Today, I am joined by Kathy Davis of VegInspired. Kathy is a plant-based lifestyle and mindset coach, a Meal Planning Expert, the CEO of VegInspired, and the author of three cookbooks: The 30-Minute Whole-Food Plant-Based Cookbook, The Super Easy Plant-Based Cookbook, and The Budget-Friendly, Plant-Based Diet Cookbook, and a co-author of one personal development book: Absolute Vision. Kathy is on a mission to educate, inspire, and empower others about the power of plant-based eating in living thriving and successful lives. She operates on two primary mottos: 1) Eat More Plants and 2) Intention over Perfection. Kathy has been eating and creating vegan meals for more than nine years. Over the past 4 years, she shifted her daily habits to follow a whole-food, plant-based lifestyle. If you're surprised and frustrated by high prices at the grocery store, you are not alone. National data shows that grocery shopping and dining out are more expensive than ever. The latest data from the Agriculture Department shows consumers spent 11.3% of their disposable income on food in 2022. This means that Americans are currently spending more on food than they have in over 30 years. I'm certainly seeing this in my own life. I've just returned from a trip to Tulum, and don't worry, I'll be sharing more about that journey on my podcast soon. Tacos that used to be $5 are now $15; a veggie burger that used to be $8 is now $18. But what can we do about this? Well, personally, I feel it's my mission to make sure that no matter the cost of food, we all still feel empowered and inspired to make healthy choices and to not let this inflation deter us from our health goals. So today, I have rounded up the best experts on saving money while eating well. First up is Kathy Davis, the CEO of VegInspired. Kathy Davis, founder of VegInspired, is this week's featured expert on the Health Science podcast hosted by Dr. Frank Sabatino. Kathy shared her inspiring journey of transitioning to a whole food plant-based diet, traveling in a fifth wheel, and helping others adopt a plant-based lifestyle. Kathy's journey to plant-based eating wasn't easy, as she initially thought it would be restrictive and boring. However, after transitioning for six months, she discovered that plant-based eating opened up a world of variety, flavor, and new foods that she had previously thought were off-limits. Eating a whole food plant-based diet has helped Kathy achieve numerous health benefits, including weight loss, better sleep, improved mood, and even reversing the markers of pre-diabetes.  Her travels in a fifth wheel have also been an essential part of her journey.  Kathy and her husband sold their house and hit the road in a fifth wheel, with their cat in tow, almost five years ago. They've enjoyed visiting different places and grocery stores across the country while being able to maintain their whole food plant-based lifestyle on the road. Kathy's work at VegInspired is centered around helping others adopt a plant-based lifestyle, with a focus on mindset and individualized meal planning.  She believes that mindset is crucial for making a successful transition and helps people change their self-image and see themselves as a plant-based eater.  Kathy provides high-touch coaching through her Eat More Plants Academy. I've brought back Kathy Davis from VegInspired, who was on episode #217 on July 21, to expand on the benefits of plant-based eating, and more importantly, how to make it easy to do. Specifically, she recommends meal planning so as to avoid, when life gets chaotic, reverting to eating out of a box, i.e., reaching for the nearest junk food. Most importantly, she offers tips about making meal planning fit into your own schedule, making it exciting for you by using ingredients you already like, and how to make meal planning and healthy eating an intentional activity. For me, the transition to eating plant-based wasn't a hard choice. As opposed to some athletes who do it for performance-related reasons, I've become increasingly fed up with the food industry, particularly factory farming. Without going into a long diatribe here, we kill billions of living, breathing, intelligent animals, funded to a large extent by the government – through industry promoters who lobby for subsidies like the Beef Council, the Poultry Council, the Pork Council, the Dairy Council, etc. – that has then exacerbated health issues like diabetes, hypertension, obesity, and other morbidities that were magnified during the pandemic. And then the government has to lay out larger sums of money to help people to afford the health care they need to fight these ailments. Then we have a planet that is inching onto the edge of not being able to feed itself as there is less farmland and more crop failures as climate change worsens, which the factory farming industry contributes increasingly to that problem, all while the world population grows and grows and there are more mouths to