So what happens when someone adopts a vegan diet and lifestyle, in terms of navigating heritage, identity, and family connection? My guest this week is popular recipe developer and creator Remy Park from Veggiekins, who is here to explore these themes and discuss her beautiful debut cookbook, Sesame, Soy, Spice: 90 Asian-ish Vegan and Gluten-free Recipes to Reconnect, Root, and Restore. At the age of 38, Cindy became an adult-onset athlete, competing and medaling in marathons, triathlons, open water swim races, and endurance events! LeAnne Campbell, (PhD), is the CEO for the T. Colin Campbell Center for Nutrition Studies (CNS), a not-for-profit organization committed to increasing awareness of the extraordinary impact that food has on the health of our bodies, our communities, and our planet. With over 30 years of experience working as an educator and developing a wide range of community-based initiatives, LeAnne has founded and directed several organizations, both abroad and in the states. She currently lives in the mountains of the Dominican Republic where she focuses on projects promoting the regenerative and resilient power of food. Perhaps more importantly, she models this in her daily life.
