Cooking Issues with Dave Arnold
No Tangent Tuesday: Centrifuge Butter Creations & More

Cooking Issues with Dave Arnold

Play Episode Listen Later Apr 26, 2025 59:57

On this episode of Cooking Issues, the crew reunites for a wide-ranging, hilariously chaotic discussion that moves from Coachella cuisine to centrifuge-based butter experiments, press duck, and Ricardo Montalbán's chest. Dave is joined by John, Joe, Quinn, Jack, and Nastassia for musings on celebrity behavior, culinary nomenclature, and obscure French cheeses—all with a healthy dose of sarcasm and science.• Celebrity Chef Ego and Dining Etiquette – The group discusses how fame distorts behavior, including chefs and musicians, and the joy of witnessing celebrities treat restaurant staff with kindness—plus a few namedrops of not-so-gracious guests.• Naming the Centrifuge Butter Creation – Quinn recaps his Instagram poll on what to call the high-fat cream spun in a centrifuge. Ideas like “Heavy G,” “Astro Butter,” and “Roto Butter” are floated—and mostly rejected by Dave, who wants a name that doesn't mislead consumers into thinking it's traditional butter.• Paris Food and Shopping Recommendations – The episode wraps with a deep dive into Paris: cheese shops (Barthélemy, La Coop), restaurants (Tour d'Argent's pressed duck, Chez L'Ami Jean, Le Repaire de Cartouche), and kitchenware store Dehillerin. Plus, Dave warns against raw mussels on Parisian seafood platters—twice burned, forever cautious.• Bonus Tangents – Includes musings on ambergris, legal cheese presses, and why Dave never wants to pluck a bird again. Also: why “Pepe Le Pew” absolutely should be canceled. Hosted on Acast. See acast.com/privacy for more information.

Sermon Audio – Cross of Grace

Luke 24:1-12But on the first day of the week, at early dawn, they came to the tomb taking the spices they had prepared. They found the stone rolled away from the entrance of the tomb, but when they went inside they didn't find the body. While they were perplexed about this, suddenly two men in dazzling clothes stood beside them. The women were terrified and they bowed their faces to the ground, but the men said to them, “Why do you look for the living among the dead? He is not here. He is risen. Remember how he told you, while he was still in Galilee, that the Son of Man must be handed over to sinners, be crucified, and on the third day, rise again.” Then the women remembered what he had said and, returning from the tomb, they told all of this to the eleven and to all the rest. Now it was Mary Magdalene, Joanna, Mary, the mother of James, and the other women with them who told this to the apostles, but their words seemed to them and idle tale, and they didn't believe them. But Peter got up and ran to the tomb. Stooping and looking inside he saw the linen cloths by themselves, and he went home, amazed at what had happened. We've been telling stories around here throughout the season of Lent, leading up to this morning and Easter's great story of gospel good news. I'm so grateful for the brave, faithful Cross of Gracers who shared brief, true, very personal stories about their lives in this world – and about the many ways their lives and their faith came together at a variety of crossroads, for them. We heard stories about miraculous healings, surprising encounters with the divine; family, friendship, and falling in love. And more on top of that.On Good Friday, to wrap up that storytelling extravaganza, we heard one more story and then we listened to the story of Jesus' crucifixion, suffering, and death on the cross. And then we left in darkness and silence, with only the microphone we'd been using all season, left standing at the foot of the cross, all by its self. Alone. Off. Unplugged. Silent.I'm not sure who got the symbolism of that or knew how deliberate that was, but it made me think of this picture I remember seeing somewhere, some time, several ago. "Speechless" by Darrell Van Citters Mel Blanc, of course, was the voice actor for all of those distinct and memorable Loony Tunes characters: Bugs Bunny, Porky Pig, Sylvester and Tweety Bird, Foghorn Leghorn, Speedy Gonzales, Pepe LePew, and Daffy Duck. (Those were the days when cartoons were socially unaware and culturally insensitive in ways that kids like me probably shouldn't have been watching them for hours on end every Saturday morning. But we didn't know what we didn't know!)Anyway, these lonely microphones – the one in that picture and the one we left here on Friday – are a powerful symbol for me – and a connection and inflexion point – between Good Friday's silence and the invitation I hope compels us on the other side of Easter's empty tomb. The women show up to do their thing for the body of Jesus – to grieve his death, to anoint his body, maybe to confirm that what they had seen and heard really was true: that their friend, teacher, messiah … that their savior … really was dead and gone. And when they get there, the stone has moved – and so has Jesus – and they have this terrifying encounter with some sharp-dressed men, who remind them about what they woulda, coulda, shoulda remembered: that Jesus was alive and