Secret Pour-igins: The Mojito Cocktail: Blue Summers Ingredients (per drink): 2oz White Rum 75oz Fresh Lime Juice 5oz Blueberry Simple Syrup 8–12 Fresh Mint Leaves Club Soda Instructions In a large glass or mason jar, add 2 scoops vanilla ice cream. Add a shot of Irish cream Add some chocolate syrup Slowly pour in Guinness Top with whipped cream Dash of nutmeg and/or chocolate shavings Stir it up and enjoy Garnish Mint Sprig 3 blueberries Glassware Collins or basically any type of glassware Blueberry Simple Syrup Recipe 1 cup blueberries 1 cup lemon juice 1 cup warm water 1 cup white granulated sugar Mix blueberries, water, and sugar together using a whisk in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes. Whisk lemon juice into syrup; serve immediately or cool. Instructions Add the mint, lime juice and simple syrup to a glass and gently muddle. Add the rum and fill the glass with ice. Top with club soda and give an easy stir Garnish with a big mint sprig and blueberries Non-Alcoholic version of Blue Summers Follow all other instructions above, just replace White Rum with additional Club Soda. If you are not watching Doctor Odyssey, you need to start now. It is one of those shows that is so cheesy that it's good. It's a guilty pleasure show for sure and I love it. I wanted to choose this episode because it features special guest stars Kelsea Ballerini and Margo Martindale as mother and daughter. I wasn't prepared for what this podcast episode turned out to be. I rant about finding the right shoes for homecoming activities, and you may be surprised to learn that Halloween isn't on my list of favorite holidays. I'm beginning to think about the next season for the podcast, and I ask for your input. This movie is filled with fun quotes and nostalgic scenes.  Seriously though, this pop culture movie hit brought out the BEST of a very tragic true crime story.  The bromance ensues while a very different SPOILER ALERT Sharon Tate ending plays out.  Based on a couple real characters most of the movie is not based on the true story.We explore Charles Manson's hippie cult and who is vulnerable to being in a cult.  It may surprise you.  It certainly wasn't all peace, love and happiness.Do we have a connection to Manson? The show is about a single dad and cosmetics owner figuring out fatherhood on the fly when his strong-minded teen daughter moves in with him. It stars Jamie Foxx, Kyla-Drew, Porscha Coleman, Jonathan Kite, David Alan Grier, and Valente Rodriguez. Ginger Beer Margaritas (minimalistbaker.com): Ingredients 1 1/2 oz of 100% Agave Tequila 1 oz Fresh Lime Juice 3 oz of Ginger Beer 1/2 oz Simple Syrup 1/2 Cup of Ice Coarse Salt Directions Line a small serving glass with fresh lime juice and dip in coarse salt (optional). Add tequila, lime juice, ginger beer, simple syrup, and ice to a large glass or cocktail shaker and stir vigorously. Don't shake with a lid on or it will erupt from the ginger beer carbonation (lesson learned). Pour liquid (reserving ice) into serving glass with a few ice cubes. Garnish with a lime wedge and serve immediately. Repeat for more drinks, or double/triple the amounts for more people. Corona VIrus is ripping across the country and all over the globe. How do we stay sane and decrease the stress we may be feeling during this pandemic? Drink a Coronarita. Rocks Version: 1 1/2 oz. Tequila 1/2 oz. Triple Sec 1 oz. Lime Juice Bottle of Corona In a shaker filled with ice, combine  the tequila, triple sec and lime juice and shake it up. pour it into a large pint glass that’s been rimmed with lime juice and coarse salt (kosher, sea, spicy). I’d rather use a deeper pint glass than the traditional marg glass tip the corona into the glass, bottle and all and garnish with a lime wedge. Frozen Version: 2 oz Tequila  3/4 oz. Triple Sec  1- 1 1/4 oz.Fresh Lime Juice  Corona or another Mexican Beer Combine all ingredients except the beer into your blender. Blend with ice until smooth. Pour into a large glass like a pint glass. Tip the Corona into the glass and leave it there bottle and all Garnish with a lime wedge Stay well and wash your hands

