Hiếm có đầu bếp Pháp nào lại có nhiều chuyện thú vị để kể như ông Guillaume Gomez. Vào năm 25 tuổi, ông trở thành gương mặt trẻ nhất được trao tặng danh hiệu « Nghệ nhân xuất sắc nhất nước Pháp » (Meilleur Ouvrier de France). Vài năm sau khi được chính thức tuyển dụng vào Điện Élysée ( phủ tổng thống Pháp ), ông trở thành bếp trưởng, phục vụ bốn đời tổng thống Pháp Chirac, Sarkozy, Hollande và Macron. Do làm việc 24 năm liên tục, từ năm 1997 đến năm 2021, trong nhà bếp Điện Élysée, ông Guillaume Gomez biết rõ hậu trường cũng như cách vận hành của phủ tổng thống. Tuy đã từng phục vụ một số nhân vật nổi tiếng hàng đầu thế giới, trong đó có nữ hoàng Anh Elizabeth Đệ Nhị và tổng thống Mỹ Donald Trump, nhưng vẫn luôn giữ thái độ kín đáo, khiêm nhường. Ông cho biết lần đầu tiên ông gia nhập đội ngũ đầu bếp tại Điện Élysée là vào năm 19 tuổi (1997), dưới thời tổng thống Chirac. Thế nhưng, theo Guillaume Gomez, đam mê nấu ăn đã có từ lâu : Tôi luôn muốn trở thành đầu bếp, ngay từ khi còn rất nhỏ. Nhân một kỳ liên hoan nhà trường, trong khi các bé gái thích hóa trang thành nàng tiên hay công chúa, còn các cậu bé trai cùng lứa tuổi thích trở thành cảnh sát hay cao bồi, thì trong bức ảnh chụp tôi lại hóa trang thành một đầu bếp. Khi lớn lên, tôi bắt đầu sưu tầm các quyển sách dạy nấu ăn. Tôi còn nhớ quyển đầu tiên là quyển sách « La cuisine du Marché » (hiểu theo nghĩa nấu ăn với các món mua ngoài chợ trong ngày) của bậc thầy Paul Bocuse. Cha mẹ tôi kiếm sống nhờ nghề buôn bán đồ cũ. Vào thời ấy, bố mẹ tôi còn nghèo, cho nên dù đam mê nấu ăn nhưng chưa bao giờ tôi được đi ăn nhà hàng. Biết rằng tôi bắt đầu sưu tầm sách dạy nấu ăn, mẹ tôi thường để dành cho tôi một số cuốn sách mà bà tìm thấy. Một số quyển sách cũ đến nổi cho dù muốn bán thì cũng chẳng có ai mua. Sinh trưởng tại vùng ngoại ô nghèo của Paris (Seine Saint - Denis), ông bắt đầu học nghề nấu ăn từ năm 14 tuổi. Trong những bước đầu « tầm sư học đạo », Guillaume Gomez cho biết ông đã gặp được nhiều người tốt. Những vị ân nhân ấy đã tạo cơ hội cho ông gõ đúng cửa, tìm đúng việc hợp với sở thích của mình. Đầu bếp người Pháp nhận xét : Vâng, tôi rất may mắn vì nhiều lý do. Đầu tiên hết là từ khi còn nhỏ tôi đã biết mình muốn làm gì khi trưởng thành, cho nên đỡ phải mất thời gian để định hướng nghề nghiệp. Hơn nữa, tôi luôn được bố mẹ ủng hộ, bất chấp sự bất đồng của thầy cô trong trường, cho rằng cho tôi đi học nghề chẳng khác gì lãng phí khả năng học chữ của tôi. Cuối cùng, khi mới vào đời, tôi đã may mắn gặp thầy tôi là ông Johnny Benaria, mà tôi xem như một người cha thứ nhì. Chính ông Benaria cùng với Jacques Le Divellec đã giới thiệu tôi với đầu bếp Joël Normand, nhờ vậy tôi mới chính thức được tuyển vào làm việc cho Điện Élysée vào năm 1997, ngay sau khi tôi thi hành nghĩa vụ quân sự. Trong thời gian thử việc, bếp trưởng Joël Normand đã chỉ dẫn tôi một cách tận tình, quả thật là tôi rất may mắn khi gặp được những người thầy tốt đến như vậy. Học thầy không tầy học bạn. Trong mắt đầu bếp người Pháp, khoảng thời gian làm việc trong nhà bếp của Điện Élysée đã đem lại cho ông nhiều kinh nghiệm hữu ích, có giá trị tương đương với thời gian học tập tại 10 trường dạy nấu ăn. Ông Guillaume Gomez giải thích : Đúng vậy, bởi vì trong êkíp của chúng tôi, có rất nhiều đầu bếp trẻ tuổi từng thực tập hay làm việc cho các nhà hàng ba sao nổi tiếng nhất của Pháp. Qua công việc thường ngày, chúng tôi