Juan Carlos: Winifred and Christel had the revolutionary idea of creating a multi-disciplinary art festival that would result in a collaboration. Merope was born from our group which included a composer, a filmmaker/animator, a collage artist, a photographer, a dancer, a poet, and a choreographer —with a wardrobe person and a camera person. Winnie and Christel acted as producers. What were your initial reactions when watching the audience talking about your film in the feedback video? The audience's reaction was truly exhilarating! Watching people connect so deeply with our film and hearing their insights in the feedback video was both humbling and inspiring. Hearing the audience describe the film as wonderful, meditative, peaceful, harmonious, and touching was profoundly gratifying—it affirmed that our vision resonated deeply with viewers. Their heartfelt appreciation for the music and the emotions it evoked validated the passion and dedication poured into every aspect of the project. Dr Roger Zaldivar is a refractive and cataract surgeon at the Instituto Zaldivar in Mendoza, Argentina, a multi-generation ophthalmology practice. Recently he has produced an AI method of sizing phakic IOLs like the Visian ICL using image data from ultrasound biomicroscopy (UBM). And his practice now often prefers implanting a phakic IOL instead of corneal laser vision correction and he implants about 1000 phakic lens implants per year. In this podcast we talk all about phakic IOLs, choosing the best refractive procedure for a specific patient, and his path in ophthalmology. On this day in history, September 5, 1774, about 9 miles as the crow flies from where I'm writing this, the first Continental Congress convened to discuss the Intolerable Acts of 1774.On September 5, 1774, the First Continental Congress convened at Carpenters' Hall in Philadelphia, marking a pivotal moment in America's journey to independence. Representatives from twelve of the thirteen American colonies gathered to deliberate on the future of the colonies amidst escalating British aggression. Notable figures such as Samuel Adams, George Washington, and John Adams were among the delegates who discussed potential strategies, including boycotting British goods to assert the rights of the American colonists.This historic assembly was a response to the Coercive Acts, or the Intolerable Acts as they were known in America, which were implemented by the British Parliament to reassert control over the colonies following the Boston Tea Party. These acts had severe repercussions, including the closure of Boston Port and the revocation of the Massachusetts Charter. The colonies united in solidarity, with goods being sent to Massachusetts from as far as Georgia, and calls for a continental congress echoing across nine colonies by late spring 1774.Virginia played a significant role, with its Committee of Correspondence initiating the call for the congress. Delegates were elected through various means, including colonial legislatures and committees of correspondence. The firm's board chair, Marie-Aimée de Dampierre, praised Zaldivar's visionary strategy and leadership, which she believes will foster further success. Last year, the firm reported over $2.4 billion in gross revenue, positioning it among the top 15 law firms in the US. However, this was a 6.7% decrease from the 2021 record revenue, a dip Zaldivar attributes to a slump in M&A transactions. Looking ahead, Zaldivar anticipates a robust financial performance in 2023, backed by a strong balance sheet. And on a Tuesday!In this weeks column I discuss Massachusetts becoming the eighth state to implement a universal free lunch program for school children, financed by a 4% tax on individuals earning over $1 million annually, a policy expected to generate about $1 billion each year. This move comes as states are establishing their own lunch programs following the expiration of the federal initiative that began during the Covid-19 pandemic. While the program aims to prevent student hunger, critics argue it represents unsound tax policy, potentially encouraging capital flight and tax avoidance.Despite having sufficient surplus to fund the lunch program without the new tax, Massachusetts chose to levy it, possibly politicizing the provision of student lunches and tying it to the fluctuating popularity of wealth redistribution concepts. I suggest that a more stable solution should be sought at the national level, as the disparity in educational spending between states could jeopardize the consistent provision of student lunches. Reflecting on the successful federal free lunch program during the pandemic, I advocate for a national approach to address the issue, and caution against the risks of politicizing student nutrition through state-level policies. This is not a place for the state “laboratories of democracy” to experiment with how little support the student body can get by with. We have a solution, it is the policy that was just permitted to expire. Get ready to dive deep into the controversial world of seed oils with the brilliant Dr. Sarah Zaldivar! In this episode, we explore seed oils' origin, processing, and impact on our health. Dr. Zaldivar emphasizes the importance of balancing omega-3 and omega-6 fatty acids and how our modern diet throws that balance out of whack. But don't worry, she has some amazing advice and recommendations for using healthier