She and I connected because of her willingness to share her personal story about losing her brother, Garrett to a rare mutation known as NF2. This disorder caused tumors to grow throughout his body, and that resulted in degrees of loosing his quality of life such as his ability to speak and hear; two of the major ways we communicate! I can't even fathom that slow separation from your loved ones. At the time of the diagnosis Denise was 9 and Garrett 11. At the time of Garrett's passing he was 29. My conversation with Denise weaved together loss, resilience, and faith and the fact that grief can be very transformative in powerful ways. Faith was the cornerstone for Denise as she navigated what it meant to have a sibling who was experiencing a gradual decline in health and in quality of life. We talked about how she felt as her parents naturally gravitated to Garrett's ever increasing dependency. I was curious about that because at 9 years old she's in elementary school, and then through middle and high school and into college; crucial years for a young girl, a young woman. As we talked, I felt I heard in her voice (and the way she shared about this part of the journey) healing and acceptance saturated with grace. With the ever morphing process of the family dynamic we talked about identity and how that is impacted, and how everything about our life is based on identity and so what do we do when things are shifted and we lose titles, responsibilities, relationships? Denise talked about God's ability to use the tragedy of life for transformation in us and how He moves us into a greater purpose using the pain of life. We talked about the book she authored, Among the Stars and how she blended parts of her life to create a family friendly read that has an uplifting message for the heart and the mind. We folded into the conversation, how therapeutic writing/journaling can be in the grief process. And she's started on her next book that will develop one of the characters found in the first book. As a child, she loved to write stories with memorable characters and positive themes. She carried this passion for writing into her adolescence and early adulthood, hoping to publish one of her stories someday. However, as with any story plot, there were obstacles to reaching this goal. At Pepperdine University, she began to study accounting, a degree that required intense concentration and countless hours of studying and memorization. In addition, it was around that time when her older brother's chronic medical condition took a turn for the worse – leaving him in almost constant pain and removing his ability to hear, speak, and see well. His parents transitioned into full-time caregivers who sacrificed their time and energy so that their son could live another day. For Denise, this devastating life change meant taking a step back from her hobbies, instead focusing on her family and establishing herself in her career. Sadly, her brother succumbed to the complications of his condition five years after her college graduation. She appreciated the precious time she had with him and the positive impact he left behind. Although she continued her accounting profession after his passing, she knew the corporate world wasn't where she wanted to remain. A few years later, Denise and her husband moved from sunny San Diego to the forested terrain of Post Falls, Idaho, to plant their roots – buying their first home and expanding their family. That was when she finally found the inspiration to pen her first book, “Among the Stars” – originally an idea she wrote for her creative writing class in college. From there, she continued to push forward despite a decade-long writing hiatus and several bouts of writer's block. She is thankful that God has provided her with the words to share with others through her book, touching on the themes of forgiveness, redemption, and hope – while also paying homage to the notable people in her life, including those who have passed. She hopes this tale of first love, friendship, and family connection will bring joy and encouragement to those who need it.

A major UN conference to negotiate a global treaty on plastic pollution just ended without an agreement. But efforts may resume in 2025 to get a treaty over the finish line. In this two-part episode, you'll hear first from Erin Simon, WWF's vice president for plastic waste and business, about what happened at that conference in Korea (known as INC-5) and what comes next for the global fight against plastic pollution. Then, in Part 2, you'll hear from Sheila Bonini, WWF's senior vice president for private-sector engagement; and Kevin Keane, president and CEO of American Beverage (ABA) – the trade association representing the nation's non-alcoholic beverage industry. Sheila and Kevin's teams have been working together for the last five years to find different ways to achieve material circularity – which means that all the plastic, as well as other materials like aluminum, that get used are collected and remade into new products. In this episode of the ESG Insider podcast, we explore the latest developments in international efforts to reach a global treaty on plastic pollution. In late April, more than 170 countries gathered in Ottawa, Canada, to negotiate a legally binding instrument on plastic pollution with a view to agreeing on a global treaty by the end of 2024. The countries aim to reach a deal in the next gathering slated to take place Nov. 25 through Dec. 1 in Busan, South Korea. Today we're covering the outcome of the recent Ottawa treaty talks, the issues that remain to be hashed out, and what needs to happen between now and the final round of negotiations. We talk with Erin Simon, Vice President and Head of Plastic Waste and Business at international conservation organization WWF, which together with The Ellen MacArthur Foundation convened the Business Coalition for a Global Plastics Treaty. Erin tells us that countries have a lot of details left to work out in ad hoc meetings in the coming months and are effectively "pulling an all-nighter" between