In this interview, Brian talks about operational design consulting, visualizing what doesn't exist, and lessons from 30 years in the industry. Operational Design Consulting “Let's start when we can do it with a pencil and eraser rather than a jackhammer.” Brian explains that operational design consulting is about influencing the layout and structure of a facility before construction begins. Traditional operators are often brought in after a venue is built, which leads to costly retrofits and inefficient guest or staff flow. Instead, Brian advocates for embedding operators into the planning phase early on—working alongside architects, engineers, and developers to build spaces that function seamlessly from day one. He shared examples such as walking freezers being placed on the wrong side of a kitchen, which would disrupt workflow, or facilities being designed with no thought for trash removal or vendor access. By introducing an operator's perspective before any concrete is poured, Brian and his team can help prevent these logistical headaches. This approach has led Icon Leisure Services to become a trusted sub-consultant for numerous architecture and engineering firms across the country. Visualizing What Doesn't Exist “You basically have to mentally walk through the park.” When it comes to designing new attractions or multi-use developments, Brian notes the importance—and difficulty—of visualizing something that hasn't been built yet. It's a skill developed over years of experience. He explains that he mentally walks through a future facility, applying all the lessons he's learned across operations, entertainment, and hospitality to anticipate needs for things like power access, water drainage, and guest circulation. He emphasized that this process is not done in isolation. Design teams collaborate and troubleshoot together, adjusting based on feedback and constraints. While budget limitations always factor in, Brian focuses on programming the space first—understanding how it will function—so that infrastructure needs naturally follow. Lessons from 30 Years in the Industry “It really made you appreciate where you are if you know where you've been.” Reflecting on a career that began with picking up tubes and trash at Schlitterbahn, Brian credits early mentors for instilling a strong work ethic and ownership mentality. He explained how those early experiences shaped his current approach to designing operationally efficient facilities, down to minimizing the dreaded “trash trails” from leaking liners. From overseeing massive entertainment venues to running 20-hour-a-day operations in Las Vegas, Brian described how every role added to his understanding of how people move through spaces and how teams function behind the scenes. Today, he takes pride not just in building guest-friendly environments, but also in creating workplaces where staff feel empowered and supported—a key factor, he says, in long-term success. Tamara recently took a press trip to San Antonio, Texas, hosted by Visit San Antonio, to see what there was to do in San Antonio for families. She found that San Antonio has a lot of history and culture, great food, fun theme parks, and plenty of free or affordable attractions. San Antonio could make a great winter or spring break family vacation (when the weather is cooler). The city is also ideal for a girls' trip or couples getaway weekend. Top sites include: San Antonio is the theme park capital of Texas with four theme parks within a short drive. They have the largest SeaWorld of all the parks. There is also a Six Flags, Schlitterbahn water park, and Morgan's Wonderland. Morgan's Wonderland is an ultra-accessible amusement park but built so that everyone can play. Each ride and attraction has been designed from the ground up to be accessible and conscious of those with special needs. The San Antonio CityPASS can save you money if you want to visit quite a few museums and attractions (including the San Antonio Zoo). The Riverwalk extends for 15 miles and outside of the core downtown horseshoe section, it is a quiet and lush urban park. You can even kayak on the river. The Pearl is a dining and entertainment district with residences and the Hotel Emma. The food in San Antonio is great and it is a UNESCO City of Gastronomy. Some highlights: Eddie's Taco Shop, Best American Daughter, Burgerteca, Stix and Stone, The Jerk Shack, and La Panaderia In addition to the Alamo, there are four other Missions that are run by the National Park Service, which offer even more to see. The Witte Museum is great for kids with plenty of interactive exhibits and play areas. The Japanese Tea Garden in Brackenridge Park is beautiful and peaceful Hemisfair Park downtown also is great for family with young kids with splash pads and climbing structures. Tamara stayed at the Intercontinental San Antonio Riverwalk on the quieter section of the Riverwalk. There are also great resort hotels in Hill Country just outside of San Antonio. Sam and Dan are back for Episode 12, and the winning streak continues! This week, we went to Ayesha Curry and Michael Mina's International Smoke. We wanted to see what all the fuss was about. Spoiler alert: the food was decidedly food; burger was decent but overpriced, and it's a bit of a schlep to get to from our part of town. Dan starts his topic by talking about a tiny subatomic particle called quarks, but there's not a lot of trivia there unless you have a huge amount of physics knowledge, so the discussion pivots to a different topic from a different trivia night. We dive into that and more as we explore millennial dating culture. Sam's topic is a best-selling novel called "Where the Crawdad's Sing." The topic itself was not all that interesting but we found it amusing that we had it right as a joke but decided to go with a more serious-sounding fill-in-the-blank answer. The book spent 30+ weeks at the top of the New York Times bestseller list, thanks to Reese Witherspoon (which was surprisingly difficult to pronunce today). RIP Whataburger and Schlitterbahn.

So, here's an example, and this is a story that I use time in, time out because it works so well because it's a great success story. And it starts with a guy who owns a company in my city. It's a tubing company. So, my city is really busy in the summer with tourism and things like that. The number one waterpark in the world is situated here. It's called Schlitterbahn, and there's two rivers that run directly through the city. One of them's in the Guinness Book of World Records as the shortest navigable river in the world. So, people come, they'll go to a river outfitter, rent a tube, and float down the river for a few hours, enjoying you know maybe drinks or beer with friends and family, just having a good time on the water. It gets hot in Texas in the summer. 100 degrees for days on end, so it's very popular. Literally hundreds of thousands of people will come to these rivers during the summer. So, this guy builds a business, a tubing business, and he's nowhere near the water. All the river outfitters are sitting on the water or they're a block from the water because that's where people are coming. They're coming to the river, then they're gonna find an outfitter someplace to rent their tube and plop in the river, float down. When you get to the end, they haul you back up in the shuttle bus back to where you parked.

Waterparks are awesome (1 out of 3 podcast hosts confirm this fact), but nobody's saying that they aren't without their downsides. I mean, if you manage to avoid E. coli, pavement burns, and the occasional bathing suit malfunction, there's still the off chance you might, oh I don't know, get blown off of a slide and decapitated...
