In this episode of Take-Away with Sam Oches, Sam talks with Chris Dull, CEO at Freddy's Frozen Custard & Steakburgers, a Wichita, Kansas-based concept that has grown to 600 locations since it first opened its doors in 2002. Freddy's has been consistently growing all around the U.S., partly because it serves a high-quality, uncomplicated menu of burgers, fries, and custard, and partly because of its commitment to human-driven experiences. Chris has gotten a chance to see what exactly makes the brand tick as he regularly works the line at Freddy's restaurants, a practice that has helped him streamline kitchen workflows and redesign operations. Chris joined the podcast to talk about some of the lessons he's picked up from the frontlines and about why the pendulum is swinging back from the off-premises boom of the pandemic. In this conversation, you'll find out why:Human beings are a brand differentiatorYour innovation should be crafted around what your guest gives you credit forRestaurant executives must understand how their product moves through their operationManaging your labor down to squeeze margin out of the business is a losing propositionHave feedback or ideas for Take-Away? During the Feb. 10 conference, the mayor announced the first four restaurants to receive grants from the city's $1 million Dixie Highway Corridor Fund:LongHorn Steakhouse will open a full-service restaurant at 7401 Dixie Highway;Crumbl Cookies, one of the nation's fastest-growing dessert chains, will open its first South End store at 10970 Dixie Highway;Freddy's Frozen Custard & Steakburgers will build a new restaurant at 8700 Dixie Hwy; andDerby City Pizza will expand its location at 12900 Dixie Hwy to include an event space and outdoor game yard.We also chat about the first Southern Indiana chef to be considered by the James Beard Foundation. She met with him at the Downtown Jeffersonville restaurant recently to talk about the honor. We also chat about Greenside Pizzeria, a new spot from the owner of Gravely Brewing, coming to NuLu. And editor-in-Chief Shea Van Hoy tells us about a couple of chain restaurant moves — the closure of Bravo near Oxmoor Center and the opening of a new Skyline Chili in Springhurst. After that we chat about the return of soul food restaurant Daddy Vic's, which is back in a new location after it's original space was damaged in a severe thunderstorm last year.Following a break we talk about the retirement of longtime Jeffersonville Mayor Mike Moore. Moore was a guest on Access Louisville just last summer and gave us updates on a number of projects in Jeffersonville, which is the second largest city in the Louisville Metro Area.Access Louisville is a weekly podcast from Louisville Business First. What if the real reward in restaurants isn't the exit, but the impact?Scott Redler didn't just co-found Freddy's Frozen Custard & Steakburgers, he scaled it to 400+ units without losing his soul.In this episode, we get into the mindset shifts that made that possible: from hiring like your business depends on it (because it does), to giving GMs ownership in everything but name. Scott shares how he built a culture of transparency and accountability, why the “no-jerk rule” matters more than a resume, and how he chose franchisees who shared his values, not just his ambitions. For operators who care about building something bigger than themselves, this is a masterclass in scaling with intention, and not ego.To learn more about Mocha's Coffee & Eatery, visit mokasusa.com_________________________________________________________Free 5-Day Restaurant Marketing Masterclass – This is a live training where you'll learn the exact campaigns Josh has built and tested in real restaurants to attract new guests, increase visit frequency, and generate sales on demand. This episode features Jason Ingermanson, President and CEO of JRI Hospitality. Based in Salina, Kansas, Ingermanson oversees a diverse multi-concept portfolio that includes Mokas Coffee & Eatery, Chompie's, and a massive franchise footprint as one of the nation's largest Freddy's Frozen Custard & Steakburgers operators. The conversation explores Ingermanson's journey from his early days at Burger King to managing high-growth brands across multiple states, emphasizing his philosophy of developing people, leveraging data for site selection, and maintaining a competitive edge through personal discipline and organizational alignment.10 Takeaways Diverse Portfolio: Ingermanson manages a multi-concept operation through JRI Hospitality, including Freddy's, Mokas Coffee & Eatery, Chompie's, and the Salina Country Club. Humble Beginnings: His hospitality career began with a formative job at Burger King at age 18, which taught him the impact of a fast-paced environment. The "Dream" Philosophy: He views his role as a tool to help employees achieve their own dreams, even if those dreams eventually lead them away from his company. Strategic Growth: JRI Hospitality focuses on "concentric" expansion, starting in Kansas and moving into neighboring states like Oklahoma and Arizona. Data-Driven Decisions: He avoids high-cost markets like California in favor of areas with favorable demographics and political climates, such as the Midwest and South. Information Management: A self-described "fast metabolizer" of information, he consumes podcasts and books specifically to solve immediate organizational needs. Personal Discipline: He maintains an intense routine, starting at 5 a.m. and consuming a high volume of coffee—up to a gallon a day. Power of Retention: He emphasizes that retaining existing employees is more critical and cost-effective than constant recruiting. Cultural Alignment: He focuses on aligning high-value performance indicators with the organization's overall mission to ensure consistent success. Market Awareness: He monitors industry volatility, including the impact of tariffs, commodity prices, and AI on the hospitality landscape.

What is the right franchising strategy for your restaurant brand? It's not as simple a question as you may think. And I brought in Sean Thompson, VP of IT with Freddy's Frozen Custard and Steakburgers, to discuss franchising strategies and what may or may not work for restaurant brands. The number of strategies for franchising a restaurant brand, or any industry for that matter, is as varied as the companies themselves. There are companies that love big operators and those that prefer smaller franchisees and everything in between. There are also misnomers about franchisees. They are not always local. And they're not always small. In any event, we sort it all out on this episode as we talk about what works and what doesn't and what is the key ingredient in any franchise company. No stranger to the restaurant industry, Max Sheets got his start as a teenager scraping cheese off pans in a Pizza Hut kitchen. He later spent more than 20 years in real estate and development for such brands as Lone Star Steakhouse and Saloon, Freddy's Frozen Custard & Steakburgers, Smashburger, and Ted's Montana Grill. In fact, he was with Smashburger when the footprint transformed from a handful to hundreds, and was at the floor of Ted's Montana Grill when Ted Turner and George McKerrow pioneered the better-burger segment. His responsibilities took him across the country. And in those travels, he saw things done well, and saw the opposite. He then took those learnings to Chick N Max, a six-unit fast casual, with more than 50 locations in various stages of development across Kansas, Oklahoma, South Dakota and Texas.

But surprisingly, the Freddy's story doesn't begin with dessert. It all started with a main course back in the 1950's. Wichita, Kansas is a historical landmark in the hamburger's march to prominence and home to WWII veteran Freddy Simon. The savory steakburger is inspired by the 50's style staple and reminiscent of an era focused on quality, cooked-to-order meals that bring families and loved ones together. Freddy's sons Randy and Bill Simon, and accomplished restauranteur, Scott Redler, worked tirelessly to recreate the recipe that lived up to the timeless standards of their Father's generation. Today, thousands gather at Freddy's for food and fellowship that fills their stomach and warms their soul.Growing up in St. Louis, Redler got his start in the restaurant business at age 15 catering events for groups of two to 6,000. Paying his way through college by managing a steakhouse, he attended the University of Missouri and earned a degree in restaurant and hotel management. Redler has managed and overseen everything from 5-star restaurants to corporate cafeterias in Wichita, St. Louis, Minneapolis and Washington, D.C. Overall, Redler has been involvedin development and operations of 21 varying concepts. In 2002, Redler partnered with Bill Simon and his brother Randy to launch Freddy's Frozen Custard & Steakburgers. After franchising in 2004, Freddy's has grown to nearly 400 domestic locations that serve 32 states across the United States.
