This weeks guest is Shamez Amlani. Having grown up in Toronto, 19 year old Shamez got a summer job as a busser at Le Select Bistro on Queen Street West back in 1989. Little did he know this was the beginning of a lifelong career in the restaurant industry. Quickly moving into his favourite position behind the bar, he found his passion creating opportunities for strangers to meet and setting the scene in that third place - not home, not work, where one can be free. After extensive travels in Europe and a return home to hone his knowledge as waiter and bartender, Shamez re-located to Paris in '93 to start a new life. There he managed a small bar while continuing to travel and have many adventures touring with a band, pretending to be a writer, teaching English, eventually returning to Toronto in '97. He came back to Le Select as bar manager while his new life partner Maria Flawia Litwin forged a career as fashion designer and eventually contemporary artist. By the time 2000 had come around, he realized the only thing to do next was open a place of his own, so with friend and chef Mike Harrington and Maria, they opened La Palette in Kensington Market, imagining that their humble French Bistro would last a year, maybe two. Instead, the place became well entrenched in the neighbourhood and Shamez discovered a passion for community activism while helping to create Pedestrian Sundays, car-free neighbourhood celebrations where street food and live music were king. In 2005 they bought out their chef partner and continued to push the boundaries of what a restaurant could be as they laid down deeper roots in Toronto. When the lease came up for renewal, La Palette cast its net wider and opened a second, bigger and more ambitious place on Shamez's old stomping grounds of Queen West. After closing the original location, he vowed never to run two businesses at the same time again, a promise he couldn't keep. In addition to running the new place with tall ceilings, open kitchen, and a long bar, La Palette was also involved with an artist collective called Fedora Upside Down where he ran the bar and catering at legendary events that brought thousands of people together to celebrate diverse global music traditions. All of these inspirations came together with the birth of a new venue a block away, Drom Taberna in 2018. It was an Eastern European Tavern that was casual and affordable with live world music every day and a kitchen that stays open very late. Maria and Shamez invited some of their staff to be partners in the business with the opportunity to work off their share with sweat equity. It quickly became a staple on a street known for great bars and live music venues. Drom is as much a community centre as it is a venue, for the staff and artists that fill the space with great vibes and the public that find it to be an incredibly safe, multicultural and queer friendly space. When the pandemic hit, everyone involved with the two places was too stubborn to quit, having lived the immigrant experience which held creative problem solving and perseverance as core tenets. La Palette became a wine shop and Drom a deli and grocery store, with both places staying a moving target while navigating outdoor dining, repeated lockdowns and re-openings, and insurmountable economic and emotional hardships. Now, both places continue to be vibrant cultural hubs where you'll usually find Shamez at his favourite place behind the bar at La Palette, enjoying the buzz of a busy night, or on the dance floor by the stage at Drom. One couldn't ask for a better job, making fun for so many friends and strangers alike. Chef Matt Basile spent over a decade disrupting the food industry as the founder of Toronto's most recognizable food truck brand, Fidel Gastro's, and popular gastropub, Lisa Marie. Today, as the co-founder of Alchemy Grills, he's taking on a new frontier — disrupting the barbecue and live-fire cooking landscape. In an industry steeped in tradition, Basile is always striving to do things differently. In just under four years, Basile transformed the Fidel Gastro's brand from an underground sandwich pop-up to an internationally recognized food brand. She is the author of several books that have been translated into numerous languages, and has appeared on the BBC, CNN, and PBS and in numerous television and radio interviews on NPR, BBC Persian, VOA Persian and other international outlets. Samira Mohyeddin is a multi-award-winning journalist, documentary maker, and producer at CBC Radio One's The Current. She is the host of CBC's Unforked, a national radio program that picks apart the food we eat to reveal the culture and politics baked into it. Samira has a Master of Arts in Gender and modern Middle Eastern history from the University of Toronto. She is a trained Shakespearean actor and graduate of the American Musical and Dramatic Academy in New York City. You need the time to process, introspect, think about what part you had in your misfortune. Then decide to go fix your problems. You may have to think or take actions that are not natural to you. Time to reinvent yourself. You can do it!Don't worry about things that you can't control, because that's a TON of things and you don't want to needlessly burden yourself. Focus on what you can do to change your situation. It's not what happens to us that's important, it's how we react to it.In the cracks of time the last few months, I've been going through about 2,500 tracks in about 3-4 seconds each. You either feel it or you don't. The track either moves you or it doesn't. [Usually, that volume is done within a month, but I had to deal with tons of negative life crap in Feb].Then after I'm done going through all my fav DJ chart lists, house producers, singers, record labels, etc + the top 100 downloads