Rob Jack for writing this prayer for today’s feast! ***** RECIPES FROM RITA TWO LAYER PEPPERMINT BARK Ingredients: 24 oz bittersweet chocolate – good quality 24 oz white chocolate – good quality 1 cup or so crushed peppermint 3⁄4 tsp PURE peppermint extract or scant 1/4 teaspoon food grade peppermint oil Instructions: Place peppermint candy in a large plastic bag and crush into small pieces with a meat pounder. Set aside.Line a 9 x 13-inch baking sheet (small sheet pan) with parchment paper and set it aside. Let sides hang over a bit to form a cradle to make it easier to lift bark out. Heat 4 cups of water in a 4-quart saucepan over medium-low heat. Set a large glass bowl on the saucepan so the bottom does not touch the barely simmering water. Add the bittersweet chocolate to the glass bowl. Stir and slowly allow the chocolate to melt. Once most of the chocolate is melted and smooth, remove from heat, wipe bottom of bowl to remove any moisture or steam (any moisture if it hits the chocolate will cause it to seize), stir to smooth out completely, then pour onto the prepared baking sheet. Smooth to an even layer and sprinkle with 1⁄4 cup of crushed peppermint candy. This acts as a somewhat gritty surface which I think allows the white chocolate layer to adhere better. Let cool until firm, either in the refrigerator or even on the counter. You don’t want the chocolate real cold since it will be more difficult to spread the white chocolate on top and the layers adhere better together when the bottom layer is completely firm but not rock hard cold. (If it is real cold, let it sit out a bit to take the chill off, then proceed with white chocolate layer).Wash and dry the bowl thoroughly, and set over the barely simmering water. Add the white chocolate. Stir until most of the chocolate is melted, then remove from the heat. Stir to smooth out completely, and add the peppermint extract, stir, and pour over the bittersweet chocolate. Smooth to an even layer and immediately top with remaining peppermint candy pieces. Allow to cool at room temperature until hardened, 2-3 hours. Once the bark is hard, cut or break into pieces. Since the bark has hardened at room temperature, it won’t be rock hard and will be easier to break or cut into pieces.Store in an airtight container in a cool place for up to two weeks. TIPS Don’t use chocolate morsels/chips or the slabs of chocolate “bark” in the baking aisle that contain palm kernel oil, which may inhibit good bonding of the layers. High quality “white” chocolate will have sugar and cocoa butter listed among the first ingredients on the label. Don’t have peppermint extract? Sieve the candy cane pieces and the “candy dust” you shake out of the sieve can be stirred into the white chocolate layer for peppermint flavor, not as strong, but still good. Don’t use imitation peppermint extract which contains too much water and may cause the melted chocolate to seize. ***** BONUS RECIPE: PEPPERMINT WHITE HOT CHOCOLATE Ingredients: 20 or so oz white chocolate bars1 teaspoon peppermint extract or 1/4 teaspoon peppermint oil8 candy canes, regular size, crushed very fine1 quart each half & half and whole milk Instructions: Easy peasy. Follow instructions above for melting white chocolate and adding extract.After pouring white chocolate in pan and spreading into even layer immediately sprinkle with very finely crushed peppermint. Cool until solid. To make peppermint white hot chocolate:Heat half & half and milk to 160. In this episode of the podcast Kay Bretz share's his fascinating running journey. He grew up in Germany and attended boarding school in Scotland when he was 16/17 years old, it was here that he discovered he loved running in the Scottish hills! He ran marathons through university and found it a great way to balance life and stay focused. However, once Kay started work as a business consultant, he found he was travelling around the world and running consistently became too hard, so he let it go for a few years. In 2011, his work took him to Melbourne to live and his work schedule changed. This was when he realised that he still had unfinished business in the marathon world - namely that he wanted to get below 3 hours for a marathon. He knew to do that he would need to train consistently - he did it and enjoyed it. Running became his new lifestyle. In 2015 Kay went from marathon running to ultra running - he says to give his life more balance. He took on a mentor when he realised that always chasing another marathon personal best was becoming very stressful for him. His mentor picked up that Kay had an obsessive type personality and needed to “let go” a little. He prescribed a mystery run with a friend and when his friend turned right instead of left as Kay had ALWAYS done when heading out for a training run, a light bulb when off. Kay had taken the some of the joy out of his running by always wanting to control/obsessive over his training. The next for him was to sign up for a trail ultra rather than his usual controllable city marathon! He now loves jumping into ultra distance events and has represented Australia across the globe. What Kay has learnt from these new choices (and mindset) has lead him to writing a book called Turning Right - Inspire the Magic (see the link below) which he uses in his consulting business. Here's the list for 2022... The Welcome Wine Sparkling options: Sekt from Germany (Riesling is best), South African Cap Classique, Lambrusco Sherry: Our favorite type of Sherry is Amontillado. It's great with nuts and generally well liked by people when they try it. Good producers: Hidalgo