I have been in the fruit, wine, distilling, and brewing industry for over 15 years. I grew up in a farming family of vineyards in Lodi, Ca. I started making wine with my dad. Before I knew it, I was graduating from Fresno State with a BS degree in Enology. I was a winemaker at Garba Wine Company and Vie-Del Company before I transitioned to beer. I was a brewer for Full Circle Brewing. As I was brewing there, I've got connected with Aseptic Fruit Purees by being a customer. Then one day I was offered an the opportunity with AFP and here I am! I've been loving connecting with other brewers in this position. I get to talk shop and share ideas for a living. Oh! and sell fruit puree. haha Spencer Moore- Brewer I began my career in 2015 at Calverley's Brewery in Cambridge, UK. It was a very traditional cask brewery. Through my time there, Calverley's grew significantly, and started brewing more modern and Americanized styles. I believe we were the first in Cambridge city limits to brew a hazy IPA. I moved back to the states in 2018 and went to Line Creek Brewing in Peachtree City, GA. I began my time there working in the cellar, learning packaging, and doing pilot brewing on their small system. Eventually found myself moved into the Head Brewer position. Moved to Ohio in the summer of 2020 to take on a brewing position at Wolf's Ridge Brewing in Columbus, OH. There I took on the role of a Lead Brewer of their production facility. I was then the Production Manager for Lock 27 Brewing in Dayton, OH. From January 2022 until January 2024. Also, I have my brewing certification through the Institute of Brewing and Distilling out of the UK. This is the last, for now, of the shows recorded on location from the Pacific Northwest. It was recorded at Von Ebert Brewing's Glendoveer location, on the far edges of Portland, Oregon and situated on a golf course. Von Ebert is a brewery that has been crushing it since the start. Making great IPAs and Lagers as well as boasting a terrific blending program – in fact we discuss some of those beers on this show to illustrate ingredients and process. A brewery with a diverse portfolio that executes on the highest of levels always has something to explore, and prior to the show Jeff Alworth, the writer, author, and podcast host, had been driving me around Oregon and trying to dissect Von Ebert. Since it was such a conundrum, I invited him to co-host this episode. Happily it goes off the rails at points. Our guests keep us on track and they are: Sam Pecoraro, the Head Brewer who has been brewing around Portland for 11 years at various breweries, including Burnside Brewing, The Commons Brewery and Breakside Brewery before joining Von Ebert at their inception in 2018. As Head Brewer, Sam leads the Pearl District and Glendoveer Brewing teams in all quests related to IPA variants, German-inspired lagers and mixed culture beers. And Jason Hansen, the Lead Brewer and Blender who Started homebrewing right after college, and ended up getting a job at Seven Bridges Organic Homebrew Supply in Santa Cruz, CA. before moving to Sante Adairius Rustic Ales where he eventually became head brewer. He was then Lead Fermentationist at Garden Path Fermentation in Burlington, before joining Von Ebert in 2018. It's a crowded table that grows a bit more when we're joined later in the show by Madeleine McCarthy, who was then a brewer at Von Ebert but has since started working at 10 Barrel Brewing. Wild Leap Brew Co. keeps jumping with new beers and distilled spirits Wild Leap Brew Co. has been making waves with a huge showing in our Best of Georgia Beer awards and being named Best New Brewery by USA Today. They've earned their honors with a constant stream of tasty beers like the Truck Chaser series of ice cream truck-inspired brews and their DIPA Alpha Abstraction series feature the same base beer but with new hops in each release, currently on Volume 11. We sat down this week at the BGR Studios with the Wild Leap crew to talk beer. Chris Elliott, Chief Brewing Officer; Rob Goldstein, Co-Founder and Chief Marketing Office; and Doug Sayler, Lead Brewer all made the trip to hang out and chat over a few brews. We talk about having fun with experimental ingredients and the challenge of planning around those ingredients, their cool Three Harvest collaboration with Extreme Hops AL, an IPA utilizing hydroponically grown hops, and what that could mean for hop farming in the future. We press Goldstein on the possibility of a taproom in Atlanta and what we're going to see in Alpha Abstraction