Frank Murphy is joined by his friend Sarah Roberto, who was trying to buy a Frank & Friends Show bucket hat as the show began. Sarah bought It's the Great Pumpkin, Charlie Brown decorations on Etsy.  When Frank and his family lived in Burbank, they would go trick-or-treating in the neighborhood where Bob Hope and Joe Mantegna lived. Recently a family in Frank's neighborhood came by to sell school coupon books.  Frank's wife Jere has been practicing the choral version of the song “Hurt” by Nine Inch Nails for an upcoming concert by the Knoxville Choral Society. Someone asked Frank to emcee an event on the night of the concert, November 3, 2023. The concert will be across the street from the new Andy's Frozen Custard.  Frank plans to take a seven-week hiatus from the comedy improv troupe Einstein Simplified during the time he will be recording the next season of Tennessee Scholars' Bowl at East Tennessee PBS.  Frank will give a presentation about the history of the Body Farm at 7:00 p.m. on Thursday, October 19, 2023 at the Vonore Public Library. What we eat — and how our food is produced — is always changing. Over the past few decades, we've seen attempts to go from industrial farming to eating local, from factory farms to pasture-raised, anti-fat to anti-carb, wheat to quinoa, dairy milk to soy milk, bacon and eggs to avocado toast, and the list goes on. There's a lot that goes into these changes — market forces, innovation, supply chain issues and increasingly, climate change. In fact, food may be the single most direct way that most of us will experience the impact of global warming. It will change how food is produced, what we eat, and how much we pay for it. Farmers and food producers are adapting to a warming planet and expanding population. On this episode, we'll look at the forces that are shaping and changing the way we eat, along with some of the foods that may become far more common in the decades to come. We'll hear about how vertical farming is making the most of our space, why kelp could be the new soy, and the innovative solutions making their way on to our plates. Also heard on this week's episode: We talk with science journalist Amanda Little, who's traveled the world investigating threats to agriculture, about the innovations that could save our global food supply — and the Earth. Frank Murphy's friend Avi McCullah is today's co-host. Avi worked on-air at Jewelry Television and ShopNBC, where she sold high-end men's watches. She would fly from Knoxville to Minnesota to appear on ShopNBC.  Frank's figs are in season. He has been harvesting about 60 figs per day this week. He accidentally broke off a branch of a fig tree and is trying to ripen the figs from that branch by placing it in water.  Avi has lied to her sons about figs. She told them that natural fig bars are called “pop tarts.” When they ask for a pop tart, they get a fig bar.  Figs are inverted flowers. Frank says the taste and texture of his Brown Turkey figs remind him of oatmeal with brown sugar.  Frank brought 24 figs to a meeting of a non-profit organization. As the chairperson was trying to start the meeting, another man started telling Frank about the laxative effects of figs, which is something Frank appreciates.  Avi is dating someone who told her, “Let thy food be thy medicine.” Frank asks if she is dating a medieval barber. Avi asks if you can make fig jam or preserves without sugar.  The fig jam recipe Frank and his wife Jere use calls for 3 cups of mashed figs, 3 cups of sugar, and two small boxes of lemon Jell-O.  Avi asks if you can make fruit leather with figs. Fruit leather is like a natural fruit roll-up. The concept is similar to soft beef jerky. Frank watched an Adam Ragusea video about making beef jerky.  Avi wants to learn old methods of food preservation. Frank says that canning fig preserves is easier than he feared. You can vacuum seal the mason jars by putting them in boiling water for a certain amount of time.  The topic of canning reminds Frank of an episode of Visiting with Huell Howser in which Huell and cameraman Louie Fuerte visit a tuna cannery. Frank recalls Huell being amazed that they cook the tuna in the can. As a kid, he used to stay up late to watch Groucho Marx on reruns of You Bet Your Life.  Avi says she gets self-conscious on camera. Frank once needed to find a co-host for a project called SMOMOTV and he asked Avi. They recorded a show in an extra room at a brochure printing plant between Gatlinburg and Pigeon Forge. Avi taught Frank to buy a cheap bronzer but an expensive makeup brush.  Avi says the medieval barber doesn't have prepared foods in his pantry. Frank mentions that there is a sales tax holiday in Tennessee during August on some food products that could be called staples or ingredients. Prepared food items and candy are not included.  