Tia Keenan Talks About How She Became The Queen Of Cheese Tia Keenan like any great Queen has a multitude of titles including Published Author, Wall Street Journal Contributor, Fromager, Restauranteur, Consultant, Mother, and many more. In 2001 after leaving her career in publishing, she began working as a server at Tribeca Grill. It was(and still is) an incredibly hot and successful restaurant owned by Robert DeNiro and NYC Hospitality Titan Drew Nieporent. All servers were expected to know the ins and outs of the cheese cart, but none of the staff knew it the way Tia did. Tia started working at Fleur de Sel at began ordering from Murray's Cheese. She took her knowledge with her to other restaurants in NYC until she became the Opening Chef Fromager at The Modern, Danny Meyer's Fine Dining restaurant inside the Museum of Modern Art. Tia had dreams bigger than working for Danny and opened up her own cheese-centric restaurant Cassellula on 52nd between 9th and 10th. She eventually moved on to consulting and helping restauranteurs open up their own restaurants including Murray's Cheese with their Cheese Bar concept. After having a child she took a step back from restaurants and began her career as a writer. She wrote The Art of The Cheese Plate, Chevre(Short Stack), and Melt, Stretch, and Sizzle: The Art of Cooking Cheese The Art of The Cheese Plate with Tia Keenan Tom and I both feel like we have strong knowledge of Charcuterie and Cheese. We've done a video in the past, and have talked about our love for all things cured and aged. That being said, when you have the chance to talk to someone who is an actual expert, you will always learn things if you ask the right questions, so we asked Tia if you're hosting a party for 10 regular people what will your cheese plate look like. 3 to 5 Kinds of cheese If Cheese will be the appetizer 1 to 1.5 ounces per person If Cheese will be the main course than 2 to 2.5 ounces per person If your guests are more of a Gouda and Pepperjack crowd, you can do something nice and get an Artisinal Gouda, but you don't need to get an over the top cheese. The goal of the cheese board is for it to be completely finished by the end of the night Fresh Cheese: Like Mozzarella, Bocconcini or Buratta Bloomy Rind Cheese: Something like Camembert, Brie, Brillat Savarin Goat Milk, Cow Milk, Sheep Milk: Maybe something hard and sharp here A Stinky Washed Rind Cheese: Limburger, Winnimere, Something over the top A Blue Cheese: Mild to Extreme Blue This is a good time to remember that some will be more popular than others so maybe you get 1 ounce of that washed rind cheese and 2 ounces of a nice Gouda Accouterment: This is where you can go wild with different flavors and textures really. Different flavored popcorn, pickled vegetables, jams, marshmallows. Everything is fair game for cheese pairings. Putting together Cheese Plates are supposed to be fun and not feel like homework so at the end of the day don't stress out and trust your gut and your local cheesemonger :) All About English Cheddar with Tia Keenan Tia just got back from a Cheese Tourism trip throughout the UK called "The Cheddar Odyssey" She tells us about her trip and explains what makes Cheddar, Cheddar. Cheesemaking 101: You coagulate the milk with rennet and a starter culture. This separates the curds from the whey. The whey is essentially the water of the milk. You add the salt and press the curds into a mold and cook it. This is the 101 of how to make cheese Cheddaring: To make Cheddar you press and layer the curds and you essentially make a slab of it. It looks like cheese-shale. You cut the shale into curds, heavy salt it, and then press those curds into a mold which is lined with a muslin cloth. You wash that cheese with lard and then let it age. Tia also brought a Smoked Cheddar Cheese from Westcombe. It was smokey and rich and you could smell it from a mile away. From there we move on to the East Village to a Bar called Miss Lily’s and met up with Ben Jones, who just launched an interesting Brand called Rhum Shrub JM. From there we will move downtown even further to Dead Rabbit, where Jack Daniels sponsored an event with 3 bartenders from the UK who won a trip to NY and then onto Tennessee to see the Jack Daniel’s Distillery. Book of the Week. It’s a great one – the Canon Cocktail Book by Jamie Boudreau. Jamie owns the Canon Whiskey and Bitters Emporium in Seattle Washington and has put together a fabulous book. Its not just recipes, although there are plenty. There is a very valuable section in the book titled Starting Your Own Bar: Tips and Advice. This section is worth the cost of the book alone and talks about everything from “are you sure you want to do this?”, to finding partners, the bar name, concept locations, and so on.   