now and Busan. To understand how one big company that uses plastics in its products is approaching this topic, we speak to Darci Vetter, Senior Vice President and Head of Global Public Policy at food, snack and beverage company PepsiCo, which is part of the Business Coalition for a Global Plastics Treaty. "We definitely want to see those product design requirements, those common definitions, the principles, and as much specificity around extended producer responsibility and waste management — those are very important to us, and global rules that can set the stage for scalability within markets are critical," Darci tells us. At the same time, "we know that the countries around the table are starting from very, very different places," she says. "So there will need to be some of that flexibility." We also talk with Stewart Harris, Senior Director of Global Plastics Policy at the trade group American Chemistry Council. Diplomats are gathering in Ottawa this week for the latest round of negotiations on a treaty to end plastic pollution. Back in 2022, 175 countries agreed to develop a legally binding agreement on plastic pollution by 2024. This meeting in Ottawa is the penultimate round of negotiations and a critical moment in the long effort to curb the environmental damage caused by the rampant production and use of plastic today. On the line with me to discuss what these negotiators hope to achieve and some of the key obstacles in the way of a robust treaty on plastic pollution is Erin Simon, Vice President and Head of Plastic Waste and Business at the World Wildlife Fund. We kick off discussing the problem of plastic pollution before having a broader conversation about these treaty negotiations. This includes a conversation about some key diplomatic stumbling blocks preventing the adoption of a treaty on plastic pollution.
Ahead of Earth Day, today's episode revisits a topic that we first covered in 2022 on this podcast: plastic pollution. Everyone knows that this issue has become a true crisis around the world. Our current system for recycling and reusing plastic products is broken, and far too much of the plastic we use in our lives ends up in our communities or in our oceans. But there is hope for a brighter future. In March of 2022, the UN Environment Assembly agreed to kick off a process to draft a Global Treaty to End Plastic Pollution, with a goal of finalizing the treaty by 2025. Erin has had a front-row seat to this ongoing treaty process, and she's joining us today to provide an update ahead of the critical next phase: the fourth meeting of the Intergovernmental Negotiating Committee, which begins on April 23 and is intended to bring the treaty one step closer to being finalized. As we go about our daily lives and use and throw away many different kinds of plastics, we don't know or think about how plastics and plastic pollution affect our environment and our health. Plastic fills our dumps, homes and oceans. Plastic debris is found absolutely everywhere, from the Arctic to Antarctica. It clogs street drains in our cities; it litters campgrounds and national parks. The amount of plastic waste that is not recycled is a major environmental issue. Plastic pollution also has a direct impact on the environment because plastics do not break down naturally in the environment. This means that plastics can remain in the environment for hundreds of years building up, polluting land and water sources. Plastic pollution is especially damaging to marine life and its ecosystems because it can be ingested by animals . Plastic pollution is on the rise and it has a direct impact on human health. In order to reduce plastic pollution and its impact on climate change, it is important to reduce the amount of plastic we use because getting rid of all this plastic also causes problems for the planet. Just 16% of plastics are recycled – the rest goes to landfill or incineration or is just dumped. Welcome to the Health Talks NOW podcast, a Baptist Health production committed to bringing you the facts you need to help keep you and your family well. We are wrapping up our mini-series Like A Pro. Today, we hear from Erin Simon. Erin is serious about nutrition and has seen how it impacts not only athletic performance, but also overall health and wellbeing. Today's conversation touches on body image, eating disorders, nutrition, healthy eating and overall wellness. To kick off the conversation, Erin shares about her own nutrition journey. Much like many athletes in women's soccer, she admits to struggling with an eating disorder during her college years. Her mindset shift came when she began to learn about nutrition as a means to fuel her body for peak performance on the field. Since she was a health and exercise science major in college, Erin had a broad knowledge on the subject. Wanting to learn more, she hired a nutritionist who helped her understand the concept of macros. After applying this newfound knowledge to her own life, she noticed huge changes in her performance, energy levels, speed, acceleration and more. As women, we have been conditioned for a long time to consume less calories in order to fit into society's mold of a beautiful woman. This is the exact opposite of the messages being preached to our male counterparts. Erin points out how easy it is to see someone on social media and assume they have a perfect life. She has witnessed a shift recently as more people are beginning to be more open about mental health. For any young girl athletes working through the standards put upon us as women, Erin shares her best advice. Listen to what your body is telling you it needs and prioritize your gut health. Athletes' main focus should be on their performance rather than their appearance. Then, Erin offers a look into her eating schedule. She normally eats 5 small meals per day every 2.5-3 hours. On game days and the night before, she intakes more carbs than usual for future energy. She adheres to the 80/20 rule, in which 80% of her lifestyle habits are healthy and balanced, while the other 20% gives her time to enjoy