The Rhine River flows through the heartland of western Germany, through a gorge passing an average of one castle per mile.  Reisling vineyards, charming villages, and castle after castle after castle surround you as you drift along the river.  But almost 400 years ago, this idyllic valley was caught up in the most devestating war in pre-20th century European history. In this episode, we'll cover the first two stages of the Thirty Years War, focusing not on the battles, but on the people who made the decisions that caused this calamity to unfold.  In particular, we'll focus on Frederick II, Elector of the Palatinate, and his questionable, if heartfelt, choice to take the crown of Bohemia.  We'll also visit with Ferdinand II of Austria and Christian IV of Denmark, and many others! And of course, we'll enjoy sauerbraten, while I tell the sad tale of my 1998 trip to Germany. Das was nicht sehr gut!

We're keeping it light and funky this summer and nothing brings out the fun like a cider and a lambic. Frukstereo Österlen 2020 is a dry cider made with apples from Sweden apple Mecca Österlen. It's a great location on Sweden's east coast with some of our best beaches. Dry and fruity, this cider makes us wonder why we don't review more ciders on the show. Metaphore Qvevri is a wild ale from Czech Republic. Qvevri is a ancent Georgian earthenware vessels that were used to make and age wine. Metaphore has taken this practice and used it to age a wild ale. The beer is aged for one year in a qvevri and buried in the ground with loads of Riesling grapes. Then it's aged on oak barrels for another year. With strong mineral notes blended with hints of Reisling, they really did something special here. #beer #craftbeer #drinks #cider #lambic #wildale #qvevri

Hello wine enthusiasts, welcome to The Daily Taste for Tuesday May 17th, 2022.Winemakers, today have lots of options when it comes to selecting vessels they use for fermentation.  Typically, white wines are fermented in stainless steel tanks where the temperature of the fermentation can be controlled with cooling jackets cooled with glycol.  A lot of red wines are also fermented in stainless steel tanks before being moved to oak barrels for aging.  The decision which vessel to use usually depends on the style of wine being made.  For example, some grapes and juice that are used to make high end red wines can be fermented in a stainless-steel tank or can be pumped directly from the destemmer into an oak barrel for fermentation.  Using stainless steal tanks to ferment wine is more economical and requires much less labor while fermenting in oak barrels is the opposite.  Using oak barrels for fermentation is expensive as a new French Oak barrel can cost up to $3000 a piece.  Its also much more labor intensive and requires a lot more space in the winery.  The barrels containing the fermenting red wine have to be moved to special racks that allow the winemaking team to rotate them back and forth everyday.  This ensures the oak is introduced evenly to the must and juice.  The benefits to fermenting in oak barrels includes adding silkiness to the tannins and a rounder more lush mouthfeel. Sometimes white wines like Chardonnay are also fermented in oak barrels when the winemaker desires oak influence or wants to age the wine on the lees. Aging white wine on the lees is called sur lees aging. The lees are all of the dead yeast cells that are a byproduct of fermentation that sink to the bottom of the barrel.  The lees release sugars and proteins into the wine that combine with tannins to soften the mouthfeel.  Sur lees aging also requires regular stirring of the barrels which may be the worst job in the cellar, especially if there are a lot of barrels to stir. Fermentation is not limited to oak or stainless steel.  Some winemakers are experimenting with the benefits of other fermenting vessels like concrete eggs.  Here is a clip from an interview I did with V. Sattui winemaker, Jason Moravec who talks about the impact of fermenting wine in a concrete egg. One of my favorite experiences working at V. Sattui was working with the Reisling we fermented in the concrete egg. Wachau in Austria is one of those places that should be on everyones bucket list to visit. I've not been there but it truly looks stunningly beautiful. When you're at a party and gingerly negotiating the free-for-all of bottles on the kitchen table, a rule of thumb might be to leave anything with a screwcap until about two in the morning, when you're past noticing and well beyond caring. Jason Yapp, however, would tell you, that the humble cap, perfunctory as it may seem, need be no indicator of quality. To that end, he regales David with a brief history of the Stelvin 'alternative wine closure' and caps it off with the thirst-quenching proof in the form of four suitably crowned offerings from Yapp Brothers. Cracking open what has effectively become a Yapp house wine, a lively, appley Chenin Blanc from Saumur, they crack on with a Reisling from Willems-Willems, which for all its fruitiness has no less 'vif.' Yapp's house red, with a label designed by David, is an easy access, drink-it-from-the-hip, Cabernet Franc, but it certainly wouldn't harm to pair it with cheese, a grill or even a stew. And last of all, a cracking good Crozes Hermitage from the esteemed family Graillot. For all its silky tanins and hedgerow scents, their newly-released Equinoxe 2017 is as ideal for forward drinking as it is forward-thinking, but do try and wait until lunchtime.