I was hoping to get Jamie on the show, but so far we just haven’t been able to work it out. He is a very busy man. He’s also involved in the Small Screen Network – if you haven’t heard of that, check out Jamie’s channel, called Raising the Bar. Morganthalar and Robert Hess have channels as well. So honestly get this book – you will not regret it! The recipes are great as well. There will be 3 hour long classes, followed by a party after. One of those classes BTW will be tought by yours truly and Hazel Elvarato! Starting at 12 will be Brockmans Gin, followed by a presentation by Melleti about how liquors and amaros are made and used, ending with what you and hazel will be teaching which is personal branding. My goal is to get all the bartenders to attend all classes. The party will go as follows: there will be a list of spirits. Each Bartender gets to choose one spirit and be the only bartender to do so. Book of the Week: Smuggler's Cove: Exotic Cocktails, Rum, and the Cult of Tiki by Martin and Rebecca Cate This book contains lots of great Tiki cocktail recipes, tons of great knowledge.  There are sections about Understanding Rum, the History of Tiki and Tiki Cocktail Techniques Cocktail of the Week: Mai Tai ·      2 oz Aged Rum ·      ½ oz Orange Liqueur (I used Mandarine Napoleon) ·      ¾ oz Fresh Lime Juice ·      ¼ oz Orgeat Syrup (I used Small Hand Food brand) ·      ¼ oz Rich Demerara Syrup  Shake all ingredients with crushed ice.  Pour all ingredients (including ice) into a Double Old Fashioned Glass.  Garnish with a half lime shell (ie: lime used to produce lime juice) and a sprig of mint. There are many types of Rum.  The old classifications of Light, Amber, Dark and Overproof just don’t cut it anymore.  We now talk more specifically about the production methods and materials: ·      Raw materials that will be fermented - most commonly Molasses, but sometimes Pressed Sugar Cane Juice. ·      The Still it was produced in – Column or Pot Still ·      The Aging Process

We get a lesson on making Caipirinha cocktails from owner of Leblon Cachaça, Steve Luttmann!

Cachaça is the national spirit of Brazil and the base spirit for the Caipirinha cocktail.  Find the Caipirinha recipe below. Also, we pay tribute to Sasha Petraske, who left us way too soon and left a hole in the Bartending community.  Quoting from the New York Times article about Sasha's passing, "Mr. Petraske’s role in the modern cocktail revival is difficult to overstate."

 Classic Daiquiri Recipe:
 2 oz Silver Rum
 1 oz Fresh Lime Juice
 3/4 oz Simple Syrup
 Shake with ice.  Double Strain into a chilled coupe glass.   Leblon Caipirinha Recipe: 2 oz Leblon Cachaça 1/2  a lime, cut into wedges 2 tsp Superfine sugar or 1 oz Simple syrup Muddle the lime and sugar in a shaker. Field Cocktail2 oz Pierre Ferrand Ambre Cognac1 oz Noilly Prat Dry Vermouth.75 oz Pineapple juice Stir with ice and strain in a chilled coupe. Garnish with a pineapple leaf. Queens Park Swizzle3 oz Demerara Rum1 oz Fresh Lime Juice.5 oz Demerara Sugar Syrup4 to 6 Mint Leaves Swizzle everything in a double old-fashioned glass partly filled with crushed ice. Add more crushed ice to fill. Swizzle again until glass frosts. Garnish with a mint sprig and your spent lime shell. Samba2.0 oz Cachaca1.0 oz cane sugar syrup3 dashes Bittered Sling Lem Marekesh Bitters (lemon bitters will work)0.5 Aperol or Campari1 lime151 proof rumCinnamon, sugar and nutmeg to garnish Fill an Old Fashioned glass with crushed ice. Muddle one whole lime cut in quarters. Add Cacacha, cane sugar syrup and bitters. Strain the mixture over the crushed ice and drizzle with a half ounce of Aperol or Campari. On top of the drink, fill a spent lime shell with 151-proof rum and dust it with cinnamon, sugar and nutmeg. Set on fire. The Journey1.5 oz The Macallan 12.5 oz Heering Cherry Liqueur.5 oz Taylor Fladgate Tawny Porto 10 Year.25 oz Grand Marnier1 Dash Fee Brothers Peach BittersOrange Zest Twist Combine liquids in a mixing glass with ice. Stir until well chilled. Strain into a chilled cocktail glass. Zest a fresh orange twist over the cocktail and drop twist into the drink.