well, just as he said he would be.So the women leave with a new story of their own to tell: that Jesus was the real deal after all – just like he'd told them all along. The men, of course, aren't buying it. They don't believe it, because … women. So Peter hoofs it to the tomb to see for himself. And what do you know? The women – and Jesus, himself – were right after all. Men.But it's that question from ZZ Top (the Sharp Dressed Men) that gets me today. It's the question from the angels at the grave side that I can't ignore: “Why do you look for the living among the dead?” It seems like a rhetorical question, but it sticks with me because, I think, it's how and where each of us is invited to figure out what kind of story we're going to tell about all of this, in the end.“Why do you look for the living among the dead?”While it seems like the angels imply the women shouldn't be looking for Jesus at the tomb – again, had they been paying attention and believed what he'd been telling them all along. But, I'd actually like for us to “look for the living among the dead” not because we don't understand or believe what has happened here, but precisely because we do understand and believe it. I mean, I want us to “look for the living among the dead” because it's the invitation of Easter, it's the joy of faith, and it's the call of our discipleship, if we want to follow Jesus.I think we look for the living among the dead because Easter's good news is meant precisely for the dead and the dying; for the lost and forgotten; for the oppressed and the outcast. It's for the sick and the suffering; the poor and the marginalized. This good news is for those without a microphone and for those with stories to tell that no one seems to be listening to.Of course, Easter's story is about the forgiveness of sin, the resurrection of the body, and life everlasting. Those we've lost around here lately – our friends, family, and Partners in Mission – Jerry, Carol, Joan, Bob, Steve, and Dick – and all those who've gone before, know about life in the face of death in ways we can only imagine on this side of heaven. The story of Easter's good news is certainly theirs. But Jesus' death and resurrection wasn't all or only about the other side of heaven. He died and was raised so that we might bring life and love; grace and mercy, peace and hope to bear upon the world as we know it, here and now. Jesus died – and was raised – to prove that what got him killed in the first place … God's ways of justice and equity, peace and inclusion, humility and generosity, sacrifice and suffering … that God's Way was and is THE WAY to life everlasting – not just then and there, but on earth as it is in heaven, too.So I say we go, not just looking for the living among the dead, but that we go looking to bring life to the dying – the suffering – the struggling – the oppressed – the outcast, the sinner, and all the rest. That's the call, the command, and the story of Easter. We are meant to leave the tomb with such good news to share that it changes everything for anyone and everyone who needs to hear it most.Easter's story calls us to stand up to violence and injustice – and the death, destruction and dehumanization they foster – at every turn.Easter's story is one meant to make us care for creation in ways that prevents it from dying faster than it can restore and repair itself.Easter's story is one that makes room for all people – and their stories – rather than removing them from the narrative.Easter's story is one that should give Christian people enough faith in the God we worship to trust that that God is big enough to love people who believe differently than we do – if they even believe at all.I think Easter's good news of resurrection was and is the cosmic mic-drop moment of our faith. And our call is to pick up the mic again – maybe even to take it from those who would do otherwise – and to tell a story more loudly and more clearly full of grace, mercy, love, and hope for all people. Why do we look for the living among the dead? Because the world needs people who have the faith, grace and courage to bring good news to the poor, now; release to the captive, now; recovery of sight to the blind, now; and to let the oppressed go free, now.If we're not doing any of that with Easter's good news, we might as well leave it in the tomb and unplug the mic.It seems too good to be true, but Google says that Mel Blanc's last words were “That's all folks!” Whether that's the case or not, I can't say for sure. It IS true that his family had his most famous one-liner etched into the headstone at his grave.Easter's good news is that death wasn't and isn't ever ALL there is, when God has a God's way with it. Easter means, not just that there is life after death, but that because of that, we have life to proclaim and to practice in the face of all the death, dying, and destruction we face and facilitate too much of the time in this world. “Why do we look for the living among the dead?” Because Easter gives us a better story of life and blessing and joy, of promise, good news, and hope to proclaim and practice in its place.Amen. Alleluia. Happy Easter.

