While now we have barrel rooms and we have thermoregulation, we made a decent wine and that proved the process. That was a good example of how in midlife we can look at something that looks really bad, something that's happened, and actually turn around and make something good out of it. Sally says that when she hosts wine tastings, she always talks about the occasions when they're going to drink the wine: I think there's one thing in marketing where you profile the customer but I think with wine, often it's around the occasion and what you're eating and who's over and so on. That's how we drink wine. We drink it for occasions. Sally observes that when we look at the back of most red wine bottles, especially from Bordeaux, it says drink with red meat: I thought, well, that's not really helpful. I have a very close friend, Wendy Narby, she and I sat down and said, red wine goes fabulously with veggie dishes and so we've done it as a passion project where we talk about how to pair plant-based food with different Bordeaux wines.   About Sally Evans After an international corporate career based in Paris and the South of France, Sally Evans completely changed her life in her fifties. Aujourd'hui j'ai le plaisir d'accueillir Élodie à mon micro, dans un endroit génial ;) puisqu'il s'agit du village où j'ai grandi et d'où vient ma famille : on a enregistré cet épisode à Fronsac, petit village entouré de vignes et bordé par la rivière, et dans lequel Élodie a rénové une maison. Et la particularité de cette rénovation, c'est qu'elle a connu de grosses difficultés, et notamment le fameux et tant redouté... abandon de chantier. Une rencontre, ça ne tient à rien. Il y a quelque chose qui nous échappe et de mystérieux.C'est un peu ce qui s'est passé avec Valery. Tout commence lorsque mon précédent invité, Olivier, dont vous avez découvert le parcours dans l'épisode 14, me parle de ce projet fou porté par un homme un peu à part. Et me voilà quelques jours plus tard en train de décrocher mon téléphone, sans trop savoir où je vais atterrir.Quelques mois plus tard, je le rencontre et voilà ce que je découvre : 6 ans de travail acharné pour construire et rendre possible le début d'un chantier, qui porte un projet extraordinaire : construire, sous les yeux des visiteurs, une chapelle, un cloitre et une cathédrale. D'ici 40 ans, cet ensemble architectural devrait s'élever au début du village girondin,  Lalande de Fronsac. La colonne vertébrale de ce projet : nourrir les hommes en quête de sens, préserver et redécouvrir des savoir-faire artisanaux moyenâgeux.Quelques semaines après notre  rencontre, la première pierre du chantier est posée. D'un projet solitaire, est né un collectif de femmes et d'hommes reliés par l'amour du Patrimoine, de la pierre et de la transmission.Ce projet m'a bouleversée. Il m'a ramenée à la question de nos rêves. Et c'est grâce à Valery, qui sans le savoir, m'y a conduit avec bcp de densité, de force et d'humilité. This podcast is a refresher on Merlot (it's been 12 years, so it's time!). It's one of the titans of the wine grapes, and yet it's not often that we encounter it as a varietal wine. Because it is frequently blended, Merlot can often be forgotten or not given its due.   But Merlot will not be forgotten! It is the second-most planted grape in the world, the most widely grown grape in Bordeaux, and its pedigree as part of some of the world's most prestigious and well-known Bordeaux and Bordeaux-style wines makes it royalty in the wine world.   But Merlot is not without challenges. When it's not grown on the proper soils or managed meticulously, wine made of Merlot bears little resemblance to great wines of Bordeaux or other regions that are famed for blends that use it. The reputation of Merlot as a boring, flabby, dull wine is not the fault of the grape, and although it was a convenient scapegoat, it's also not the fault of the movie “Sideways.” The fact is that Merlot is not as easy to grow as people thought, and in 1980s and 1990s, opportunistic companies used high-yielding clones on bad rootstock and in bad sites to churn out high alcohol fruit bombs, lacking all the nuance that make the grape esteemed in its homeland.     This says nothing about the grape, but much about the people who defiled it. Although it is entirely capable of making boring, cheap wine, Merlot simultaneously makes up 95% of Château Petrus, Bordeaux's most expensive wine and is used in fine wines all over the world for its ability to elevate a blend. In this show we pay homage to Merlot, and this time, shed some light on the recent past for Merlot and why, ultimately, it has done little to harm the grape's reputation among winemakers and those who take the time to know the grape.   