trao đổi kỹ thuật chế biến, bí quyết tay nghề cũng như các công thức nấu ăn. Có thể nói là nhà bếp của Điện Élysée giống như một lớp đào tạo tập hợp về cùng một chỗ những thực tập sinh đến từ nhiều trường phái khác nhau như Bocuse, Ducasse hoặc Robuchon. Thú vị hơn nữa là chúng tôi có thói quen khuyến khích nhau để cùng học hỏi tiến tới, chứ không phải học tập để lấy bằng điểm. Làm thế nào để nấu một bữa tiệc thịnh soạn để chiêu đãi thượng khách, nhưng đồng thời tránh làm phật lòng một nguyên thủ quốc gia như trường hợp của tổng thống Mỹ Donald Trump, nổi tiếng là thích ăn burger và pizza. Việc tiếp đón tổng thống Hoa Kỳ (với tất cả những ràng buộc vê mặt nghi thức lễ tân) đã để lại cho đầu bếp người Pháp nhiều giai thoại thú vị. Ông Quillaume Gomez cho biết thêm về khái niệm « ngoại giao bàn ăn ». Nhân chuyến công du nước Pháp đầu tiên của tổng thống Trump, chúng tôi được giao nhiệm vụ nấu một bữa ăn trưa cho hai nguyên thủ quốc gia Mỹ và Pháp. Thế nhưng, việc đưa vào thực đơn Điện Élysée các món ăn như burger hay pizza là điều không thể tưởng tượng nổi. Cũng may là chúng tôi có sự giúp đỡ của Câu lạc bộ các bếp trưởng hàng đầu (gọi tắt là Câu lạc bộ 3C). Do đầu bếp Pháp Gilles Bragard thành lập vào năm 1977, câu lạc bộ này gồm nhiều thành viên chuyên làm việc tại Phủ tổng thống hay Phủ thủ tướng. Nhờ câu lạc bộ 3C, tôi mới có dịp liên lạc trực tiếp với bà bếp trưởng tại Nhà Trắng, chính bà đã gợi ý cho tôi làm món sườn heo nướng xốt barbecue. Gợi hứng từ công thức này, tôi nấu món thịt thăn lợn với một chút xương. Đây là giống lợn đen nuôi ở vùng Bigorre, thịt mềm mà vẫn không nhiều mở, tẩm gia vị thơm ngon, dùng kèm với khoai tây thái thật mỏng thành nhiều que thon chiên giòn, nên được gọi là khoai tây « rơm », tiếng Pháp gọi là pomme paille. Rốt cuộc, tổng thống Trump rất hài lòng về bữa ăn này, mà chúng tôi cũng tuân thủ đươc nghi thức lễ tân. Có thể nói, ẩm thực cũng như nghệ thuật bàn ăn là phản ánh hình ảnh và uy tín của nước Pháp. Đó là một phần quan trọng trong văn hóa Pháp, nhưng đồng thời mang tính ngoại giao, bởi vì thông qua bàn ăn, chúng ta tạo được hình ảnh đẹp, thu hút sự chú ý cũng như chinh phục cảm tình của người nước ngoài. Tôi đã từng phục vụ bốn đời tổng thống, mỗi vị nguyên thủ có một phong cách riêng, nhưng nhìn chung họ ý thức về tầm quan trọng của nghệ thuật ẩm thực, do vậy họ đều muốn đề cao các đặc sản của Pháp thông qua các bữa ăn thường ngày, cũng như qua các buổi lễ tân tại Điện Élysée. Đầu bếp Guillaume Gomez gặp Emmanuel Macron lần đầu tiên khi ông ấy mới 35 tuổi, chưa được bầu làm tổng thống. Nhiều năm sau khi đắc cử, tổng thống Macron mới bổ nhiệm đầu bếp Guillaume Gomez làm đại sứ nhằm quảng bá ẩm thực Pháp ở nước ngoài. Lý do gì khiến ông Gomez rời bỏ chức vụ bếp trưởng Điện Élysée cho dù về mặt sự nghiệp, ông đã thành công trong gần 25 năm qua? Tôi không phải là một công chức và hành trình của tôi tại Phủ tổng thống (Điện Élysée) đã đến hồi kết. Phải chăng tôi đã ngủ quên trên một chiếc "ghế ngồi" quá thoải mái, hay là tôi tò mò muốn xem chương sách tiếp theo là gì ? Việc tôi rời một chức vụ không có nghĩa là tôi từ bỏ nhiệm vụ. Khi được bổ nhiệm làm đại sứ ẩm thực, nhiệm vụ của tôi không chỉ là quảng bá ẩm thực Pháp ở nước ngoài mà còn là cải thiện dinh dưỡng, khuyến khích giới trẻ ở Pháp ăn uống lành mạnh. Một chế độ ăn uống kém, gồm nhiều thức ăn nhanh, cũng như dùng quá nhiều thực phẩm chế biến thường dẫn tới các chứng bệnh béo phì, tiểu đường, huyết áp cao …. Mỗi năm, các chứng bệnh này gây thiệt hại hàng chục tỷ euro, thậm chí còn cao hơn nhiều lần mức thâm hụt ngân sách quỹ an sinh xã hội (hiện thời là 23 tỷ euro). Trong vài năm tới, chúng ta sẽ gặp rất nhiều vấn đề y tế công cộng nếu chúng ta vẫn ít coi trọng giáo dục dinh dưỡng, nhất là đối với giới trẻ thời nay. Theo tôi nghĩ, chúng ta đừng chờ, mà nên tìm cách đối phó ngay từ bây giờ.

