Learn how Old Irving became so successful, it needed to open a new production facility — and what went into the expansion. 02:18 Beer Myth: When brewing sour beers, is kettle souring lazy? Katherine has some HOT TAKES about this, and Trevor from Old Irving Brewing Co. explains the science behind what actually creates sour beers. Discover the facts behind this common misconception and learn how kettle souring is a legitimate and skillful method that produces some of the best-tasting sours. Bonus: learn how a “West Coast Pilsner” is different from a regular Pilsner and what it has to do with a thing known as a Cold IPA. 10:08 NAME OF BREWERY: Old Irving Brewing Co. Head Brewer and Co-Founder Trevor Rose-Hamblin shares the back story of his move from restauranteur to brewer, including an appearance on BrewDog that led to him brewing in Scotland for 3 months. Trevor also explains how after just 2 years of development, his Citra & Mosaic hopped Hazy IPA Beezer won a gold medal at the Great American Beer Festival in 2019 and another gold at the World Beer Cup in Las Vegas in 2024 (both in the Hazy IPA category).  After the beer break, Trevor and Brian crack open a Della, which won a silver medal at the Great American Beer Festival in 2021 in the German-Style Kölsch category. Della is a Kölsch-Style Ale brewed with high-quality Pilsner, a touch of Vienna malt, and lightly hopped with Zuper Saazer, Hallertau Mittelfrüh, & Tettnang. Trevor also talks about Old Irving's new brewing facility, what compelled them to move into a new facility, and the craft beer community in Chicago that helped spur their growth. Brian also coaxes Trevor into doing his hilarious impersonation of one of his Chicago craft beer community colleagues (but you'll have to listen to find out which one!). 58:35 Beer Behavior: How does scarcity work when it comes to beer? Does it drive sales even when it's obviously manufactured? Brian talks about how Wisconsin breweries were featured during a recent convention and Katherine presents her “barbecue festival philosophy” of scarcity. Jeff Weinberg, President of Drexel Properties, has a fascinating story that intertwines the worlds of hospitality and real estate. Born and raised in Chicago, Jeff's roots are deeply embedded in the city's rich restaurant culture. His family owned several well-known establishments, including the iconic Diner Grill on Irving Park in Lakeview, which has been serving the community since 1934. Jeff fondly recalls the vibrant energy of the diner, a place where late-night revelers would go to sober up or enjoy a post-game meal after a Cubs game.Despite the allure of the family business, Jeff felt a different calling in his mid-twenties. As his friends started buying condos, Jeff realized he didn't just want a space in the sky—he wanted to own the ground beneath it. At 26, he purchased his first property, a two-flat in West Lakeview, marking the beginning of his real estate journey. A decade later, he founded Drexel Properties, starting with a 20-unit building in Hyde Park. This transition from hospitality to real estate wasn't just about financial growth for Jeff; it was about creating lasting value.Jeff's success in real estate is rooted in his ability to see properties not just as investments, but as communities that need nurturing. His background in the restaurant industry instilled in him a strong service mindset, which he applies to his property management business. Jeff says, “I run my property management company like a restaurant. I want my tenants to love where they live and feel great every day when they come home.” This philosophy has been central to his success, as he believes every business is ultimately a service business. In the early 2000s, Jeff's ventures expanded beyond buying properties. He took on challenging projects like converting apartment buildings into condominiums and even building a single-family home from the ground up. He enjoyed the tangible progress of construction, likening it to the satisfaction of seeing wood being cut and buildings rising. Yet, his heart remained in managing multifamily apartments, where he could directly impact people's lives.Jeff's approach to real estate is deeply personal. He values relationships and believes in taking care of people, whether they are tenants, investors, or partners. He recounts a story of a building with numerous code violations that others wouldn't touch. Jeff saw an opportunity and worked closely with city officials to resolve the issues, demonstrating his problem-solving skills and dedication to improving communities. His service mindset extends beyond his professional life. Jeff is actively involved in mentoring programs like Chicago Scholars, which supports first-generation college students from inner-city high schools. He also participates in Students Run Chicago, a program that trains high school students for marathons. Jeff's commitment to giving back is rooted in his own experiences of humble beginnings and the desire to create opportunities for others.Jeff's dedication to service and community is evident in every aspect of his work. He advises businesses to adopt a service mindset, focusing on solving problems immediately rather than making excuses. He believes that taking care of people leads to better business outcomes and a more fulfilling life. “If you solve the problem first, people will help you solve the problem,” he says, highlighting the importance of empathy and proactive problem-solving.As Jeff looks to the future, his goals include pulling back from the day-to-day demands of his business to focus more on mentoring and giving back. He wants to help young people find paths to success, just as he did, and create generational wealth and independence. His story is a testament to the power of showing up, taking care of people, and staying true to one's values.

