Antes de empezar con el tema de hoy os tenemos que recordar que nos veréis este 8 y 9 de Junio en el VegFest 2024 en Barcelona ¡No os lo perdáis! Youth Climate Save (YCS) es el primer movimiento internacional juvenil ecologista, que habla sobre el vínculo entre la agricultura animal y los límites planetarios. Fue fundado por Génesis Butler (además de ser la niña más joven en hacer una charla Ted, fue la que incitó al papa a hacerse vegano durante la cuaresma en la fundación de la Million Dollar Vegan, la actual “GenV”) durante el confinamiento de la pandemia, que todo el activismo funcionaba por redes sociales, y se hicieron grupos por todo el mundo. YCS España ahora mismo cuenta con grupos activos en Madrid, Barcelona y Valencia. Introducción ¿Qué son los límites planetarios? Vivimos en un planeta de recursos finitos, sujetos a límites, si se rebasan estos límites la estabilidad del planeta peligra. Uno de los límites planetarios de los que más se habla en el ecologismo es la crisis climática, no obstante, existen más límites planetarios, y los que están aún peor, que son la pérdida de la biodiversidad y el ciclo del nitrógeno, están DIRECTAMENTE relacionados con la ganadería. Podría decirse que la explotación animal es con diferencia la primera causa de la destrucción del medio ambiente. Fuego ¿Cuál es la historia de la explotación animal y origen del lobby ganadero? La historia de la domesticación de los animales se remonta a hace más de 10000 años. Desde entonces hemos ido adaptando todo el entorno terrestre a nosotros los humanos. Hay una expresión que dice “3 santas y 1 honrado tienen al pueblo agobiado” Las 3 santas se refieren a la Santa inquisición, la santa cruzada y la santa hermandad, el honrado era el Honrado Concejo de la Mesta, esto es el origen del lobby ganadero, comerciaban con la lana y la carne, ya entraban directamente en conflicto con los agricultores y los defensores de la tierra de la época, quemando cultivos y bosques para la siembra del pastizal. La historia de la colonización está estrechamente relacionada con la explotación animal desde el inicio de los tiempos. Las películas de indios y vaqueros lo reflejan muy bien, los caballos eran usados como arma de guerra, y fueron los colonos quienes llevaron la explotación animal a América. Un vaquero era como se llamaba a los ganaderos de la época. Las poblaciones nativas ya vivían adaptados al medio como una especie más en armonía con el ecosistema. No solo eran sociedades cazadoras-recolectoras, sino además ponían en práctica la milpa. La milpa es un tipo de cultivo agricola ancestral nativoamericano basado en el cultivo de frijol, maíz y calabaza. Los colonos consideraban estos cultivos como inferiores y fueron reemplazando forzosamente por la agricultura basada en la explotación animal como la conocemos hoy en día ¿La colonización sigue relacionada con la explotación animal hoy en día? Sí. A día de hoy el agronegocio sigue arrebatando tierras a las poblaciones nativas de américa del sur, como en Brasil y Bolivia, y se está produciendo un genocidio indígena. Los paramilitares del agronegocio directamente incendian los bosques y sus aldeas y los matan a tiros, para seguir ampliando los cultivos de pastoreo, soja y maíz, rociados con pesticidas, herbicidas y fertilizantes químicos, que envenenan los ríos de donde beben el agua. Existe un movimiento llamado veganismo popular muy extendido en el sur global que incluye otros sectores sociales y dentro se habla mucho de veganismo como elemento descolonizador. Es importante hablar de la historia del lobby ganadero para entender la existencia de los mitos que defienden la ganadería extensiva y el consumo de animales. ¿Cuales son esos mitos? Mito 1 El ser humano está en la cúspide de la pirámide alimentaria? Según la filósofa ecofeminista Marta Tafalla. La pirámide trófica se compone de mucha vegetación en la base (más individuos), animales herbívoros, omnívoros y en la cima los animales carnívoros (menos individuos) Somos 8000 millones de personas, por tanto nuestra alimentación debería basarse principalmente en vegetales, como el resto de los primates. Al ser tantos, hemos acabado con todo animal mamífero silvestre, quedando apenas el 4% del total de mamíferos en el planeta. El 36% somos humanos y todo el resto (64%) son animales de granja. MITO 2: La ganadería extensiva es útil en la prevención de los incendios forestales Completamente falso, además de que la mayoría de los incendios se propagan por las copas, sobre todo de los pinos que son una especie pirófita, el pasto seco del suelo es de hecho puro combustible. Por otro lado, la mayoría de los incendios son provocados por la ganadería, la quema de montes ha sido una práctica muy común entre los pastores de toda la vida. Tierra ¿Cómo afecta el sistema alimentario actual al uso de la tierra? El 83% de la tierra cultivable se usa para producir alimentos de origen animal, pese a que solo produce un ⅖ de las proteínas y ⅕ de las calorías consumidas. La explotación animal es por tanto la primera causa de hambre en el mundo, ya que al mismo tiempo que millones de personas mueren de hambre cada año, se engordan a aproximadamente 7000 millones de animales terrestres e incontables marinos para la alimentación de especialmente las personas del norte global. También es la principal causa de extinción de especies, deforestación, enfermedades transmisibles y no transmisibles, y la resistencia a los antibióticos. Por esto, el sistema de producción ganadera es totalmente ineficiente. ¿Que pasaría entonces si todos nos hicieramos veganos? Una dieta vegana global reduciría la cantidad de terreno necesario para producir alimentos, en 3'1 millones de hectáreas menos, esto equivale a la superficie