My friend Nathalie Dupree died this week. I was shocked though I knew she had not been well, because she hadn't texted me back. She always texted me back. We had things to discuss. She always led with, “I can only say this to you.” I could hear her clucking between the lines. Rereading all our texts, I decided to save them. They are copied and pasted into my friendship diary. I'll need them in the future when I'm missing her. I wanted to hear Nathalie's voice so I asked Cindie if she would repost the episode that we recorded two years ago for our Women Beyond A Certain Age podcast. Always charming, always funny, always Miss Nathalie. I picture Nathalie sitting in a beautiful, high backed velvet chair, her eyes are sparkling, she is holding court. NANCIE'S LINKS: Website Facebook YouTube Substack Instagram Threads Twitter LinkedIn Virginia Brock's Georgia-Style Brunswick Stew Ingredients 3½ lbs boneless pork, Boston butt, shoulder, or country-style ribs 2-3 Tbsp vegetable oil 2 lbs ground beef 1 lb ground turkey 1 can (28-oz) whole peeled plum tomatoes, with juice 1 can (28-oz) chopped tomatoes, with juice 1 bottle (20-oz) hickory-smoked barbecue sauce 1 can (14.5 oz) cream-style corn 1 can (14.5 oz) whole-kernel corn, or 1½ cups frozen corn 1 Tbsp Worcestershire sauce 1 Tbsp hot sauce, like Tabasco or Texas Pete 1 Tbsp black pepper 2 tsp salt 2 cans (15-oz) sweet peas like LeSeur, drained Directions Cut pork in chunks, place in large stockpot or Dutch oven, and add watrr to cover. Over high heat, bring to a boil and cook, skimming off foam as it rises, for 20 minutes. Lower heat to maintain a gentle simmer, and cook until pork is tender enough to pull apart with two forks, 2-3 hours. Transfer pork to a large bowl or platter, reserving stock for stew. Allow to cool to room temperature; then pull apart and roughly chop into small pieces. Meanwhile, heat a large skillet over medium-high heat and add vegetable oil, swirling to coat pan. Crumble in ground beef and ground turkey and cook, turning and pressing to help cook evenly. When meat is cooked through, remove from heat and set aside. Combine cooked pork, beef, and turkey in a stockpot or large Dutch oven. Add 2 cups pork stock, reserving remaining stock to use if needed. Add tomatoes with juice, barbecue sauce, cream-style and whole-kernel corn, Worcestershire sauce, hot sauce, pepper, and salt. Bring to a lively boil over medium-high heat, stirring often. Lower heat to maintain a gentle but visible simmer, and cook, stirring occasionally, for 1 hour and 15 minutes. Stir and scrape bottom often to avoid stew sticking or burning. Add more pork stock, if stew becomes dry or starts to stick. (Use chicken broth or water if stock is gone). When stew is ready, gently stir in the drained peas. He was so drawn to them that he apprenticed with a baker he met while there. Denise talks with Kitty Morse about her most recent cookbook, Bitter Sweet: A Wartime journal and Heirloom Recipes from Occupied France. Award-winning author Kitty Morse was born in Casablanca, Morocco, of a French mother and British father. She emigrated to the United States at the age of seventeen. While studying for her Master's Degree at the University of Wisconsin-Milwaukee, Kitty catered Moroccan diffas, or banquets, and went on to teach the intricacies of Moroccan cuisine in cooking schools and department stores nationwide. In June 2002, she conducted a Culinary Concert on Moroccan culture and cuisine hosted by Julia Child, as a benefit for the Harry Bell Foundation of the International Association of Culinary Professionals. Kitty's books have been translated into French, German, Polish, and Czech. In 1984 (and for the next 25 years) she initiated annual gastronomic tours to Morocco that included culinary demonstrations in her family home, a Moorish riad south of Casablanca. Her monthly e-newsletter, The Kasbah Chronicles, in French and in English, is now in its twelfth year of circulation. Kitty has authored one memoir and 10 cookbooks. Linda Skeens, author of Recipes and Tips from America's Favorite County Fair Champion, is with us this week to talk about the joy she finds in cooking, crafts, canning, and family. Last summer at the Virginia Kentucky State Fair, one woman won first, second and third place for best cookies. She also swept all three awards for candy and for savory bread. Liz Williams, author of Nana's Creole Italian Table, a cookbook about the Sicilian community in New Orleans, is with us to chat about growing up in New Orleans. Always fascinated by the way the lure of nutmeg and peppercorns motivated the exploration of the world, Liz Williams was lucky to be born into a family of Sicilian heritage in New Orleans. She grew up eating in two great food traditions. She is a founder of the Southern Food & Beverage Museum and of the National Food & Beverage Foundation. Much of her research and writing centers on the legal and policy issues related to food and foodways. Her book, coauthored with Stephanie Jane Carter, The Encyclopedia of Law and Food, was published by Greenwood Publishing in 2011. In 2013 AltaMira published New Orleans: A Food Biography. Her book Lift Your Spirits: A Celebratory History of Cocktail Culture in New Orleans about the drinking culture of New Orleans was published by LSU Press in the spring of 2016. Liz hosts the Tip of the Tongue, a podcast for eaters and drinkers who are curious about individuals and issues at the intersection of food, drink, and culture and are hungry for more. Liz shares a recipe from her new book with us. Super simple and supremely delicious! Olive Oil and Lemon Spread Makes about a cup If you find mayonnaise rich but bland, try this instead. The pectin in the lemon (or other citrus) skin will emulsify the oil, so you don't need egg. In Nana's day, lemons were abundant, and this was what she typically used instead of mayonnaise. I like it on freshly sliced tomatoes and sandwiches. 