Avi says that snack foods in England have fewer ingredients than the same products in the United States. Frank's interview with Adam Ragusea will air on East Tennessee PBS on Tuesday night (actually Wednesday, July 27) at midnight.  Erik has a Carl Sagan pin on his jacket. Many people cannot recognize Sagan. Eric also has a pin for members of the International Brotherhood of Magicians.  Erik is wearing a t-shirt that Frank bought for the movie Fish Bait. Frank was wearing the shirt when his character was eaten by a giant catfish. Members of Einstein Simplified starred in Fish Bait as the fishing buddies who end up at Fear Hollow Marina. They improvised their lines. In real life, Steve Carell is an excellent improviser. There are some improv games designed to break one of the improv rules such as the game “Questions Only.”  The Secret City Improv Festival has a head-to-head tournament called the Slayden Cup, named after Bill Slayden, a founding member of Einstein Simplified. This year's festival will be September 30 and October 1, 2022.  Erik wonders why he got an empty folder for his high school diploma. Frank says that's normal. Most schools hold back the actual diplomas until after the ceremony to make sure everyone has met all requirements.  Erik wonders if his daughter will be interested in sports. Frank mentions that ballet is as intense as a sport. Frank played the old man in several Oak Ridge Civic Ballet Association performances.  When Frank passed the age at which his father died, his sister texted, “Congratulations. You win at breathing.” Frank's next goals are to outlive his paternal grandfather, his uncle, and his maternal grandfather. Frank likes to say that he wants to be buried so that he is exhumable.  Erik is from Elmira, New York. He met his wife when living in North Carolina. They moved to Gatlinburg because of his show. He is a mentalist. Mentalism is a branch of magic that involves mind-reading. The magicians who do elaborate stage shows are generally called illusionists.  Erik once worked as a mime. Frank agrees that pantomiming is difficult. Improvisers try to do realistic pantomime when holding imaginary objects.  The tv show Police Squad had hilarious ending scenes in which the actors would freeze but something in the scene kept moving. For example Leslie Nielsen was pouring coffee when the scene froze and the coffee cup overflowed. Frank loves the Police Squad theme.  Erik likes ‘80s cartoon themes. Frank used to watch reruns of The Adventures of Rocky and Bullwinkle and Friends. Erik jokes that poor Rocky had a sad end.  Frank appeared in parody videos for MoonPie. He played a character named Chandler Skootch who was afraid space aliens would invade Earth to get more MoonPies. Frank's friend Kira Cupp is filling in for Kathryn Frady. Kira asked Frank to get her an autograph from Internet cook Adam Ragusea. Frank recorded an interview with Adam for “Up Close with Frank Murphy” on East Tennessee PBS. Frank sent Adam a link to a video that Kira made 10 years ago at the Holy Land Market.  Kira has been posting videos on TikTok and Instagram. In one, she plays herself and someone who doesn't think videography is a real job. When he had a full-time radio job, the station would list his charity appearances in the public file for the FCC. He recently emceed a fundraiser for Friends of Literacy. In exchange, they gave logo exposure to the Frank & Friends Show.  The fundraiser was on a Friday night during Lent. Frank and his wife Jere couldn't eat the chicken entree and had to choose the vegetarian option. It was an imitation meat patty with sausage-like flavoring. Because Frank was the emcee, he was served his meal and had to eat it before anyone else at his table.  One of Frank's Facebook friends made a post asking why Easter is two weeks later this year. Frank tells Kira that Easter is on the first Sunday after the first full moon after March 21. There is always a full moon during Holy Week. Abraham Lincoln was assassinated on a Good Friday. Frank wonders if the full moon helped John Wilkes Booth flee the scene.  Kira has a doorbell camera. Frank wonders if she has saved any interesting footage. Bob stumbles on a controversy about a media personality's enchilada recipe — and learns about truth, celebrity and Mexican food.TEDDY ROOSEVELT: Surely there never was a fight better worth making than the one which we are in. BOB GARFIELD: Welcome to Bully Pulpit. That was Teddy Roosevelt. I'm Bob Garfield with Episode 11: The Tortilla Scandal.Gotta tell you, this one is hard. Look, I think it's fair to say that in 44 years of journalism, I haven't shied away from difficult subjects — because that's what we do, right? That's why we are here, to shine light into some dark corners. Sometimes dark and damp. The kind of fetid hiding places where bad things happen out of public view. Unseen crevices, shadowy and, you