in these categories: house, deep house, afro house, nu-disco, tech house, minimal house, jackin' house, progressive house, electronica, and classic house.By then I usually have about 130-150 tracks. Then I go through that digital crate on different days and the ones that don't move me anymore get removed.I bought 27 tracks in this batch and listened to them for an entire week. Some of my favs can each get up to 20plays each, so I really get to know each track and enjoy them. [Only 25 of the 27 made it into this mix].Then before the mix, I put them in folders like this so I'm not all over the place, yet have the freedom to bounce around. It's structured, but it's not too restrictive. This keeps it always FUN. If it's not fun, then why do it at all:Vocal - Mellow |Vocal - Medium |Vocal - Hype |Dubby - Mellow |Dubby - Medium |Dubby - Hype |Instrumental - Mellow |Instrumental - Medium |Instrumental - Hype |Covers/Remixes |Classic House Vocals |Classic House Dubby |Classic House Instruments |***"Dubby" are those tracks that have only repetitive vocal snippets or stabs, not a full vocal throughout the track.This took one attempt. I usually have to do 3-12 attempts before I get a mix that I love throughout because of all the mistakes.The biggest mistake was when I was mixing in a vocal track and mixing out the previous vocal. The vocal in the track coming in came in a long faster than I expected. Mixed vocals are terrible.I SHOULD'VE CHECKED in my monitor headphones. I always check in the headphones before I apply effects, delay, or flange because if I don't check, it'll sound like shet with most tracks. With the different delay effects, I like applying it between a mix as a new track is coming out or being mixed out and not on the single track playing like most DJs. It's more exciting through a mix.This batch had sooooo many amazing vocal house tracks!!!!! Their underlying instrumentals are wicked!!Love tracks that the music is so strong that if you stripped away the vocals, then you'd still have a killer house track.I usually mix classic house tracks made from 1985-2000 into my sets but this time, just wanted all the new tracks. Even replayed a fav new vocal at the end of the new stuff. LMAO!! This one » "Let It Go" (Maxxi Soundsystem Remix) Pandora Drive. It's better than the Disney Frozen version ; )"Classic house" is an extremely amusing category because it depends on which period of house music do you consider to be 'classic'?It depends on which were the formative years where you were getting involved with house music + the DJs that you listened to on multiple mediums and danced to live. What were their styles?I couldn't help myself though by keeping it purely the new tracks. I had to go into a 6 track classic house excursion. LMAO!!!!Made about 5 mistakes on this mix, but the groove that was built was really really amazing, the rest of the mixing was tight and these tracks... WOWZERS!! They were begging me to mix them!!! Enjoy and let us know if you like this mix and which parts you loved the most.---------------Image Explanation: This was a tiny but cool place called Nasa. This week's guest is Jodie Foster. Jodie has had an interesting career in the Industry as she spent over a decade working on Super Yachts catering to the whims of the super rich and celebrities. Jodie has visited 73 countries, and has travelled over 175 000 sea miles. Some of Jodie's favourite spots visited were Croatia, Alaska, Seychelles, Maldives, NYC, Holland (ShipYard). Some of the famous folks encountered during her career in yachting included Steven Tyler, Stevie Nicks, Lenny Kravitz, Hugh Grant, Sandra Bullock Bee Gees, TV stars, Diplomats, Presidents Vladimir Putin, Prime Ministers, Vice Presidents, Formula One Drivers etc. Currently, Jodie and her business partner run The Curator's Shop - an elevated custom gifting business - thecuratorsshop.com. For reference, Super Yacht sizes range from 30 Metres to 66 Metres (115-200ft). Crew sizes range from 6-26 (with some staff on rotation). Some of the roles Jodie had while working on Super Yachts included Deck Hand, Deck/Steward, 2nd Steward, Chief Steward. In order to work on Super Yachts, Jodie had to take the STCW95 US Coast Guard course. This is mandatory for staff and covers safety, survival techniques, basic first aid CPR and fire fighting. Jodie also took Diving//tender driving/floral/wine/Silver Service/ Cigars/Social responsibility on board, etiquette and protocol - as well as Anti-Pirate Training by X-Royal Marines. Prior to working in the Yachting world, Jodie had spent several years working at McDonalds, a few more years at Country Boy in Kitchener, Buffalo Mountain Lodge in Banff, Mount Norquay and managing a clothing store on Queen West in Toronto. Eventually, Jodie needed a break from private service and moved back home to the Kitchener-Waterloo area. Jodie that went back to school for Events Management and worked at Hacienda Sarria in Kitchener for 4.5 years in Events/Weddings/Management. Jodie also started picking up occasional work in NYC for a principal with his private parties, yacht, house, etc. From there Jodie took Charles MacPherson - Private Household Management Program in Toronto. This course consisted of Butler skills, Service, Etiquette and Protocol. Jodie was hired by Charles himself as a Consultant setting household standards, wardrobe management, training staff, and working with Principals to create a work plan for their staff/onboarding. There was a derailment on the TTC this morning, causing commuter chaos once again. A passenger on a bus was caught on camera harassing a TTC employee for "not looking Canadian." Another popular clothing store on Queen West is closing, and Uncle Ray's is a new Southern-style restaurant that faced some backlash before it even opened.