de todo el continente Africano. De hacer este cambio global del sistema alimentario actual,podríamos alimentar a toda la población mundial y devolver el 75% de toda esa tierra a la naturaleza, y la fauna y flora salvajes. ¿Y que hay de la deforestación causada por la soja? 6% de la soja es para consumo humano 75% se usa para producir piensos para el ganado 19% restante para otros usos, especialmente combustible. La deforestación de la selva causada por la soja es precisamente por la producción de carne y lácteos, pero la mayor parte de la deforestación del Amazonas, se debe fundamentalmente a la ganadería de pastoreo. Aire ¿La ganadería contamina el aire? Rotundamente sí, de hecho, el famoso informe de la FAO llamado “la larga sombra del ganado” ya advierte que la ganadería emite mas CO2 más que todo el sector del transporte combinado. ¿Que otras emisiones de gases de efecto invernadero produce la ganadería? La ganadería produce otros gases de efecto invernadero mucho más potentes para el calentamiento global que el CO2, por un lado, el metano, es 25 veces mas potente, y por otro el óxido nitroso, que es 296 veces más potente que el CO2. ¿Porqué entonces se presta demasiada atención a los combustibles fósiles y no se atiende tanto a la ganadería? Porque los lobbies de presión de la agroindustria sobornan a los gobernantes y legisladores para aminorar o eliminar la legislación que regula la contaminación de este sector. La realidad es que, si eliminamos estas emisiones de metano puede ralentizar el calentamiento global entre 15 y 25 años, convirtiéndose en el medio más eficaz para frenar el calentamiento global en estos últimos años críticos. (Shindell et al 2012 - Science) ¿Solo contamina la carne roja o todo tipo de carne? Todo tipo de carne, por ejemplo, la carne de pollo genera 40 más impacto climático por caloría de proteína que los garbanzos y consume 50 veces más cantidad de agua. ¿Que hay de la carne ecológica? Hablar de ganadería ecológica es un oxímoron, es otro greenwashing de la industria, denominan este tipo de carne a los animales que han sido alimentados de “piensos ecológicos”. De hecho, según Oxford la producción de carne “ecológica” y la de “carne convencional” emiten casi la misma cantidad de gases de efecto invernadero, además de requerir de más superficie de terreno, en comparación con la producción de alimentos de origen vegetal. Agua ¿Que hay del consumo del agua? El agua potable es un recurso muy limitado La mayor parte del consumo de agua se debe a la producción de alimentos, no al consumo doméstico. La ganadería es el sector que más agua utiliza en el mundo. ⅓ de todo el agua. Y no es porque estos animales beban mucha agua, sino porque se necesita mucha agua para cultivar su alimento. Debido a la sequía extrema provocada por la sociedades occidentales, en África las personas se están viendo obligadas a desplazarse hacia el norte, para sobrevivir. ¿Que problemas causa la ganadería en relación con la contaminación del agua? Los millones de millas cuadradas dedicadas al cultivo de alimentos para los animales que comemos, están fuertemente rociadas con fertilizantes nitrogenados. El nitrógeno se escapa de los campos y se abre paso por los ríos hasta llegar a nuestros océanos. El agua rica en nitrógeno estimula el crecimiento masivo de Algas dando lugar a floraciones de algas tan grandes que pueden verse desde el espacio. Las algas absorben el oxígeno del agua, causando así la muerte de la vida acuática alrededor de ellas. A medida que aumenta la demanda por la carne crece el número de zonas muertas con bajos niveles de oxígeno. “La ganadería es la causa principal de zonas muertas en los océanos” Environmental Protection Agency USA ¿Que sucede con la ganadería industrial y la contaminación por nitratos en España? En España, las macrogranjas de cerdos y pollos son un enorme problema para la contaminación del agua debido a los purines de estos animales. El agua se filtra en el subsuelo y llega al agua subterránea contaminandola. ¿Desde YCS habeis hecho alguna acción relacionada con el agua? Sí, hicimos un trabajo de campo en colaboración con Amigues de la Terra, y gracias a greenpeace que nos cedió un medidor, hicimos diferentes mediciones en zonas cercanas a estas explotaciones intensivas, encontrando resultados realmente preocupantes… ¿Que otras acciones haceis? Divulgación sobre todo lo que he mencionado antes, pintada de murales, plantación de árboles, recogida de basuraleza y picnics veganos en eventos relacionados con el medioambiente en los pueblos. Y hablando de candidatos a las europeas tenemos el caso de Clara Aguilera que ha renunciado a las listas del PSOE para las elecciones europeas. Esto debido a que salen unas grabaciones de camara oculta suyas en el documental de Food for Profit que se estrenará próximamente. Ahora si nos ponemos a hablar sobre comer productos animales por error, ¿Por qué nos pasa esto? ¿Cómo nos deberíamos sentir? She spent the next few years as a Campaign Coordinator and Corporate Liaison for PETA, while also teaching vegan cooking classes. In 2014 Chef Kristina used the prize money from a cooking competition on the food network to launch the V-Grits food truck (an acronym for vegan girl raised in the south) with a focus on southern style vegan comfort food. V-Grits (https://www.vgrits.com) has taken many forms over the last decade, including a meal service, a product line, a full service restaurant and brewery, and now resides inside Louisville's Logan Street Market serving fast casual vegan comfort food. In addition to being a business owner and animal rights activist, Chef Kristina is a mom to her four year old son Andrew, a health food and fitness enthusiast, and a vintage toy collector.