DNA and Parentage Merlot originates from Gironde or SW France or Basque country. It's the child of Cabernet Franc and Magdeleine Noire des Charentes from Brittany Merlot Gris: Pink color mutation of Merlot Merlot Blanc: A cross of Merlot x Folle Blanche created in 1891 NOT WHITE MERLOT, which is just Merlot made like white Zinfandel   History We discuss the history of Merlot – from its first mention in Bordeaux, to its more modern history - its rise in the 1990s and its fall in the early 2000s in California, Australia, and the global consumer market.       In the Vineyard Merlot is an early budding variety, making it susceptible to spring frost – it needs good weather at flowering or it won't have a great vintage. The grape needs cooler, well-drained soils – cooler limestone and clay soils are best Because Merlot is thin skinned with loose to medium density bunches it is also susceptible to disease (downy mildew) and botrytis (bad). It is bad in drought, which raises the question: how will it do with climate change, which we discuss. Merlot ripens about 2 weeks earlier than Cabernet Sauvignon and it's the first red grape picked in Bordeaux. That makes it a great agriculture hedge – if it does well, there is less pressure to have a huge Cabernet Sauvignon harvest. The grape has milder tannins, higher sugar, and lower acidity (especially malic) than its relations Cabernet Franc and Cabernet Sauvignon. It can be vigorous, so yields must be managed and picking decision is important, since Merlot loses acidity quickly once ripe. Two main styles result from picking decisions (among other factors – terroir!): Bordeaux style: Merlot is harvested earlier, leading to a more acidic, medium alcohol wine (Pétrus). These wines tend to have moderate alcohol and show more red fruit flavors (cherry) along with “other” things like: green and black tea, mint, oregano, rosemary, sage, thyme, earthy, mushrooms, green pepper, green olive International style: Concentrates on physiological ripeness, with long hang time to have hardened stems and seeds (wines of Michel Rolland). These wines are often inky, purple, dark wines, with high alcohol, velvety tannins, and dark fruit character (plum, blackberry, blueberry). The wine is smooth and can seem sweet due to the high alcohol, strong fruit, and the oak used that brings flavors like caramel, chocolate, coffee, vanilla, nut, and cigar.   _____________________________________________________ Regions: the grape is planted everywhere! This is more or less a list…     FranceMerlot is France's most planted grape   Bordeaux Bordeaux is the grape's native home, and it is the most cultivated grape in the region. It contains half of all the Merlot in France. The grape does best on cooler limestone and clay soils of the Right Bank and in pockets of the Left Bank. Climate change is a challenge for Merlot – it will need to be grown exclusively in cooler spots as the climate warms Right Bank Pomerol: Can be up to 100% Merlot. Wine is luscious, soft, velvety, plummy, iron or clay-like. Famed châteaux are Pétrus, Le Pin Émilion: Usually contains 60-70% Merlot with Cabernet Franc, Cabernet Sauvignon. Flavors are more like balsam, dried fruit, with tea notes, but the wines vary based on limestone, clay or sand content in the soil. A 'beast' that pounced on humans and animals with terrible ferocity. Indeed they beast became so notorious that the King of France dispatched envoys to find out what was happening and to kill the creature. By the end, the Beast of Gevaudan had killed over 100 people.To this day, no one is entirely sure what it was, a wolf? a hyena? or something supernatural? The Beast is a popular myth in France, albeit one rooted firmly in reality; somewhat surprisingly it is little known to the outside world, and perhaps incredibly it has never been made into a movie. Until now. Based on the true story of the Beast of the Gevaudan that terrorized France in the eighteenth century, the movie aims to tell first and explain afterwards. In the first part, a special envoy of the King of France, altogether biologist, explorer and philosopher, arrives in the Gevaudan region, in the mountainous central part of France. The Beast has been attacking women and children for months and nobody has been able to harm it or even take a good look at it. Happy Thanksgiving/Harvest Meal 2022. For this episode, we're discussing wines that will give you great bang for your buck, pair perfectly with the meal, and impress your guests. (c) Wine For Normal People These pairings are really for any traditional western meal – Thanksgiving, Christmas, or any sort of food that celebrates autumn flavors.    