Châteauneuf-du-Pape is one of the world's great wines, but many people haven't tried it because it can be darn expensive. So, when Costco drops their Kirkland Signature version of the wine, the natural question is “should I buy it?” Well, we are here to help you make that decision. Châteauneuf-du-Pape has a rather remarkable history, harkening back to a time when the papacy was in France, not Rome, and even a period when there were two popes for a longer period than you might expect. We talk about that history, as well as some of the rules and restrictions around Châteauneuf-du-Pape. But, what you really want to know is “should I buy it?!?” and that is what we will help you decide in this episode. And just to make sure we are giving you good advice, we compare the Costco Kirkland version to a well regarded and highly rated version of the wine just to make sure. We don't want to spoil it, but the Kirkland version compares very well. As an extra bonus, we talk about the hot new wine trend called blouge. Wines reviewed in this episode: 2024 Costco Kirkland Signature Châteauneuf-du-Pape, 2023 Domaine du Vieux Lazaret Châteauneuf-du-Pape.Send us a Text Message and we'll respond in our next episode!Contact The Wine Pair Podcast - we'd love to hear from you!Visit our website, leave a review, and reach out to us: https://thewinepairpodcast.com/Follow and DM us on Instagram: https://www.instagram.com/thewinepairpodcast/Send us an email: joe@thewinepairpodcast.com

I am pretty sure you didn't catch the article in the Somm Journal written by David Schulner. And if you did, you were not as jealous as I was. Well, let's call it inspired. Trading the glitz of Hollywood for the chaos of the restaurant floor, David Schulner doesn't just pour wine—he pours gasoline on the genteel myths swirling around it. You'll hear what happens when a successful TV showrunner, fresh off the picket lines of the 2023 writers' strike, crashes headfirst into the closed ranks of Michelin-star restaurants. Forget those dreamy drone shots over gleaming vineyards; David Schulner exposes the cutthroat realities of wine service, the humiliations of being the new kid at 50, and why, even with a TV resumé, you can't buy your way onto the restaurant floor. If you still think wine is all velvet gloves and romantic stories, think again—this is one guest who's happy to spill the dirty secrets, right alongside the Pomerol. In this episode, you'll discover what hospitality really means in an industry obsessed with pedigree, why most people—Sommeliers included—are entirely faking it, and who gets left behind when Napa and Bordeaux "evolve." David Schulner and Paul Kalemkiarian aren't afraid to torch the sacred cows of the wine world, from pretentious tasting rooms to the sanitized myths of customer service. Instead of parroting the party line, you'll get a front-row seat to the raw, awkward, ego-bruising reality of what it takes to serve, sell, and survive when the masks come off. If you're tired of wine podcasts that sound like a sommelier's TED Talk—or shows that make the industry look like a playground for privileged insiders—this conversation will rattle your cage. David Schulner lays bare why most restaurants won't hire a middle-aged rookie with Hollywood connections, why real hospitality is an act of rebellion against wine snobbery, and how every industry he's loved is "on the death knell"—and that's exactly what makes them magic. The result? An unfiltered, sometimes uncomfortable, ultimately inspiring blueprint for anyone who's ever wondered if there's a place for outsiders in one of the world's most insular trades. You won't just walk away with surface-level talking points. You'll come away with forbidden knowledge and questions that might keep you up at night. Here's your table of contents—open these books at your own risk:

With 30+ years in the arts — including over 20 years designing custom props and experiences for Disney, Universal, and Nickelodeon — Paul brings real-world creative credibility to his transformation work. Paul is the creator of Gamify Business and author of five books: The Creative Player's Handbook to Business, The Creative Player's Workbook, The Game Master's Guide to Business, Quit Selling Your Sh*t and his latest book, The Bard's Guide to Storycraft. His approach uses gaming frameworks and RPG mechanics to help artists, designers, makers, and creative entrepreneurs build profitable businesses without selling out to corporate business culture. His mission is clear: destroy the starving artist's mindset. Paul proves that creative entrepreneurs don't have to choose between artistic integrity and real profit—and that the business side of creativity can be just as innovative and fulfilling as art itself. Sinéad O'Connor patřila k nejvýraznějším hlasům své generace – a zároveň k nejkontroverznějším osobnostem světové hudby. Irská zpěvačka, kterou proslavil hit Nothing Compares 2 U, dokázala během několika let dobýt světové hitparády. Stejně rychle se ale ocitla mimo hlavní proud, když odmítla přistoupit na pravidla hudebního průmyslu a otevřeně kritizovala církev i společnost. Zemřela 26. července 2023 ve věku 56 let.