Đầu tiên hết là từ khi còn nhỏ tôi đã biết mình muốn làm gì khi trưởng thành, cho nên đỡ phải mất thời gian để định hướng nghề nghiệp. Hơn nữa, tôi luôn được bố mẹ ủng hộ, bất chấp sự bất đồng của thầy cô trong trường, cho rằng cho tôi đi học nghề chẳng khác gì lãng phí khả năng học chữ của tôi. Cuối cùng, khi mới vào đời, tôi đã may mắn gặp thầy tôi là ông Johnny Benaria, mà tôi xem như một người cha thứ nhì. Chính ông Benaria cùng với Jacques Le Divellec đã giới thiệu tôi với đầu bếp Joël Normand, nhờ vậy tôi mới chính thức được tuyển vào làm việc cho Điện Élysée vào năm 1997, ngay sau khi tôi thi hành nghĩa vụ quân sự. Trong thời gian thử việc, bếp trưởng Joël Normand đã chỉ dẫn tôi một cách tận tình, quả thật là tôi rất may mắn khi gặp được những người thầy tốt đến như vậy. Học thầy không tầy học bạn. Trong mắt đầu bếp người Pháp, khoảng thời gian làm việc trong nhà bếp của Điện Élysée đã đem lại cho ông nhiều kinh nghiệm hữu ích, có giá trị tương đương với thời gian học tập tại 10 trường dạy nấu ăn. Ông Guillaume Gomez giải thích : Đúng vậy, bởi vì trong êkíp của chúng tôi, có rất nhiều đầu bếp trẻ tuổi từng thực tập hay làm việc cho các nhà hàng ba sao nổi tiếng nhất của Pháp. Qua công việc thường ngày, chúng tôi trao đổi kỹ thuật chế biến, bí quyết tay nghề cũng như các công thức nấu ăn. Có thể nói là nhà bếp của Điện Élysée giống như một lớp đào tạo tập hợp về cùng một chỗ những thực tập sinh đến từ nhiều trường phái khác nhau như Bocuse, Ducasse hoặc Robuchon. Thú vị hơn nữa là chúng tôi có thói quen khuyến khích nhau để cùng học hỏi tiến tới, chứ không phải học tập để lấy bằng điểm. Làm thế nào để nấu một bữa tiệc thịnh soạn để chiêu đãi thượng khách, nhưng đồng thời tránh làm phật lòng một nguyên thủ quốc gia như trường hợp của tổng thống Mỹ Donald Trump, nổi tiếng là thích ăn burger và pizza. Việc tiếp đón tổng thống Hoa Kỳ (với tất cả những ràng buộc vê mặt nghi thức lễ tân) đã để lại cho đầu bếp người Pháp nhiều giai thoại thú vị. Ông Quillaume Gomez cho biết thêm về khái niệm « ngoại giao bàn ăn ». Nhân chuyến công du nước Pháp đầu tiên của tổng thống Trump, chúng tôi được giao nhiệm vụ nấu một bữa ăn trưa cho hai nguyên thủ quốc gia Mỹ và Pháp. Thế nhưng, việc đưa vào thực đơn Điện Élysée các món ăn như burger hay pizza là điều không thể tưởng tượng nổi. Cũng may là chúng tôi có sự giúp đỡ của Câu lạc bộ các bếp trưởng hàng đầu (gọi tắt là Câu lạc bộ 3C). Do đầu bếp Pháp Gilles Bragard thành lập vào năm 1977, câu lạc bộ này gồm nhiều thành viên chuyên làm việc tại Phủ tổng thống hay Phủ thủ tướng. Nhờ câu lạc bộ 3C, tôi mới có dịp liên lạc trực tiếp với bà bếp trưởng tại Nhà Trắng, chính bà đã gợi ý cho tôi làm món sườn heo nướng xốt barbecue. Gợi hứng từ công thức này, tôi nấu món thịt thăn lợn với một chút xương. Đây là giống lợn đen nuôi ở vùng Bigorre, thịt mềm mà vẫn không nhiều mở, tẩm gia vị thơm ngon, dùng kèm với khoai tây thái thật mỏng thành nhiều que thon chiên