Here's the list for 2022... The Welcome Wine Sparkling options: Sekt from Germany (Riesling is best), South African Cap Classique, Lambrusco Sherry: Our favorite type of Sherry is Amontillado. It's great with nuts and generally well liked by people when they try it. Good producers: Hidalgo la Gitana, Valdespino, Lustau, Osbourne, and Bodegas Dios Baco are some great producers. Dry white wines Wines that complement a buttery, savory meal: Grillo from Sicily Pinot Blanc from Alsace Soave from Italy A blend from Lisboa (around Lisbon, Portugal) Verdejo from Spain OR More acidic whites -- better with acidic food with a lot of citrus/acidity or for contrast: Vernaccia di San Gimignano (Tuscany) Australian Riesling from the Clare and Eden Valleys Finger Lakes Riesling Off Dry Whites for dishes with fruit or with sweetness (yams, corn): Mosel Riesling from Germany Off-dry Finger Lakes Riesling Vouvray from the Loire Valley, France   Light Reds and rosé (good with turkey, ham, pork): Frappato from Sicily País from Chile (similar to Beaujolais) Zweigelt from Austria Rosé: Tavel from Rhône, Côte de Provence, or something from your local winery Heavier reds (for non-turkey meals): Bordeaux – general Bordeaux or Bordeaux Superieur for MVP, Right Bank (St. Emilion, Fronsac) and Côtes de Bordeaux for meats or heavier vegetables with more delicate, herbal flavors, Médoc for more robust meats with more charred notes Primitivo for robust meats Chilean Cabernet Sauvignon or Carménere for heavily flavored, braised, charred meat   Dessert: Ruby Port for chocolate desserts Muscat-based wines – Muscat de Beaumes de Venise, Muscat de Rivesaltes for fruit or custard desserts Bring back the off-dry Sekt or Lambrusco from the beginning of the meal to enjoy at the end of the meal. Lambrusco is good with berry or cherry desserts, Sekt with apple and custards   Tips: Don't buy too much wine. If you have a limited number of drinkers, limit the choices for the meal. If you plan to serve dessert wine, don't go overboard with options at the beginning of the meal or you'll have no takers. SAMEDI 15 OCTOBRE 2022 Fabrice Léger et Charles Pouvreau - Le Salon des Outsiders et Château Dalem  Passionné de vin depuis de nombreuses années, Fabrice décide de créer en 2013 le Salon des Outsiders avec Jean-Marc Quarin, célèbre critique indépendant des vins de Bordeaux. Pourquoi « Outsiders » ? Ce concept, créé par Jean-Marc lui-même, désigne un vin dont le goût est supérieur à ce que l'étiquette laisse paraître. La sélection complète paraît dans le Guide Quarin qui en dresse une analyse originale et indépendante. La 9ème édition de ce salon se déroulera du 17 au 19 novembre 2022 à Paris dans le cadre prestigieux du Pavillon Ledoyen. Les 30 exposants présents, proposeront près de 100 vins à la dégustation. Parmi les exposants, nous retrouverons, le Château Dalem, propriété du Charles Pouvreau en appellation Fronsac. Et parce que les crus Outsiders méritent d'accompagner le meilleur de la gastronomie, un dîner élaboré par le chef Yannick Alléno est organisé.   Julia Joyandet - Domaine de la Pâturie Julia ne se prédestinait pas à se diriger vers le monde du vin et a forgé son expérience dans différents domaines comme la mode, le secteur du luxe ou encore la justice. Et c'est en 2017, qu'elle décide de changer de vie et de reprendre un domaine viticole avec sa famille. Pour se former au monde du vin, l'apprentie vigneronne passe un diplôme en Art et Métier du Vin à l'école Le Cordon Bleu à Paris. L'aventure du Domaine de la Pâturie peut commencer ! Située aux confins de la Bourgogne et de la Champagne, Julia exploite 17 hectares de vignes plantées sur un terroir unique et complexe. Soucieuse de respecter ses vignes, Julia a fait le choix de convertir l'exploitation en agriculture biologique avec une labélisation prévue pour le millésime 2023. Sur son domaine, Julia élabore des vins qui lui ressemble avec comme fil conducteur : offrir le meilleur de son terroir. Le domaine de la Pâturie propose une jolie gamme cépages nommés « Par Amour » et une gamme parcellaire, plus confidentielle.

Situé dans l'ancien quartier de pêcheurs, un restaurant emblématique de la ville d'Arcachon : Le Patio. La décoration est épurée et la clientèle peut dîner sous la verrière et admirer les étoiles. Mais elles ne sont pas seulement dans le ciel puisque le Chef n'est autre que Thierry Renou qui lui-même est étoilé. Pour accompagner ses créations culinaires, Thierry vous suggère un Essentiel des Vins de Bordeaux : le Château Dompierre. Michel Aroldi s'était installé au Château Plain-Point à Fronsac à la recherche d'un grand cru. Mais son rêve était de travailler d'autres cépages. C'est pourquoi, il part s'installer au Château Dompierre à Pauillac. Selon lui, le vigneron doit être le moins interventionniste pour obtenir un vin accompli. On retrouve ses vins sur de grandes tables comme l'Elysée.