herself and relax with loved ones without obsessing over health and nutrition. She believes that shocking your body with cheat meals is actually a good thing as it forces it out of its normal routine and allows it to learn to adapt to other things. Erin works to drive positive change across industries by leading WWF’s packaging and material science program. Through her efforts, she works with business and industry to help them make informed, sustainable material choices for their products and packaging. Her work focuses on the major commodities that go into packaging, which come in many different forms and materials, and how to integrate sustainability into the decisions and trade-offs that must be evaluated across a product’s lifecycle. Erin works with companies to strategically address their packaging work streams by focusing on developing transparency in the supply chain for the major packaging materials and pursuing strategies that reduce the environmental impact of these materials through responsible sourcing. Prior to joining WWF, Erin worked at Hewlett Packard for 10 years as a packaging engineer responsible for the design and implementation of laser jet printer and media packaging. I would say that collaboration is going to be the key to us solving these big global complex issues. Often, in the sustainability space, we get really concerned about our piece of the work. My sandbox. This is mine. That's not productive and it's not going to help us get to where we want to go. I think that the most successful people I see today in this space are the ones who are building the bridges, not burning them. What are you most excited about right now in the world of sustainability? I'm excited that I feel like we have turned a page from where I had to spend time talking people into the value of sustainability for businesses into a desire to continue to raise the level of ambition. It's becoming the cost of doing business and now they are thinking about how to go behind that to do something to give back. That is exciting because the level of innovation and opportunity when the leadership in those organizations is at that point is really powerful. What are some of your favorite resources or tools that really help you in your work? There are so many great organizations out there that teach me a lot of stuff. In the sustainability space you often have an area where you specialize and then you have to depend on all these other smart people to help you to learn about those things you don't know, enough so that you can valuable in that larger context. I spent a lot of time on websites of other organizations that I respect, learning about some of the programs that they're doing and how I could build a bridge between their work. I spent a lot of time on Ocean Conservancy and they have great resources. The Recycling Partnership is really specializing in increasing recycling in cities. They know a lot of data and wonky information about what people put in their bins and how to increase getting more bins and more collection in cities. I've been learning a lot about investment both in technologies and in different types of infrastructure from the Closed Loop Partners. On the global stage, I'm learning a lot more about how policy and legislation can drive some change that we need to see through other organizations who are doing great work like World Economic Forum and Ellen MacArthur Foundation. So, I spend a lot of time looking at what other powerful organizations are doing and try to build off of it. Where can people go to learn more about you and the work that you're leading at WWF? There is an experts page at the WWF website. There's also a lot going on at panda.org, which is our website. It talks about all the programmatic work that World Wildlife Fund US is doing, not just on plastic material science, but also on species preservation, ecosystem preservation, freshwater and oceans, the forest and of course the complex food and climate systems that interact with all of those things, including plastics. In this episode of Complete Football Health Podcast, I ask Erin Simon, a professional soccer player for West Ham United, about her experiences with injuries and persevering to achieve her dream of playing professional soccer. Erin is professional soccer player who is currently playing in the FAWSL for West Ham United as a fullback. She was born and raised in Little Silver, NJ where she played for the Peninsula Eagles and FC Copa. She went on to continue her soccer career at Syracuse University where she was a four year starter for the Orange. After graduating from Syracuse in 2016, she went on to earn her first professional contract after attending open tryouts for Sky Blue FC in the NWSL. In her rookie season, she started 18 of the 19 games she played in and was an integral part of the backline. She spent 2.5 seasons at Sky Blue before being released in May 2018. She was then contacted by West Ham United shortly after and picked up by the 1st division club in England. After waiting for her Irish citizenship to be official in September 2018, she was finally able to sign for West Ham and is now currently a starter for the Irons on the backline.

Don't be so hard on yourself. Easier said than done, huh? Especially this time of year when we are expected to behave a certain way: cheerful, successful, all put together. There is so much pressure to be "perfect." It's an internal struggle that we face every day. Well... Erin Simon is here to tell you it's okay to let go of that pressure. Her way of letting go came from a diagnosis of PCOS (Polycystic Ovarian Syndrome). From this diagnosis she learned how to take care of her body by using health as an internal "preventative measure" rather than as something aesthetic or external. "I stopped thinking of fitness and how I was eating in terms of like, 'oh, because I want to look a certain way or stay on top of my appearance or whatever.' It changed from that to being, 'well, I need to manage what's going on in my body.'" We talk about this and SO MUCH MORE! Thanks for listening!!