House Warming Podcast, Episode 019: Chicago Environmentalists and Cleanup Club Chicago with Katherine Tellock and Miranda Carrico, Co-Founders of Chicago Environmentalists and Cleanup Club Chicago.  In this episode, Sarah talks with Katherine and Miranda about founding their group Chicago Environmentalists and Cleanup Club Chicago.  Katherine Tellock is a citizen activist who wants to dedicate her life to fighting climate change. She strongly believes that an environmentally sustainable society is the best long-term economic and social decision, and is within reach for all people. Having grown up next to an EPA superfund site, she has always cared about the environment and been acutely aware of the impact of industrial pollution. However, she didn't get heavily involved in environmental issues until spring 2020, when she started tackling litter through Friends of the Chicago River's Summer Challenge. She eventually started Chicago Environmentalists group with Miranda, as well as Cleanup Club Chicago. She took the CCC sustainability leadership training in 2021, and for her final assignment, she is running the Guerrilla Recycling Reporting (GRR) Project. It aims to hold property owners accountable for violating the recycling ordinance and change the way the policy is enforced. She also completed the Climate Reality Leadership Corps training, and wants to get more involved in environmental legislation. She currently works as a Business and Brand Developer for Block Bins composting service, and has a bachelor's degree in Economics and Spanish from the University of Wisconsin-Madison. She currently lives in Irving Park with her very sweet cockapoo. In her free time, she enjoys true crime, volleyball, and comedy shows.Over the past ten years, Miranda Carrico has transitioned toward a "Zero Waste" lifestyle and has become very familiar with Chicago's sustainability scene; especially related to recycling and waste reduction.  Miranda is passionate about educating individuals on actions they can take to lessen their environmental impact, as well as advocating for sustainable business practices and environmental legislation.  She became more involved in Chicago's larger environmental scene after teaming up with Katherine on the first Cleanup Club event. This led to brainstorming ways to improve environmentalism in Chicago and the creation of Chicago Environmentalists. She is Co-Founder of Chicago Environmentalists, Assistant Director of Cleanup Club Chicago, and completed the Climate Reality Leadership Corps training in 2021. Miranda works in healthcare and has been a Chicagoan for over 10 years, residing in Lakeview. When she's not finding creative ways to reduce waste, she enjoys traveling, exploring the city via bike and by foot, making "mixtapes," and spending time with her husband and dog, Greta von Goof.Chicago Environmentalists provides a forum for discussing topics like zero waste living, recycling, composting, environmental justice, renewable energy, eco policy, local businesses, wildlife conservation, environmental news, events, and more. Overrated Tradition? Why Fresh Perspective Will Save the Jewish Deli Presented by Aaron Steingold Who doesn’t love Deli food? From the cornucopia of Jewish food delights that include corned beef on rye, chopped liver, chicken matzo ball soup, and lox and cream cheese on a bagel, Chicagoans have been relishing Deli food for generations. While there were hundreds of delis in the first part of the 20th century, today, not so many. (Ashkenaz, you are missed.) Yet the Deli still survives, with traditional food being served at stalwarts like Manny’s and the Bagel on Broadway, and “newish Jewish food” generously doled out at the likes of Steingold’s on West Irving Park. Please join us as proprietor Aaron Steingold takes us on a nostalgic memory nosh of Chicago’s deli history and talks about the Renaissance of the Jewish Deli in our city. (Corned beef on rye with a twist, you could say.) Samples? What, you think we’d leave you hungry? Oy! BIO: Raised in Charlottesville, Virginia to Brooklyn-bred parents, Aaron Steingold grew up in a kosher household, and visited New York’s delis often. A self-described “restaurant lifer,”Steingold came to Chicago 12 years ago and worked at Charlie Trotter’s, Art Smith’s Table 52 and several other key eateries here before opening his namesake Steingold’s with his wife, Elizabeth Abowd, in 2017. The deli is located at 1840 W. Irving Park. Recorded May 4, 2019 at Weiss Memorial Hospital https://culinaryhistorians.org/overrated-tradition-why-fresh-perspective-will-save-the-jewish-deli/

This may be the most "Chicago" podcast episode I've ever produced. My guest this week is author Dennis Foley (The Streets and San Man's Guide to Chicago Eats, We Speak Chicagoese). We meet at Byron's Hot Dogs at 1017 W. Irving Park (also located at 1701 W. Lawrence), and owner Mike Payne jumps in the backseat to join in on the conversation. Foley's a terrific writer and an expert on all things Chicago... especially on Chicago food. As for Payne? Well, he's simply a hot dog titan. Some of the things we discuss: *What sets a hot dog apart? ("It all starts with the steam table.") *The beauty of a Chicago dog ("It's like a ballet in a bun") *The excellent new book Foley co-edited,"We Speak Chicagoese" ("short stories, creative essays and poems about Chicago by some of the top literary voices to ever roam the Windy City's streets"). We cover some of the collection's most compelling entries, including Foley's contribution, "Pretty Please." *How my enjoyment of Byron's hot dogs spread to the front of my shirt. *Why Mike Payne should run for president this year. *I mis-credit Karen Abbott's must-read book "Sin in the Second City" as "Sex in the Second City." I regret the error. *How Payne met President Obama and taught the White House the way to make a proper hot dog. *What defines "Chicagoese?" Grab a seat over by dere and give this one a listen, my friend.
