Eatzi's Market & Bakery (Eatzi's) was created by award-winning concept developer Phil Romano in 1996 as a joint venture with casual dining restaurant company Brinker International, Inc. Soon after its launch, Adam Romo joined Eatzi's as the company's first CFO. "The initial acceptance was way above expectations," says Romo, adding, "The concept successfully offered something new and different, restaurant-quality cooking in a European market setting." With multiple open kitchens, the aroma of fresh baked goods, and opera playing in the background, Eatzi's entertained customers and quickly developed a loyal following. Eatzi's successful Dallas debut led to expansion in Atlanta, the District of Columbia, Houston, and New York City. However, says Romo, "Expansion was not successful, and the profit drain led to a sale to a profit equity firm that had difficulty with continued operation and eventually went into bankruptcy." In this episode, Romo explains how Eatzi's was revived when Phil Romano purchased it out of bankruptcy in 2006 and Adam rejoined the group as its CEO. "We learned from our mistakes with location, size of facility, and operational challenges," says Romo. Extensive customer research was the foundation of their new business model. "We learned that our guests look to us for quality, convenience, theatre, price, and value so every decision made must enhance those five branding principles." Today Eatzi's operates seven successful Texas locations in Dallas, Ft. Worth, Plano, and Grapevine. The units are 5,500 square feet, trimmed down from the concept's earlier 10,000-square-foot locations. Off-premises dining accounts for 90% of Eatzi's sales with on-premises business accounting for the remaining 10%. Eatzi's appears poised for future growth with its commitment to quality and personal guest service. The concept continues to provide convenient online ordering, delivery, and "grab-and-go" sales for which it is famous.

Richard Silverman was a native of Baltimore and grew up in New York. He graduated from New York University in 1985 with a bachelor's in Philosophy and film. He was gifted with a blessed childhood because of his parents — his dad was his best friend, mentor and hero. He strongly believes, ‘Nepotism is a good word if you can use relationships to carve your own path and do your own thing'. Today, Richard Silverman is a seasoned professional with over 35 years of experience in various industries. He has a remarkable career trajectory in hospitality, food and beverage, events, sports, entertainment, digital, and specialty retail. After graduation, Silverman initially entered the entertainment industry, managing artists like George Michael, Prince, and collaborating with prominent songwriters. In 1996, Silverman ventured into the food and beverage industry, collaborating with renowned restaurateur Phil Romano to expand EatZi's Gourmet Markets. His immersion in the hospitality industry continued in 2001 when he played a pivotal role in repositioning and selling the Aladdin Hotel and Casino in Las Vegas. Transitioning to the Grand Sierra Resort in Reno in 2007, Silverman executed a remarkable turnaround, elevating it from the 12th to the 2nd ranked property in Northern Nevada within six months. He introduced innovative concepts such as Briscola, the first-ever Italian restaurant under the Charlie Palmer banner, Rim Asian Bistro, Xtreme Sports Bar and Grill, The Beach, The Buffet, and The High Roller Lounge, many of which remain successful today. Silverman's influence extended beyond traditional venues, as he organized city-wide events like the Xtreme Outlaws Races, drawing massive crowds and achieving record-breaking feats. Beto was quite skeptical to leave a comfortable Director of Food & Beverage job at Brinker International to launch a new endeavor, but Julian enthusiasm and energy, took the leap of faith and made the move to launch to what now has become a staple in Dallas. Beto decided it was a great opportunity to introduce Julian Rodarte to entrepreneurs like Phil Romano. Beto Rodarte graduated from the Culinary Institute of America in 1989 and headed to California to work for Hilton International at The Ojai Valley Inn & Country Club. He knew they would pay for memberships (ROMANOS 300) before the concept ever opened. At one concept (THE KEY HOLE), he put a padlock on the door and sold thousands of keys to open the lock. He knew that business men wanted to meet (THE NETWORK BAR) and eat at places that other business men were at. He knew that the experience and lifestyle is what people wanted and he knew and still knows how to deliver on that idea.
Phil Romano is an American restaurateur, entrepreneur, and philanthropist. He is best known as the founder of the restaurant chains Fuddruckers and Romano's Macaroni Grill, and his newest endeavors are a restaurant incubator in Dallas called Trinity Groves and an awesome concept for young entrepreneurs: The Network Bar. Phil shares the five principles he believes you need to be a good person (or a good business), what separates his most successful restaurant ideas from his least successful ideas, and how he ended up being one of the first people to invest in the heart stent (which ended up saving his life decades later), why he is so MAD, and how The Network Bar facilitates mentorship for young entrepreneurs. The 5th edition of the BPM series consisting of two very long podcasts will be made available all at once later this afternoon. This has been a long and grueling summer and frankly, I need a break. I don't have it in me to create my usual post. I've included the track listing for each set below, so you have a pretty good idea what's contained in each podcast. I plan on taking most of August off, though I may pop in later in the month with the 2003 Chrome Edition or maybe just the Mariah Diva Series I had previously promised. I can't say for sure. I'm starting to have some normalcy around the house as Rick's condition has improved markedly. A couple more weeks of dialysis and he should be back at work, right around the time I have my operation. I hope everyone has enjoyed the summer mixes I've been putting out and you can expect more going into the fall, but with a more restrained release schedule. I fully anticipate having the Fall Edition out sometime around Labor Day. Atlanta has brought back Pearl Days at Six Flags (Think of it like Gay Days at Disney) which is on September 11th - 13th and should be a lot of fun, assuming I'll be up and about at that time.