know, moist.But journalism is all about venturing there, risks be damned, to protect the public's right to know. I'm looking at you, Armando Tinoco of Showbiz Cheat Sheet. He is the author of the blockbuster story headlined “‘Magnolia Table': Joanna Gaines Makes ‘Controversial' Substitute in Mexican Enchilada Recipe.”JOANNA GAINES: So I've got my 9x13 pan, and I'm going to put about half a cup of the enchilada sauce at the bottom.GARFIELD: The Magnolia Table episode starts out normally. As the old saying goes, “You can't make enchiladas if you're not willing to make enchilada sauce.” And the host, Joanna Gaines, for a while says and does nothing that would suggest controversy.GAINES: So, I'm going to add the shredded rotisserie chicken and then I like to add some mozzarella cheese. It's a nice go-to, safe recipe that everyone will love.GARFIELD: OK, trigger warning. I'm not going to show you this, because we have some technical problems with our video, but it turns out not to matter what Gaines says about “safe” and “everyone will love,” because pictures don't lie. She is wrapping her enchiladas in wheat-flour tortillas. It's like watching police body-cam video. And there were some in the audience who were all, like, am I really seeing this?MATTHEW McCONAUGHEY: Holy...f*****g s**t.GARFIELD: You can say that again, Matthew McConaughey, maybe even slower. Because Gaines totally courts the inevitable backlash, openly declaring, and I quote: “I grabbed a handful of fresh tortillas from Jesse's today. In traditional enchiladas, sometimes it's corn tortillas, but I like to use flour tortillas and it's quite controversial.”“Controversial,” she says. No wonder she got the attention of Showbiz Cheat Sheet, which zeroed right in (I mean, if we're to credit the headline) on this potential crime against humanity — like genocide, or cinnamon-raisin bagels. Is God okay with tortillas not made with corn? YEAH YEAH YEAHS: (Music) It's sacrilege, sacrilege, sacrilege, you say… It's sacrilege, sacrilege, sacrilege, you say…GARFIELD: This is precisely the matter explored by food vlogger Adam Ragusea, who painstakingly documented the relationship between white flour and white people.ADAM RAGUSEA: The soft-shell corn tortilla is the original tortilla, originating in pre-Columbian America. Wheat didn't even grow in this hemisphere until European colonialists brought it over.GARFIELD: I'll return to Adam in a moment. Because in media, controversy is a commodity and you really, really need to inspect the goods. For now though, let's focus on another important question: Joanna Gaines, the enchilada lover — who is she again? Well, here's who: a famous American. A cable-TV-famous, unthreateningly attractive, very white-teethed American, who, with her even more white-teethed husband Chip, were for five years hosts of HGTV's super popular home-renovation-porn show Fixer Upper.SNEAK PEEK OF FIXER UPPER EXCERPTS: “Lucas and Laney, today is the big day. Are you ready to see your fixer upper?”“Absolutely.”“Let's do it!”“OH MY!”“This kitchen…”“How did you do this?”“Ta-da!”GARFIELD: The show was a blockbuster, but is just ending a three-year hiatus while Joanna and Chip spent more time with their five kids, their lawyers, and their very own fledgling cable channel Magnolia Network, where, at the moment, Jo doesn't renovate old farm houses but cooks meals on TV. Yes, she is now a DIY celebrity chef, and as such, what she does with an enchilada matters.Ok, not “matters,” as in having any relevance to anyone's real life in this particular solar system. “Matters” as in feeding the industry built on the passing interest of many, many TV consumers who may or may not be up to speed on, say, the systematic erosion of voting rights for Black Americans or atrocities in Myanmar or the burning of our planet to a cinder, but definitely do feel a kinship with Jo and Chip, becausetelevision.In that universe, not only can Armando Tinoco gain employment writing about the tortilla ingredients of the rich and famous, but everything Joanna Gaines does (with the possible exception of her autonomic nervous system) is also newsworthy. I commend you, for example, to Rachel Askinasi's scoop for Insider headlined: “I Tried Joanna Gaines' Restaurant-worthy, Cereal-coated French Toast and It's Perfect for Family Brunch.”Pulitzer committee, take note. But the journalistic interest extends beyond Joanna herself to those with whom she shares DNA. Credit Nathalie Kirby of House Beautiful for ferreting out the story headlined: “Joanna Gaines's Younger Sister Just Opened a Plant Shop Called ‘Ferny's' and We Can't Wait to Shop There!”These exposés don't just land in a reporter's lap. Breaking this news required Kirby to roll up her sleeves and read Joanna Gaines's Instagram, which gushed about both Ferny's and sister Mary Kay — approximately like the Pentagon