That puts Solid Rock in a pretty small group of K-12 schools in the U.S. that are completely plant-based. The idea for a plant-based cafeteria came from Solid Rock's founder and executive director, Michele Fasnacht, who started the school in 2004. The K-12 private school also offers programs like gardening, culinary arts and veterinary education alongside academics.The Zest team met up with Michele in the school office. This story isn't just about the diet itself, but the broader lesson on how each person must uniquely navigate their health challenges by understanding and catering to their body's specific needs.In this discussion, we explore how Harper, despite facing an uphill battle with her PCOS symptoms, found substantial relief through a plant-based diet. This was surprising because I don't typically advocate for a plant-based diet for PCOS due to the challenges in balancing macronutrients, particularly protein. However, Harper's experience underscores the importance of personalizing one's approach to health and nutrition.Harper had transitioned to a plant-based diet due to other health issues, primarily inflammatory disorders, and found significant improvements in her GI tract and skin health. However, she noticed her PCOS symptoms, like menstrual irregularity and abdominal weight gain, began to worsen. This paradoxical situation led her to explore more about PCOS and eventually to our work together.Through our collaboration, Harper discovered the critical balance of foods that worked for her body. Harper's story is a powerful reminder of the uniqueness of each individual's journey with PCOS. It highlights that while certain diets or lifestyles are widely recommended, the key to managing PCOS effectively lies in understanding and responding to our own body's cues. Through her career, Margot has helped thousands of people restore their health. Margot's teaching is rooted in personal leadership and behavioral change, with plant-based nutrition as the guiding force. Margot is certified in Plant-Based nutrition and is a certified Personal Trainer specializing in functional fitness and remedial exercise in medical treatment. She is also a high school teacher and has taught mostly drama and English literature. Margot recently published her first children's cookbook, “Plant-Powered Punks,” inspired by her own children who thrived growing up on plants. Margot's vision is to show children that healthier food choices can be delicious and really can impact kids' energy levels and how they feel. Her hope is that Plant-Powered Punks and the Plant-Powered Punks Membership Site will serve as inspiration for children, parents, and teachers to have fun creating delicious, healthy whole plant foods.
