From Jeremy Salamon the chef and owner of Agi's Counter in Brooklyn comes 100 classic Hungarian and Jewish recipes reinvented for a new generation – Second Generation: Hungarian and Jewish Classics Reimagined for the Modern Table (Harvest Publications, 2024). Salamon speaks to New Books Network, talking about the inspiration that came from growing up a second-generation Hungarian Jew, spending a lot of time with family, gathered around a good meal. Jeremy honored both his grandmothers, Agi and Arlene, in 2021 by opening up his restaurant Agi's Counter in Brooklyn where he carries on the culture, flavors, and recipes from his heritage. He's reimagined those traditions with an eye towards seasonality, market-driven ingredients, and a touch of American influence, plus the technical expertise of a career spent in some of New York's best kitchens. His cookbook features dishes that include a Hungarian take on pimento cheese, Chicken Paprikash, Palacsinta, and even the classic Tuna Melt sandwich – and all are part of the conversation. Throughout the interview, Jeremy shares stories about family, food, travel, and the challenges and joys of sharing his modern spin on age-old traditions with diners at his restaurant and now with readers through his cookbook. Phil and Jake are joined once again by Andy Granelli (The Distillers, Seized Up) to pump up the sandwich bandwidth by ranking the grilled cheese sandwich, the tuna melt, and the turkey / bacon / swiss sandwich on the List of Every Damn Thing.Find Andy on Twitter (@AndyGranelli) and Instagram (AndyGranelli). If you have something to add to the list, email it to list@everydamnthing.net (or get at us on Twitter, Instagram and Facebook).SHOW NOTES: Phil claims that cat names don't really matter because cats are mostly called "kitty" anyways and they're indifferent to any name you give them. You should just name your cat a word that you enjoy saying into the air. The Marvel superhero Wolverine will sometimes go undercover by wearing an eyepatch and calling himself “Patch”. This strains credulity because he has the most distinctive hairstyle ever. It's almost as if it's not real. Lots of other types of sandwiches and sandwich-type foods come up in the course of this episode, including cheese sandwiches, melts, quesadillas, crab sandwiches and of course shit on a shingle. The various sandwich fixins that get discussed include rye bread, pickles, onion rings, shredded lettuce and the delicious mouth-wrecking Dutch crunch bread. The grilled cheese sandwich that Jake made in preparation for this episode was Atika cheese from Tomales Farmstead Creamery on Josey Baker Country Bread. He made it in his Breville air-frying toaster oven.  For the record, ”Atika” means “two” in the language of the Coast Miwok people (Jake couldn't remember the name of this local Native Bay Area tribe). Robert's Western World in Nashville is Jake's favorite place to get a grilled cheese sandwich. The grill is right there behind the bar, and they totally don't do the grilled cheeses on the same grill where they do the meat. In-N-Out grilled cheese (animal style) is usually pretty good too if it's fresh off the grill, and Waffle House's ain't bad in a pinch either. The place in New York City that specializes in grilled cheese sandwiches seems to now be a national chain called Melt Shop. We shout-out some other sandwich purveyors during the episode, such as Nick's Rockaway in Pacifica, CA, the Adeline Market deli in Burlingame, CA, The Bottle Shop in Ukiah, CA, and Woodhouse Fish Company & Molinari Delicatessen in San Francisco. Main Street Wine & Cheese– also in Ukiah, which is itself of course in Mendocino County– is sadly now either a taqueria or a Quizno's. Jake couldn't remember the fancy French-derived word for an open-faced sandwich. It's “tartine”. Recipe websites are some of the worst because to game search engines they put the recipes down below and don't let you just scroll to the bottom. They then put a long story about themselves at the top and a lot of javascript ads so that when you're trying to make the recipe, the content keeps moving. It's awful and they should be ashamed. SFgate.com is similarly maddening. We continue the ongoing bread & butter pickle controversy that Jade Puget started back in Episode 78. Tuna on pizza is very good, it gets crispy! Here's an example on a recipe website that's not that bad. Are magic erasers made from crab shells? No they're not. Phil was wrong again! Steve1989MREinfo is the guy Phil mentioned who unboxes old (sometimes extremely old) military rations and eats them. Canadians wear poppies on