feed. Without depressing you further, it seemed like a logical choice for me to spare the lives of a few animals, which won't change the world, but maybe it will totally change it for just a few of them who don't get slaughtered. Funny thing is, after many years of injuries and way too many surgeries, I do seem to be training better than I have in a long time. Not sure if there's a connection, but I'm sticking with this lifestyle. My doctor has even pointed out better health metrics during my past couple of physicals. I can also see this impressive starter list of vegan athletes whose names you likely know, like Kyrie Irving and Chris Paul in the NBA, Formula 1 champion Lewis Hamilton, incredible ultrarunners like Scott Jurek, Robbie Balenger, and Harvey Lewis, nine-time Olympic track medalist Carl Lewis, MMA star Ronda Rousey, and tennis great Venus Williams.My challenge has been that I was raised like most guys knowing how to artfully use a grill to cook. In Colorado, we barbeque outdoors in almost any weather. In our shorts. But my propane tank is lasting a lot longer now, and frankly, my biggest struggle is finding enough variety in what I eat. I love salads, but I'm not up for them every day. Enter Kathy Davis. She has a site called VegInspired that offers a ton of recipes and information geared toward aspiring and existing plant-based eaters. What's great is how Kathy breaks through the barriers and makes it so easy to really make plant-based eating your lifestyle. She's so committed that she and her husband sold their house and travel the country in an RV on something of a plant-based eating road trip, showing how doable it is even on the road. Kathy particularly emphasizes eating whole, unprocessed foods after encountering an interesting twist at the start of her journey. Despite eating plant-based, she gained dozens of pounds because she was eating what David always called vegan junk food. You commonly see them now: Beyond and Impossible Burgers, fake chicken nuggets, fake deli meats, even fake bacon. But these are often highly-processed, sometimes with high amounts of sodium, sugar, and other questionable additives. I'm not saying they're all bad, and I think most are still better than eating animal products, but I'd still point you toward more whole, unprocessed foods like Kathy does. With much of our food in the present day being poisoned with herbicides, pesticides, fungicides, rodenticides & glyphosate, to name but a few, it is more important than ever that we revisit what real food is & how to go about optimizing our diet/nutrition if we wish to live a life in which we can feel truly healthy within. Previously, she shared on Winning with Wellness Episode 32 her healthy lifestyle in terms of food and diet. In this episode, we dig deeper about her life decisions, risks and leaps that she took for her to reach where she is now. The decision that changed her life is when she chose to sell her home, she calls sticks and bricks, to travel the United States full time in a 5-wheeler RV. For something so major, Kathy and her husband dove into mindset work to learn more about themselves which led them to discover their strong passion for travelling. Choosing a different way of life has its pros and cons. For Kathy, she sees beauty, one of the joys is that every day she looks around and realizes how grateful she is. It is when she wakes up in a completely different city, a different town with a different view and she thinks “wow, this is exactly what I imagined it to be.” In stepping out of our comfort zones, a piece of advice Kathy gives is to take counsel from people you trust and admire that are doing the thing that you are looking forward to doing for yourself. People closest to us are likely to share their opinions, advice or answers to our questions based on their own bias. It's important to talk about our dreams with people who will provide relevant input and support, especially if we consume those. The CHEER stands for “Conscious Health Evaluation Education and Rights”. It also is the reminder that for transformation to occur, you are in charge of being your own cheerleader in your health and life choices. A passion for being a helper and teaching, Debra was propelled into the role of coach and mentor for others like her who struggle with the effects of discontinuing opiates, benzodiazepines and psychiatric medications without much help from those who prescribed them. She also has tips and suggestions to assist in managing the symptoms from conditions such as PTSD and chronic pain. Her experiences working in hospitals as a CNA, a LPN and a RN, coupled with her own transformational health journey were the perfect segue into this new role. After nearly 30 years of utilizing many prescription medications and therapies recommended by Western Medicine practitioners, only to find herself more depressed and suffering more pain, Debra began exploring holistic modalities for improved health and