The North American Porcupine is a member of the rodent family that has around 30,000 quills on its body. Each of these quills can be driven into an enemies' body, inflicting tremendous pain. Sometimes the wounds can fester, occasionally even to the point of being fatal. The porcupine is not regarded as a loving animal. The latin name for porcupine means “the irritable back.” Porcupines seems to have two emotions when it comes to other animals, fear and anger. Books and movies celebrate almost any animal you can think, not just dogs and cats and horses, but even pigs (Arnold Ziffel, Babe), spiders (Charlotte's Web), dolphins (Flipper), bears (Gentle Ben, Smoky the Bear) and killer whales (Free Willy). Skunks even get some love in the form of Pepe Le Pew. But I don't know of any famous porcupines or of even one child who has one. As a general rule, porcupines are solitary and have one of two methods for handling relationships: withdrawal and attack. Porcupines don't always want to be alone. In late autumn, a young porcupine's thoughts turn to love. But love turns out to be a risky business when you are a porcupine. Every porcupines' dilemma is this: How do you get close without getting hurt? Turns out, porcupines aren't the only ones who have that dilemma in relationships. This is our dilemma too. Every one of us carries around with us an arsenal of barbs and quills. Our barbs have names like anger, rejection, comparison, condemnation, resentment, arrogance, selfishness, envy, and contempt. We respond to those barbs exactly like the porcupine does, with either withdrawal or attack. Attack and withdrawal are practiced by every human being on earth, and every single time they damage a relationship, a marriage, a family, a workplace, or a church. The problem is that withdrawal and attack both violate the great command of Jesus to love. When I withdraw, I am unable to love, and when I attack, I am unwilling to love. Join us this weekend as we discuss the importance of community for anyone who would call themselves a Christian.

On this week's podcast, Mike Manolo returns to watch some brand promotions with The Looney Tunes dating all the way back to the 50's! During the Bugs Bunny Show, subsequently retitled, The Bugs Bunny and Road Runner Show; then finally The Bugs Bunny and Tweety Show, brand commercials were created to advertise Tang, Alphabits and Koo-laid to kids! Surprisingly these commercials are very well done, due a large part to the fact that Friz Freleng, Chuck Jones, Robert McKimsom and even Tex Avery returned to work on them!  And of course Mel Blanc was there to provide those familiar voices. NEWS ACROSS THE LOONIVERSE: The award winning concert that was supposed to premier in Los Angeles in the new Peacock Theater has now been POSTPONED! We do not know when this will be resolved, but keep it right here for updates! The Tiny Toons Looniversity Panel has been transformed to just a screening at SDCC this year. We were supposed to have all of the newly announced cast take the stage, but now it'll just be a screening of the episodes. While we are bummed, we understand the reasoning and our hearts are with those SAG-AFTRA Members who worked on the show and are currently striking. The series is produced by Amblin Television in association with Warner Bros. Animation.  GAY PUR-EE (1962) Dir. Abe Levitow Written by Dorothy Jones and Chuck Jones This release is set to include 3 Newly restored Looney Tunes cartoons; For Scent-imental Reasons, French Rarebit and Louvre Come Back. Two of those are Pepe LePew cartoons! THIS MEANS PROMOS: From line-dancing to LeAnn Rimes to sporting the latest flip phone in 2003, the Looney Tunes have sure made their way around the Brand Marketplace as promotion artists. The voice talent included Joe Alaskey, Mel Blanc, Jeff Bergman, Greg Burson and even Mel's son, Noel Blanc during these years of endorsment. From TARGET to WAL-MART and from KOOL-AID to TANG, the Looney Tunes sure could sell product. Something Dan Romanelli taught us a few years back when we was first on and sold carrot cake baked goods with Bugs' famous namesake. If you haven't seen these commercials, you're in luck! They're all on youtube and surprisingly in good quality! I highly recommend checking them out when you