Remembrance Day (November 11th). Tulip mania is a classic case– maybe the classic case– of a speculative bubble. It's been thoroughly documented elsewhere but Phil enjoyed the movie Tulip Fever which takes you inside the tulip futures auctions in a way an economics textbook can't do. Hetch-Hetchy water is the best water. People who live in San Francisco get it right out of their taps. All the news article headlines about Andy's bandmate Chuck Platt getting hit by a car cite his other band, not Seized Up (the one he's in with Andy). We're glad to hear Chuck is recovering nicely. Quarantine log day, forgotten, we’re on full blown coronatime. I haven’t showered in 4 days. I no longer own any pants. Food supplies are running low, fortunately the cat food is pretty tasty with a caprisun chaser. I have seen everything offered on Netflix, and can now confidently say, it’s all garbage. There were a few good new documentaries talking about,- Live Services- Modelers- Stopping the Bleach Drinkers- AmazonLong ago games were a one time purchase. You got your cartridge and you popped it in and that was it. Then a new age dawned and games started happening online. You could play with friends around the globe, but they couldn’t charge more for the game to keep the servers running, and DLC only went so far, and games as a service were born. Some games handled the transition really well, and some games were shoveled out messes that after just over a year have completely died. Nobody cares though, because if people were playing it wouldn’t be a dead service.Models are cool, I have a massive jealousy for guys that have the patience and steady hands to take something they love and make a smaller version of it. Cars, Planes, Boats, Trains, even whole towns are made in model form. I would love to have a small fleet of in scale Enterprises from Star Trek to put on a shelf. Then there is the dark side of modeling, and like all the world’s evils it comes from Math. These guys are the types who make up numbers out of their asses for decades for the chance to get interviewed on CNN and sell their new book. The big difference, is while good modelers base their work on real world tangible examples, bad modelers base their work on ego.Kung Flu was a gift to us, it was a chance to eliminate the number one ill in the universe, Old People. Too many grandma simps stood up and the boomer remover was stalled. The universe has its way of balancing out and it gave us a new chance. Now we have a chance, to eliminate all of the dumb people. We constantly as a society complain about the stupid people around us and how the world would be a better place without them. AND WE DIDN’T TAKE IT! Is this the world you want? Really? We are saving bleach drinkers now? Next thing they’ll be protesting erasing all debt as a one time amnesty, you morons.Amazon is the single largest online shopping company on the planet. They literally have lockers installed in apartment buildings for deliveries, because they deliver as much stuff if not more than the regular post office. In these trying times, they are too busy patting themselves on the backs for doing nothing to put your stuff in a box and send it to you the way literally everything else on earth works. This could’ve been your big break, literally destroying all other companies, but instead you drank bleach. All that plus who did Tim steal an issue from last week? voicemails and food news. Olive Oil – approx. 1 Tbs per steak Mayo – Couple of Tbs to moisten tuna, 1-2 Tbs to spread on each roll Mustard (yellow and Deli), about 1 Tbs Dill Relish, 1 Tbs Salt - to taste Pepper - Lots Chipotle powder, optional - 1 tsp Tomato, sliced (if you can actually find one in Oregon) Kaiser roll or other roll of choice Provolone Cheese, one slice per steak Heat oven to 350. To prepare tuna, rub both sides with oil and sprinkle with fresh ground pepper. Heat oil in skillet until almost the smoke point. Sear tuna steaks in pan. Flip once halfway through. Put entire cast iron pan with tuna steaks into oven until no longer pink. Remove to mixing bowl and allow to cool. Once tuna has cooled, crumble with a fork. Add dill relish, mayo, mustard, pepper and a hint of chipotle powder as an optional seasoning. Slice Kaiser rolls, spread one side with mayo, and toast the other side under a broiler. Put tuna on mayo side, fold cheese and cover tuna. Place under the broiler until the cheese begins to brown. Spread toasted half with mayo, assemble the sandwich, and eat! Cousin Mikey Clams Little Neck Clams, fresh, About 2 lbs 1 Can o' bud (Budweiser beer) 1 Stick o' butter 2 cloves-2 Tbs.
