L'évocation de la cueillette des liserons d'eau, d'une bouillie de riz, du parfum du galanga camphré, de la feuille de kaffir, des buissons de citronnelle juste là, à portée de main, dans le jardin à Phnom Penh, les parfums des cuisines des voisins de notre quartier, la petite louche de maman, la rondelle crantée pour gratter l'intérieur des noix de coco, les graines de papaye. Bopha avait 11 ans quand elle fuit le Cambodge avec sa famille, ses parents et quatre de ses frères et sœurs, à l'arrivée des Khmers rouges, le 17 avril 1975. Elle était la plus petite, « préservée par sa famille », raconte-t-elle, mais de l'exode, elle se souvient de la peur, de la longue marche, de la mort, de la survie, de sa mère s'acharnant à trouver de quoi nourrir ses enfants, de la cuisine de sa mère. D'origine vietnamienne, née au Cambodge, c'est d'abord de l'autre côté de la frontière, à Sadec, le village maternel, que la famille s'est réfugiée avant d'arriver en France, trois années plus tard. Le lien de Bopha à la France, toujours là, y compris dans l'enfance ; son père travaillait à l'ambassade à Phnom Penh, et c'est en poste au ministère des Affaires étrangères à Paris qu'il a terminé sa vie professionnelle. La Fête du citron de Menton, sur la Riviera française, célèbre chaque année l'un des emblèmes de la culture et de la cuisine du bassin méditerranéen. Mais le citron jaune est-il méditerranéen ? Le citron brille en Méditerranée. Et particulièrement du côté de Menton, sur la Côte d'Azur, dans le sud de la France, où se tient depuis ce samedi 15 février La Fête du citron (jusqu'au 2 mars), « un événement unique au monde », clame la ville qui a donné son nom à un citron réputé pour sa longue conservation une fois cueilli. « Le citron est vraiment introduit dans la culture et la cuisine méditerranéenne, comme condiment ou associé à plein de plats. Et il n'y a vraiment qu'en Méditerranée qu'on retrouve ça », souligne François Luro, spécialiste de la génétique des agrumes à l'Inrae, l'Institut national de recherche pour l'agriculture, l'alimentation et l'environnement. L'Europe est le premier producteur mondial de citron, avec plus de 9 millions de citronniers plantés. Principalement sur le pourtour méditerranéen où on voit la vie en jaune. L'Espagne est ainsi le premier exportateur mondial. « La Méditerranée est considérée comme la deuxième zone de diversification des agrumes, après l'Asie, la zone d'origine, où toutes les espèces sont nées », poursuit François Luro. Le citron est un hybrideMais le citron est-il méditerranéen ? Ses origines géographiques restent discutées, faute de traces archéologiques suffisamment anciennes. Le citron serait né en Inde (dans l'Himalaya), ou en Perse, ou en Méditerranée... Une certitude, ses ancêtres sont asiatiques. Le citron est le fruit d'une hybridation spontanée entre le cédrat et l'orange amère. Tous les agrumes qu'on connaît aujourd'hui sont en fait issus de 3 ou 4 espèces primaires, dotées d'une grande diversité génétique. « Elles se sont en fait développées dans des régions séparées pendant des millions d'années ; on voit donc, par exemple, qu'entre une mandarine et un pamplemousse, il n'y a aucune ressemblance. Ces espèces sont tellement diversifiées que quand elles se croisent entre elles, elles génèrent énormément de diversité. Chaque pépin d'un croisement mandarine/pamplemousse que vous allez semer donnera à chaque fois une variété différente, avec des caractéristiques différentes les unes des autres », explique François Luro, chercheur au centre de San Giuliano, en Corse, qui abrite plus de 800 variétés d'agrumes, l'une des plus importantes collections au monde.Le citron n'est pas presséMais ce n'est pas parce qu'il est cultivé dans des zones aux étés chauds et arides, et de plus en plus chauds et arides, que le citron sera à terme épargné par le réchauffement climatique. Contrairement à une idée reçue, « ce n'est pas une espèce économe en eau parce que les citronniers n'ont pas de repos végétatif en hiver, ils gardent leurs feuilles, donc ils continuent à pomper de l'eau dans le sol, à transpirer cette eau », relève François Luro.C'est d'ailleurs principalement en hiver que les fruits du citronnier arrivent à maturité, après une floraison printanière. Car le citron n'est pas pressé. « C'est un fruit qui se développe assez lentement. Il lui faut quasiment six mois, explique François Luro. Et pour la commercialisation, il faut qu'il jaunisse ; on ne peut pas avoir sur un étalage un citron de couleur verte. Le passage du vert au jaune est lié aux températures basses. Quand les températures diminuent, il y a une dégradation de la couleur verte, de la chlorophylle, et l'apparition d'autres pigments qui donnent cette couleur jaune au citron. » Le citron est un soleil en plein hiver. Izrādes muzikālo noskaņu veido Toms Auniņš, bet scenogrāfiju – Marija Ulmane. Bet lugā zīmēto distopiju, kur dienā drīkst pateikt vairs tikai 140 vārdu, režisors Jurģis Lūsis neliek stāsta centrā. Viņš to drīzāk saskata kā alegoriju par globāla mēroga pārmaiņām, kas ietekmē mūsu visu dzīves – kā karš, pandēmija vai „Brexit”. Tomēr ir interesanti arī domāt par to, kā šādu šķietami absurdu ierobežojumu ietekmē mainās vārda vērtība un attiecībās neizrunātais. Today, I'm talking to Jason Citron, the co-founder and CEO of Discord, the gaming-focused voice and chat app. You might think Discord is just something Slack for gamers, but over time, it has become much more important than that. For a growing mix of mostly young, very online users steeped in gaming culture, fandom, and other niche communities, Discord is fast becoming the hub to their entire online lives. A lot of what we think of as internet culture is happening on Discord. In many ways Discord represents a significant shift away from what we now consider traditional social platforms. As you'll hear Jason describe it, Discord is a place where you talk and hangout with your friends over shared common interests, whether that's video games, the AI bot Midjourney, or maybe your favorite anime series.