can. Something else they did surprisingly well was mix live action elements alongside the cartoon characters interacting with them. The techniques seen on display above helped filmmakers Robert Zemeckis and Steven Spielberg when they made Who Framed Roger Rabbit (1988). Many of the commercials spoken about during this episode stemmed from The promotions in between the cartoons of The Bugs Bunny Show (1959-1969) Want to support the podcast? Dating is about learning about yourself as well as other people, and how to navigate your interpersonal relations with them. In looking at the interactions between the contestants on the show, lessons can be gleaned and applied within our own personal lives. Their insecurities, their faux-pas; and their actions, all mimic our own behavior in real life.    Takeaways from this episode:  - How to communicate in an argument   - Don't Pepe Le Pew him   - Love, alone, is not enough  - Be confident in your choices  - How to handle the timeline on the conversation  - Don't dismiss his concerns   Should You Sleep on It? [02:19] There are two schools of thought when it comes to arguing, especially when it's close to bedtime. One school is that you should never go to bed angry at each other; the other is that when you're exhausted and it's late, it makes more sense to sleep it off, and discuss the issue the next day once you're well-rested. So, which one is it? Well, it depends. It's more about being clear and communicative on the timeline of the conversation. But sometimes, wanting to postpone the conversation could leave your partner confused and feeling dismissed, even if that's the healthier decision to make at that point. When you're exhausted, and you've had a few drinks, pausing on the conversation to continue it later, makes more sense.  That's because these conversations tend to be tough due to the fact that they're emotional. This is amplified when you're a person who is not necessarily comfortable with vulnerability. However, that being said, in either case, if you've had a few drinks, maybe consider having the conversation when sober because it could escalate the issue.  Men need actionable instructions.  If you do decide to have the conversation the next day though, acknowledge your partner's feelings; and be clear on the duration, the path and the outcome. That is, explain that you've taken note of your partner's feelings and clarify that you'll have the conversation at an agreed-upon time. Rather than being dismissive, and just saying you're tired and want to go to sleep. It's borderline manipulative to leave someone hanging without explanation.    Trust Yourself  [20:31] It's common to constantly be looking for validation from our friends when it comes to the person we're dating. But ultimately, you need to trust ourselves with your decisions. And that requires strength and confidence in yourself and your choices.  At the end of the day, no one knows your partner as well as you do. And you need to be able to block out all the white noise and make that choice for yourself.  Remember, there might be outliers who don't support the person that you're with. Ultimately you have to get to a place where you're doing this for you, and you have to be able to trust yourself.  Micah is an example of this. In the beginning, when her friends were putting down Paul, she didn't stand up for him. But as the relationship and the show progressed, she finally took a stand. She was vocal with her friends in telling them that they needed to support her, and that she would no longer be having this conversation about Paul with them. And that was a show of strength on her part.  If you're with someone, then be convinced with your choice and stand up for it. You've got this.     Stand up to Your Family [24:49] In the same vein as standing up to your friends, you need to stand up to your parents when need be. And that's not just limited to your romantic choice but your overall decision in life. Many of us walk around with trauma passed on from our parents. And rather than do the work and get through it, we ended up letting these past traumas dictate our lives.  These things don't define you, and once you've worked through them, you come out the other side more confident in yourself and your choices.  