Colin Spoelman is the co-founder and distiller at Kings County Distillery in Brooklyn, New York. He's also a board member of the ACSA and an author, whose latest book is “The Bourbon Drinker's Companion.” In this episode, Spoelman discusses the new law allowing New York distilleries to ship directly to consumers and what it means for the future of craft spirits. He also shares his thoughts on Empire Rye, upcoming releases, his path to distilling, and his latest book.
"In this business, you are out to make either perfect whiskey or a quick buck, and those end goals generally lead to wildly different places" Colin Spoelman is a former rooftop moonshiner from Kentucky who founded Kings County Distillery with David Haskell in 2010. He is co-author of 'The Guide to Urban Moonshining,' 'Dead Distillers' and the most recent 'The Bourbon Drinkers' Companion.' Colin argues American whiskey has deviated from its traditional production as more brands have entered the space. And as a result, marketing has become deceptive and the market has homogenised. A PRETTY COMPLICATED ORGANISM—Like many of you, I was stunned by what happened on November 5th. It's gonna take me some time to reckon with what this all says about the values of a large portion of this country. As part of that reckoning—and for some much-needed relief—I've opted to spend less time with media in general for a bit. But on “the morning after,” I couldn't ignore an email I got from today's guest, New York magazine editor-in-chief David Haskell. [You can find it on our website].What struck me most about his note—which was sent to the magazine's million-and-a-half subscribers—was what it didn't say.There were no recriminations. Nothing about how Kamala Harris had failed to “read the room.” Not a word about Joe Biden's unwillingness to step aside when he should have. No calls to “resist.” In fact, the hometown president-elect's name went unspoken (as it is here).What Haskell did say that left a mark on me was this:“I consider our jobs as magazine journalists a privilege at times like this.” I was an editor at Clay Felker's New York magazine, the editor-in-chief of Boston magazine, and I led the creative team at Inc. magazine. And it was there, at Inc. that I had a similar experience. It was 9/11.I wrote my monthly column in the haze that immediately followed the attacks, though it wouldn't appear in print until the December issue. It was titled, “Think Small. No Smaller.” In it, I urged our community of company builders to focus their attention on the things we can control. This is how it ended:What we can say for certain is that the arena over which any of us has control has, for now, grown smaller. Barrels are one of those inventions that change the course of human history. Think I'm overstating it? Devised by the Celts and proliferated by the Romans, barrels have carried everything from water to fish to oil and whiskey in the last two millennia. They're (ideally) leak-free, can store things for long periods of time, and are easily moved by one person despite weighing hundreds of pounds. Today, we think of barrels almost exclusively in the realm of whiskey and spirits, but a far richer history is behind them. John Cox, founder and cooper at Quercus Cooperage in New York, learned cooperage the old-fashioned way, taking apart barrels from multiple other cooperages and putting them back together, studying the few texts available, and experimenting with 19th century tools he got from a museum in Canada. This is truly a from-the-bootstraps story, and a fun one at that. John will also be leading a cooperage demonstration at Kings County Distillery on November 10th. About Will Schragis - Chief Sales Officer & Chief Product Innovation Officer A graduate of Wesleyan University and the Culinary Institute of America, Will started his career in drinks as a bartender and intern distiller at Kings County Distillery in Brooklyn, New York. After a stint in Napa Valley, he returned to New York to work as a sommelier in Eli Zabar's family of restaurants and wine shops. Michael speaks with CoFounder / Distiller Colin Spoolman of Kings County Distillery about a unique opportunity to produce hand sanitizer to combat the COVID-19 Pandemic and coping with the shutdowns in NY.Kings County Distillery is New York City’s oldest, largest, and premier whiskey distillery, the first since prohibition. Founded in 2010, Kings County makes handmade moonshine, bourbon, and other whiskeys out of the 120-year-old Paymaster Building in the Brooklyn Navy Yard. We use New York grain and traditional distilling equipment to make distinctive spirits. Kings County’s whiskeys have won numerous awards from the American Distilling Institute, the American Craft Spirits Association, and the prestigious San Francisco World Spirits Competition, and have been praised by the New York Times, Wine & Spirits Magazine, GQ, The New Yorker and other sources. Kings County’s whiskeys are mashed, fermented, distilled, and aged onsite in Brooklyn and never sourced from other producers.First located in a 325 square-foot room in East Williamsburg, Kings County began as the smallest commercial distillery in the country, with five 24-liter stainless steel stills making whiskey seven days a week, 16 hours a day. In 2012, the distillery moved into the Paymaster Building in the historic Brooklyn Navy Yard, just steps from legendary site of the Brooklyn Whiskey Wars of the 1860s and the former distillery district of the waterfront. Danielle von Scheiner is putting the "BIG" back into New York City's apple love, with her new cidery Big Apple Hard Cider. She began learning the science of fermentation at the age of 12 while helping her dad make wine. More recently she began experimenting with apples and then after a motorcycle accident (she was hit by a NY cab) she thought of the old saying "We all have two lives and the second one starts the moment you realize you only have one".