French grandmother and Italian grandfather connected him to food and wine in a very positive way from a young age. Should you go to university straight out of high school? Hotel Grand Pacific in Victoria is where he worked when he started his sommelier education. Extensive restaurant and retail background. Decided to move to 2010 in Kelowna to make wine; friends thought he was crazy! Worked at Raudz downtown, where he got to meet and learn from a lot of people in the industry. Started to study chemistry and take distance learning courses on wine making. 2012 was his first job at a winery with Mt. Boucherie in West Kelowna. Wine making may SEEM glamorous, but most of the time you’re just cleaning stuff and moving heavy things. Agreed to forego the title and work for reduced pay, in order to become Assistant Wine Maker. Moved to Tantalus Vineyards in 2013 and trained under David Pattison, then all the way to New Zealand in 2014, then back home to Tantalus for a second harvest in 2014, where he was given the very important role of decision making for the harvest. Applied and got hired as vineyard manager, working outdoors and doing things he had never done before, with Maria Kitsch. Took even more courses in viticulture in Penticton simultaneous with the job as vineyard manager for the Kitcsh family. Convinced the family to use the three bay garage to start making wine, went through the licensing process and in September 2015 picked the first harvest for Kitsch Winery. Remembering the first sip of wine, and the first time he got intoxicated. Loves to drink a cold beer after hot days working in the vineyard. Loves microbrews. Making good wine is a combination of art AND science. It starts with growing very good fruit in the vineyard. Every vintage is totally unique, and depends in large part on Mother Nature. Personal maturity and transformation after getting fired from a job when he was younger. Living a positive, wonderful life doing what he loves to do, every day. Effectively dealing with self doubt and getting over minor issues very quickly. There are no bad days! They mostly grow aromatic whites: Chardonnay, Pinot Gris and Reisling, Rosé, and one Pinot Noir. She jokes with the guests, giving them the proper phonetic pronunciation, as 'som-el-yay'! Leslie is actually a certified specialist in both wine and spirits. Leslie holds a diploma in wine and spirits from the Wine And Spirits Education Trust which is the pre-requisite for a Master of wine out of London. Leslie believes that wine is an essential part of any dining experience. She hosted a wonderful chocolate and wine pairing – two things that go so well together. Her mantra is wine, chocolate, wine. The presentation featured Eclat chocolate courtesy of Good & Evil featured a blonde chocolate infused with porcini mushroom and thyme which Leslie paired perfectly with Sherry, Muscat, a fruity Chardonnay or a Moscato d'Asti. The milk chocolate pairs beautifully with Merlot, Pinot Noir, Reisling and the dark at 72% cacao is a winner with Cabernet Sauvignon, Zinfandel, and Port. She tells Robin she discovered that her family was part of five generations of brewery from the United Kingdom – Black Sheep Brewery. Leslie admits to Robin her passion for beer. She shares her recipe for food and wine pairings with her preference being Pinot Noir and Sauvignon Blanc "going well with any food." But she doesn't discriminate. This week on In the Drink, host Joe Campanale is joined in the studio by Oskar Bynke, co-owner of the Hermann J. Wiemer Vineyard in the Finger Lakes region of New York. Over the last decade, Oskarand and his business partner, winemaker Fred Merwarth, have succeeded in placing the Hermann J. Wiemer Vineyard in particular, and the Finger Lakes region in general, on the global Riesling map, making sure the region is understood for its distinctiveness. Hermann J. Wiemer Vineyard is now an 80-acre property with a commitment to viticultural thought leadership and experimentation, and is widely considered to be the standard bearer at the helm of the Finger Lakes revolution. Before going to Wiemer, Oskar, a Swedish agronomist who holds a Master of Science in Agricultural Economics and studied in Cornell University, worked in the wine business with distributors of Diageo and Moet & Hennessey in New York City.
