mit der Verkostung des Craigellachie 17 aus dem Herzen der Speyside. Ein Malt, der rein äußerlich viel verspricht und auch mit seinen inneren Werten überzeugen kann. Wir sind zumindest ziemlich angetan. Weiter geht es mit Tims Bericht über das letzte Blindtasting von Friends of Single Malt - FoSM. Die Brennerei, die es zu erraten galt war die irische Waterford Distillery. Genau, die neue von Mark Reynier. Die Brennerei verfolgt sehr interessante Ansätze und dementsprechend war das Tasting sehr interessant, wenn auch Tim völlig im Dunklen tappte. This year, the much-anticipated first whiskey releases will leave the gates of Waterford Distillery. The distillery's intense approach to all aspects of whiskey production, starts long before distillation or fermentation or even harvesting of the barley. It begins months in advance of the sowing through nurtured partnerships and planning with the farmers who'll supply the crop. This is the part that Grace O'Reilly, Ireland's only distillery-employed agronomist oversees. I chatted with Grace about her role, the difference Waterford's approach has to the final product and what she has learned in this exciting new role.
I sat down for a chat with Ned Gahan, Head (not Master) Distiller in Waterford Distillery. I visited him last February, before the Grand Opening on Saturday 25th April was cancelled. (I mistakenly said the 24th April on the podcast!) We had a great chat about all the exciting releases to look forward from Waterford and how much their policy of 'Terroir' affects their whiskey. There’s a whiskey/whisky revolution happening in the south east of Ireland at the moment. Waterford, a county more historically associated with cut crystal than whiskey, is now turning whiskey production on its head in Ireland. I spent a jaw-dropping day with the team at Waterford Distillery to learn about their approach, their beliefs and sample some of their maturing spirit. Waterford Distillery is a single malt whiskey distillery located in Waterford City, in the South East of Ireland. If you were, if you were thinking about buying something, and you know, you might be an experienced be procurement officer, or you might be just just learning how to buy something? Where do you start? Philip Ideson 1:55 So for somebody who's within the procurement side kind of side of the bed, nice, and they're helping somebody within the business by something, what's really important to me, is understanding truly what the outcomes that person wants to deliver. Because you know, a product or a service that you buy, is really only a vehicle for an outcome. And I think that's something that often gets really lost is we get too fixated on this is what the specification of this widget is, are, these are all the different elements of this particular service, we get so kind of stuck in the weeds of that, that you lose the sight of:- "Actually I want it because we need to increase, you know, the some customer satisfaction!" Let's say :-"We want to bring in increase the conversion rate within our marketing funnel by 1%." It's really focusing on the end game rather than the thing you're buying itself. I think it's just something that's really important to do that we often forget. Nathaniel Schooler 2:53 That's really good advice. Yeah, I agree completely. I mean, there's so many people that certainly in marketing for one example, they're just kind of, they're told to go and do all these things. And they might be tracking the wrong metrics. So I think certainly finding out the right place to start is definitely the way to go. Yeah. Philip Ideson 3:13 Yeah. Renagade Rum and Waterford Distillery : Inside Story Renegade Rum and Waterford Distillery lead the way in the new era of traceability and in this episode I interview Mark Reynier CEO. Mark was the founder and CEO of Bruichladdich distillery. If you're into Whisky, you will know about Bruichladdich single malt. Fantastic Whiskys! And they sold the business for £58 million to Remy Cointreau in July 2012. Mark has been in the drinks industry his whole working life. It will be 40 years next year; he will have spent 20 years in Whisky and 20 years in the wine industry. He joined his family's wine shipping firm in 1980, they bottled old wines and distributed them. He went into wholesale restaurant sales before creating his own retail wine business in 1995; after a short stint with a West Country Brewer Eldridge Pope. It was here that he first experienced single malt Whiskys used for blending in bulk the "Brewers Ken" blended whisky. Bruichladdich was the only single malt stocked at one of his shops "La Reserve" in Knightsbridge and the Bruichladdich distillery was purchased in 2000 and developed until 2012 when it was acquired by Remy Cointreau along with a creation of theirs called The Botanist Gin. Since then, Renegade Rum has been created. It's a distillery project, which is due to come online in August 2019 and that's actually on the island of Grenada. Renegade Rum and Waterford Distillery are both going to disrupt the spirits industry! Waterford Distillery was created in Ireland in 2016. And that actually is going to be the first Irish single malt Whisky which will be released in 2020. Mark shares so much value in this episode. I think you're gonna like it! I watched the Bruichladdich distillery go from being defunct; to having this amazing sort of flashy new packaging and and all these amazing kind of press releases and I'm super interested to hear about the Renegade Rum Distillery that you're involved with and the new Waterford Distillery as well. Mark Reynier 3:33 They all flow out of the same the same concept as you said; it was December the 19th 2000 that we brought Bruichladdich. A day I remember extremely well, it was it was a very tight deadline and it was all or nothing and it very nearly didn't happen at all and then to crown it all my son was born the same day so it's a day that's firmly emblazoned on my memory in my mind. But this year 2019. It's a dividing line to me, it's exactly half my career. Half has been in wine and gather half in spirits. So there's quite a pertinent sort of landmark for me. What I've been doing with spirits is applying very much a wine trade philosophy to what I saw a rather stayed industry. Which we say you know, in the wine trade we always call the spirits side the "dark side." It was everything the wine trade isn't. It's a very consolidated extremely rich industry. Whereas the wine trade is a fragmented. A lot of small producers; hands on, a lot of passionate people, completely unsophisticated in comparison to the spirits industry. So when I went from wine to the spirits, I really felt that I was going to the dark side, I was making a deliberate move into something which for much of my life I despised. It's rare to watch a whiskey distillery's stills run for the very first time, but that's what we're bringing you in this episode of WhiskyCast HD. Just a year and a week after buying the former Guinness brewery in Waterford, Ireland, Mark Reynier's Renegade Spirits has fired up the stills at what's now known as Waterford Distillery. Many of the brewery's former employees laid off after it closed two years ago have come back to work at the distillery, and 46 area farmers have been contracted to grow barley for use in Waterford's single malt whiskey, which is expected to go on sale five years from now.
