We love “the new.” Especially when it comes to the restaurant scene, we get excited about the spot that just opened its doors or discovering a place the rest of the community hasn't caught on to yet. While the rookies get everyone worked up, it's the veterans who create the foundation of a city's food identity. And we've got two of them leading the lineup for this episode of the podcast.First up is Bacchus, the venerable Bartolotta-owned restaurant that announced a couple different developments around its 20th anniversary. For starters, executive chef Nick Wirth and chef de cuisine Brent Davis have come up with a new a la carte dinner menu, which will debut along with a new bar menu Feb. 20. Among the items you'll find are charred Spanish octopus, smoked wagyu pastrami, Seremoni black cod with burnt honey celeriac and couscous pilaf, and Wagyu skirt steak with miso-glazed ube and grilled kimchi bok choy. The restaurant will also take a night to properly celebrate the 20th anniversary as it hosts a champagne dinner March 6. The aforementioned chef duo have put together a five-course menu for the occasion, which will also include pairings of bubbly from the likes of Dom Pérignon and Laurent Perrier.Another longstanding Milwaukee eatery got the Ann Christenson treatment recently, as our favorite food writer took a peek inside Pizza Man's comeback. Once the king of our city's pie scene (arguably), Pizza Man experienced some slippage as it suffered through fire, a couple location changes and attempted expansion. It's now back at the Downer location and trying to recapture its former glory under new owners Thomas Schafer and Krys Zielinski. Ann stopped by a couple times to get a feel for how things are coming along and found mixed results, as well as steady improvement. As she put it in her Milwaukee Magazine story, “This reboot needs to succeed. Downer Avenue needs it to.”Here's what else found its way into this episode:A juicy piece about Prime Rib you'll only find in the pages of Milwaukee Magazine.A new concept called Outlaw Oyster that'll pop-up inside Crafty Cow's Wauwatosa location.A chat about What Mrs. Fisher Knows About Old Southern Cooking, the first African-American cookbook from 1881.Finally, we have another in our series of interviews with some of Milwaukee's very best chefs — who just so happen to be whipping up an original dish you can try at Radio Milwaukee's SoundBites. Egg & Flour's Adam Pawlak gets the microphone on this episode and talks with Kenny Perez about the tostada he's working on for Feb. 27.Adam is one of 12 different chefs lending their considerable talents to SoundBites, a group that includes Dane Baldwin from The Diplomat, Kristen Schwab from The Wolf and Gregory León from Amilinda. “The thing that most excites my soul is creating, establishing, developing, & then making sure it doesn't die.” – Titus Bartolotta Locals in the Lake Norman area of Charlotte, NC know the name Bartolotta. That's because Titus & his wife, Christina Bartolotta (also a podcast guest!), do more than run businesses there. They're community builders, investing in projects that richly improve lives. That alone would make for a good interview. But what makes Titus' journey exceptional is how difficult & diverse it was. Raised in poverty & trained in an unlikely mix of culinary arts, seminary, & big screen TV sales, he eventually became a business owner & mentor when the call to create & sustain something purposeful became too great to ignore. From consulting to authoring a book to running two restaurants, Titus blends business acumen with deep personal conviction, humor, humility, & passion as he lifts others up & leads authentically. To learn more, find him at RiseCafe.com & CollaborativeSolutionsGroup.com. John C. Maxwell said, "Leadership is not about titles, positions, or flowcharts. It is about one life influencing another."

Food can take you to a lot of different places — sometimes figuratively and sometimes literally. Ann and Tarik focus on the first one as their own figurative trip around Milwaukee's food scene gets started in this episode. The destination for the upcoming event in question is Alaska, and the good news is you only need to go as far as South 2nd Street for a taste of The Last Frontier. Braise is the local restaurant putting together this far-flung menu of four courses that prominently feature the seafood available way, way up north. As for where else the conversational journey goes:Over in Lake Country, the Bartolotta Restaurants opened its latest location, called The Commodore. At the Milwaukee Public Market, you only have a couple days to enjoy Pat's Rib Place before it closes to pursue retail opportunities. On the north end of Water Street, Birch will host fresh oyster pop-ups in a nod to owner Kyle Knall's childhood on the Gulf Coast. Finally, up in Kohler, tickets went on sale for the annual Food & Wine Festival, which this year will welcome Andrew Zimmern and Maneet Chauhan.Produced and edited by Marcus Doucette