la Gitana, Valdespino, Lustau, Osbourne, and Bodegas Dios Baco are some great producers. Dry white wines Wines that complement a buttery, savory meal: Grillo from Sicily Pinot Blanc from Alsace Soave from Italy A blend from Lisboa (around Lisbon, Portugal) Verdejo from Spain OR More acidic whites -- better with acidic food with a lot of citrus/acidity or for contrast: Vernaccia di San Gimignano (Tuscany) Australian Riesling from the Clare and Eden Valleys Finger Lakes Riesling Off Dry Whites for dishes with fruit or with sweetness (yams, corn): Mosel Riesling from Germany Off-dry Finger Lakes Riesling Vouvray from the Loire Valley, France Light Reds and rosé (good with turkey, ham, pork): Frappato from Sicily País from Chile (similar to Beaujolais) Zweigelt from Austria Rosé: Tavel from Rhône, Côte de Provence, or something from your local winery Heavier reds (for non-turkey meals): Bordeaux – general Bordeaux or Bordeaux Superieur for MVP, Right Bank (St. Emilion, Fronsac) and Côtes de Bordeaux for meats or heavier vegetables with more delicate, herbal flavors, Médoc for more robust meats with more charred notes Primitivo for robust meats Chilean Cabernet Sauvignon or Carménere for heavily flavored, braised, charred meat Dessert: Ruby Port for chocolate desserts Muscat-based wines – Muscat de Beaumes de Venise, Muscat de Rivesaltes for fruit or custard desserts Bring back the off-dry Sekt or Lambrusco from the beginning of the meal to enjoy at the end of the meal. Lambrusco is good with berry or cherry desserts, Sekt with apple and custards Tips: Don't buy too much wine. If you have a limited number of drinkers, limit the choices for the meal. If you plan to serve dessert wine, don't go overboard with options at the beginning of the meal or you'll have no takers. Let's dive into the "Sports Protocol": SUGGESTED SERVING SIZE Each "serving" is technically 60ml of KE4 (30g of the Ketone Ester), but do not start with a full bottle. More is NOT always better. More may lower blood glucose too much, lower top speed, and reduce performance substantially. It is based on weight, so if you weight 2x the average person, you may need more. And if you are lightweight, you will need much less. Numbers below are based on 70 kilos. Start in practice, NOT in a race. (Updated March 2021) Micro dosing KE4: (Micro dosing is a fancy word for taking smaller amounts of KE4) If using KE1 (compare) and adjust. 1 bottle of KE1 is = to about 2 capfuls of KE4) Pre-Workout: Start here. (All Athletes, regardless of diet) Regardless of your diet.A) Full Keto & fat adapted B) New to keto or intermittent fasting, or C) Full carb/western diet. Step 1: Empty stomach (at least 2-3 hours, if not overnight). This really is key. Without this, you may have to take more or do the dual fuel protocol with carbs and it still not be better. Why? (see this video) and more details on Fasted Workouts here Step 2: MOST COMMON: 1 to 3 capfuls of KE4 (same as 1/2 to 1.5 bottles of KE1) about 15 min before warmup or workout. * 1-2 capful for females or much lighter males, * 2-3 capfuls for NON keto males. * 1-4 capfuls for keto males, (Keto athletes find benefit at lower amounts, BUT some are able to take more without the blood sugar dropping effect that non keto people get.) Warning, if you take it too early like 30-60 min and don't use the fuel, you may get tired (i.e. blood sugar crash). Some sprinters have taken it 45 min before without issue. Just test in practice the EXACT protocols you plan to use. Note that glucose is not necessary (and could be worse) with this small amount since blood glucose does not drop too much with micro dosing. Glucose also causes inflammation, it is a dirty fuel with lactic acid as a byproduct (ketones create zero lactic acid). The theory here is micro dosing may trigger endogenous ketone production (where your body makes ketones), whereas more may hault that production or it can also drop blood sugar too much. Some may stick with this protocol and not move up in quantity. Play around with different amounts Then try 15ml up to 25ml of KE4 (again, until you reach 30ml, you may not need carbs.) If you do notice a difference with 10-15ml, some may drop to 5ml to see how that works. I wouldn't start with 5ml because it may be too subtle, but you can if you feel the energy is still available. Tips: Don't go out faster expecting a better final result. Go out as normal as possible and then later in the practice you can increase your speed if you want. Word sculpting is a methodology developed by Carla Bass that focuses on strategizing the message and then using specific tools to chip away at the redundant words (the ones that hog space) and the bureaucratic blather to sculpt out a solid hard hitting message. Every single writer is constrained by two things: 1) the readers time; and 2) space. The author who leverages time and space best wins! Carla's Write to Influence! Tips Don't put the horse before the cart. Identify what is the most important part of your message and raise that to the very top. Outline the journey you're trying to take the reader on. If you are trying to extend your influence you have to explain [your principle thoughts] in very concise persuasive language, being cognizant of time and space. Strategize and hone your message to make each word count. Leave out the "Bureaucratic Blather:" Don't use noun, after noun, after noun.... Don't smother the verb Instead of "provide a demonstration" use "demonstrate" Instead of "reduce the amount of time" use "expedite" Instead of "conduct over-site" use "oversee" Instead of "provide contribution" use "contribute" Don't use words that "hog the space." Instead of using several words to convey one thought - go for the one! Instead of "at the present time" try "presently" Instead of "those who attend" try "attendees" Instead of take you up on" try "accept" Instead of "talk about" try "discuss" Instead of "prior to that" try "previously" Avoid redundancy by removing words already inferred in the sentence (e.g., "He was being surreptitiously sneaky" should be "He was being sneaky.") Avoid useless words such as:. There is / There are Provide with On a daily basis In order to Moving forward we will Carla's Tips For Employees To help employees take control of various situations (Job Interviews, Resumes, Performance Reviews), Carla offers the following tips: Job Interviews: Strategize your message beforehand. Before the interview think about and have ready 3 short messages you want to leave behind with your interviewer. Performance Reviews (Where your employer asks for your written input): Pretend you are writing about someone else - eliminate the ego. Keep track of what you do day-to-day and the impact of those actions. Emphasis the "what happened" as a result of what you contributed. Prioritize and triage. What were the effects of the things you did (on a day-to-day basis)? Did your actions impact other divisions, people, organizations? Did you set new benchmarks? The further the ripples go the higher up that information should be in the information you put forward to your supervisor. Frame the story. Details make a huge difference (e.g., Instead of "Created Handbook" try "Created an 80 page handbook, distributed to over 500 employees and integral to the onboarding of 80 new employees.") What do you do when you’re first diagnosed with allergies? The doctors give you a shock of a lifetime telling you something could kill you and then often just leave you to it. What do you do then? In this episode I’m welcoming back Nathalie Rhone from episode 56. Today we talk about how she manages the stress of Oral Allergy Syndrome (OAS) knowing 30 of the allergens that make her sick and knowing there are others. Nathalie takes us through her first doctor visit, what they told her and her diagnosis being allergic to carrots. Currently she is under the supervision of her allergist in the pre-stages of Oral Immunotherapy Treatment (OIT) and introducing new foods to her diet. She has experienced the full spectrum of food allergy anxiety, but it’s still not stopping her live her life to the full. Nathalie is going to take us through her learning curve, what she learned from managing her allergy, how she deals with doctors and how she manages allergic reactions. Justin was photographed riding the ATV with Selena Gomez Friday in Ontario near his father's home. Police say Justin was released and will have to appear in court later this month. He could have a bigger problem on his hands though -- Justin is on probation for 2 years after the egging case in L.A. So, it's possible this arrest could trigger a violation. Sports Drama - Indianapolis Colts owner Jim Irsay just pled guilty to one misdemeanor count of operating a vehicle while intoxicated ... stemming from a March arrest. 55-year-old Irsay appeared in court Tuesday morning in Indianapolis -- where he was sentenced to 1 year probation and will be subjected to court-ordered drug tests. The NFL has dropped the hammer on Irsay, suspending him six games and fining him $500,000 -- the maximum dollar amount permitted for violating the league's personal conduct policy. Manny Pacquiao is following 50 Cent and Nelly's lead -- bashing Floyd Mayweather for his apparent lack of formal education. Manny was doing an interview with NJ.com when he started going off on the boxing champ. "I think I finally understand him ... what he says ... how he acts ... and I don’t like it.” "But what l learned and heard from him, well, I realize why he is like that. I understand sometimes when the people are not educated they just talk to talk. He sets a very bad example." Mayweather's erudition has been under attack lately -- with 50 claiming the fighter can't read and Nelly trashing him for allegedly failing to graduate high school. Visit GEM: Sorting your bookmarks alphabetically in Safari (Mac) Thanks to listener Eiya Loki How to Sort Bookmarks: 1. On the top of your screen click on Bookmarks 2. In Bookmarks drop down menu click on Show All Bookmarks3. In the left pane under Collections click on Bookmarks Menu 4. click on any bookmark in the right pane 5. Go directly up to Edit at the top of your screen and click on it 6. Click on Select All from the drop down menu 7. Open up Finder and make a folder on your desktop called "bookmarks" 8. Double click on the folder to open it up. 9. Then on your keyboard press Command-J. This will open a little window.10. About in the middle of this window you will see the words Arrange By: with a drop down menu right next to it, click the drop down menu option Name.11. Now go back to Safari and drag a third of Safari's window out of screen 12. Position the finder in the empty half of the screen. 13. Go back to the Bookmarks Menu 14. Click and drag all of your bookmarks in the Finder window. 15. There the will be automatically sorted even the bookmarks inside folders! 16. Go back to Safari and re Select All to your bookmarks just as you did before but this time after you have all you bookmarks highlighted 17. Go back up to Edit & click Delete in the drop down window. 18. Go back to the Finder window and Select All just as you did before 19. Drag the bookmarks back into Bookmarks Menu in Safari.
