Open each pocket.Using a spoon, evenly distribute the tzatziki (about 1 ½ teaspoon each) between the pitas, swooshing the sauce on one side of the pocket. Repeat on the other side with the hummus (about 1 ½ teaspoon each). Place a handful of lettuce along one side of each pita.Fold the slices of chicken in half, and place 3 slices on top of the lettuce. Add 1 to 2 slices of tomato. This week, we've got a 2 part episode. We'll start by catching up with Yia Vang from episode 1 who is launching a podcast with his buddy, David Crabb. Then we'll chat with March Herro from Pitas in Columbia, SC. Marc was only 17 years old when his family decided to immigrate to the US from Lebanon. Arriving just after 9/11, Marc found himself living in a part of the country that wasn’t exactly welcoming to immigrants, particularly immigrants from the Middle East. After finding his way at a new school, learning a new language, and adjusting to a new culture, Marc now owns and operates one of the city’s most popular Mediterranean restaurants, Pita’s. We spoke with Marc to learn more about his family, how he learned to cook, and the legacy he wants to leave behind.

Welcome to Marti’s Music Kitchen! Today’s guest is Mark Bowden, guitarist, writer, producer, and one of the top nationally known go-to musicians. He’s shared the stage with names like Bonnie Raitt, Jackson Browne and Curtis Salgado. Also joining is the multi-award winning Blues artist and social activist, Karen Lovely. We cook Mark’s famous Lamb Gyros with Tzatziki sauce. Mark also makes his specialty homemade pita bread! Listen on as they spill the secrets of music and food on an international scale. LAMB GYROS: (makes 8 gyros) Lamb Filling: 2 pounds boneless lamb leg or shoulder, trimmed, cut into 1 1/2-inch strips 3 cloves garlic, crushed 1/2 teaspoon dried thyme 1/2 teaspoon dried oregano 1/2 teaspoon dried rosemary 3 tablespoons olive oil, divided (1 for the marinade, 2 for the skillet) Juice of 1/2 a lemon 1 teaspoon salt 1/2 teaspoon freshly ground black pepper Combine the above ingredients and let marinate in a closed container 12-24 hours Additional fillings: Large Romaine lettuce leaves (1 per pocket) 2 - 3 to 4” fresh cucumber spears (2 per pocket) Chopped Roma tomatoes (1 tbsp per pocket) Crumbled Feta Cheese (1 tbsp per pocket) Optional: Chopped spring onions or shallots (1 tsp per pocket) Rachel’s Tzatziki Sauce (1 tbsp per pocket) INSTRUCTIONS: 1. Make the lamb (or beef) marinade. The meat needs the inherent fat content to make it tender and moist. 2. While the meat marinades, make the pitas following the attached Bittman recipe. Do not over bake and cook just before serving. 3. Make the Tzatziki sauce using Rachel’s recipe below. 4. While the pitas cool slightly, add two tbls of quality virgin olive oil to cast iron skillet. Set heat to high. Brown the meat to medium rare. 5. Assemble meat and fillings into the pita pockets and wrap in foil to hold together. Serve immediately. Mark Bittman’s Pita Bread Recipe: https://www.markbittman.com/recipes-1/pita Makes 6-12 Pitas, cook/prep time at least 2 hours. Somewhat unattended! Mark Bowden’s Tips/Tricks on Making Pita Bread: Always use a good quality bread flour such as Bob's Red Mill Artisan Bread Flour or Bob's Red Mill Gluten Free 1-to-1 Baking Flour. I typically use 1.5x the recommended amount of fast acting yeast. Easily mix dough in Kitchen Aid mixer. Mix just enough to get to the clumped sticky stage. Turn dough out on floured baker's mat and kneed it by hand until dough is satiny and springs back to the touch. Use a baking stone and pre-heat it 30 minutes or more! 350 degrees max. Use wooden pizza peel sprinkled with cornmeal to transfer pita. 3-5 minutes per side max! TZATZIKI Recipe: DAY AHEAD of making (optional, but ensures a better texture): Chop 1 English Cucumber, sprinkle generously with course sea salt, and let drain in the fridge using a strainer or cheesecloth over a bowl to collect moisture. DAY OF: In food processer, combine until smooth: 1 - 7oz pkg Fage Total 5% Milkfat Yogurt 1 chopped and drained English Cucumber (see above) Juice of 1 lemon 3-4 peeled cloves of garlic 3 tablespoons of olive oil 1 tsp each of salt and pepper (to taste really) 2 sprigs of dill 2 sprigs of mint Let sit covered in fridge for at least 4 hours to develop texture. El penúltimo episodio de esta primera temporada es un pequeño homenaje al gran Ramón Gómez de la Serna, buque insignia del humor y las ideas en la llamada "otra generación del veintisiete". El absurdo va subiendo peldaños hasta subir a la azotea, desde donde todo se ve de un modo muy distinto. Por el camino pasaremos por el siglo trece, continuaremos en una isla desierta hasta que nos entretenga un coro cantando en un arrecife, para posteriormente dejarnos atrapar por un crucero que nos trasladará al final del capítulo. Espero fehacientemente que disfrutes este viaje de veinte minutos, que te parecerán mucho menos de lo que parecen contados linealmente.
Este quinto y penúltimo episodio de la temporada adquiere un grado mayor de surrealismo, acorde con los gustos y referentes del autor. Todo va a más –y no es para menos– ya que Ramón Gómez de la Serna fue el alma pater de la fantástica generación de humoristas del 27. Y por si faltase algo, un coro que canta en un arrecife de coral pondrá la banda sonora de un minuto y poco que, te aseguro, quedará atorado en tu memoria por mucho rato. En fin, que la primera temporada ya se acerca plácidamente a su final y como tal hay que disfrutarla.