giòn, nên được gọi là khoai tây « rơm », tiếng Pháp gọi là pomme paille. Rốt cuộc, tổng thống Trump rất hài lòng về bữa ăn này, mà chúng tôi cũng tuân thủ đươc nghi thức lễ tân. Có thể nói, ẩm thực cũng như nghệ thuật bàn ăn là phản ánh hình ảnh và uy tín của nước Pháp. Đó là một phần quan trọng trong văn hóa Pháp, nhưng đồng thời mang tính ngoại giao, bởi vì thông qua bàn ăn, chúng ta tạo được hình ảnh đẹp, thu hút sự chú ý cũng như chinh phục cảm tình của người nước ngoài. Tôi đã từng phục vụ bốn đời tổng thống, mỗi vị nguyên thủ có một phong cách riêng, nhưng nhìn chung họ ý thức về tầm quan trọng của nghệ thuật ẩm thực, do vậy họ đều muốn đề cao các đặc sản của Pháp thông qua các bữa ăn thường ngày, cũng như qua các buổi lễ tân tại Điện Élysée. Đầu bếp Guillaume Gomez gặp Emmanuel Macron lần đầu tiên khi ông ấy mới 35 tuổi, chưa được bầu làm tổng thống. Nhiều năm sau khi đắc cử, tổng thống Macron mới bổ nhiệm đầu bếp Guillaume Gomez làm đại sứ nhằm quảng bá ẩm thực Pháp ở nước ngoài. Lý do gì khiến ông Gomez rời bỏ chức vụ bếp trưởng Điện Élysée cho dù về mặt sự nghiệp, ông đã thành công trong gần 25 năm qua? Tôi không phải là một công chức và hành trình của tôi tại Phủ tổng thống (Điện Élysée) đã đến hồi kết. Phải chăng tôi đã ngủ quên trên một chiếc "ghế ngồi" quá thoải mái, hay là tôi tò mò muốn xem chương sách tiếp theo là gì ? Việc tôi rời một chức vụ không có nghĩa là tôi từ bỏ nhiệm vụ. Khi được bổ nhiệm làm đại sứ ẩm thực, nhiệm vụ của tôi không chỉ là quảng bá ẩm thực Pháp ở nước ngoài mà còn là cải thiện dinh dưỡng, khuyến khích giới trẻ ở Pháp ăn uống lành mạnh. Một chế độ ăn uống kém, gồm nhiều thức ăn nhanh, cũng như dùng quá nhiều thực phẩm chế biến thường dẫn tới các chứng bệnh béo phì, tiểu đường, huyết áp cao …. Mỗi năm, các chứng bệnh này gây thiệt hại hàng chục tỷ euro, thậm chí còn cao hơn nhiều lần mức thâm hụt ngân sách quỹ an sinh xã hội (hiện thời là 23 tỷ euro). Trong vài năm tới, chúng ta sẽ gặp rất nhiều vấn đề y tế công cộng nếu chúng ta vẫn ít coi trọng giáo dục dinh dưỡng, nhất là đối với giới trẻ thời nay. Theo tôi nghĩ, chúng ta đừng chờ, mà nên tìm cách đối phó ngay từ bây giờ.

Chefs Alen Ramos and Carolyn Nugent have been mentored by some of the world's most renowned chefs. The two, who are now married, met while working for Joël Robuchon, who was awarded the title "Chef of the Century" in 1989. The two decided to pack their bags and learn from the greats of Europe. They've worked in restaurants in France, Switzerland and Spain, and were selected to work in El Bulli and The Fat Duck, judged to be the number one and number two restaurants in the world during their tenure. They strengthened their gastronomic foundation through invaluable classical French training at Pierre Hermé in Paris. "We have been the recipients of priceless training by some of the best chefs of our time," said Nugent. "We are expressing that knowledge at Poulette Bakeshop, offering delicious food, made with care by a team of passionate people, led by experienced chefs." After returning to the United States from Europe, the pair spearheaded the bread and pastry programs at L2o in Chicago, under the mentorship of Laurent Gras, which was subsequently awarded three Michelin stars. The two then built the French Patisserie program at Bottega Louie in Los Angeles and went on to assist Thomas Keller with Bouchon Bakery in Beverly