papers, if the Pentagon Papers had included an address and store hours.It is journalistic enterprise like this that keeps you and me free. Because We. Must. Know. More. I mean, Chip and Joanna's infidelity issues, don't even get me started. Access Live was all over Chip, and we are the better for it.INTERVIEWER: I'm thinking about your 18th wedding anniversary, the five kids, all the success, all the fame that's come. Has there ever been a moment for the two of you where you thought you were going to throw in the towel or that you couldn't do it?CHIP GAINES: You know, that crisis, Jo and I had multiple opportunities to quit and throw in the towel, and that was just not in our DNA. So now I think we've taken that and realized that, you know, it's like you can't ever lose if you don't quit. And Jo and I keep showing up day after day and sometimes it's right, sometimes it's not, but we keep putting one foot in front of the other.INTERVIEWER: Joanna, tell me about the engagement ring. GARFIELD: Now, amid all of this repertorial heroism, there is one small nitpick. When Showbiz Cheat Sheet caught Joanna Gaines preparing enchiladas with flour tortillas, it was possibly not exactly cultural desecration. It was more like what Mexicans call: “cooking.” YouTuber Adam Ragusea pressed the question with LA Times reporter Gustavo Arellano, author of the book Taco USA.GUSTAVO ARELLANO: Go talk to the people in Sonora. Go talk to the people in Nuevo Leon and Chihuahua--the borderlands. Go talk to the Tex Mex folks who have been right there on the border for generations, and for them, flour tortillas is what they grew up on. They totally speak Spanish. They look like you and I. Flour tortillas--our tradition. GARFIELD: Oh, so, no controversy after all. As they say, never let the facts get in the way of a good story. The moral of this story, I suppose, is that true journalistic courage comes in not caring if it's “right” or “wrong.” Or “significant.” We should all maybe beware of trading in pompous pieties when the sacred appetites of the audience hang in the balance. On the other hand, I suppose credibility does matter, right? For instance, that cereal-coated French toast. Is it really perfect for family brunch? How do we know? For the love of God, how do we know?Ok, we're done here. Your site then becomes an audio business card that can capture people’s attention. This is what the VR Workforce Studio Podcast Does   Is Podcasting A Ponzi Scheme? I got an email from a friend of mine who has kind of "had it" with podcasting. He said, " I have recently done some calculations and have come to the conclusion that the hours spent podcasting would be better spent doing other things, like narrating audio books and maybe even some work around the house. I am doing a weekly video show via Skype, being streamed live on YouTube. I use Wirecast to make it look professional, and I have been releasing the audio as a podcast. I stopped the podcast side this week. I said when I started podcasting a couple of years ago, I would do a serious review at the two-year mark, and have concluded that while I have learned much I will be using for audiobooks, and am glad I did it, to continue would be a waste of time. Here's the part you probably won't agree with:   In the 80's Amway came through this area, and a lot of people joined and got hyped up (me included). After a while, it became clear that a lot of people at the top were making money, but it depended on a constant supply of fresh "believers" to fuel their incomes. People who started early were making money, but the thousands below were being Nickle and dimed and were doing nothing but financing those above. It worked as long as everyone believed they could make it.   Podcasting today is a similar type of pyramid structure, where everyone who started before 2007 or 2008 are making an income off of the believers below. (I find your motives pure, and I appreciate that.) It is VERY important for those below the median numbers (Around 120 according to Rob), to believe there is no discovery problem. That way they keep paying their $20 a month to Libsyn, buying books, Wordpress plugins, and tools for podcasting and going to conferences.   No matter how good your content is, the average basement independent has about 0% chance of ever being heard the first time by hardly anyone who doesn't know them already or is only 1 or 2 degrees separated. This is simply due to saturation.   The main people who make it now either are famous already, are starting a full-time business that happens to involve podcasting and has 6 figures to invest, like JLD, or are part of the corporate invasion. There may be an isolated incident here and there where it happens, but it so rare it doesn't bear mentioning. It is simply too late for the average independent show by a person working a full-time job to make an impact beyond a few niche listeners.   