alternatives to improve our overall health. Plus, we'll uncover the limitations of studies promoting seed oils and the truth behind their role in obesity. Dr. Sarah Zaldivar is a weight loss expert with a history of overcoming binge eating disorder, depression, anxiety, and weight struggles. She has lost over 25 pounds of body fat through implementing mindset shifts, a primal diet, and exercise plans. She holds a Ph.D. in Exercise Physiology & Nutrition and is a licensed dietitian, certified personal trainer, and an ACSM-certified Exercise Physiologist. She currently teaches nutrition at Miami Dade College and DeVry University while creating content on various social media platforms. Key Highlights: [00:01 - 03:10] Opening Segment Sarah first explains seed oil which is known as vegetable oil, where it originated, and how it evolved in the food industry. They were originally produced from cotton production waste products and used for engine lubricants before being introduced into the food supply. Seed oils are heavily processed and deodorized to mask their off-putting smell. [03:11 - 10:15] Extraction and Refinement Process of Seed Oils They explain the process of extracting oil from nuts and seeds, including cleaning, stripping, heating, and pressing. Hexane is a neurotoxin that can harm the nervous system, but it is commonly used in the food industry to extract fat from protein. They also discuss the process of refining oil to remove colors, odors, and bitterness. [10:16 - 15:00] Balancing Omega-3 and Omega-6 Sarah reiterates that the ideal omega-3 to omega-6 is 1:1, traditionally found in paleo-ancestral animal diets. The modern American who eats a standard American diet gets 20 to 25 times more omega-6 than omega-3, which is a problem because they both compete or function in the body. She explains that omega-6 and omega-3 need equal amounts for the body to function properly. [15:01 - 36:59] Omega-3 and Omega-6 Meta-Analysis Studies Sarah points out the limitations of Hong Sue in 2017 study, including the lack of consideration of differences in the source and quality of omega-six fatty acids. She also highlights the problem of excess consumption of omega-six fatty acids, which is common in the Western diet. A study by GH Johnson and Kevin Ritchie suggests that the majority of evidence shows that omega-six polyunsaturated fatty acids, including linoleic acid, can reduce the risk of cardiovascular disease. Sarah questions this specific study because it only looked at a few inflammatory markers and did not compare an ancestral diet to the Mediterranean diet. A study by Ivanna JK and Philip C Calder found an association between moderate intake of omega-6s and a lower risk of cardiovascular disease, possibly as a result of lower blood cholesterol concentration. [37:00 - 46:47] Closing Segment They discuss the prevalence of Omega-6 in the standard American diet and its impact on inflammation. They also talk about the funding sources of certain studies that suggest the benefits of seed oils. The study found that coconut oil did not significantly affect markers of glycemia inflammation and adiposity, but it contains Phytosteroids that can mess up hormones. Eating whole foods like meats, eggs, and dairy instead of processed foods is better for your health. In her book, Melissa tells the story of losing her friend Jill to cancer as she weaves together threads of the life of Louisa May Alcott, the author of “Little Women.” It is a beautiful, hopeful, and heavy story of how Jesus can meet us in whatever situation we find ourselves in. In today's conversation, we talk about how to rightly handle the Scriptures when faced with loss, how to help others that are in grief, and where hope is found even as grief lingers. Do you struggle with disordered eating tendencies? Dr. Sarah Zaldivar has a Ph.D. in Exercise Physiology and Nutrition from the University of Miami. She recently relocated to Ocala, Florida where she continues to teach nutrition courses online at Miami Dade College. She is a certified personal trainer and a certified Exercise Physiologist with the American College of Sports Medicine. She taught workshops training students to sit for the ACSM's personal training certification. She is currently entirely focused on content creation for YouTube to help others find optimal health through a carnivore diet, mindset shifts, exercise, and dance. An equally important component of her work focuses on antiaging and framing the aging process as a chronic disease that we can eventually reverse and cure. In fact, it sometimes leads us to our lowest moments and grieving in ways we never imagined, but it also marks us in ways that end up helping others who are in similar situations. On today's show, I sat down with my good friend, Melissa Zaldivar and we talked about her newest book, “What Cannot Be Lost”. Melissa shares about grief, loss and sorrow and how losing a close friend reminded her to pause and say what a gift and honor it is to have friendships and not just treat them like an obligation. Melissa reminded us that death hurts and death reminds us how much we are out of control, but as Christians we do not have to be afraid of it. She says death is something we can pause and think about and as we mourn our loved ones we can be reminded that one day we will get to see them again. Melissa's book, “What Cannot Be Lost”, is a book I did not know I needed.
