Welcome back everyone to SEASON FOUR of Nikoli's Kitchen! This week we're talking about under-baked strawberry rhubarb pie and about beating myself up a lot in the preceding weeks. The journey continues. Growth never ends. Stop the cycle of negativity and stop beating yourself up for not achieving 100% of everything every single day. And thank you so much for listening! Featured Recipe for this Episode Crust (makes two) 3 c all-purpose flour 1/3 c shortening, cut into small cubes and frozen 10 T butter, cut into small cubes and frozen 1-1/2 t salt 1/2 c ice water ~| The key to a great, flaky pie crust is not to touch it with your hands as much as possible. Your fat should be as cold as possible/frozen and put ice cubes in your water so it is ICE cold- and then don't let the heat from your hands warm it up! |~ Cut the shortening and butter into small cubes and freeze them. Add flour and salt to a food processor. Add the shortening and butter cubes and pulse until your dough is nice and crumbly. Dribble in your ice water a little at a time, pulsing as you go until the dough clumps. Do not add more water than you need to or you'll need to correct with flour. Transfer dough to floured surface and form into a ball. Separate the dough into two balls. Flatten into 1" discs. Wrap the discs tightly in plastic wrap and refrigerate for a couple of hours (you can also freeze them for later use if you don't need the second one now). Pie Filling 5 c strawberries, quartered 3 c rhubarb, chopped 2 T light brown sugar (can be omitted) 1/4 t salt 3 T cornstarch Combine all of the ingredients in a bowl and stir to coat the strawberries and rhubarb well. Almond Streusel Topping 1/2 c light brown sugar 1 c almond flour 1/2 c unsalted butter, cut into small cubes and frozen 1/4 t salt Add all ingredients to a food processor and pulse until crumbly. Making The Pie Preheat oven to 450°. Remove dough from the fridge and roll out on a floured surface, working out from the center as you go around. Press the dough into a 9" deep-dish pie pan. Add a few crumbles of the sugar crumb topping into your pie pan. Add your strawberry rhubarb filling to the pie pan. Top with the remainder of the crumb topping. Bake at 450° for 10 minutes; reduce heat to 350° and bake for an additional 45-50 minutes. Remove and allow to cool before serving. ~| In the episode I noted that my pie was noticeably underdone in the center; the rhubarb hadn't broken down all the way and was still fibrous and a bit crunchy. Welcome to June 9th, 2022 on the National Day Calendar. Today we celebrate the bird that still quacks us up and Summer's best sweet tart duo. Donald Duck was first introduced to the world in 1931 in a book called The Adventures of Mickey Mouse. In the story, he and several other animals join Mickey and Minnie for a hoedown at a local barn. The story isn't that significant, but something in the book is—it's the first and only time that Donald ever wore pants. Plus, the pants and matching hat were green, so maybe that just means he hadn't yet joined the Navy. That outfit didn't make an appearance until his first film role in 1934. Today, we celebrate the crazy, foul-tempered little duck who plays second fiddle only to Mickey, Mr. Donald Fauntleroy Duck. Yes, that's really his middle name. Happy National Donald Duck Day! It will probably come as no surprise that rhubarb was initially produced as a medicine. The first recorded use dates back to 2700 BCE. Today we know that rhubarb is high in oleic acid, although the leaves are toxic and the stalks must be cooked before they can be eaten. It's also a food that tastes much better when paired with sugar or sweet fruits. Strawberries to the rescue! This winning combination was first discovered in England and Germany, but we have gladly adopted its sweet, tart flavor here in the United States. Today, we celebrate the crazy little duck who plays second fiddle to Mickey, Mr. Donald Fauntleroy Duck. (Yes, that's really his middle name.) Happy National Donald Duck Day! It will probably come as no surprise that rhubarb was initially produced as a medicine. The first recorded use dates back to 2700 BCE. Today we know that rhubarb is high in oleic acid, although the leaves are toxic and the stalks must be cooked before they can be eaten. It's also a food that tastes much better when paired with sugar or sweet fruits. Strawberries to the rescue! This winning combination was first discovered in England and Germany, but we have gladly adopted its sweet, tart flavor here in the United States. The Simply Luxurious Kitchen - Seasonal Fare to Elevate the Everyday Meal
In today's episode of The Simply Luxurious Kitchen discover how to make sweet tart dough in the blink of an eye, roll out your crust into any tart pan with a simple technique that ensures precise edges as well as how to pick rhubarb to encourage more to be grown. Oh, and I cannot forget my familiy recipe for the sweet crumble that dresses the top of any of my fruit tarts. Even if you do not have strawberries, discover another favorite combination of mine which pairs beautifully with seasonal rhubarb.
Why Drying is Effective To continue our series on Preserving the harvest let explore using a dehydrator. Drying foods is one of the oldest methods of food preservation dating back literally thousands of years. Foods like grains and beans have long been a staple food for humankind dried to last not just one season but over many seasons. Fruits, vegetables and meats can be preserved as well. We found a few surprises when we started experimenting with a dehydrator; one of those surprises was dried cantaloupe. The dried cantaloupe pieces delicious, chewy, exotic flavor and it actually didn't take that long to dehydrate. My wife loves dried cantaloupe with cashews. Another surprise was Strawberry-Rhubarb fruit leather. We can't make enough of it for the kids and we are always passing it to friends too. It is simple and easy to make, we use 12 Rhubarb spears to make a batch so it is a great way to store, long term, a large amount of Rhubarb. Drying Tips We found out that you can store 20 standard sized tomatoes in only one quart jar, so when the freezer was full one season when we had an abundance, we were able to fire up the dehydrator and store all of rest of the harvest in a few jars. There are lots of dehydrators on the market and any one of the will work but I like the Excalibur with a timer and temperature setting. It blows the hot air across the shelves evenly not from bottom to top. But any one of the many brands available will work. If it heat from the bottom up, you may just want to shuffle the shelve top to bottom to get even drying. One gardener said he used an incandescent light bulb in his stove as a dryer so there are lots of ways to dry foods! We dry a lot of our herbs and teas. We dry a gallon of mint and a gallon of Tulsi, aka Holy Basil, and a few quarts of Chamomile to make teas all year long. I'm not bragging but the Tulsi tea we make is THE best because we harvest when the plants begin to flower before they set seeds and it has a sweet flowery flavor I have never had from commercial teas. The Farrell Family has transformed Sunset Farm into a local icon in Narragansett. It is the last of its kind in the south-end of Narragansett, being the last working farm in the area. The Farrell Family works pasturing a herd of 100 head of Black Angus beef cattle, born and raised right on the farm.