1 lemon (or 5 or 6 kumquats) 1 cup olive oil Salt and pepper to taste Wash the lemon and quarter it. Don't worry about the seeds, they'll emulsify. Place the lemon quarters into a blender. Add half of the oil, as well as the salt and pepper. Slowly start the blender and gradually raise the speed until the oil and lemon are emulsified. Drizzle the rest of the oil into the blender while it is running. Place the spread into a jar, cover with a lid, and refrigerate up to 3 weeks. This week Denise chats with her old friend, Rev. Pamela Nelson-Munson. They talk about how neither one was “good in school,” and how they eventually found their places, how a pastor is like a mistress, and taking a break to go to culinary school. She says, “Thinking if I worked hard, was polite, smiled, and wore deodorant that everyone would play nice in the sandbox.” Rev. Pam shares with us some wisdom and some things she'd like to be able to do over: Do-overs: Not be so quick to please as a defense mechanism. Withhold immediate responses, and trust that tomorrow brings its own wisdom. Have talked more over with my dad for his long view. Asked my mother more about herself (apart from being a mother and a wife). Listened more than talked with my daughters. Not followed my grandfather's and father's maxim: the job comes 1st. ----more---- Wisdom/Lessons (If I had it to do all over again): God is love. Period. That love is broader and more encompassing and deeper and more than our feeble minds can comprehend…so don't judge...you're not God. Sometimes all you must do is show up, and amazing things happen. Old/er folks have amazing stories you can learn from. It takes so little to have people feel heard. A lot of women our mother's age (and our age) have been sexually abused and have held shame for decades. Children are as important as adults when giving time/attention/importance. People are more involved, creative, happy, and take ownership when given encouragement and free rein to follow their bliss. Chef Tanya Holland is with us this week to talk about her journey to becoming Executive Chef and Owner of the internationally renowned and beloved Brown Sugar Kitchen restaurant, in Oakland, California. She is acclaimed for her inventive take on modern soul food, as well as comfort classics. Her newest book, Tanya Holland's California Soul, features recipes influenced by the historical migration of African American families, including Tanya's own, using key ingredients, techniques, and traditions that African Americans brought with them as they left the South for California, creating a beloved version of soul food. In addition to 80 delicious and comforting recipes, there are stories about fifteen contemporary Black Californian food artisans whose work helps define California soul food today. Gal-pal of the podcast, Pat Greenberg, is with us to decipher the confusing information around healthy eating. She brings it back to the basics for an effortless approach to having a healthy kitchen. This episode is for anyone who wants to lose some weight, get more fit, or just to be healthier and feel better. Below are suggestions for healthier eating using common food items most of have on hand or can easily get. Making small changes are easier, and they add up to success! No matter what meal you are eating and what's on your plate, always start with a big glass of water. Start out by only eating treats outside of the house. Celebrations at restaurants, parties and milestone events are fine but keeping your kitchen clean of treats will keep you on track. Every meal should include a serving of fruits and vegetables. Pizza with veggies is a perfect example. Any protein will do, beef, chicken, fish, beans, and (my go-to) eggs. Dairy products are fine, just don't consume any that are artificially prepared or colored. Breads should be sourdough or whole grain. Instead of a candy bar, substitute a bowl of nuts and chocolate chips. Instead of straight up soda, add seltzer to it. Always be mindful of portions sizes. Stick with foods you enjoy, life should always be happy! Lastly, if you are having trouble, it's often emotional so do get yourself some help. Linda Civitello is back with us this week to talk about her award-winning book, Baking Powder Wars: The Cutthroat Food Fight That Revolutionized Cooking. American women in the 1800s were tied to their kitchens, having to make beer to make yeast so they could bake enough bread for their family to survive. (Bread was more than just a staple, people used to eat a pound a day!) It's from these women looking for shortcuts that baking powder's development began. It's a surprising story involving presidents and robber barons, bribery, lying, cheating and more! A fascinating story about how a product that changed our food landscape forever! Linda Civitello is also the author of the award-winning book, Cuisine and Culture: A History of Food and People. She developed the curriculum and taught history of food at culinary schools in southern California and speaks frequently on a wide range of food history topics. Her book is used to teach food history in culinary schools. Linda has spoken at Harvard University, appeared on television on Bizarre Foods, and on the BBC. She cooks professionally, making historic recipes using heirloom flour and Italian pastries, and gelati for a select clientele. She is currently writing an article on food and racism, and a book on Food and Film from Prohibition to James Bond.Linda has a B.A. from Vassar and a Ph.D. from UCLA.