"Living the life of yes and — it's worked out really well for me. It makes people give other people palpitations because it's so unsteady. But with great highs come sometimes great lows, and it helps you respect every bit of it." — Paul Pape Paul Pape is one of those guys who is genuinely hard to categorize — and that's exactly the point. He's a custom fabricator, a creative entrepreneur, a business consultant, and the founder of Gamify Business. Over 20-plus years, he's made over 3,000 custom pieces for clients ranging from private individuals to multibillion-dollar companies, including animatronic horses for The Tonight Show, a Han Solo carbonite casting for Kevin Smith that came with some unusual modifications, and a fully functional bomb that was supposed to be a ring box. His core operating philosophy is borrowed from improv theater: yes, and. You never say no. You say yes, and you figure it out. It's a principle that has made him a lot of money, made him impossible to replace, and given him a life doing exactly what he loves — on his own terms, at his own pace. Nicky and Paul dig into what that philosophy actually requires: the willingness to keep learning, to treat failure as a step rather than a stop, and to refuse the comfortable lie that creativity has no commercial value. They also go deep on the disappearing culture of trades and hands-on mastery — why fewer men are choosing it, what that costs all of us, and why the men willing to get dirty right now are sitting on a wide-open opportunity. This is a conversation about craft, ownership, and what it means to build a life with your hands and your mind on your own terms. Are you a fan of powerful red wines like Châteauneuf-du-Pape but don't love the price tag? Then Gigondas may be the wine you've been waiting for. Gigondas is often called the “little brother” of Châteauneuf-du-Pape, and shares many of the same characteristics including hailing from the southern Rhône in France and containing the same GSM or Grenache, Syrah, and Mourvèdre grapes in its blend. And while it is a powerful wine that is the perfect companion to steak frites, it is also extremely balanced and elegant. We'll explore the history and techniques behind this fabulous wine, but more importantly, we'll give you our honest review of two Gigondas wines to let you know if either or both are worth your hard-earned money. And as we do every week, we'll round out our conversation with some “wine in the news this week” fun as well as random side conversations like the names of the two main characters in Revenue of the Nerds. It's hard to explain. You just have to listen.
White Wine, Regenerative Farming, and Reinventing Yourself at 50What does it mean to acquiesce to wine? For Lodi winemaker Susan Tipton it means surrendering to the grapes, making wine that represents what the grapes give her.Meet Susan Tipton, founder of Acquiesce Winery and Vineyards in Lodi, California. In a region famous for Zinfandel and other red wines, Sue took a different path, building a winery devoted entirely to Rhône-inspired white wines. What began as a passion project after she fell in love with a white Châteauneuf-du-Pape eventually became one of Lodi's most acclaimed wineries.Sue shares how she and her husband Rodney arrived in Lodi after years of moving around the world for corporate assignments, and how a song called “Acquiesce” by KD Lang inspired both the winery's name and philosophy. Today, Acquiesce is known for wines that as they say, surrender to the grapes, focusing on expressing the vineyard rather than manipulating the wine. She also explains why Lodi's warm days, cool Delta breezes, and sandy soils make Lodi an ideal place to grow Rhône white varieties such as Grenache Blanc, Viognier, Roussanne, Picpoul Blanc, and Bourboulenc. Our conversation explores Sue's career change in her 50s, the challenges of launching a winery focused exclusively on white wines, and the recognition that followed. From selling out her first vintages to being named Woman Winemaker of the Year by the International Women's Wine Competition, Sue's story is a testament to following curiosity and conviction. We also discuss Acquiesce's food-and-wine pairing program, regenerative farming practices, and the Lodi Appellation Inclusion Collective, an initiative co-founded by Rodney Tipton to help create pathways into the wine industry for people of color. So grab a glas and join us for this inspiring conversation about wine, hospitality, sustainability, and the rewards.