Si quieres ver y entender el deporte rey desde otro punto de vista..COMENZAMOS! Bienvenidos de nuevo a este primer episodio, o episodio 0 como dirían algunos. En cualquier caso, esta es la presentación de este podcast, ARBI QUE PITAS, cuyo objetivo es aclarar y dar a conocer las reglas del juego, ese trasfondo que la mayoría de estamentos que forman el fútbol no conocen en toda su magnitud, algo que parecería impensable en cualquier otra disciplina; parece que lo más razonable si te quieres presentar a una competición de cualquier tipo (atletismo, oposiciones) es conocer el reglamento, la ley sobre la que vas a desempeñar tu actuación. En cualquier caso, dice el dicho popular que el desconocimiento de la norma no exime de su cumplimiento (aunque no sepas que tienes que pagar cierto impuesto, tienes que pagarlo, no saber que la velocidad máxima era 100 en un determinado tramo no logra que te quiten la multa) Este proyecto nace de la necesidad de ofrecer un soporte auditivo de las reglas del juego, así como ofrecer al mundo del fútbol una ventana entretenida en la que conocer más sobre su deporte favorito y entender mejor el por qué de las deciones arbitrales, todo ello de manera cercana y didáctica. Aquellos que no se queden en la queja fácil cuando pierda su equipo y quieran entender el motivo de una u otra decisión, tienen aquí una ventana para conocer las reglas del juego y sus actualizaciones constantes. Este podcast no va dirigido únicamente a los árbitros. Todos aquellos estamentos que forman el mundo del fútbol, entrenadores, delegados, auxiliares, directivos, jugadores, aficionados…Cualquiera interesado en, repito, entender las decisiones arbitrales sin conformarse con la queja o el insulto. Ojo, con esto no quiero decir que los árbitros no se equivoquen, o mejor dicho, no nos equivoquemos. Por supuesto que si, al igual que cualquier persona, somos humanos y como tal cometemos errores. Otras veces las jugadas son tan al limite que nunca será un acierto ni un error al 100%. Sin embargo, la crítica o la queja debe partir siempre desde el conocimiento. Por poner un ejemplo, en un partido de alevines de la temporada pasada, un entrenador me reclamaba a gritos fuera de juego..cuando el balón procedía de un saque de banda! Este tipo de quejas sin fundamento son las que debemos evitar. En fin, no me alargo más que esto es solo la introducción, muchas gracias a todos los que escuchéis este episodio y espero que me acompañéis durante mucho tiempo.

Broccoli Subs, French Dip, and Salmon Pita From a meat-eater’s french dip to a vegetarian’s dream broccoli sub, the Dinner Sisters find some new sandwiches and a classic for a weeknight dinner or even a party. Let’s go beyond a grilled cheese and find some fun sandwiches for a delicious handheld dinner. The Best Slow Cooker French Dip: Delish The delicious aroma of the roast beef braising might torture you, but the wait will be worth it! A chuck roast cooks in a savory braise for hours to make a tender, melty-cheesy sandwich that works for parties or just a party of one. Tips: You can use a traditional slow cooker or the slow cook feature on the Instant Pot. This could also work in a low- 225 degree- oven. We haven’t tried this using the pressure cooker feature of the Instant Pot but maybe? Make the sandwiches with a bread that can stand up to the dip in au jus. A ciabatta roll or sturdy french bread. Skip baking and broil the cheese instead. You get your sandwich much faster, which is always a good thing. If you are reheating the sandwich, pop the meat in the microwave for 30 seconds before you broil. Herbed Salmon Pita Pockets: Andie Mitchell Canned salmon isn’t everyone’s pantry staple, but maybe it should be if you can make these tasty salmon patties. You stuff the patties in a pita with lettuce, cucumbers and tomatoes and top it off with an herby yogurt sauce. Tips: We thought these patties would be nice outside the sandwich- maybe the yogurt as a dipping sauce? Another idea- make them smaller and serve as an appetizer either on their own or in mini pitas. Check out the salmon- some is canned with skin and bones. Choose a brand or can without those. Garlicky Broccoli Subs: The Kitchn Here’s a sandwich where the sum is better than each of the parts. Roast broccoli and pile it on french bread with peppadew peppers, french fried onions, feta cheese, and a tangy sauce. Serve it warm or wrap well for a tasty, hearty vegetarian option. This sandwich travels well- wrap tightly in cling wrap or wax paper. Keep cool and you’ll have a lovely meal waiting for you. A party menu with these sandwiches and the french dip might just be the best of all worlds. We successfully made this dairy-free by eliminating the feta. Our taste-tester still loved it! You could go all the way vegan by using a vegan mayo and substituting coconut aminos for the fish sauce. From the Smorgasbord… The James Beard Awards are given every spring.
