He'll recount the early days of the farm-to-table movement, the founding of Green City Market, and the rise of restaurants dedicated to local ingredients. Lula Café, his restaurant of 25 years, has grown in parallel step to this movement, and through stories from its early days, he'll highlight the challenges and resistance that once stood in its way. But this conversation isn't just about the past—it's about the economic and ethical decisions chefs face when choosing where and how to source their ingredients. As Hammel enters his third decade in the industry, he'll reflect on the movement's impact: What has changed in the restaurant world and beyond? What progress has been made for local, organic producers? And what does the future hold for Lula, for chefs across the Midwest, and for the next evolution of farm-to-table dining? BIOGRAPHY: Jason Hammel is the executive chef and owner of Lula Cafe in Chicago, the Logan Square eatery known for its seasonal cuisine. His debut cookbook, The Lula Cafe Cookbook: Collected Recipes and Stories, was published by Phaidon in 2024. Growing up in New Haven, Connecticut, Hammel aspired to be a writer, not a chef. After graduating in 1994 with a degree in English, he traveled to Italy, where an accidental stay across the street from Florence's central market foresaw his career as a chef dedicated to seasonality. In 2017 the Museum of Contemporary Art named Chef Hammel as executive chef/culinary curator for the museum's new restaurant, Marisol, Hammel himself was named the Jean Banchet 2019 Chef of the Year, and in 2024 Lula Cafe was awarded for Outstanding Hospitality by the James Beard Foundation. Jason Hammel enjoyed being back at Cubs Convention earlier this year. The former Chicago Cubs pitcher shared what he's been up to and recapped his time at the annual fanfest on the latest addition of the Cubs Weekly Podcast, chatting with host Andy Martínez.The pair discussed Hammel's 13-year big-league career, one that began in Tampa Bay with manager Joe Maddon. Hammel discussed his decision to sign with the Cubs ahead of the 2014 season, after they had lost 96 games the year prior. He discussed his relationship with the front office, the transparency they had and what it was like to be traded at the deadline that year, on the same day he pitched six innings of two-run ball for the Cubs.Later in the podcast, Hammel shares why he re-signed with the Cubs that following winter. He shares stories about the 2015 team and the World Series winning 2016 team, too. Hammel described the atmosphere of pitching in the playoffs at Wrigley Field, what it was like to finally win the World Series and what he does now with his World Series ring.

Today on our episode #397 of All in the Industry®, Shari Bayer's guest is Lee Anne Wong, Executive Chef and Owner of Koko Head Cafe in Honolulu, Hawaii. A native of Troy, NY, Lee Anne graduated from the International Culinary Center (ICC), formerly known as the French Culinary Institute, in NYC, and began her culinary training at Marcus Samuelsson's Aquavit before playing an integral role in the opening of Jean-Georges Vongerichten's Restaurant 66. She went on to work as the Executive Chef of Event Operations at ICC, during which time she was featured on Season One of Bravo's Flagship Series Top Chef, and subsequently was hired as the series' Supervising Culinary Producer for the next 6 seasons, helping to build the show into the powerhouse that it is today. Lee Anne has also appeared as a competitor on The Next Iron Chef, Chopped, and Tournament of Champions, as well as participated on Season 17 of Top Chef All Stars. In late 2013, Lee Anne moved from NYC to Honolulu where in 2014, she debuted Koko Head Cafe—an island style brunch house in the Kaimuki neighborhood—to popular acclaim, and was recognized on the cover of Honolulu Magazine, as well as in Bon Appétit and Food & Wine, among other publications. In August 2014, she released her first cookbook, Dumplings All Day Wong, and in 2016, she joined Hawaiian Airlines as a guest chef, and in 2018, she was named Executive Chef for the airline. In March of 2019, she moved to Maui with family, and her latest project was Papa'aina, where she was reimagining the restaurant at the Pioneer Inn, Maui's oldest hotel located in historic Old Lahaina at the Harbor. In August of 2023, Lee Anne and residents of Maui were suddenly faced with wildfires, which devastated large sections of their homeland, losing the restaurant and hotel. First of all, the air conditioner commercial:And now, the Starling Marte home run chain as he and the Mets both embark on what hopefully will be a happier second half of the season…* Starling Marte hit his first home run off Dallas Keuchel, 7/26/12* Dallas Keuchel gave up his first home run to Asdrúbal Cabrera, 6/23/12* Asdrúbal Cabrera hit his first home run off Jason Hammel, 8/18/07Hammel connects us Brandon Nimmo's home run chain, as that's who gave up the Mets leadoff man's first home run, in 2016. Hammel was with the Devil Rays, in their final season as such, and Cabrera was a Cleveland rookie.Cabrera moved on to Washington in 2014, then the Rays in 2015, before joining the Mets ahead of the 2016 season. Hammel, meanwhile, pitched one season for the (non-Devil) Rays before a couple of decent years in Colorado, Baltimore for 2012-13, and then the Cubs as a free agent in 2014. Traded to Oakland later that year in the Jeff Samardzija deal, Hammel returned to Chicago the following winter when he returned to free agency… and that brought him, as the owner of a World Series ring, to Flushing with the Cubs on July 1, 2016.Jacob deGrom retired six of the first seven Cubs hitters that Friday night, and after Hammel set down the side in order in the bottom of the first, the Mets gave their ace a lead on back-to-back homers by James Loney and Cabrera. Loney's two-run double the following inning made it a 4-0 game before Kris Bryant got the Cubs' first hit, a homer off deGrom in the fourth.Nimmo busted that game open with his first dinger, a three-run shot, in the bottom of the fourth, but the Cubs stuck with Hammel to give up two more bombs — a leadoff dinger to Yoenis Céspedes in the fifth, and then Cabrera's second of the game, a