Vol. 12. We were genuinely scared for our trip to Breckenridge. We were told the over 8,000 ft altitude was going to mess with us, but besides some huffing and puffing while we walked around, there were no issues. Orpheus Brewing and The Woodlands talk sour and wild beers Wild and sour beers continue to grow in popularity. From "simple" sour beers like Berliner Weisse and Gose to complex, spontaneously fermented ales with funky, earthy, cheesy character. There's a huge variety out there. When you think of SweetWater Brewery, you may not think of sour beers - but you should. Nick Burgoyne, Lead Brewer and Blender at SweetWater's The Woodlands focuses on brewing wild, sour, funky and barrel-aged beers. He recently won a Silver Medal for Cambium (an American Wild Ale) at the US Open Beer Championship. Orpheus Brewing opened in Atlanta in 2014. Brewmaster and President Jason Pellett had a goal to introduce an approachable, sour beer that anyone could afford and his Atlanta (Tart Plum Saison) did just that. In the past 4 years, Orpheus has brewed many more sour beers, and recently won Bronze for Lambic-style Ales at the Great American Beer Fest. Burgoyne and Pellett join us this week to talk about the adventure of expanding the acceptance of sour beers. We talk simple kettle sours like Berliner Weisse and Gose, and more complex sours like Lambic and Gueze. We also discuss the challenges facing American brewers as they mimic these styles and try to name them without offending traditional Belgian brewers, and how that brought about the move towards the Méthode Traditionnelle under the guidance of HORAL (High Council for Artisinal Lambic Beers). As we sip through several beers, the conversation moves to the process of traditional spontaneous brewing and blending sour beers. Elkmont Exchange brings craft beer and charcuterie to Knoxville, TN Above Photo: Elkmont Exchange You may be surprised to find out that a brewpub in Tennessee was founded by a team whose first brewing venture was in Saigon (or is that Ho Chi Minh City?) Vietnam. Alex Violette started his boozy career at Upslope Brewing in Boulder, CO where he met Bethany Lovato, a craft beer industry veteran. After falling head over heels for each other they had the opportunity to move to Vietnam and open an American craft brewery, Pasteur Street. Elkmont Exchange's third founder, Ryan Davenport, had grown up in Knoxville with Violette and after honing his culinary skills in Southern restaurants joined the team at Pasteur Street. The brewery thrived and continues to thrive, but the team was ready for their next challenge. They returned to Knoxville and Elkmont Exchange was born. The trio selected Chris Meadows as Head Brewer at their new brewpub. Meadows got his start at Atlanta's SweetWater Brewing where he worked for 8 1/2 years eventually becoming Lead Brewer and helping to launch SweetWater's Woodlands. Like Elkmont's founders, Meadows was ready for a new challenge and packed his bags for Tennessee. Meadows took some time off from brewing a multitude of beers to chat with us this week. We talk about Elkmont's unique brewhouse, some of the crazy beers they've brewed, heavy metal collaborations, their sour beer program, and of course, we had to get the scoop on that charcuterie program. Hop Soul Brewery isn't open yet, but we've been in touch with founder Justin Crandall since the idea was fresh. Crandall and his wife Elizabeth were in the Atlanta area this week and joined us in the studio to share some beers with us and chat about their plans to be Brunswick, GA's first brewery. It’s been awhile since we’ve done an episode of “Flight School,” and there was no better place to start that up again than at Texas Ale Project in Dallas, TX. As you might know, Texas is HOT, and the beers that Texas Ale Project is brewing are the perfect answer to the Texas heat. With plenty of German-influenced beers or just a good brew with a clean finish, this flavorful flight made for a great reintroduction to Texas beer. In this episode, we had the pleasure of sitting down with Derrick “Moose” Rima, the Lead Brewer at Texas Ale Project, and quite frankly just a great guy to have a drink with. Moose first discovered his love for beer while serving in the military over in Germany. His stories give us an understanding of the Dallas craft beer community, and some of his own unconventional methods of staying hydrated while drinking.
Since our last episode, a pipe burst in the ceiling of our studio and so tonight we’re on location at the Rahr and Sons Brewery.