Hills. Next, Ramos & Nugent were part of the team that facilitated Quince in San Francisco going from a two Michelin star rating to three stars. The couple's reputation earned them a Research & Development position at the iconic Tartine Bakery in San Francisco where they pushed fresh milled flours and heritage grains to the forefront of artisanal baking. Finally, working under Chefs Jacquy Pfeiffer & Sebastien Canonne as a chef-instructor at The French Pastry School, the nation's top educational facility for baking & pastry education, finalized a love of education and classical French pastry. In 2020, Nugent was honored to have been selected and cast as Chef Assistant to world renowned Chef & Chocolatier, Amaury Guichon, for his debut television show, School of Chocolate, now streaming internationally on Netflix. In 2024, Carolyn & Alen were honored to be nationally recognized as Semifinalists for The James Beard Awards in the category of Best Pastry Chef and Baker. REDIFFUSION Interviewé en 2014 par l'Express Styles, le chef cuisinier Joël Robuchon, titulaire de 32 étoiles au guide Michelin, affirmait : « La santé par l'alimentation, c'est l'enjeu des années à venir. » Et pourtant, d'après l'Inserm, moins de la moitié des adultes et seulement un cinquième des enfants respectaient la recommandation de consommer 5 fruits et légumes par jour en 2017. Parmi les aliments qui posent le plus problème, le sucre revient régulièrement sur la sellette. Critiqué pour son caractère addictif ou cariogène, il est également responsable du vieillissement plus rapide des cellules. Ce phénomène s'explique par deux aspects : la baisse de la sensibilité à l'insuline et la fixation des résidus de sucre sur le collagène de la peau. La glycation, responsable du vieillissement précoce cutané Les sucres consommés via l'alimentation sont digérés dans l'estomac puis dans les intestins par l'action de différentes enzymes. Selon le type de glucides ingérés, la décomposition des aliments entraine l'apparition de molécules de glucose et de fructose. Le sucre blanc, dit saccharose, est ainsi composé de ces deux monosaccharides. Le problème, c'est que le glucose et le fructose s'associent aux protéines ou aux lipides dans une réaction chimique, la glycation. Celle-ci induit la production d'AGE, des substances connues sous le nom français de produits finaux de glycation. La glycation existe à l'état naturel dans l'organisme. Mais quand le sucre est consommé en excès, elle libère trop d'AGE pour que le corps parvienne à les transformer ou à les éliminer. Ces produits issus du sucre vont alors se fixer sur certaines cellules, en particulier sur les cellules cutanées du collagène et de l'élastine. La structure globale de la peau va être altérée par la présence de ces AGE, qui vont diminuer la souplesse et l'élasticité apportées par le collagène et l'élastine.  Les produits finaux de glycation se retrouvent directement dans les aliments qui ont été caramélisés ou grillés. Plus l'alimentation comporte de sucre et d'aliments ayant subi la réaction de Maillard, qui donne cette couleur brune et cette saveur typique, plus il y aura d'AGE dans l'organisme, et plus la peau vieillira rapidement. Interviewé en 2014 par l'Express Styles, le chef cuisinier Joël Robuchon, titulaire de 32 étoiles au guide Michelin, affirmait : « La santé par l'alimentation, c'est l'enjeu des années à venir. » Et