two-run blast.That was the last time that Cabrera got to face Hammel, against whom he had not homered since his first at-bat against him in 2007, having gone 1-for-6 with a double in the years between. It was also Nimmo's only time facing Hammel. But Loney? Loney owned that dude — 16-for-44, four homers, 12 RBI, and a 1.083 OPS with only two strikeouts. Born & raised in the Chicago area, he got his first experience in hospitality at a Country Club, before heading to Honolulu to work at a Chili's and experience something different. After attending culinary school, he got a job at Lula Cafe in Logan Square, and his mentor Jason Hammel eventually pushed him to go travel Europe and acquire some real respect for the art of food. After working at an Agriturismo in Italy on top of a mountain, and living in a staff house in England, he came back to Chicago in late 2009 and right off the plane, answered the call to be the executive chef at Rootstock. Serving up unique wines to go and leveraging great relationships with local farms, the restaurant has become a secret haven of high quality, with a small space and no reservations taken. We start off with one of our favorite Chicago Bears, Charles Tillman, who has called it a career. Is he the best Bears' cornerback ever? We talk some Fantasy Football in our keeper league with some players on the move. Tyler traded Mark Ingram and the 14th pick for the 3rd overall pick, with some other possible players on the move. We talk some baseball trades with the deadline two days away and the Cubs knocked a domino down trading a massive haul for Alrodis Chapman. After not putting Andrew Miller up the Yankees traded Andrew Miller to the Indians, for a deal that seemed less than the Cubs gave up. Chapman is a free agent at the end of the season and Chapman has two more years on his deal, which is a bit of head scratcher. With what the Cubs given up it would have been nice to not have a rental. Even though Chicago got Chapman, Pops isn't feeling the bullpen. Hector Rondon moves to the setup and there's Pedro Strop, is it really a three-headed monster? Carl Edwards Jr. is someone to watch, he's having a nice season but hasn't been used a lot. Chicago could still be in the market for a pitcher with Jake Arrieta seeming to hit a wall and Jason Hammel and John Lackey slowing down. Closers have been on the move and there's the curious rejection of going to Cleveland from catcher Jonathon Lucroy. Will we see one of the big pitchers traded? What do you make of the disconnect between Chris Sale and the White Sox management? We move onto another NCAAF preview with the Big 12. Will Baylor be punished? Texas is getting a lot of talk, are we buying it? Can anyone challenge Oklahoma? Okie State finished second last year, can they be a threat for a conference title? The Big 12 is heading towards expansion with no really great choices, it looks like it's going to be Houston and BYU. Do anything for ya? We get into some NFL previews starting out East. In the AFC Tom Brady took the 4 game suspension, will it matter? Can the Jets match what they did last season? Will Buffalo's defense be better? And then there's the mess that is Miami. Can Tyrod Taylor duplicate what he did last season? The NFC East looks like another division that could be ugly. If healthy are the Cowboys a Super Bowl contender? Can Washington replicate their season? What's going on with the Giants after spending all that money on defense? And Philly just looks like a mess.

It’s time for the Red Sox to consider waving the white flag. After a 1-5 start to the home stand, it appears as if the club has too much ground to make up in the American League playoff race. It’s time to change the motive for the season, and focus on developing the young players in the organization who will presumably be a part of the “next great Red Sox team.” Trading A.J. Pierzynski, Jake Peavy and even Stephen Drew should be relatively easy decisions to make. Dealing Koji Uehara is tougher, but ultimately it would be the right call. Alex talks about the past two series against the Cubs and Orioles, and highlights Xander Bogaerts’ 11-for-100 skid. It’s been ugly to watch, but the Red Sox shouldn’t send him back to the minor leagues. Now is the time to find out how he handles himself at the Major League level. Jon Lester dominated the Orioles Saturday, as the rumors surrounding his seemingly non-existent contract negotiations with the Red Sox continue to prop up. It appears as if the Red Sox may have blown their opportunity to sign Lester to a hometown discount, and that’s a shame. Nelson Cruz batted John Lackey around the ballpark Saturday night, which caused the right-hander to make some inferences about his prior steroid use. But as Buck Showalter says, players should make sure that “their backyard is clean” before they make insinuations about other players and organizations. Speaking of the Orioles, Alex analyzes their rise to first place in the “Around the League” segment. He also examines the shrewd Brandon McCarthy trade that the Yankees completed over the weekend, and how CC Sabathia’s tenuous future could affect their approach on the free agent market over the winter. The biggest trade of the season was finalized over the weekend, too, as the A’s acquired right-handers Jeff Samardzija and Jason Hammel from the Cubs for top shortstop prospect Addison Russell. The deal appears to be a win-win for both sides: The Cubs continue to build a potent minor league system that’s stacked the rarest commodity in baseball (power), and the A’s are now true favorites to capture the World Series. All Star rosters were named Sunday, and though Alex doesn’t want to waste energy complaining about the rosters, he does have one snub who he would like to point out. Die Meldung der Woche ist sicher der Wechsel von Jeff Samardzija und Jason Hammel von den Cubs zu den As. Nur 5 Tage nachdem Andreas die Deadline eigentlich schon geschlossen hatte. Ist natürlich echt ein großes Thema aber es gab auch noch eine Menge anderes Zeug. Florian leidet mit dem Kung-Fu-Panda, feiert aber dann doch noch späte Siege, Andreas schreibt euphorische SMSen weil Boston mal wieder ein Spiel gewinnt und Axel bekommt es natürlich nicht mit.