Robert Pape, professor of political science at the University of Chicago and founding director of the Chicago Project on Security and Threats, examines why modern military superiority so often fails to produce lasting political success. Drawing on decades of research into coercive air power, he argues that precision-guided warfare has fundamentally reshaped public expectations by creating the illusion that wars can be won quickly, cheaply, and with few casualties. Revisiting the lessons of Vietnam and the arguments developed in his landmark book Bombing to Win, Pape explains why tactical achievements frequently strengthen an adversary's political resolve instead of compelling surrender. The conversation explores his concept of the “escalation trap,” in which battlefield successes steadily weaken a state's broader strategic position by deepening political resistance and encouraging further military escalation. Applying this framework to the recent confrontation with Iran, Pape analyzes the strategic significance of the Strait of Hormuz, the limitations of coercive diplomacy, shifting regional power dynamics, and Washington's declining credibility in the Middle East. He argues that effective strategy depends not on the destructive power of modern weapons but on understanding how military action interacts with political objectives, public opinion, and national resolve. Rather than viewing conflict through the lens of technological superiority alone, Pape contends that contemporary wars are ultimately decided by political outcomes, making strategic judgment far more important than tactical victories. The discussion offers a timely assessment of air power, deterrence, escalation, and the changing character of warfare in an increasingly unstable international system.
Literary agent Don Pape joins me for a conversation about a lifetime in the publishing industry, the sacred work of shaping stories, and how creativity shows up in both the books we write and the ordinary rhythms of our everyday lives. Don shares what it really looks like to walk alongside an author as they steward their message from a rough draft to a published work. We explore the tension between the "striving" of the industry and the "stewarding" of a creative calling, and why art is ultimately an invitation to see God's love in the world around us. Don also shares a deeply personal "thin place" experience: simple pieces of artwork made by his granddaughters—pieces that have become a doorway into prayer, presence, and love. Whether you're an aspiring author or simply someone looking to reconnect with the joy of creating, this conversation is an invitation to trust the process. Monbazillac: The Sweet Wine of the Dordogne That Was There From the Very Beginning | Food Tour de FranceMonbazillac — the extraordinary sweet white wine of the Dordogne and one of the oldest protected appellations in France — has a story that begins at the very birth of the French AOC system. In 1936, six wines in France received the very first controlled designations of origin — the first AOCs in French history. Châteauneuf-du-Pape. Cognac. Tavel. Arbois. Cassis. And Monbazillac. A sweet white wine from five villages on the south bank of the Dordogne, just outside Bergerac, considered important enough to be among the first six things France ever decided were worth protecting. Today's Food Tour de France episode finishes in Bergerac and tells the full story of this remarkable wine — its botrytis-driven production, its extraordinary ageing potential and its perfect partnership with the foie gras and pâté de Périgueux we covered in yesterday's episode from Périgueux. The episode covers the full story of Monbazillac — from the legal dispute of 1934 that almost prevented the appellation from existing at all, through the extraordinary north-facing vineyards above the Dordogne where morning mists from the river create the humid conditions that noble rot needs to develop, to the harvest done entirely by hand in multiple passes through the vineyard selecting only the botrytised berries at the right moment of concentration. Made from Sémillon, Sauvignon Blanc, Sauvignon Gris and Muscadelle — the same quartet that dominates the white wine vineyards of Bordeaux — Monbazillac at its best carries aromas of honey, acacia, peach blossom and mirabelle that deepen over decades into candied citrus, spices and beeswax. The great Monbazillacs can age for twenty to thirty years or more. Which puts them in the same company as the greatest sweet wines in the world. The Food Tour de France is a daily series running alongside the 2026 Tour de France on Fabulously Delicious — one episode for every stage start and finish. The Monbazillac episode connects directly to the pâté de Périgueux episode from Périgueux — the combination of this sweet Dordogne wine with the foie gras at the heart of the pâté is one of the great regional food and wine pairings in southwest France — and to the broader picture of Dordogne and Périgord food culture this part of the series has been building.
