Kawasaki Team Green had a renaissance week at this year's Monster Energy AMA Amateur National Motocross Championship at Loretta Lynn's, sweeping through four of the most coveted titles there: 250 and Open Pro Sport with Drew Adams, and 250B and Schoolboy 2 with Caden Dudney. Team Manager Ryan Holliday, though, can only chalk that up to good racing luck, because things haven't rolled the team's way like this in a long time. The team isn't alone in trying to change up the way it develops and evaluates riders, though, as Adams raced a bunch this year including competing in Canada to try to get in more gate drops. Holliday would like his riders to race more so they can learn more. This weekend's Scouting Moto Combine is a part of that. Jason Weigandt checks in to hear how the amateur game is changing.   The Racer X Exhaust podcast is presented by Yoshimura and On Track School, plus Racer X Brand.

I applied for jobs out of college and was turned off by the attitude of many of the hiring chefs. These guys sounded like jerks, and I didn't really want to work for them. Click To Tweet I think if you're going to culinary school at a young age, you don't necessarily know what you want to be doing. Get out in the industry and get a taste of things.  Click To Tweet The challenge with being a personal chef is people think of you more like a caterer with a set menu. It's the same traditional food you can get at restaurants and I always want it to be my own spin on things. Click To Tweet I make my own schedule and do things at my own pace. That's a benefit and also a curse sometimes. I am able to fully pursue my passion and I don't have someone always analyzing every move I make. Click To Tweet It sounds crazy to take off my menu dishes that are big sellers, but a part of why I do what I do is because I want the creative freedom to do new things. Click To Tweet When I was new in town, I wanted to network with local restaurants and do events together. Nobody was interested in doing anything. But I found that people who were running food trucks, bakers, or caterers really craved that sense of community and wanted to do events together. "What I usually do, I’ll order a lot of seasonal ingredients and I'll just order them without any dish in mind. And we just get them in, just so we can start that creative process and I know that I'm not going to waste an ingredient. Because you know we're not going to throw anything away, so it kind of forces our hand to use it and that's we try and stay creative. And I go into farmer's markets every single weekend. And as far as steaks go, it's very straightforward. One of the things we learned that when people come here, they want to eat steak What we covered in this episode Chef Drew Adams grew up in Baltimore. First food memory was getting soft shells out of the bay in front of his house with his dad and cooking him upHe went to culinary school at Johnson Wales and in Charleston. His second food memory was after work in Charleston running over to McCrady's where Sean Brock used to be (before Sean) and he go sit at the bar and get the tasting menu.Chef Jeremiah Langhorne at The Dabney has been one of his mentor.Holding yourself accountable and if you're not happy with it then fix it! Chef Damon Gordon was another of his mentor. He taught me a lot about precision. At the Bourbon Steakhouse, he leverage his creativity in the fish dishes and the appetizers. To shake up the menu at the restaurant, Chef Drew Adams  cut the menu in half as far as steaks go within the first month. He developed the Wagyu program at the restaurant. Working with farms from Kagoshima, Japan.Special Wagyu from island of Shodoshima, Japan. Beef are fed with Olive mash. See article in the link section below. His creative process and pawpaw. See information in the link section below. He talks about his passion for foraging. Foraging gives him a lot more appreciation for the product that he is working with.Opportunities to access to products that are not readily available. It's against the law to forage on national parks and there's a lot of national parks that in D.C. and along Maryland,  Virginia borders. They go out there just to learn more about ingredients.Important: foraging can be dangerous - not all plants or mushrooms are good for humans. The first thing I found were ramps in the spring and I just got excited about it. I like it because it gives me a lot more appreciation for the product that I'm working with. Really enjoy that part of it. Obviously you want to do everything you can to make sure you really showcase the product. Especially when you find it outside and you find it yourself. That's incredible. The more I learned about it, the more I never realized how much edible things were out there. I find something new each year and nature very fascinating to me.It's like when you're younger, everyone wants to be that kid on the block who has that new toy. I want to be that kid! I like to use things that not many other people use. But there are very few people that use pawpaws in the city. And come spring, everyone uses ramps in the city but there's other things out there like ground nettles ...