pourtant, d'après l'Inserm, moins de la moitié des adultes et seulement un cinquième des enfants respectaient la recommandation de consommer 5 fruits et légumes par jour en 2017.Parmi les aliments qui posent le plus problème, le sucre revient régulièrement sur la sellette. Critiqué pour son caractère addictif ou cariogène, il est également responsable du vieillissement plus rapide des cellules. Ce phénomène s'explique par deux aspects : la baisse de la sensibilité à l'insuline et la fixation des résidus de sucre sur le collagène de la peau.La glycation, responsable du vieillissement précoce cutanéLes sucres consommés via l'alimentation sont digérés dans l'estomac puis dans les intestins par l'action de différentes enzymes. Selon le type de glucides ingérés, la décomposition des aliments entraine l'apparition de molécules de glucose et de fructose. Le sucre blanc, dit saccharose, est ainsi composé de ces deux monosaccharides. Le problème, c'est que le glucose et le fructose s'associent aux protéines ou aux lipides dans une réaction chimique, la glycation. Celle-ci induit la production d'AGE, des substances connues sous le nom français de produits finaux de glycation.La glycation existe à l'état naturel dans l'organisme. Mais quand le sucre est consommé en excès, elle libère trop d'AGE pour que le corps parvienne à les transformer ou à les éliminer. Ces produits issus du sucre vont alors se fixer sur certaines cellules, en particulier sur les cellules cutanées du collagène et de l'élastine. La structure globale de la peau va être altérée par la présence de ces AGE, qui vont diminuer la souplesse et l'élasticité apportées par le collagène et l'élastine. Les produits finaux de glycation se retrouvent directement dans les aliments qui ont été caramélisés ou grillés. Plus l'alimentation comporte de sucre et d'aliments ayant subi la réaction de Maillard, qui donne cette couleur brune et cette saveur typique, plus il y aura d'AGE dans l'organisme, et plus la peau vieillira rapidement.La glycation touche aussi l'insuline et l'hémoglobineDans le cadre d'une alimentation riche en sucre, la glycation s'attaque à l'hormone insulinique, qui permet de réguler la glycémie donc le taux de sucre dans le sang, ainsi qu'à l'hémoglobine, la protéine responsable du transport de l'oxygène. L'insuline glyquée par des molécules de glucose devient inefficace dans la gestion de la glycémie. Le risque de développer ou d'aggraver un diabète de type 2 est alors très réel. Si la glycémie est mal contrôlée, le sucre circule en excès dans tout le corps, provoquant la glycation des autres cellules, donc leur vieillissement accéléré.D'après les travaux menés pendant les dernières décennies, il est établi que la glycation provoque des lésions des cellules et des tissus, et augmente le vieillissement des vaisseaux sanguins. Alan Geaam grandit dans le nord du Liban, à Tripoli, en pleine guerre civile. Enfant, il regarde à la télévision une émission culinaire présentée par le chef étoilé Joël Robuchon, et découvre avec émerveillement la cuisine française. Le 2 mars 1999, à 24 ans, il atterrit à l'aéroport d'Orly avec l'envie de réaliser son rêve, devenir chef cuisinier en France. Les premiers mois sont difficiles mais Alan s'accroche. En autodidacte, il apprend les rudiments de la cuisine française et il accumule de l'expérience dans plusieurs restaurants de la capitale.