Drop in a lime peel spiral and top with club soda. should have been salty and bitter This is, according to Baker, "a sort of Kirsch Collins," which he invented for his friend Ernest Hemingway before sending him and bullfighter Sidney Franklin "off on the plane for New York, & Loyalist Spain.” Aperol Spritz2 oz Aperol1 oz Prosecco1 oz club soda.5 oz Orange Juice Build in a rocks glass. Add ice and stir. Garnish with half an orange wheel. Terroir & Peace2 oz mushroom-infused gin*1 oz Dolin dry vermouth.25 oz thyme syrup**lemon peel Combine infused gin, vermouth, and thyme syrup. Stir and strain into a chilled coupe glass. Lemon peel expressed and discarded. * Mushroom-infused gin: Fill a quart-sized Mason jar 1/2 to 2/3 full with mushrooms, ideally chanterelles. Fill rest of the jar with gin and let sit for up to two weeks. ** Thyme syrup: Heat 1 cup sugar, 1 cup water, and six sprigs of thyme in a saucepan. Slightly simmer until sugar dissolves. Strain. Pegu Club2 oz Gin.75 oz Orange Curaçao.75 oz lime juice1 dash angostura bitters1 dash orange bitters Shake with ice until well chilled. Add remaining ingredients. Add ice, shake briefly and strain into a glass. Pour back into the shaker, strain again into a stemmed cocktail glass and serve. Old Pal2 oz Rye.75 oz dry vermouth.75 oz Campari Stir with ice until well chilled and strain into a chilled cocktail glass. Garnish with an orange peel. Celine Fizz2oz Plymouth Gin.75 oz St. Germain.75 oz lemon juice.75 oz simple syrup1 egg whiteClub soda Dry shake all ingredients (except club soda), then shake again with ice. Double strain into a fizz glass then top w/ club soda. No garnish. La Luna1.5 oz Hendrick's Gin.75 oz Cucumber Juice*.75 oz Fresh Lime Juice.75 oz Mild Jalapeno Syrup*1.5 oz SodaGarnish: (Kosher) Salted Cucumber Spear Combine gin, cucumber, lime and syrup in a tall glass with ice. Top with soda, stir to combine. *Cucumber Juice: put whole, unpeeled cucumbers through a juicer. If you don't have one, peel and seed the cucumbers, throw them in a blender and strain through a fine sieve. *Jalepeno Syrup: Muddle four seeded, chopped jalapeños with one cup of sugar. This should form a thick paste. Combine it with one cup of water in a pot on the stove and heat until the sugar dissolves. Increase the heat slightly and reduce down a bit. Leapfrog2oz. Plymouth Gin.75oz Lemon juice.5oz Rothman & Winter Orchard Apricot.25oz simple syrup2 dashes orange bitters6 mint leaves Muddle the mint leaves with the simple syrup. Add everything else, then shake with ice and fine strain into chilled coupe. No garnish.

Ideal during Autumn when bramble berries are at their ripest. 2 oz. Cointreau 1 oz. Fresh Lime Juice 2 Blackberries 2 Raspberries 5 mint leaves 4 oz. Club Soda or Seltzer Muddle the berries and mint in a Highball glass. Add Cointreau and lime juice with ice and top with club soda.