That is exactly what we're talking about in this episode of Sole Source. Life is messy and a tornado of feelings can come out of the trauma we experience. Without being able to regulate those feelings, they can creep into our behavior that touches all aspects of our lives. It can be confusing to us and to those around us who may not know that our behavior has its roots somewhere else – our trauma. Jennifer Bartolotta, the owner of Bartolotta & Associates based in Milwaukee, Wisconsin, is teaching people about Trauma-Informed Care. Andrew Bartolotta, Director of Digital Media for cityCURRENT and Lipscomb & Pitts Insurance, discusses some of the major social media lessons learned in 2020, some trends for 2021 and resources that can help organizations become more efficient and effective with their social media and storytelling efforts.During the interview, Bartolotta highlights Zoom, Canva, Sendible and Kapwing, and discusses the importance of empathy, being able to pivot, tracking and analyzing the data, and using your platforms to power the GOOD.Visit www.GROWTHcurrent.com to learn more about GROWTHcurrent.Four Social Media Tools We Used the Most in 2020 and Plan to Use Even More in 2021Zoom: How could we not mention Zoom! In 2019, our team started using Zoom to record our podcasts and thankfully I knew a lot about this program and its capabilities.Zoom was our “bonus employee” throughout this year and our main tool to help bring our Signature Breakfasts virtual, break the geographical barrier to attend our events, go behind the scenes of world-class museums virtually, and remain a tool to engage partners and the community without exposing people to the virus. Our team recorded over 500 interviews on Zoom alone this year spotlighting efforts across our region and around the world of those making a difference and doing GOOD even among so much uncertainty.2. Canva: I've preached about Canva since they launched back in 2012 and as a graphic design professional, I still can't think of any other tool that is as impressive, easy to use, and a great tool to collaborate with our team.Canva has templates for everything from business cards and instagram stories to annual reports and even video presentations. I love the fact that with Canva For Work, our team in Nashville and Allison and I here in Memphis are able to see instantaneously any adjustments to campaigns without ever leaving the app or checking our email.Sendible: cityCURRENT's social media scheduling manager has been a lifesaver for 2020. I use this platform every day as our content calendar and home for scheduling any posts, working on brand campaigns and more.Sendible helps you collaborate with your team to plan, post, and measure the success of content on every platform. I've used their draft functionality quite a bit as we pivoted through 2020 and am thankful that their team is just a tweet or LinkedIn message away when I need their help. They recently launched their 2021 Social Media Holiday Calendar and want to help you boost engagement on social by celebrating national holidays and fun events. Their FREE calendar has over 250 events with hashtags to help you with your content calendar.Kapwing: Kapwing has over 70 tools to help you with sharing video and meme content on social media. From their Studio and Video Maker to easy tools to add captions to video, waveform for podcasts, collage maker, and more, Kapwing is an online tool that makes creating video content a breeze.Four Lessons We Learned This Year About Digital MarketingFirst and foremost, social media is meant to be a dialogue not a monologue. What connects us to a brand isn't well-polished visuals, it's humans and their stories. It's how people have connected for centuries and it isn't about to change anytime soon; especially as we yearn for connectivity throughout the coming year.Social media is about relationships and people connecting to people — not companies or brands. So be human.Be empathetic / don't be tone deaf: pandemic, poverty, everyone's struggling (be a reprieve of what's going on in the world and be a place of positivity) brands continuing on with regular scheduled programming without addressing what was happening in the world can be quite awkward or hurt your brand persona. This year has been a limbo of: When should I post? What should I post? Should I post at all?PIVOT: Every social media manager (and most of the world) had to open their playbook and utilize plans B-Z when plan A went haywire this past Spring.. Have ideas in your back pocket and know it's okay to blow up your long planned content calendar. This year has really shown us that nothing can stop you from creating content if you're willing to adapt and accept that your strategy may be thrown out the window.Measure the effectiveness of your strategy: Over 75% of nonprofits and small business owners struggle to measure the effectiveness of the content they're creating. That leads to one huge problem: uncertainty on whether you're on-track to meet the goals you set earlier. How can you make a huge impact without knowing whether the content you're producing is working? You can't. That's why all social media marketers should make it a priority to analyze whether the tactics are working. You can do this by using data from native platforms, such as:Facebook InsightsInstagram InsightsTwitter AnalyticsLast but certainly not least, SHARE THE GOOD around you: While this unprecedented year has been full of challenging times for many, like Mister Rogers once said, “Look for the helpers. You will always fine people who are helping.” In your organization and small business there are a ton of stories we miss when we're caught in the day to day task lists so we encourage you to take some extra time in 2021 to reflect and highlight the GOOD… whether you take the time to create the story and share on social media, send us an email and let us share the GOOD news or you take the time to recognize the helpers in our community, humanizing your brand and spotlighting the GOOD will always be in trend; but specifically in this new year.

Milwaukee To Debate Mandatory Mask Wearing At Some Public Locations

Milwaukee may be on the way to requiring people to wear masks in indoor public spaces, including bars and restaurants. But early Wednesday, the city also relaxed more COVID-19 restrictions on some of its businesses. The mask idea may have partly started with local restaurant chain owner Paul Bartolotta. A couple weeks ago, he told a business webcast about talking by phone with a food supplier in Italy this spring: "And he walked out to the garden, one of my guys, and he said, 'What do you hear?' Bartolotta: 'Like birds chirping?' Man: 'No, listen.' Bartolotta: 'I hear sirens.' Man: 'Yeah, dying or dead." Bartolotta says a series of what he calls apocalyptic stories about European deaths from COVID-19 convinced him of the threat of the coronavirus. He says subsequent talks with U.S. physicians have him focused on a way to reduce the spread of COVID-19 here. "I listened to [Medical College of Wisconsin] Dr. [John] Raymond, I listened to the other physicians, and they say, 'Masks!' "