I have been at Podcast Movement this week learning new tips and tricks and Cheri in New York City.  While we are taking this summer break, we wanted to drop this special bonus episode. There are two parts to it. First is the interview we did with Seth from the ITBinsider.  He told us his first hand account of attending the now infamously mismanaged Fyre Festival. He tells us what is was like to go to the island, what he saw when he got there and the hair raising story of trying to get back.  After that, I have included an excerpt of our very first episode, Episode 0, which is no longer in our feed. In this excerpt, Cheri introduces and interviews Derek and then they debate Kendrick vs Drake - what qualifies someone as the best rapper of all time?  We are almost a year in now and its fun to look back at these first moments. Enjoy this Best Of episode and we will see you next week when Cheri and friends return to spill the tea.

Last year, North Carolina passed HB2, the so-called "bathroom bill,” banning anyone from using a public restroom that didn’t match up with his or her biological sex.   After the law passed, we went to North Carolina to visit one of the few gender clinics for kids in the South, at Duke University's Children's Hospital. We spent a day-in-the-life there, learning how patients and doctors juggle big physical changes and political changes too. Since our story last August, things have not calmed down. President Trump has canceled some key protections for trans students. This year, sixteen more states including Texas have introduced their own bathroom bills. And in a controversial decision last week, North Carolina lawmakers revoked HB2 — though trans activists called their replacement bill a bad deal. So with all this happening, we decided to catch up with the three kids we met last summer — Drew, Martin, and Jaye — and see how their lives and their bodies have changed. We start by going back to our first episode, when each of them was just beginning hormone therapy prescribed by Dr. Deanna Adkins, the pediatric endocrinologist who started Duke’s transgender clinic two years ago. Then, we reconnect with Drew, Jaye, and Martin one more time. We talk about the joys (and pitfalls) of dating online, how their bodies are changing, and how they’re doing under President Trump. Earlier this year, North Carolina passed HB2, the so-called "bathroom bill." The law bans anyone from using a public restroom that doesn't match up with his/her biological sex. HB2 put the state in the middle of a national fight about gender. But North Carolina is also home to one of the few gender clinics for kids in the South, at Duke University's Children's Hospital. This week, we spend a day in that gender clinic, the only one in North Carolina. We wanted to know how a clinic like this one operates in this political climate. And we wanted to find out how these patients are coping. Dr. Deanna Adkins, a pediatric endocrinologist, started the clinic a year ago. Over the course of our day, we met three of her very different patients. Drew Adams is a 15-year-old trans man who came with his mom, Erica, all the way from Jacksonville, Florida. On the drive up, Drew wore a T-shirt with "This is What Trans Looks Like" printed on it. He told us he decided to change out of it before he stopped for a bathroom break in North Carolina; he used the men's room. When Dr. Adkins told Drew that not only would he get a prescription for testosterone, but that he could give himself his first shot that very day, Drew stood up and cheered. Dr. Deanna Adkins, the pediatric endocrinologist in charge of the Duke Child and Adolescent Gender Care Clinic (Mary Harris) We also shadowed Dr. Adkins's appointment with Jaye, an 18-year-old African-American trans woman. Jaye's experience has been very different from Drew's; her family has had a harder time accepting her transition. She also worries a lot about her safety, especially in North Carolina, and she can tick off the names of a number of trans women of color who have been killed over the last few years. But, like Drew, Jaye was thrilled when Dr. Adkins handed her a prescription for estrogen. She planned to pick it up that day. At the end of the day, we met Dr. Adkins's last patient, Martin, and his mom, Karen (we decided to use pseudonyms for them both). Martin was born a girl and came out as trans a year and a half ago, after a long struggle with depression and anxiety. At first, his mom worried that this was one more expression of Martin's unhappiness. But Martin's transition has completely changed his outlook. His mom said he used to be withdrawn; when his depression was at its lowest point, he started cutting himself and had to be hospitalized. Now, she says, "It's more like we've become friends again and we've reconnected. I think it's because he realizes that I accept him for who he is and I'm going to support him." This fall, Martin plans to present as a boy when he returns to school in Raleigh. When we asked him which bathroom he’ll use, he told us it will depend how brave he’s feeling.
