Cameron Dueck grew up in a Mennonite family on a remote turkey farm in the Canadian Prairies. His journalism career took off in Chicago, where he wrote about American agriculture while learning to sail on Lake Michigan during the weekends. He moved on to New York City, where he further whetted his appetite for the open sea and international news. He next joined Reuters as a correspondent in Singapore, where the idea of foreign ports and strange seas really took hold. When Cameron quit that job he jumped aboard a yacht to sail from Thailand to the Mediterranean, dodging pirates off the coast of Yemen and braving dust storms on the Red Sea. He earned a Royal Yachting Association Offshore Yachtmaster qualification before setting off across the Atlantic Ocean. He soon returned to daily journalism, joining the South China Morning Post and then the Financial Times in Hong Kong.

In this video our resident chef Dion Taylor from HSG At The Gardens in Bundaberg, Australia walks us through another audience members recipe. Today we are off to Bulgaria to explore a delightful dish. Thanks to listener Greta Dimitrova for sending us this recipe. One of the most popular summer cold soup for warm weather. It is called 'Tarator' emphasis on the third syllable (o). It is pronounced as spelled. Recipe details. Serves 4-6 portions 1 English Cucumber 2 medium garlic cloves 400-450 grams of yogurt 3-4 stems bunch of fresh dill 3-4 stems of fresh parsley Handful of walnuts 4 Tbsp of olive oil. Salt to taste 1. Peel off the cucumber and cut in small cubes in a soup ball. Need extra space for the yogurt mix later. 2. Peel and crush the garlic cloves with a little bit of sea salt and add to mixture 3. Crush walnuts and add to mixture( I use simple grinding bowl, old method, no crush press or other tools for both garlic and walnuts but I do not crush them together) 4. Remove stems of dill and parsley, cut up the leaves ( minced dill and parsley) and add to mixture 5. Add olive 6. Mix everything together (the olive oil coats the mixture and is more even) 7. Mix the yogurt with a cup of water. If it is too thick you may add extra water. Stir with fork to get even consistency 8. Add yogurt mixture to bowl, stir and serve or better chill in the fridge and serve. If concerned about garlic ... Can be omitted. Some restaurants in Bulgaria may not put garlic because is mostly a lunch soup and people may opt out of this when they have to return to office after lunch. Australian James McAlloon decided to do something epic during Covid 19, and selfishly hit the roads of Australia to walk the 4000 plus kilometers across the Great Southern Land from the Sunshine Coast in Queensland in the country's east, to the Indian Ocean on Australia's West Coast. With a focus of helping others James is raising awareness and funds through his walk for his work colleagues in South America who have been hit very hard by the global pandemic. Chimu Adventures is James's employer and the company jumped at James's suggestion to do good by walking across the continent. In this episode James gives us an update from the South Australian border over halfway through his walk, as he sits and waits for his quarantine time to be served before he can get back out and onto the outback roads of Australia. This is an inspiring episode to listen to someone doing good for others in a time when many others are focused inwardly and forgetting that many souls across the world are suffering perhaps more than them. This month Dion brings to life his own creation of Australian fusion cooking. The dish is Chilli Prawns with Lime and Quinoa. Ingredients for today’s recipe: Chilli Prawns with Lime & Quinoa Serves 4 500g green prawns (peeled, tail on) 1 punnet cherry tomatoes 4 x baby capsicum 250g fresh butter beans 400g diced tomatoes 1 small bunch parsley 2 cloves garlic 2 birds eye chillies 1 lime Olive oil Salt & pepper 2 x cups white quinoa Method: Quinoa- Use a large pot, add the quinoa and cover with approx 1ltr water, salt & pepper. Add to the stove top on high heat and cook for approx 15mins, or until the grains are clear and soft. Drain any excess liquid off and Set aside with a lid on. Prawns- peel the prawns, leave the tail on for some extra visual appreciation. Sauce- Peel and finely slice 1 brown onion, the garlic cloves and set aside together in a small bowl. Cut the cherry tomatoes in half. Cut the small capsicums into 1/4’s and remove the green stalk and seeds. Finely chop the chilli and upto to you if you want to keep the seeds for the extra heat. Take a large frypan with a lid and place on the stove top to moderately heat. Add a generous splash of olive oil to the pan, allow to heat and then add the sliced onions and garlic. Cook for approx 5mins, then add the chopped tomatoes, capsicum and chilli. Add the tin of crushed tomatoes and allow to simmer. Season the sauce with salt and pepper. Once you’re happy with the sauce flavour, add the prawns to the top of the sauce mix and cover with the lid for approx 4mins. This helps to steam the prawns at the same time. Turn the prawns over in the sauce and continue with lid on for another 4mins and they will be cooked through. Add the chopped parsley and gold through the sauce mix. Serving- Place the cooked quinoa across the bottom of a large serving platter. Spoon the prawns and sauce mix over the top of the quinoa and garnish with lime quarters. Enjoy!! Show listener Karin Van Den Eede from Belgium sent us the recipe for todays show. Dion gets to it in the kitchen and knocks out this wonderful dish. Listen to Dion as he explains what ingredients are required and a step by step guide to how it comes together. Todays Recipe. Flemish White asparagus INGREDIENTS 12 white asparagus 1/2 lemon (the juice) 2 hard boiled eggs 75 g sweet butter 1 handful of flat parsley Salt Freshly ground pepper PREPARATION STEP 1 Peel the asparagus from head to toe using a peeler and cut the latter (about 1 cm). 2ND STEP Cook the asparagus the English way: Bring a large amount of water to a boil. STEP 3 Salt and add your asparagus and cook for about fifteen minutes (more or less depending on the size of them). I love them al-dente. STEP 4 Check the cooking with the tip of a knife, it should come in like butter. STEP 5 Drain the asparagus and let cool if you prefer to consume it cold or lukewarm. If you prefer to eat them hot, you will need to make the sauce at the same time as cooking. STEP 6 Make my Flemish sauce by coarsely mashing hard-boiled eggs with a fork. STEP 7 In a skillet or frying pan, melt the butter over high heat with the lemon juice while whisking until the butter froths. STEP 8 Remove from the heat and add the crushed hard-boiled eggs and the chopped parsley. STEP 9 Salt and pepper, mix. STEP 10 When ready to serve, arrange your asparagus on serving plates and distribute part of the sauce. STEP 11 Serve with 2 or 3 small pieces of toasted country bread and the rest of the Flemish sauce.