cannabis as a medication. She realized more relief utilizing concepts such as meditation, mindfulness (awareness), conscious eating, and other healthy habits than she did using pharmaceuticals for decades. She is now able to hike, garden, travel and participate in a life that she enjoys rather than trapped in bed and too depressed to try anything. Kathy Davis explained what plant-based means and that is she feels better when she eats more plant-based food. She states that plant-based is a definition of whole plant foods that are as close to nature intended. The biggest advice Kathy has for people switching to plant-based is slowly incorporating plant-based into their lifestyle and not immediately changing everything. Utilize what is already familiar to you and everyone in your family. How you create your transition plan depends on what you are trading, may it be time or even your budget. It's all about finding the perfect balance between your plan and your current lifestyle.   She also shares her personal recipes for breakfast, lunch, and even snack time. For breakfast: ●       Half a cup of rolled oats ●       Half a cup of non-dairy milk (Kathy prefers unsweetened soy milk) ●       Half a cup of frozen blueberries (can be equated to about a teaspoon to a tablespoon of maple syrup) ●       A teaspoon of ground flax Let it sit overnight in the fridge or for how long you have. If you like it warm, you can opt to put it into the microwave for 30 seconds.   For lunch, ●       Boil potatoes, bake potatoes, or cook brown rice ●       Prepare a salad ●       While reheating the rice or potatoes, chop up vegetables ●       Add some spinach, beans, usually garbanzo chickpeas salad ●       Add some vegan dressing, maybe balsamic vinegar, and tahini, or maybe it's maple syrup and mustard ●       Think about what flavours you are wishing to experience in your salad.   For snack, ●       Hummus with chickpeas (either homemade or canned) ●       If making hummus from scratch consider adding some tahini, lemon, cumin, garlic and balsamic vinegar. Kathy does not add oil ●       Choose your favourite vegetables ●       For crunch cravings, baked tostada chips, Wasa crackers, Mary's crackers or low-fat Triscuits   When working with Kathy, you can expect a deep discussion around goals and strategies coupled with a year-long program. She takes a look at what is driving the decision to eat more plants and then maps out what eating more plants looks like for you.   “Focus on eating more plants, make it accessible, make it one step at a time and just enjoy what mother nature gives us.”  — Kathy Davis     Wellness Nuggets: ●       People go vegan for animals, but they eat plant-based for their health. ●       Add in more plants to your meal ●       Look at the amount of processed food you get in your meals and evaluate if there is a way that you can swamp in more whole foods ●       When switching out foods, use familiar food to help with the transition. These are here examples: ○       vegetable broth for chicken broth ○       non-dairy products for the dairy products in place that you can control ○       unsweetened yogurt ○       cooking without oil ○       the brand of potato chips. ●       Plant-based is more than just a food but a mindset with a light body and clearer headspace ●       Swap out the processed food in your afternoon snack for fruit or veggies, add a salad or a vegetable soup   We invite you to ignite the Wellness Warrior in YOU! Kathy Davis is a vegan foodie, an educator, 3x cookbook author, and the founder of VegInspired. Kathy created VegInspired to encourage others to eat more plants. Kathy is also a plant-based coach who helps busy women adopt a healthier whole food plant-based lifestyle just like she did. You can book a plant-based strategy call with Kathy through her website, VegInspired.com. A whole food plant-based lifestyle helped Kathy lose weight from eating like a "junk food vegan" (you know, all the fries!) to becoming much healthier by eating unprocessed plant-based whole foods. But before Kathy went on this whole food plant-based diet, she tried a variety of foods on the plant-based spectrum, from those mock meat and non-dairy "faux-products" (Hello Beyond Meat and Impossible Burger) to whole-food plant-based versions of her favorite dishes. Kathy tasted many vegan dishes at hundreds of restaurants and shared them on her VegInspired YouTube Channel. However, soon she experienced a big shock. When Kathy stepped on the scale, she was at her heaviest weight ever! In light of this disappointing realization, she adopted a more streamlined version of a Whole Food Plant-Based (WFPB) diet. She set a goal to live a healthier lifestyle, and began losing weight by developing healthier daily habits. Kathy soon lost over 30 pounds after eating only WFPB meals, plus walking daily, going on hikes, and establishing healthier habits. She knows the VegInspired way of eating works because she's lived it.