In talking about Bliss and Zack, Marni and Chris discuss her dad. He's negative and pessimistic. And yet, she's managed to flourish in life, and she stands her ground when it comes to the man she chose to be with, even if that means going against a parent.   Bliss has managed to be successful despite the storm of negativity she's received from her dad. Work through your stuff and flourish. We are talking about the trope of the Cad, AKA the Player. F***boys are their little scrappydoo kid-brothers, we call them “fun” boys for obvious reasons… It's a fun trope which is often exaggerated for comedic effect but actually comes from a very real thing! There are a lot of famous pop-culture versions though like Barney Stinson, Pepe Le Pew, James Bond, and The Continental. They're characterised by predatory behaviour, a focus on sex, shallow interactions, narcissism, caring a lot about their appearance, they're egotistical, manipulative, secretive, and deceptive. Often they can be wrongly looked up to as a kind of male hero ideal because of their seemingly easy catalogue of sexual conquests and their attractive, cultivated charm, but that's only because we ignore the emotional cost to the women they bed. They can be used as funny antagonists though and it's always a joy to see them get their comeuppance, as long as it's not excessive. So that's the topic here! What do you think of cads and players? Know any good ones? Which is your fave? Have you dealt with real life ones or are you one yourself? This week Gunwallace has given us a theme to Joanna Ghost Hunter - Wondering creepy spirits, wafting slowly here and there, defying all known laws of physics as they defy gravity, emit light without energy and effortlessly pass through walls… This tune conveys all sorts of weird creepiness. What Henry Ford learned from a slaughter house and how it changed the world. Dave Young: Welcome to the Empire Builders Podcast, teaching business owners the not-so-secret techniques that took famous businesses from mom and pop to major brands. Dave Young: Stephen Semple is a marketing consultant, story collector and storyteller. I'm Stephen's sidekick and business partner, Dave Young. Dave Young: Before we get into today's episode, a word from our sponsor, which is... well it's us, but we're highlighting ads we've written and produced for our clients. So, here's one of those. [Why It Works Ad] Dave Young: Steven, I'm looking at the show notes and today it says Ford and the word model, and I'm thinking the Ford modeling company. Well, this could be kind of fun and exciting. Stephen Semple: I kind of wish now. I think I'm going to disappoint you. You are talking about a Lizzie, but it happens to be Tin Lizzie. Dave Young: The Model T. Stephen Semple: The Model T Ford. That's what we're going to go back and talk about, but before I get started, I wanted to read something to you. I'm not sure whether you read this week's Monday Morning Memo. You know, Roy does a memo every Monday. Roy's consistency on the memo, it's kind of what really inspired me when I approached you for doing this podcast of really wanting to produce something every week and do that consistency. Now, I had a long time to catch up to him, he's been doing it for like 30 years or some crazy- Dave Young: Yeah, yeah. Stephen Semple: ... number, but there was a piece I came across in the Monday Morning Memo and you can see this going to mondaymorningmemo.com that I want to read because want to share because to me it captures the real essence of what we're doing in this podcast and also specifically why we're going to talk about the Model T Ford today. Dave Young: Let me just put a preface on this. We record these things pretty, pretty far in advance sometimes and I- Stephen Semple: Right. Dave Young: ... want to make sure that if somebody wants to go back and read this particular Monday Morning Memo, we're talking about the December 20th, 2021 Monday Morning Memo. Stephen Semple: Thank you for that, Dave. So David, here's what Roy wrote, but what makes them wonderful? Wonderful things were touched by someone who knew the secret of wonder and how to capture it. When you know how to capture wonder, you carry it on your head, your heart and your hands. You glitter when you walk. Isaac Newton knew how to