I was also dismayed to find the same "entrepreneurs," using many of the same books, and the same hype milking the same types of people. There is a sucker born every minute. They find them, use them, discard them, and move one since there are always more suckers on the internet. An example: a well-known personality in podcasting who was putting out yet another book solicited all of us to submit articles for it. We of course, had to buy the book to see if were in it. We weren't. Not one of us. The book had already been written and included older interviews that happened long before he solicited for articles. He simply lied to get us to buy the book. It worked, and we were the suckers. Well, fool me once, shame on you, fool me twice, shame on me.   I calculated how many listeners I would have if gained one new one each month, and how many hours I would spend editing and putting out the content I already have from the video show. My conclusion: I hope to retire in 3 years or so.  36 new listeners. Over 600 hours of podcast editing during that time.  BTW, I am not getting 1 new listener a month.   Contrast this with the one audio book I have narrated so far. It didn't sell. Only 11 copies so far. I have made $50 from that. What would happen if I spent those 600 hours over the next 3 years doing audio books that don't sell, and get royalties for the next 7 years on each?   Allow me to soften this by saying I have always found you and your efforts on behalf of the little guy podcasters to be the most honest and trustworthy of all. Your human-ness and transparency is wonderful, and I would love to spend time with you in person but neither of us have that time to devote to it. Thank you for all you have done and you continue to do for us bottom feeders. POWER TO THE SHRIMP!!   My Response   In looking at your stuff here would be my comment.   I'm not I would've put everything into one stream. I understand the extra cost, but I wouldn't have done it that way. I knew the name of your show and couldn't find it because all of your shows were under the name of the network in iTunes. That is a recipe for failure. It's hard enough to find a show when the name is correct.   I'm sure you found putting out so many episodes was a LOT of work. Anyone who starts out and gets no money in return (if that is the goal) means, "lots of work with $0 = burnout."   The bottom line (boiling it down) is the same reason I do podcasting over playing in a band. The band is days (months) of work for $50 if I'm lucky. If I practice two hours a week for six months to learn enough songs and do that for year that is 104 hours of practice. But wait, each gig is 4 hours. If we play every other weekend for ten months that is twenty gigs so another eighty hours (184 hours total). Those twenty gigs pay $50 each (20X50 )= 1000.   1000/184 =$5.34 an hour. If I say I "play for free" and remove the 80 hours of performing (and loading gear) that is still $9.64 an hour.   I'd rather stay home, not put up with drunks, and save my back and make more (or less) the same kind of money.   Some reports that 80%, 90% of businesses don't make it, others say 33% don't make it.   When I look at someone like John Lee Dumas he is the poster child for "Yes you can make money with a podcast." In the same way that the Beatles are the "Yes you can make money in music," not everyone with a guitar and long hair is the Beatles.   I don't believe there is a discovery problem. There wasn't a discovery problem for the Serial Podcast. Liz Covert at Ben Franklin's World has over 1 million downloads and she only has 100 episodes.  She doesn't have a team.   I agree that a ton of podcasts are coming out each week, but when a horse race starts, there are tons of horses coming out of the gate. Someone is going to win.   The Recipe of a Successful Podcast 1. Know who your audience is and what they want. 2. Give it to them on a consistent basis 3. Go to where they are (get out from behind the microphone) 4. Make friends with them. 5. Tell them about your podcast.   You said, "It is simply too late for the average independent show by a person working a full-time job to make an impact beyond a few niche listeners. " Podcast is only consumed by 30% of the planet. Adam is the host and producer of The Pub podcast from Current, the industry publication for public media, and he's Journalist in Residence and Visiting Assistant Professor at Mercer University. He's known for staking out strong--sometimes controversial--positions on issues like native advertising, objectivity and journalistic ethics, which he shares on this episode. In reality our audience are unlikely to become customers until they feel like they know us. That doesn't mean sharing every intimate detail of your life, but it does mean that you have to present your authentic self.