capture wonder and he passed the secrets forward in just 14 words. Countless millions have read those words and assumed Newton was talking about himself. He was not. Newton was giving you his most precious advice. He was telling you how to capture wonder. He was telling you how to glitter when you walk. Stephen Semple: In 1675 Newton wrote, "I have seen further. It is by standing on the shoulders of Giants." Isaac Newton stood on the shoulders of Galileo, Kepler and Copernicus in astronomy. Huygens, Euclid, Henry Briggs, Isaac Barrow and math, Kepler and Descartes in optics, Plato, Aristotle in philosophy. Newton combined the insights of these men and made them uniquely his own. Stephen Semple: Choose your giants. Stand on their shoulders. Repurpose the proven. Vincent Van Gogh stood on the shoulders of Monticelli and Hiroshige long after they were dead. They taught him how to paint. He studied their paintings, captured their wonder and made it his own. Johnny Depp stood on the shoulders of Pepe Le Pew, the cartoon skunk and Keith Richards, The Rolling Stones. They taught him how to capture our Captain Jack Sparrow. Depp studied their mannerisms, captured their wonder and made it uniquely his own. Stephen Semple: Roy says he stands on the shoulders of John Steinbeck, Ernest Hemingway, Robert Frost, Tolkien, Paul Harvey and Robinson. They taught him how to write.

Matthew McConaughey writes in his book, Green Lights,“Cool is a natural law. If it was cool for THAT time, then it is cool for ALL time. A fad is just a branch on Cool's trunk; a fashionable fling whose 15 minutes can never abide, no matter how long she trends to try. Cool stands the test of time, because cool never tries. Cool just is.” My friend Crazy Tony taught me about “cool” 45 years ago when we attended Broken Arrow High School together. Tony made a lot of money buying and selling old cars. I was known as Beatermaker because Tony was forever frustrated by my uncanny ability to drive a fabulous car and, within a week, make it look like a beater. “Beatermaker,” he said, “every guy who has found an old car in perfect condition believes he has found a gold mine. But it's almost never true. If a car wasn't highly desirable when it was new, no one wants it 20, 30, or 50 years later. But if a car was admired and desired on the day it was born, it will be cool forever, no matter what condition it's in.” That was the insight that made Crazy Tony tens of thousands of dollars when we were in high school. The passage of time, the recklessness of the human race, and the slow smokeless burning of decay make old things rare. But it it does not make them wonderful. Remarkable buildings and books and paintings and songs don't get better with age. They were wonderful the day they were born. I know it, Matthew McConaughey knows it, and now you know it. But what makes them wonderful?Wonderful things were touched by someone who knew the secret of wonder and how to capture it. When you know how to capture wonder, you carry it in your head, your heart, and your hands. You glitter when you walk. Isaac Newton knew how to capture wonder and he passed the secret of it forward in just 14 words. Newton combined the insights of all these men and made them uniquely his own. Choose your giants. Stand on their shoulders. I stand on the shoulders of John Steinbeck, Ernest Hemingway, Robert Frost, Asimov, Tolkien, Paul Harvey, and Edwin Arlington Robinson. They taught me how to write. In fact, I borrowed “the slow smokeless burning of decay” from Robert Frost and “glitter when you walk” from Robinson. They don't mind. Each of them stood on the shoulders of giants of their own choosing. Do you have time for me to give you one more example? In the rabbit hole you'll find “Summer Wine,” a hit song written by Lee Hazlewood that made the Billboard Hot 100 in 1967. When you listen to it, you will think it sounds like a movie score. This is because Hazlewood took three famous movie themes that don't belong together and made them fit. He captured their wonder and made it uniquely his own. Yes, cognoscenti, you understand. The 3 giants on whose shoulders Hazlewood was standing are obvious. First, you have Nancy Sinatra sounding like every Disney Princess in every Disney movie ever made. And then you...
